Chemical and Functional Characteristics of Mechanically Deboned Chicken meat and its Utilization in Processed Meat (기계발골가금육의 특성 및 이용에 관한 연구)

  • Hand deboned and mechanically deboned chicken meat were produced from domestic broilers and spent layers. Meat yield, chemical composition, functional characteristics, stability during storage, and microbiological properties were investigated Chicken patties and frankfurters were also manufactured by varying the relative proportion of MDCM to HDCM as raw materials, ana their palatability, shelf-life and textural properties were evaluated. The obtained results were as follows: 1) 35% of carcass wt was recovered as HDCM and 45% as MDCM, total meat yield reaching 80% of carcass wt. 2) Moisture, protein, fat, ash and Ca content of MDCM were 65, 12, 20, 1.7 and 0.2-0.4%,respectively. MDCM was higher in fat, ash and Ca, but significantly lower in moisture and protein. Total pigment content of MDCM was 2.5 times higher than that of HDCD such high content being attributed to the increased inclusion of hemoglobin. 3) The emulsifying capacity (ES) of MOCM per g meat was only 70% that of HDCM. but when ES was expressed on unit g of protein basis MDCM showed even higher ES than HDCM primarily due to tile higher proportion of salt soluble protein fraction. 4) Since the TBA values of MDCM increased rapidly after 4 weeks of frozen storage at -20$^{\circ}C$, the maximum possible storage period of MDCM is estimated to be about 4 weeks. 5) Total microbial counts of MDCM was approximately 1.8${\times}$10$\^$6/g/, showing no great difference from HDCM or red meat. 6) Chicken patty containing MDCM showed gradual increase in TBA value during frozen storage, but its storage up to 8 weeks presented no problems in flavor stability. 7) Color score an4 total palatability of chicken Patty were best for the product containing 30% MDCM. It was also concluded that MDCM can be included in the patties up to 50% of total meat with good results, but more than 70% was not recommended 8) The formulation of MDCM up to 50% in frankfurter gave quite satisfactory acceptability and textural properties comparable to frankfurter made of 100% MDCM, but the inclusion of more than 70% MDCM was not recommended 9) The TBA value of frankfurter containing MDCM did not increase to any great extent until 4 weeks of storage at 4$^{\circ}C$, indicating no unique problems in flavor instability compared to regular frankfurter. 10) It was concluded that processed meat products such as patties and frankfurters containing MDCM up to 30-50% of total meat ingredients gave satisfactory results in color, texture and palatability, comparable to regular products.

Effects of Lycopene on the Expression of Lipid Metabolism, Glucose Transport and Pro-Inflammatory Related Genes in Chickens (라이코펜 첨가 급여가 닭의 지방대사, 포도당 수송 및 친염증 유전자 발현에 미치는 영향)

  • The present study aimed to investigate the effects of lycopene on hepatic metabolic- and immune-related gene expression in laying hens. A total of 48 25-week-old White Leghorn hens were randomly allocated into four groups consisting of four replicates of three birds: control (basal diet), T1 (basal diet + 10 mg/kg of tomato powder-containing lycopene), T2 (basal diet + 10 mg/kg of micelles of tomato powder-containing lycopene), and T3 (basal diet + 10 mg/kg of purified lycopene). Chickens were fed ad libitum for 5 weeks, and then total RNA was extracted from the livers for quantitative RT-PCR analysis. Peroxisome proliferator-activated receptor ${\gamma}$ (PPAR${\gamma}$) expression was decreased in the liver of chickens after lycopene supplementation (P<0.05). Micellar lycopene supplementation decreased the expression of PPAR${\gamma}$ target genes including fatty acid binding protein 4 (FABP4) and fatty acids synthase (FASN) in the T2 group (P<0.05). Sterol regulatory element-binding protein 2 (SREBP2) and C/EBP-${\alpha}$ were also downregulated in hens fed with micellar lycopene (P<0.05). Glucose transporter 8 (GLUT-8) was upregulated in the T2 and T3 groups (P<0.05). However, the expression of carnitine palmitoyltransferase 1 (CPT-1) was not changed by lycopene supplementation. Pro-inflammatory cytokines such as tumor necrosis factor ${\alpha}$ (TNF-${\alpha}$) and interleukin 6 (IL-6) were downregulated by lycopene supplementation (P<0.05). These data suggest that the type of lycopene supplementation is critical and that micelles of tomato powder-containing lycopene may play an important role in the modulation of lipid metabolism and immunity in chickens.

