Studies in the Consumption and Preference for Sprout Vegetables (새싹채소의 기호도 및 이용 실태)

  • The purpose of this study was to investigate the use and perception of adults concerning sprout vegetables. Self-administered questionnaires were collected from 516 residents in the Daegu and Gyeonbuk areas. When purchasing sprout vegetables, respondents answered that they considered freshness, eco green, and price. Consumers purchased sprout vegetables to make bibimbap (58.9%) and salad (29.3%). Approximately 81.4% of respondents answered that they purchased sprout vegetables in grocery and department stores. Once or twice per month was the highest purchase frequency for sprout vegetables. Regarding knowledge of sprout vegetables, radish sprout score was the highest (3.14), whereas preference was highest for barley grass (3.00). When asked how much they like sprout vegetable menus, subjects responded that they liked bibimbap (3.79), salad (3.73) and bibim noodles (3.58). As a result, popularization of sprout vegetables was based on product quality factor and sales promotion factor significantly influenced preference for sprout vegetable menus. To increase consumption of sprout vegetables, there is a need for hygiene and safety of sprout products and variations and improvement of quality.

The Relationship among Service Quality, Customer Satisfaction and Revisit Intention in Food Court - Focusing a Large Discount Store - (푸드코트의 서비스 품질과 고객만족, 재방문의도의 관계분석 연구 - 대형할인점을 중심으로 -)

  • This study was conducted to analyze the influence of the service quality of the food court on customer satisfaction, revisit intention in a discount store. Among the 400 surveys, 371 participants were collected and 350 respondents were analyzed for the statistical analysis to verify research purposes. SPSS 21.0 program was used to derive the following: factor analysis, reliability analysis, simple regression, and multiple regression analysis. Results shown that, first, service quality at the discount store can affect the customer's satisfaction. The factors which can affect the customer's satisfaction are type, empathy and credibility but guarantee and reactivity don't affect it. Second, service quality at the discount store can affect a customer's revisiting. The factors which can affect the customer's revisiting are type, guarantee, empathy and credibility but reactivity doesn't affect it. Third, the customer's satisfaction at the discount store can affect the customer's revisit intention. Through this study, food court service quality can affect not only the customers' satisfaction but also consumers' revisit intention. Therefore, the company and the management need to keep researching and developing various menus, customer service training, and hygiene training in order to set the customer at ease along with making a comfortable mood and set up a dine out & meeting system.

A Study on the Effect of Coffee Shop Service Quality on Perceived Value and Behavioral Intention - Focusing on Busan-Area College Students - (커피전문점 서비스품질이 지각된 가치와 행동의도에 미치는 영향에 관한 연구 - 부산지역 대학생을 중심으로 -)

  • This study used SPSSS 18.0 on 237 university students in Busan for frequency, factorial and reliability, correlation, and regression analyses to determine the effect relationship of coffee shop service quality on perceived value and behavioral intention. Multiple regression analysis for hypothesis testing showed that among the four service quality factors, confidence in employees and primary coffee quality had a non-significant effect on esthetic value, while menu characteristics besides coffee (${\beta}$=.293, p<.001) and physical environment (${\beta}$=.293, p<.001) were analyzed to be significant, partially supporting the study hypothesis. Regarding the effect of service quality on practical value, confidence in employees (${\beta}$=.264 p<.001), primary coffee quality (${\beta}$=.463, p<.001), menu characteristics besides coffee (${\beta}$=.139, p<.05) and physical environment (${\beta}$=.110, p<.05) were all significantly analyzed, supporting the study hypothesis. Regarding the effect of service quality on behavioral intention, confidence in employees (${\beta}$=.262 p<.001), primary coffee quality (${\beta}$=.411, p<.001), menu characteristics besides coffee (${\beta}$=.157, p<.01) and physical environment (${\beta}$=.137, p<.05) were all significantly analyzed, supporting the study hypothesis. In addition, regarding the effect of perceived value on behavioral intention, esthetic value (${\beta}$=.265, p<.001) and practical value (${\beta}$=.536, p<.001) were both significantly analyzed, showing a causal relationship with behavioral intention.

Quality Characteristics of Pork-rib Sauce in Family Restaurants (패밀리 레스토랑에서 판매되는 폭립 소스의 품질 특성)

  • This study investigates quality improvement of pork-rib that is sold as a popular menu item in a family restaurant. It attempts to search the relation between pork-rib sauce and pork-rib through the sensory evaluation, physicochemistry properties and physical properties of pork-rib sauce. As a result, sensory preference of pork-rib and its sauce in TGIF restaurants was highest. The color of the pork-rib sauce was darker, and high salinity and low sweetness were preferred. As for viscosity, concentrations which are not thick were preferred. Also, sauce offered with pork-rib was closely related to pork-rib, so pork-rib menu in a family restaurant would be much preferred if the kinds of sauce become diversified.

