  • Effect of solid grain media on the mycelial growth of Pleurotus ostreatus and its biofunctional activities were investigated using seven kinds of grains. Foxtail millet and barley were good for growth of hypha of P. ostreatus. However, growth of the mycelium was very slow in the solid grain media containing wheat, corn and brown rice. Mycelial growth of P. ostreatus according to water content of solid grain media was good at 25% to 30%. Mycelial growth of P. ostreatus according to heating-time and temperature of solid grain media was good for 30 min at $121^{\circ}C$. Anticancer activities against lung cancer cell line of the myceial extracts from P. ostreatus grown on several grain media were strong in the corn, defatted soybean, brown rice, barly and black bean in order. Fibrinolytic activities of the myelial extracts were strong in order defatted soybean, wheat, foxtail millet, barley, brown rice and black bean. The mycelial extracts were showed good antibacterial activities against Pseudomonas aeroginosa and Staphylococcus aureus.

  • The king oyster mushroom (Pleurotus eryngii) is widely consumed because of its flavor, texture, and its functional properties such as antioxidant activity and prebiotic effects. However, long-term product storage and transportation (e.g., export) are difficult because of its limited durability. The shelf-life of king oyster mushroom is affected by environmental factors such as temperature, humidity, gas composition, and ventilation, which may affect sensory characteristics including respiration rate, texture, moisture, flavor, color, and pH. The major problems regarding storage of mushrooms are browning, flavor changes, and softening. To address these problems, novel preservation techniques were developed, and more durable variants were bred. Different drying methods, gamma irradiation, chitosan coating, modified atmosphere (MA) packaging, and controlled atmosphere (CA) storage were evaluated in order to extend the shelf-life of king oyster mushrooms. Freeze drying showed better results for the preservation of mushrooms than other drying methods. Irradiation with 1 kGy was more effective for extending mushroom shelf-life than higher doses. The preservative performance of chitosan-based films was improved by combining the compound with other hydrocolloids, such as oil, protocatechuic acid, and wax. The CA storage conditions recommended for king oyster mushrooms are 5kPa $O_2$ and 10 to 15kPa $CO_2$ at temperatures below $10^{\circ}C$. Active MA packaging with microperforated PP film was also effective for maintaining quality during storage.

  • This study was conducted to investigate the effect of post-harvest CO2 treatment on the quality of the 'Gonji-7ho' oyster mushroom. The harvested mushrooms were pre-cooled at 3℃ for 1 day and placed in a gas-tight chamber with 0%, 30%, or 50% of CO2 concentration for 3 hours at 3℃. Next, 400 g of the oyster mushroom sample was packaged into 20-㎛ thick oriented polypropylene (OPP) film bags and stored at 4℃ for 21 days. Treatment with 30% of CO2 treatment maintained the highest stipe firmness of the oyster mushrooms during storage. The stipe lightness (CIE L) was the highest at 14 and 21 days, while the stipe yellowness (CIE b) was the lowest at 2 and 7 days of storage. Therefore, we concluded that the 30% CO2 treatment maintained the overall visual quality of the 'Gonji-7ho' oyster mushroom until 17 days of storage at 3℃. Our results suggest that the shelf life of 'Gonji-7ho' oyster mushroom could be extended by the postharvest application of 30% CO2 for 3 hours during low temperature storage.

  • The traditional kochujang supplemented with mushrooms (Pleurotus ostreatus and Lentinus edodes) was prepared, and changes in quality characteristics during fermentation at ambient temperature were investigated. The moisture content of kochujang increased by addition of mushroom. The titratable acidity of mushroom-added kochujang was gradually increased during fermentation. Ethanol contents of mushroom-added kochujang decreased with the addition of oyster mushroom, but increased with the addition of oak mushroom. The amino-nitrogen contents increased gradually during fermentation, resulting in significantly higher contents of 9% mushroom-added kochujang than others. The a value of kochujang decreased greatly during fermentation, but L, a and b values showed significantly higher than the control. The growth of bacteria in kochujang was delayed by the addition of mushrooms. Bacterial and yeast counts at the end of fermentation were not influenced by the addition of mushrooms. Sensory evaluation test revealed that color and flavour of kochujang were improved by the addition of mushrooms, and higher score was obtained from the addition of oyster mushroom compared to oak mushroom.

