This study was conducted for a period for 5 weeks in order to evaluate effects of brewer's yeast slurry(BYS) on the growth performance, organ development and blood composition of broiler chicks. A total number of 84 one day old broiler chicks were allocated to one of three supplemented diets: 0%(control), 2% and 4% BYS. Body weight gain and feed efficiency of chicks fed the diet supplemented with 4% BYS significantly was increased by 9% and 8%, respectively, compared to the control diet(P<0.05). The BYS supplements did not affect weights of liver, heart and abdominal fat, and their ratios per body weight. However, in 4% BYS supplement group, ratio of liver to body weight significantly decreased(P<0.05) by 12%, compared to the control. The supplement of 4% BYS decreased the concentration of triglyceride by 31%, and increased the concentration of high density lipoprotein(HDL) by 26%, compared to the control(P<0.05). These results indicated that the supplementation of 4% BYS in diet can improve body weight gain as well as feed efficiency, and increased the concentration of blood HDL, and ratio of HDL to total-cholesterol of broiler chicks.
Sweet potato-malt worts were prepared by using sweet potato paste of Shinyulmi and Shinjami as the main adjunct, enzymes, malt, hop, and water. We brewed low-malt beers of the lager- or ale-type by using these worts and inoculating bottom and top fermenting yeast, respectively. Moreover, the componential and functional characteristics of the resulting beers were evaluated. During saccharification of sweet potato, the addition of an enzyme agent containing ${\alpha}-amylase$ caused an improvement in filterability and an increase of total sugar. The sugar content of sweet potato-malt wort which was prepared by the addition of 0.1% enzyme agent containing ${\alpha}-amylase$ and a three-step infusion procedure was $13.5^{\circ}Brix$ adequate for beer brewing. The polyphenol and anthocyanin contents of Shinjami beer were increased with increasing content of the paste, and also increased DPPH and ABTS radical scavenging activities. But in Shinyulmi beer it were decreased. A strong correlation was obserbed between antioxidave activities and polyphenol and anthocyanin contents of sweet potato beers. In all lager- and ale-type low-malt beers using 41.6% of Shinjami pastes, sensory attributes very similar to those of 100% malt beer were obtained and they were very good as they had unique red color.
In this study the effect of rice addition on the quality of beer was investigated. Pilot-scale brews were performed with addition ratios of 10, 20, 30, and 40% of brown rice (Oryza sativa L. cv. Hangaru) which were compared with 100% malt beer and commercial beers in terms of quality. Alcohol content of beer was between 3.93 to 4.40%. The total sugar content increased when the rice percent was increased. The pH range of beer were 4.32 and 4.60, which were no significant differences found among by the rate of rice added. Total acidity and amino-acidity decreased corresponding to increasing percent of rice, on the other hand, lightness of beer was increased the increase in percent of rice, while redness and yellowness of beer were decreased. The study demonstrated that the increases of rice addition in beer provided some positive effects on beer quality by decreasing bitterness where as improving beer color.
Continuous processes using immobilized yeast were investigated in order to shorten beer maturation time. Three silica-based ceramic media and one cellulose-based medium were used. Diacetyl (DA) was one of the most distinctive compounds causing immature flavors. Heat treatment of green beer (GB) to convert a-acetolactate to DA was essential to shorten the time for beer maturation. The longer heat treatment time was needed at the lower temperature. Oxygen concentration in GB had a large influence on the conversion of a-acetolactate to DA. The lower the oxygen concentration in GB, the lower conversion ratio to DA. Heat treated GB was fed continuously to four kinds of immobilized yeast columns. DA concentration after immobilization columns was reduced to less than 0.1ppm at $3∼5^{\circ}C$ 180∼150 minutes retention time in all columns tested. This concentration is enough to fit the quality speification of commercialized product. Formation of a-acetolactate from residual sugars was higher in ceramic media column than cellulose media cloumn. The taste of beers from test processes were not the same as that of traditionally produced beer, but no off-flavors were detected in test samples, which shows that immobilized yeast columns have potentials as rapid processes for beer maturation.
