Viscosity Change of Polysaccharide, Methylan by Acids Content (다당류 메틸란의 산 성분 함량에 따른 점도의 변화)

  • The chemical identities of purified polysaccharide, methylan, were analyzed by various chemical methods. The polysaccharide contained 79%(w/w) sugar, 6% protein, and 16% organic acids such as uronic acid, pyruvic acid, and acetic acid. With proceeding fermentation, the acids content in methylan increased from 10% at 34 hr to 17% at 72 hr, and the viscosity of methylan in the same concentration also increased. The correlation between viscosity and acid content in methylan was studied using chemically or biologically modified methylan. Methylan with a high content of pyruvic acid exhibited a high apparent and an intrinsic ·viscosity. When the pyruvic acid content of methylan with the same content of uronic acid was increased 1%, apparent viscosity and intrinsic viscosity increased 290 cp and 6 dL/g, respectively. Methylan with a high content of uronic acid exhibited a high apparent and an intrinsic viscosity. When the uronic acid content of methylan with the same content of pyruvic acid was increased 1%, apparent viscosity and intrinsic viscosity increased 85 cp and 1.5 dL/g, respectively. It was found that the increased viscosity of methylan resulted from the increased content of organic acids in methylan, and pyruvic acid was more an important factor contributed to the increase of methylan viscosity than uronic acid.

Model assessment with residual plot in logistic regression (로지스틱회귀에서 잔차산점도를 이용한 모형평가)

  • Graphical paradigms for assessing the adequacy of models in logistic regression are discussed. The residual plot has been widely used as a graphical tool for evaluating the adequacy of the model. However, this approach works well only for linear models with constant variance, and the alternative approach, the marginal model plot, has its defects as well. We suggest a Chi-residual plot that overcomes the potential shortcomings of the marginal model plot.

Viscosity Properties of Corn, Potato and Sweet Potato Starch according to pH. (옥수수, 감자 및 고구마 전분의 pH에 따른 점도 특성)

  • This study was perfomed to search for how properties of the starch viscosity appear in different qualities, when acetic acid is added. For this study, corn starch which belongs to A-type. Potato starch to B-type. and sweet potato starch to C-type were chosen as an experimental material. which was added to acetic acid controlled as pH 4.0, 4.5, and 5.0 at the time of before and after heating. After that, the viscosity properties of each starch was analyzed using Amylogram and Brookfield viscometer. As a result. the viscosity was shown high in an order of potato. sweet potato, and corn starch. According to addition of acetic acid. tile viscosity appeared to be low. The viscosity differences of before and after heating when the acid is added were shown as follows : Amylogram shows that the lower the pH is. the lower the viscosity is when the acid is added before-heating. In case the acid is added before-heating, gelatinization temperature, consistency and setback was increased. but breakdown decreased. In case the acid is added after-heating, the viscosity goes down at soon as it is added meanwhile consistency and setback was decreased. but breakdown increased. Such properties of the viscosity show a conspicuous variation in an order of potato. sweet Potato. and corn starch. Brookrield viscometer shows that the lower the apparent viscosity is. the lower pH is at the time of before-heating when the acid is added. In case of after-heating, when the acid is added. the apparent viscosity shows a higher inclination than that of before-heating in corn starch and sweet potato starch.

Detection of Irradiated Dried Cereals from Korea and China by Viscometric Method (국산 및 중국산 곡류(기장 및 수수)의 감마선 조사 여부 검지를 위한 점도측정)

  • A study was carried out to establish the detection method for irradiated cereals. Cereals were ground and irradiated at 2.5, 5.0, 7.5, 10, 15 kGy using a $Co^{60}$ irradiator. The viscosities decreased in all samples by increasing irradiation dose. The viscosity of the Panicum millaceum (Korean) and Andropogon sorghum (Korean) paste dropped from $143.38{\pm}0.44$ and $35.92{\pm}1.90$ in the control to $6.60{\pm}1.16$ and $3.86{\pm}0.32$, respectively, in the samples irradiated at 15 kGy. These trends were similar to samples from china. Regression equation and coefficients of viscosity of Panicum millaceum (Korean and China) and Andropogon sorghum (Korean and China) were 0.80 (y=-27.789x+150.17), 0.98 (y=-3.367x+88.93), 0.84 (y=-6.0466x+35.49) and 0.84 (y=-13.346x+101.67) at 50 rpm. All samples resulted in a decrease in specific parameter by increasing rpm after irradiation. Parameter values showed dose-dependent relationship between unirradiated and irradiated samples and indicated that all values of unirradiated samples were higher than the irradiated ones. These results suggest that the detection of irradiated cereals at various doses using viscometric methods is possible.