  • The Waste Rice Straws (W.R.S.) after cultivation with the Pleurotas Ostreatus SACCARDO was substituted for wheat bran in the broiler ration. The results of the experiment 1 and 2 obtained were summerized as follows; 1. The content of C. protein in the W.R.S. showed 1.5% higher value than that in the rice straw. No change was detected in the content of C. fat. However the content of C. fiber and N.F.E in W.R.S. decreased in comparision with those of raw rice straw. 2. The treated groups were inclned to rapid gain of body weight, especially the 4% W.R.S. group had been showed significatly higher value of gain than the control and 6% treated groups (p<0.05 ). 3. No significant differences were observed in the amount of feet intake among experimental groups, even if the treated groups showed slightly higher intake than control group. 4. The treated groups in W.R.S. were inferior to the control group in feed intake but there were no significant differences. 5. The methionine in W.R.S. was the only amino acid which contained similar quantity of wheat brans. 6. To extend the amount of W.R.S. in broiler ration the 6% of W.R.S. was substituted for wheat bran and methionine mixture was added. No significance differences had been showed in weight gain, feed intake and feed efficiency between control and treated groups. Even though the treated groups showed more feed intake and lower weight gain in comparision with control group. 7. The methionine added group showed adverse effect in economics of production (p<0.01) because of high cost of the methionine mixture, Therefore less than. 6% of the WRS could be substituted for wheat bran. According to the results of the experiment 1 and 2 it could be concluded that maximum use of the W.R.R. as substitute for wheat bran was less than 4% of the ration.

  • Some of thermophilic fungi which has growth-promoting effect on Pleurotus ostreatus were isolated from compost during high temperature fermentation process. The temperature optima of 7 isolated thermophilic fungi were $50^{\circ}C$ on PDA media. Isolated strains S-1 and S-2 have the best mycelial growing rate, so these isolates were expected as excellent thermophilic fungi for high temperature composting and mycelial growing of oyster mushroom. In liquid culture, the optimal pH of thermophilic fungi observed variously, pH 7.0-10.0 but most of thermophilic fungi grow well in pH 8.0-pH 9.0 and the final pH of media after cultured was done pH 5.5-6.0. In liquid culture of thermophilic fungi on the optimal condition, S-2 have the best mycelial growing rate. The growing rate of thermophilic fungi S-1, S-2, S-5, and S-10 on lignocellulosic substrates was good but Humicola grisea var. thermoidea, well know thermophilic fungi which has growth-promoting effect on Agaricus bisporus, was poor and which was well grown on PDA at $50^{\circ}C$, pH 7.0. Isolated strain S-1 was identified as Trichophyton sp. and other 6 strains were identified as Sepedonium sp. by morphological characteristics.

  • The study was carried out on the artificial cultivation of the abalone mushroom, Pleurotus cystidiosus O.K.Miller. The pine sawdust substrates with 20% rise bran were good for mycelial growth and high quantity of P. cystidiosus in the bottle cultivation. Moreover, the proper volume for bottle cultivation was 850 ml and the removal of spawn and surface layer of the medium before pin-heading was more efficient. The yields of P. cystidiosus were higher in sawdust substrates added calcium carbonate than those not added calcium carbonate. The volume of 3 kg polypropylene bag is good for yield and biological efficiency in bag cultivation of P. cystidiosus. Cotton wastes were proper substrates for bag cultivation. In the effect of different cultivation temperature, $28{\pm}2^{\circ}C$ cultivation temperature was good for for primordial formation after inoculation.
