Phenolic Compounds Content and DPPH, ADH, ALDH Activities of Mungbean Sprout Based on Growth Temperature (녹두나물 재배온도에 따른 페놀화합물 함량과 DPPH, ADH 및 ALDH 활성)

  • This study is to analyze the effects of the growth temperature of mungbean sprouts ($15{\sim}30{\pm}1^{\circ}C$) on the yield ratio, content of phenolic compounds and DPPH (1,1-diphenyl-2-picrylhydrazyl), ADH (alcohol dehydrogenase), ALDH (aldehyde dehydrogenase) activities of the sprouts. When the growth temperature of mungbean sprouts was higher, the yield ratio of the sprouts was higher while the hard seed rate was lower, but $25{\pm}1^{\circ}C$ and $30{\pm}1^{\circ}C$ showed no regular tendency. The content of the total phenol from the ethanol extract of the sprouts was higher in the growth temperature of $15{\pm}1$, $20{\pm}1$, and $25{\pm}1^{\circ}C$, while the content of total flavonoid was higher in the growth temperature of $15{\pm}1$, and $20{\pm}1^{\circ}C$. The DPPH radical scavenging activity of the ethanol extract of the sprouts was higher when the growth temperature was lower, while the activity of ADH and ALDH showed no regular tendency according to the growth temperature. Considering the yield ratio, content of phenolic compounds, biological activities of mungbean sprouts, the optimum cultivation temperature of mungbean sprouts may be $20{\sim}25^{\circ}C$.

Comparison of Antioxidant activity and Amino Acid Components of Mungbean Cultivars Grown in Highland Area in Korea (고랭지 지역에서 재배한 녹두 품종들의 항산화 활성 및 아미노산 조성 비교)

  • This study was performed to investigate differences of antioxidant activity, the content of free amino acids including GABA(gama-amino butyric acid) among mungbean cultivars grown in Highland area (Jinbu) and to compare those between seeds and sprouts. In DPPH (diphenyl picrydrazyl) radical scavenging activity, 'Jangan' mungbean activity was more higher than that of other cultivars. The content of total phenolic compounds of mungbean ranged from 1,186 to $1,493\;{\mu}g/g$ in seed and 2,321 to $2,783\;{\mu}g/g$ in sprout. Among amino acids of seeds, the content of glutamic acid was highest in 'Soseon' mungbean, and contents of almost amino acids increased during sprouting of seeds. The content of GABA that are known as a material having high functional effects on human body was also analyzed. When the relatively high content of GABA was observed in seeds of almost mungbean grown in highland, and their contents rapidly increased after sprouting from seeds. As a result of this experiment, it is expected that mungbean will be developed to a good alternative crop having high value as functional food materials in highland area of Korea.

Water-Soluble Components of Small Red Bean and Mung Bean Exposed to Gamma Irradiation and Methyl Bromide Fumigation (감마선과 Methyl Bromide 처리된 팥과 녹두의 수침에 따른 용출 특성)

  • Comparative effects of gamma irradiation and methyl bromide (MeBr) fumigation on water-soluble components of small red bean and mung bean were investigated. The levels of soluble solid and reducing sugar of soaked water at $20^{\circ}C$ for 16 h definitely increased as irradiation dose increased, which was more apparent in small red bean than in mung bean. But, their levels of MeBr-fumigated sample showed a similar result to those of the control, except for soluble solid of small red bean. The pH of soaked water was insignificantly different among treatments. The decrease in lightness (L value) and the increases of redness (a value) and yellowness (b value) were remarkable as irradiation dose increased, which was more significant in fumigated samples. The ${\Delta}E$ values of fumigated sample showed almost equaled to those of 10 kGy in red bean and 30 kGy in mung bean, respectively. Gamma irradiation caused the increase in free amino acids of soaked water, that mainly consisted of asparagine, glutamic acid, and valine, while fumigation reduced their contents. The extractables in soaked water, such as soluble solid and reducing sugar, showed a highly positive correlation with irradiation dose applied.

  • Low-fat pork sausages (LFPS) were prepared with 1% transglutaminase (TG) and 0.5% sodium caseinate (SC), and with or without different type of hydrocolloids (0.3%; acorn, AC or mungbean, MB) to evaluate the effects of these ingredients on the physicochemical and textural properties of LFPS with reduced salt. pH, moisture content (%) and lightness of low-fat/salt pork sausages (LFSPS) were affected by the addition of TG combined with SC (TG-SC) and acorn or mungbean powders affected the lightness and yellowness of LFSPS. However, cooking yield of LFSPS decreased, while textural properties were increased with the addition of TG-SC combination, which did not affect expressible moisture contents (%) of LFSPS. Both AC and MB tended to improve the cooking yield and water holding capacity of LFSPS, especially, MB rather than AC. However, these had no effect on the textural properties of LFSPS, except for textural chewiness. These results indicated that AC and MB powders could be used as a water binding agent in TG-SC combination of LFSPS.