  • The cafeteria of university is one of the largest consumption point for the chicken meat of university students. However, few papers conducted research to analyze the consumption behavior of university students. The object of this paper is to conduct survey analysis about the students' behavior for consumption of chicken meat at the cafeterias of university and to measure WTP (Willingness-to-pay) for food cooked with domestic chicken meat. The results present that most of students show higher preference of domestic chicken meat and that they can pay 4,426 Korean won for food cooked with domestic chicken meat.

The Effects of Menu Price, Human Service, Amenity, Menu Quality on Menu Value and Revisit Intention (가격, 인적서비스, 분위기, 메뉴품질이 고객의 재방문의도에 미치는 메뉴가치연구)

  • The purpose of this study was to investigate how comparative menu price, human service, amenity, and menu quality affected menu value, and how menu value influenced revisit intention. The model was tested in a family restaurant setting using a sample of customers visiting and enjoying menu in Daegu metropolitan city. Empirical results confirmed that not only do human service, amenity and menu quality increase menu value but that comparative menu price reduces menu value. Menu value was also found to be a significant antecedent of revisit intention. The results obtained have major implications for family restaurant marketers as well as for future research. First, family restaurant marketers should pay attention to menu pricing, as menu price decreased menu value. Second, family restaurant marketers should try to increase menu value through training of human service. Third, family restaurant marketers should try to add menu value by way of recruiting high-skilled cook. Fourth, family restaurant marketers should make efforts to attract customers through interior design.

Evaluation of Perception and Foodservice Satisfaction of Free School Meals by Elementary School Students in Busan (부산지역 일부 초등학생의 무상급식에 대한 인식 및 급식품질 만족도)

  • In this research, the perception and foodservice quality satisfaction of free school meals were surveyed by elementary school students in Busan. The survey was conducted on 600 elementary students of 4~6th graders. The total score for perception of free school meals was 4.47/5.00 points. Sixth graders showed a statistically significant higher score than fourth graders (P<0.01). The overall score for satisfaction of free school meals was 4.55 points. In terms of grade, sixth graders showed a statistically significant higher score than fifth graders (P<0.05). For satisfaction of foodservice quality, average score was 4.55 points. In terms of lower-level categories, areas of food, menu, sanitation, service, and environment yielded 4.47, 4.62, 4.62, 4.53, and 4.48 points, respectively. In terms of differences by grade, sixth graders showed a statistically significant higher average score for satisfaction of foodservice quality than fourth and fifth graders (P<0.01). The overall score for perception of free school meals and overall satisfaction of foodservice quality showed a statistically significant positive correlation (P<0.01, r=0.781). In each category of foodservice quality, areas of food (r=0.733), menu (r=0.677), sanitation (r=0.636), service (r=0.673), and environment (r=0.588) showed statistically significant positive correlations (P<0.01).

  • This study is on the effect of Korea on the Korean brand image of Korean satisfaction from the perspective of foreign visitors. Korea representative food was designated as a potential mediator to this relationship. Survey wes conducted from 277 foreign people by using English survey and analyses results of Korean brand image reveal that quality reliability, attractiveness, and health promotion appeared to have a positive impact, while family orientation was found to have a negative effect. Results identified the positive mediating effect between formulated relationship.

  • This study aimed to investigate the influence of physical environments on menu quality and service delivery in the coffee shop settings and to explore the impact of physical environments on overall customer satisfaction. Using a self-administered questionnaire survey, 376 respondents who have ever visited a coffee shop in Seoul and Kyunggido were used for this study. The results showed that physical environments had a positive influence on other service environments. In addition, physical environments enhanced the customer satisfaction with the coffee shop. The findings suggest that every physical environmental element at the coffee shop environments should be managed appropriately so that coffee shop customers have satisfactory experiences.

  • 저품질의 정보가 기업 활동에 치명적인 영향을 미친다는 인식은 날로 높아가고 있다. 그러나 정보 품질에 대한 정확한 이해가 없이는 기업은 저품질 정보가 미치는 영향에서 벗어 나기 어렵다. 특별히 자재 관리 시스템의 경우 실시간으로 정보를 처리해야 하는 특성으로 정보 품질 차원을 고려한 설계와 실시간으로 정보 처리가 가능한 모바일 시스템의 사용이 필수 불가결하게 되었다. 본 연구는 정보 품질의 차원을 정보 제품 관점과 정보 서비스 관점으로 나누어 모바일 자재 관리 시스템에 필요한 차원을 추출하여 시스템 메뉴를 구성한 뒤 그 시스템을 자재 관리 업무에 활용할 수 있도록 하는 목적에 기초를 두고 있다.