Assessment of Attenuation Correction Techniques with a $^{137}Cs$ Point Source ($^{137}Cs$ 점선원을 이용한 감쇠 보정기법들의 평가)

  • Purpose: The objective of this study was to assess attenuation correction algorithms with the $^{137}Cs$ point source for the brain positron omission tomography (PET) imaging process. Materials & Methods: Four different types of phantoms were used in this study for testing various types of the attenuation correction techniques. Transmission data of a $^{137}Cs$ point source were acquired after infusing the emission source into phantoms and then the emission data were subsequently acquired in 3D acquisition mode. Scatter corrections were performed with a background tail-fitting algorithm. Emission data were then reconstructed using iterative reconstruction method with a measured (MAC), elliptical (ELAC), segmented (SAC) and remapping (RAC) attenuation correction, respectively. Reconstructed images were then both qualitatively and quantitatively assessed. In addition, reconstructed images of a normal subject were assessed by nuclear medicine physicians. Subtracted images were also compared. Results: ELEC, SAC, and RAC provided a uniform phantom image with less noise for a cylindrical phantom. In contrast, a decrease in intensity at the central portion of the attenuation map was noticed at the result of the MAC. Reconstructed images of Jaszack and Hoffan phantoms presented better quality with RAC and SAC. The attenuation of a skull on images of the normal subject was clearly noticed and the attenuation correction without considering the attenuation of the skull resulted in artificial defects on images of the brain. Conclusion: the complicated and improved attenuation correction methods were needed to obtain the better accuracy of the quantitative brain PET images.

  • The radiation observation data will be used importantly in research field such as climatology, weather, architecture, agro-livestock and marine science. The Ieodo Ocean Research Station (IORS) is regarded as an ideal observatory because its location can minimize the solar radiation reflection from the surrounding background and also the data produced here can serve as a reference data for radiation observation. This station has the potential to emerge as a significant observatory and join a global radiation observation group such as the Baseline Surface Radiation Network (BSRN), if the surrounding of observatory is improved and be equipped with the essential radiation measuring instruments (pyaranometer and pyrheliometer). IORS has observed the solar radiation using a pyranometer since November 2004 and the data from January 1, 2005 to December 31, 2015 were analyzed in this study. During the period of this study, the daily mean solar radiation observed from IORS decreased to $-3.80W/m^2/year$ due to the variation of the sensor response in addition to the natural environment. Since the yellow sand and fine dust from China are of great interest to scientists around the world, it is necessary to establish a basis of global joint response through the radiation data obtained at the Ieodo as well as at Sinan Gageocho and Ongjin Socheongcho Ocean Research Station. So it is an urgent need to improve the observatory surrounding and the accuracy of the observed data.

Manufacture of Activated Carbon Using Livestock Manure and it's Odor Absorptiveness (축분을 이용한 활성탄소 제조와 이의 악취 흡착성 분석)

  • This study was carried out to develop the technique for manufacturing activated carbon from livestock manure and to analyse it's odor absorptiveness. Each of layer manure(LM), litter from broiler house(BL) and litter from dairy barn(DL), compost from layer manure(LC) and pig manure(PC), and coconut shell(CS) was used as a raw material. Activated carbon by grinding the raw material, adding the coal tar as a binder, palletizing, drying, heating with $N_2$ gas at $400^{\circ}C$ for 1 hour, activating by reaction with steam at a temperature of $750^{\circ}C$ for 1 hour. Moisture contents of raw material was 44.9% in layer compost, 71.9% in layer manure, 24.4% in broiler litter, 47% in pig manure compost and 33.9% in dairy litter. Volatile matter in layer compost, layer manure, broiler litter, pig manure compost and dairy litter was 18.8%, 31.0%, 49.8%, 22.3% and 11.6%, respectively. Surface area(BET) of activated carbon from layer compost, layer manure, broiler litter, pig manure compost, dairy litter and coconut shell was 259.8, 209.8, 63.5, 442.3, 812.9 and $1,040\;m^2/g$, respectively. Activated carbon made by livestock manure or litter were examined with scanning electron microscope, and micropore was a type of sponge like particles honeycombed with chambers. Pore size of activated carbon was ranged from 0.39 to $5.02\;{\AA}$, but coconut shell was $0.30\;{\AA}$. Iodine absorptiveness of activated carbon from livestock manure was $530{\sim}580mg/g$. But activated carbon made by coconut shell was 1000 mg/g. Each activated carbon could absorb odor compound very well. Absorptiveness of activated carbon from layer manure for hydrogen sulfide and trimethyl amino was 74.5% and 73.9% at the accumulated flux of 60,000 ml, but, in the case of ammonia was only 15.2% at the accumulated flux of 10,000 ml