  • Graphical regression is a paradigm for obtaining regression information using plots without model assumptions. The general goal of this approach is to find lowdimensional sufficient summary plots without loss of important information. Model assessments using residual plots are less likely to be successful in models that are not linear. As an alternative approach, marginal model plots provide a general graphical method for assessing the model. We apply the methods of graphical regression and model assessment using marginal model plots to the logistic regression model.

Verification of Viscosity Measurement for Identifying Irradiated Brown Rice (현미의 방사선 처리여부 판별을 위한 점도측정법의 검증)

  • Brown rice of Korea and China was irradiated at doses ranging from 0 to 15 kGy to verify the identification properties of viscosity measurement by determining the relationship between starch content and specific parameters. The starch contents of brown rice were 71.52 and 64.58% for rice of Korea and China, respectively. Additionally, a higher starch content was associated with a higher viscosity. The viscosity and the corresponding specific parameters decreased significantly as the irradiation dose increased, and these changes were influenced by the spindle speed (50, 150, 300 rpm), with a higher effect being observed at lower speeds. The determination coefficients ($R^2$) describing the relationship between irradiation dose and viscosity values ranged from 0.9423 to 0.9567 in Korean samples and from 0.9119 to 0.9387 in Chinese samples. The viscosity and the corresponding specific parameters enabled identification of the non-irradiated and irradiated brown rice from 30 unknown samples with an accuracy of 90%. Based on these findings, the viscosity and specific parameters can be applied as an additional tool for screening of irradiated brown rice.

Dietary Fiber Compositon and Viscosity of Extracts from Domestic Barley, Wheat, Oat, and Rye (국내산 맥류의 식이섬유 조성 및 이들 추출물의 점성 비교)

  • 국내산 품종별, 보리, 귀리, 밀, 호미의 식이섬유 함량과 추출물의 점성을 분석하여 생리적 기능성이 높은 식물 소재로서의 활용성을 모색하였다. 평균 총 식이섬유함량은 보리 19.9%, 호밀 18.0%, 밀 15.9%귀리 groat 15.5%,보리쌀 9.7%의 순이었다. 수용성 식이섬유의 함량은 보리 6.6%, 호밀, 6.4%, 보리쌀 5.4%, 구리 .groat 4.9%밀 3.8%의순이었으며 ,밀과 호밀의 제분부산물인 bran은 경제적인 측면에서 활용성이 높은 식이섬유 소재인거승로 확인되었다. $\beta$-glucan 함량은 보리와 귀리에서 4.4.~4.5%로 유사하게 높았으며 호밀과 밀에서는 낮게 나타났다. 총 $\beta$-glucan 에대한 수용성 $\beta$-glucan 의 비율로 나타낸 용해성은 귀리와 보리순으로 높았으며 밀과 호밀에서는 낮은 것으로 나타났다. 식이섬유 추출물의 점도는 호밀, 보리쌀 귀리, groat. 밀의 순으로 높았으며, 맥류 품종의 수용성 식이섬유 함량이 높을수록 점도가 높을경향을 보여주었다. 국내산 맥류의 고점도 식이섬유는 생이기능성이 높은 건강식품소재로서의 활용가치가 클것으로 사료되었다.

  • The knowledge discovery from web has been studied in many researches. There are some difficulties using web log for training data on efficient information predictive models. In this paper, we studied on the method to eliminate sparseness from web log data and to perform web user clustering. Using missing value imputation by Bayesian inference of MCMC, the sparseness of web data is removed. And web user clustering is performed using self organizing maps based on 3-D plot by principal component. Finally, using KDD Cup data, our experimental results were shown the problem solving process and the performance evaluation.

Stability of Nano-emulsions Containing Fatty Acid and Fatty Alcohol (지방산 및 지방알코올을 함유한 나노에멀젼의 안정성)

  • In this study, low viscous O/W (oil-in-water) nano-emulsion with fatty acid and fatty alcohol was prepared by phase inversion emulsification method using Tween 80 and Span 80 widely used in cosmetic products. The particle size of the nano-emulsion was increased as increasing the concentration of fatty alcohol in oil phase. Adjusting the HLB of mixed surfactants, a stable nano-emulsion with a narrow size distribution was produced. Similar change in viscosity and electrical conductivity in both systems containing fatty acid and fatty alcohol was shown in the vicinity of the phase inversion point. However, high viscosity was shown in a wide range of different aqueous fraction unlike the system consisting only oils and surfactants. The low viscous nano-emulsion with less than 100 nm droplet size was stable for one month or more at room temperature. O/W nano-emulsions with low viscosity containing fatty acid or fatty alcohol produced by low-energy emulsification method can be widely used as formulations of cosmetics.