Edible insects have recently been increasingly promoted as a source of protein. As the number of farms rearing these insect increases, it is important to develop safe and nutritious feed sources to improve their commercial quality. The aim of the current study was to determine the effect of food by-products as feed supplements for the Korean rhinoceros beetle, Allomyrina dichotoma, which has been registered as a general food ingredient in Korea. We compared the effects of waste citrus peel, soybean curd cake, soybean oil meal, and brewers' dried grain on the growth of third instar larvae of A. dichotoma. Groups of larvae were fed with fermented sawdust and nine different combinations of the above by-products and the effects on their growth were measured until pupation. The highest survival rate was with feed supplemented with 10% brewers' dried grain (66.7%, p<0.05), and these larvae were also 26% heavier (p<0.05) than the control group that received no supplementation. In the 10% brewers' dried grain group, the larval period of third instar was shortened by almost 28 days (p<0.01) compared to the control group. Of all the groups, only that which was fed the brewers' dried grain supplement showed more than a 90% pupation rate (p<0.05). Therefore, brewers' dried grain may be useful as a source of feed for A. dichotoma.
Rice in Korea is a highly valuable food resource that serves both as staple food and ingredient in various processed edibles. This study was conducted to explore pre-treatment methods for rice that result in good saccharification upon production of rice beer. When rice was subjected to fine grinding, steeping, roasting, gelatinizing, or puffing prior to saccharification with malt, wort containing puffed rice had the highest soluble solid content (°Bx). Upon production of wort without the addition of any enzymes for liquefaction or saccharification, the addition of 30% rice resulted in the highest soluble solid content (°Bx). Production of beer containing 10, 20, or 30% of either roasted or puffed rice showed that wort containing 30% puffed rice had the highest soluble solid content (15.4 °Bx) with good saccharification. The resulting beer likewise exhibited higher alcohol content (5.0-5.4%) than the beer that had roasted rice added, without the turbidity and with less bitterness. Therefore, rice puffing was considered a beneficial processing method to enhance rice saccharification and to facilitate both the production of fine quality beers and rice beer containing puffed rice.
Bacterial cellulose (BC) was produced by Gluconacetobacter hansenii PJK (KCTC 10505 BP) strains using the waste of beer fermentation broth. It contained more C and N than a basal medium with a small amount of S and more than 4% ethanol. The amount of BC produced in a shaking culture using the waste of beer fermentation broth was nearly the same as that of a basal medium. The production of BC decreased in a shear stress field in a jar fermenter although the conversion of cellulose producing ($Cel^+$) cells to non-cellulose producing ($Cel^-$) mutants was not severe. This study showed that the waste of beer fermentation broth is an inexpensive carbon, nitrogen source with ethanol and thus a worthy substitute for the conventional medium for BC production.
Nightsoil and brewery sludges usually contain a high concentration of organic matters. A composting study using reactors was carried out for the recycle of brewery wastewater sludge and nightsoil treatment sludge, which have been landfilled. A good composting process was obtained with a sludge mixing ratio of 1:1 and injual pH had no effect on temperature increase related to microbial activity. The injtial C/N ratio at approximarely 15 decreased to 13 without the increase in pH.. It was found that agitation of one time a week provided the most effective composting process.
Eight samples of Korean two-rowed barley, 9 samples of North American barley and 3 samples of Korean six-rowed barley were analysed for 1,000 kernel weight, steeping time, germinative capacity, and protein content. The barley samples were malted with the same malting schedule and analyzed for malting loss, protein content, soluble protein, percent extract, wort viscosity, and diastatic power. The American barleys were higher in germinative capacity, percent extract and diastatic power than the Korean two-rowed barleys. The protein content ranged from 11.8 to 14.2% for the North American barleys and 9.7 to 15.5% for Korean barleys. The three Korean six-rowed barleys were lower in germinative capacity, percent extract and diastatic power, but were higher in wort viscosity than the Korean two-rowed barleys.
This study was performed to determine most appropriate mixed ratio of brewers dried grain to wheat bran as a nutrient supplement in the plastic vinyl bag cultivation of Grifola frondosa. In the examination of an appropriate nutrient source, the IV substrate formulation (80 : 10 : 10, oak sawdust : wheat bran : brewers dried grain) resulted in 71.6 days to harvest and the highest yield of 142.6 g/bag. On the other hand, the investigation of the optimal mixing ratio of beer waste to wheat bran showed that the III substrate formulation (80 : 5 : 15, oak sawdust : wheat bran : brewers dried grain) resulted in the least days to harvest (61.8 days), with the highest yield of 140.8 g/bag.