The Design of Broadband Ultrasonic Transducers for Fish Species Identification - Bandwidth Enhancement of a Ultrasonic Transducer Using Double Acoustic Matching Layers- (어종식별을 위한 광대역 초음파 변환기의 설계 ( III ) - 이중음향정합층을 이용한 초음파 변환기의 대역폭 확장 -)

  • The broadband ultrasonic transducers have been designed to use in obtaining the broadband echo signals from fish schools in relation to the identification of fish species. The broadening of bandwidth was achieved by attaching double acoustic matching layers on the front face of a Tonpilz transducer consisted of an aluminum head, a piezoelectric ring, a brass tail and to evaluate the performance characteristics, such as the transmitting voltage response(TVR) of transducers. The constructed transducers were tested experimentally and numerically by changing the parameters such as impedances and thicknesses of the head, tail and matching layers, in the water tank. Also, the developed transducer was excited by a chirp signal and the received chirp waveforms were analyzed. According to the measured TVR results, the available 3 dB bandwidth of the transducer with double matching layers of an $Al_O_3/epoxy$ composite of 7 mm thick and a polyurethane window of 18 mm thick was 7.3 kHz with a center frequency of 38.8 kHz, and the maximum and the minimum values of the TVR in this frequency region were 135.7 dB and 132.7 dB re $1\;{\mu}Pa/V$ at 1 m, respectively. Also, the available 3 dB bandwidth of the transducer with double matching layers of an $Al_O_3/epoxy$ composite of 11 mm thick and a polyurethane window of 15 mm thick was 6.2 kHz with a center frequency of 38.6 kHz, and the maximum TVR value in the frequency region was 136.3 dB re $1\;{\mu}Pa/V$ at 1 m. Reasonable agreement between the experimental results and the numerical results for the TVR of the developed transducers was achieved. The frequency dependant characteristics of experimentally observed chirp signals closely matched to the measured TVR results. These results suggest that there is potential for increasing the bandwidth by varying other parameters in the transducer design and the material of the acoustic matching layers.

Manufacture of Spent Layer Chicken Meat Products by Natural Freeze-Drying during Winter (겨울철 자연 동결 건조에 의한 노계 육제품의 제조)

  • The objective of this study was to manufacture spent layer chicken meat products by natural freeze-drying. The spent layers of chickens that were slaughtered at 80 wk were obtained from a local slaughter house and separated into two halves of carcasses. The samples were divided into the following groups: 1) control (non-curing), 2) curing, and 3) curing with 2% trehalose before drying. The cured meats were placed at $2^{\circ}C$ for 7 d and then transferred to a natural drying spot located in Injae City, Gangwondo, Korea. The experiment was conducted from January to March in 2008. The average temperature, RH, and wind speed were $-1.5^{\circ}C$, 63%, and 1.8 m/sec, respectively. The cured treatments showed higher pH, lower Aw and lower shear force value compared with the control. Based on the results of TBARS (2-thiobarbituric acid reactive substances) level and volatile basic nitrogen value, lipid oxidation and protein deterioration were inhibited in curing treatments during drying. Trehalose acted as a humectant because it maintained a lower water activity despite the relatively higher moisture content during drying. The polyunsaturated fatty acids content and sensory attributes were higher in cured treatments than in the control during drying. Most of the bacterial counts in the treated groups were lower by 2 Log CFU/g after 1 mon of drying, and Salmonella spp. and Listeria spp. were not found in any treatment. There was also no microbial safety problem associated with dried meat products. Based on the results of this experiment, dried meat products could be manufactured from precured spent layer chickens by natural freeze-drying during winter.

Polarization-sensitive Optical Coherence Tomography Imaging of Pleural Reaction Caused by Talc in an ex vivo Rabbit Model (생체 외 토끼 모델에서의 탈크에 의해 유발되는 흉막 반응의 편광 민감 광 결맞음 단층촬영 이미징)

  • The chest wall, an organ directly affected by environmental particles through respiration, consists of ribs, a pleural layer and intercostal muscles. To diagnose early and treat disease in this body part, it is important to visualize the details of the chest wall, but the structure of the pleural layer cannot be seen by chest computed tomography or ultrasound. On the other hand, optical coherence tomography (OCT), with a high spatial resolution, is suited to observe pleural-layer response to talc, one of the fine materials. However, intensity-based OCT is weak in providing information to distinguish the detailed structure of the chest wall, and cannot distinguish the reaction of the pleural layer from the change in the muscle by the talc. Polarization-sensitive OCT (PS-OCT) takes advantage of the fact that specific tissues like muscle, which have optical birefringence, change the backscattered light's polarization state. Moreover, the birefringence of muscle associated with the arrangement of myofilaments indicates the muscle's condition, by measuring retardation change. The PS-OCT image is interpreted from three major perspectives for talc-exposure chest-wall imaging: a thickened pleural layer, a separation between pleural layer and muscle, and a phase-retardation measurement around lesions. In this paper, a rabbit chest wall after talc pleurodesis is investigated by PS-OCT. The PS-OCT images visualize the pleural layer and muscle, respectively, and this system shows different birefringence of normal and damaged lesions. Also, an analyisis based on phase-retardation slope supports results from the PS-OCT image and histology.

