  • This study was carried out to evaluate the quality characteristics of the vacuum packed pre-aged venison with seasoning during chilled storage. The ham of deer were cut to cube and two seasonings such as red pepper sauce (T1) or soy sauce (T2) were seasoned by the proportions or meat to seasonings (1:1), respectively. The seasoned venison was aging by fill into plastic box at $0\pm1^{\circ}C$ for 10 days. And then, the aged meat from each pack was vacuum-packaged and stored at $0\pm1^{\circ}C$ for up to 28 days. pH were significantly decreased with storage periods in all treatments (p<0.05). Salinity $(\%)$ were no significant differences in T1 during the whole storage, but T2 had significantly high content $(1.33\%)$ at the storage days of 28 (p<0.05). Saccarinity $(\%)$ of T1 were significantly higher than that of T2 during the whole storage periods (p<0.05). As storage time extended the value of $L^*$ and $b^*$ in T1 were increased and those values decreased in T2. $a^*$ and shear force $(g/cm^2)$ or T1 and T2 were increased as the storage period passed In the result of sensory evaluation. all treatment had relatively high score $(T1\;6.75\~T2\;7.00)$ in overall acceptability during the storage period of 28 days. In conclusion, this study suggest that vacuum packed pre-aged venison with seasoning may be useful for new deer meat menu.

  • A total of 5 female elk dEER $(220kg\pm10kg)$ were included in a study on the changes in physicochemical properties of deer meat during storage at $4^{\circ}C\;and\;-2^{\circ}C$. The deer was exposed to normal pre-slaughter handling and put under anesthesia before slaughtered. The loin and leg cuts were deboned from the carcass after 24hrs slaughter. The samples weighing approximately 300g were packaged using wrap packaging and stored for 3, 7, 11 and 15 days at $4^{\circ}C\;and\;-2^{\circ}C$. Water-holding capacity was decreased with increasing storage days at $4^{\circ}C\;or\;-2^{\circ}C$, respectively The deer meats kept at $-2^{\circ}C$ showed lower TBARS value than the meats kept at $4^{\circ}C$, and it was possible to extend the storage period of the meats. VBN values of the meats kept at $4^{\circ}C\;and\;-2^{\circ}C$ showed as edible values after storage for 15 days, although there were no significant differences among the storage temperature. pH values of loin and leg tended to be increased with the passage of storage time, and the values of the meats kept at $-2^{\circ}C$ was lower than that at $4^{\circ}C$. The change of meat softness was remarkable at $4^{\circ}C$, and the change at $-2^{\circ}C$ was slow. Therefore, it was effective to extend the storage period when the meats were kept at $-2^{\circ}C$. Color of the meats kept at $-2^{\circ}C$ was darker than that at $4^{\circ}C$, the index of red color was higher for the meats kept at $-2^{\circ}C$, and yellow color of meats kept at $-2^{\circ}C$ was more rapidly changed with the passage of storage time.

  • This study carried out to investigate the effect of cutting stimulation on time of cutting, yield and length of antler in Sika deer. There was no significance between surgical stimulation and length of antler, but length was the longest in one side cutting group and the shortest in both side cutting group. Development of point was increased as the number of wounds in the second year (P<0.05). Time of casting was 2 weeks earlier in one side cutting group (P<0.05) than in both sides cutting group. Yields of velvet antler were 148±23g when pedicle was not cut, and 126±61g, 179±63g, 170g, and 48±25g when pedicle was cut by 0.3cm, 0.4cm, 0.5cm and 0.6cm thickness, respectively. In case of 0.6cm, yield was significantly smaller than others (P<0.05). The most desirable thickness of pedicle cut was 0.4~0.5mm. Yield of antler was increased as the size of wound in the first year, and 588, 790 and 657g in control, one-cut and both-cut, respectively. Yields of antler in one-cut is significantly high (P<0.05).

  • This study was carried out to evaluate the quality characteristics on the two different muscles (Loin; T1, Ham; T2) from the Cervus elaphus andadensis (Elk deer). The water content and shear force of T1 were lower than that of T2. The protein content and water holding capacity were lower in T2 compared to the T1. In meat color, $L^*,\;a^*\;and\;b^*$ values were not different between T1 and T2. In the texture properties, there were significantly (p<0.05) differences in hardness, adhesiveness, gumminess and brittleness, but cohesiveness and springiness were not different significantly (p<0.05). In fatty acid analysis, myristic acid and linoleic acid of T2 were high (p<0.05) as 5.06 and 10.37% respectively, while palmitoleic acid of T1 were significantly (p<0.05) higher than that of T2. SFA and UFA were not different between the T1 and T2, although EFA of T1 was significantly (p<0.05) higher than that of T2. In sensory evaluation, acceptability of T2 in fresh meat showed the slightly high, but that of T2 in cooked meat was slightly low score. All samples were not significantly different in overall acceptability.

  • The generation amounts of manure and urine were total 4.57kg/head/d of 1.49kg manure/head/d and 3.08kg urine/head/d with consideration of 3 seasons and live weight. The finalized mean unit load generation of filth were estimated at BOD 199.5g/head/d, CODCr 413.5g/head/d, T-N 27.8g/head/d, T-P 5.3g/head/d with consideration of seasons and the type of stalls. The unit load generation of manure and urine from korean cow were analyzed as 10.9kg/head/day and 3.3kg/head/day, respectively. The unit load generation of manure from milch cow was analyzed to be 24.6L/head/day which was similar to the report of MOE(2006). The urine generation, 10.5L/head/day, was higher than the results from MOA(2000) and NIAR(2000), but was lower than the results from MOE(2006), NIER(1986) and KIST(1990). The unit load generation from egg layers estimated by discharged amount and concentration analysis increases in due to the difference of planting head numbers, feed stuffs and manure disposal. In case of deer unit load generation by herbivora were calculated to be higher than data from existing references because of the gap between weight per livestock and the generation amounts of manure and urine.

  • One interesting parasitic forming fungus, being grown on the eggs of Phallus impudicus was collected from Mulchajoreum and on woods of Saryeoni in Jeju island. This taxon identified as a Podostroma solmsii (E. Fisch.) S. Imai f. octospora Yoshim. Doi (Hyporeaceae) based on morphological characteristics. According to the interpretation of Doi(1978), this taxon hsving the stipitate, genus Podostroma, family Hypocreaceae, Hypocreales, Ascomycota was identified as Podostroma solmsi f. octospora and its korean common name designated by authors. This species is characterized in having the fusiforme to ellipsoidal, unicellular and warted ascospores without septate and with blunt apiculus at each end and mycoparasitic habitat. Although there is some mycologists suggest that this taxon having above characters needs to be derived from Hypomyces. But authors are primarily going to record this species as a named "Podostroma solmsii (E. Fisch.) S. Imai f. octospora Yoshim. Doi" for the fungus flora of Korea. In a future, it is need in detail to compare their DNA sequencing data on the type species and some related species.