Effects of Germination on Antinutritional Oligosaccharides of Mung Beans (녹두발아시 항영양 과당류의 변화)

  • To examine changes of antinutritional oligosaccharides, particularly raffinose and stachyose, of mung beans during germination, mung beans (Phaseolus aureus) were germinated at $25^{\circ}C$ for 7 days after soaking for 15 hr. The 80% ethanol extracts of mung bean sprouts were analyzed by Kieselgel thin-layer chromatography using a solvent system, ethylacetate, acetic acid and water (3:1:1, v/v). The moisture level was increased greatly after soaking followed by stabilization along to the 3rd day of germination. The level was increased slightly on the 4th day and thereafter stabilized. Antinutritional oligosaccharides, raffinose and stachyose was diminished significantly on a thin-layer chromatogricadtly on the 1st and 2nd day of germination, and disappeared almost thereafter.

Effects of Row Spacing on Growth and Yield of Mungbean (휴간거리가 녹두의 생육 및 수량에 미치는 영향)

  • A Cheju-leading mungbean cultivar Seonhwanogdu was seeded at 20, 30, 40, 50 and 60cm row width with within-row plant spacing of 10cm in mid-June of 1988 to 1990 to determine effects of row width on growth and seed yield of mungbean in Cheju area. Initial flowering and maturing dates were not influenced by the row width. Stem length, pods per plant, seeds per pod, 1000-seed weight linearly decreased as row width decreased because planting density increased. The relationship between seed yield and row width was quadratic, and the optimum row width with within-row plant spacing of 10cm for higher yield of mungbean was 40cm in Cheju.

Studies on the characteristics of concentrated soy protein (농축 콩단백질 분리 및 추출에 관한 연구)

  • The purpose of this study was to investigate the nutritional characteristics of selected soybeans grown in Korea to isolate concentrated proteins. Examination of the general characteristics revealed that the pH and apparent density of Phaseolus radiatus L. protein and concentrated Vigna angularis protein were significantly higher than those of other concentrated soy proteins. The water absorption capacity was high for concentrated Pisum sativum L. protein, whereas the oil absorption capacity was high for concentrated Glycine max (L.) Merr. protein. The emulsifying activity and emulsifying stability were higher and significantly higher, respectively, for enriched P. radiatus protein. Considering the functional characteristics of concentrated soy protein, its application as a food material in the meat product industry in Korea may be of potential value.

Physicochemical Properties of the Hydroxypropylated Mung Bean, Sweet Potato and Water Chestnut Starches for Hard Capsules Formation (하이드록시프로필화 녹두, 고구마, 물밤 전분의 이화학적 특성과 하드캡슐 제조)

  • The physicochemical properties of the hydroxypropylated mung bean, sweet potato and water chestnut starches were studied. The blue value and amylose content of mung bean starch were higher than those of sweet potato and water chestnut. Pasting temperature of hydroxypropylated starches were lower than those of native starch and decreased with increasing contents of propylene oxide. Peak viscosity increased with the increase of degree of hydroxypropylation. With increasing contents of propylene oxide, the clarity and swelling power of all starches were increased and those of mung bean were higher. Mung bean starch produced better hard capsules than sweet potato and water chestnut starch. Hydroxypropylated (>6% propylene oxide) water chestnut starch-based capsules completely dissolved, but hydroxypropylated (>12% propylene oxide) mung bean and sweet potato starch-based capsules were dissolved within 10 min. These results showed that hydroxypropylated starch-based capsules have potentials for pharmaceutical applications as a substitute for gelatin hard capsules.

Sensory and Instrumental Characteristics of Defatted and Lipid-reintroduced Starch Gels (탈지 및 지질첨가 전분겔의 관능적 기계적 특성)

  • The sensory and instrumental characteristics of defatted and lipid-reintroduced kidney bean, mung bean and corn starch gels stored for 3 hrs and 24 hrs at room temperature were investigated. In sensory evaluation of starch gels, acceptability was highly correlated with hardness, bend property, cohesiveness and springiness. Mung bean starch gels showed sinigficantly highest value and followed by corn and kidney bean starch gels. Generally as for these factors, defatted starch gels were higher than untreated ones. The properties of defatted and lipid-reintroduced corn starch gels were similar to those of mung bean starch gels. In instrumental analysis, hardness was more important factor than any other ones. Hardness showed significantly higher value in the other of mung bean, corn and kidney bean starch gels, but it was highest in defatted starch gels among all treated gels. Hardness and springiness of defatted and lipid-reintroduced corn starch gels were similar to those of mung bean starch gels. Hardness of 24 hr stored starch gels increased more than that of 3 hr stored ones, but other textural factors did not change.

Comparison of Physicochemical Properties of Legume Starches (두류전분의 이화학적 특성 비교)

  • Physicochemical properties such as amylose content, swelling power, gelatinization and DSC of legume starches were investigated. The granule shape of legume starches was oval. The size of cowpea and mung bean were smaller than kidney bean and red bean. The amylose content of mung bean and kidney bean was larger and were $25{\sim}29%$. Swelling power of kidney bean starch was much lower than other starches in all temperature range. In gelatinization temperature by Brabender amylogram, red bean starch was low, but kidney bean starch was rather high. Amylographic hot-paste viscosity and set back of cow pea, mung bean and red bean starches were high. But those of kidney bean starch were very low. DSC results Indicated kidney bean starch gelatinized in higher temperature. From above results, row pea and mung bean starches were similar in granule size and shape, solubility and swelling power, amylogram, and DSC thermogram. But kidney bean starch was very different and red bean starch was slightly different with the physicochemical properties of cow pea and mung bean starches.