A Study for Analysis of Image Quality Based on the CZT and NaI Detector according to Physical Change in Monte Carlo Simulation (CZT와 NaI 검출기 물질 기반 물리적 변화에 따른 영상의 질 분석에 관한 연구: 몬테카를로 시뮬레이션)

  • In this study, we evaluated image quality by changing collimator length and detector thickness using the Geant4 Application for Tomographic Emission (GATE) simulation tool. The gamma camera based on the Cadimium Zinc Telluride (CZT) and NaI detectors is modeled. In addition the images were acquired by setting 1, 2, 3, 4, 5, and 6 cm collimator length and 1, 3, 5, and 7 mm detector thickness using point source and phantom, which is designed by each diameter (4.45, 3.80, 3.15, 2.55 mm) with 447, 382, 317, and 256 Bq. The sensitivity (cps/MBq) for point source, and signal to noise ratio (SNR) and profile for phantom at the 4.45 mm by drwan the region of interests were used for quantitative analysis. Based on the results, the sensitivity according to collimator length is 2.3 ~ 48.6 cps/MBq for CZT detector, and 1.8 ~ 43.9 cps/MBq for NaI detector. The SNR using phantom is 3.6~9.8 for CZT detector, and 2.9~9.5 for NaI detector. As the collimator length is increased, the image resolution is also improved according to profile results based on the CZT and NaI detector. In addition, the senistivity for detector thickness is 0.04 ~ 0.12 cps/MBq for CZT detector, and 0.03 ~ 0.11 cps/MBq. The SNR using phnatom is 7.3~9.8 count for CZT detector, and 5.9~9.5 for NaI detector. As the detector thickness is increased, the image resolution is decreased according to profile results based on the CZT and NaI detector due to scatter ray. In conclusion, we need to set the geometric material such as detector and collimator to acuquire suitable image quality in nuclear medicine.

Sensitivity Analysis for CAS500-4 Atmospheric Correction Using Simulated Images and Suggestion of the Use of Geostationary Satellite-based Atmospheric Parameters (모의영상을 이용한 농림위성 대기보정의 주요 파라미터 민감도 분석 및 타위성 산출물 활용 가능성 제시)

  • As part of the next-generation Compact Advanced Satellite 500 (CAS500) project, CAS500-4 is scheduled to be launched in 2025 focusing on the remote sensing of agriculture and forestry. To obtain quantitative information on vegetation from satellite images, it is necessary to acquire surface reflectance through atmospheric correction. Thus, it is essential to develop an atmospheric correction method suitable for CAS500-4. Since the absorption and scattering characteristics in the atmosphere vary depending on the wavelength, it is needed to analyze the sensitivity of atmospheric correction parameters such as aerosol optical depth (AOD) and water vapor (WV) considering the wavelengths of CAS500-4. In addition, as CAS500-4 has only five channels (blue, green, red, red edge, and near-infrared), making it difficult to directly calculate key parameters for atmospheric correction, external parameter data should be used. Therefore, thisstudy performed a sensitivity analysis of the key parameters (AOD, WV, and O3) using the simulated images based on Sentinel-2 satellite data, which has similar wavelength specifications to CAS500-4, and examined the possibility of using the products of GEO-KOMPSAT-2A (GK2A) as atmospheric parameters. The sensitivity analysisshowed that AOD wasthe most important parameter with greater sensitivity in visible channels than in the near-infrared region. In particular, since AOD change of 20% causes about a 100% error rate in the blue channel surface reflectance in forests, a highly reliable AOD is needed to obtain accurate surface reflectance. The atmospherically corrected surface reflectance based on the GK2A AOD and WV was compared with the Sentinel-2 L2A reflectance data through the separability index of the known land cover pixels. The result showed that two corrected surface reflectance had similar Seperability index (SI) values, the atmospheric corrected surface reflectance based on the GK2A AOD showed higher SI than the Sentinel-2 L2A reflectance data in short-wavelength channels. Thus, it is judged that the parameters provided by GK2A can be fully utilized for atmospheric correction of the CAS500-4. The research findings will provide a basis for atmospheric correction of the CAS500-4 in the future.
