The Eating Behaviors, Nutrient Intakes and Hematological Status of Primary School Children in Gwangju (광주지역 일부 초등학교 아동의 식습관과 영양소 섭취량 및 혈액성상에 관한 연구)

  • The purpose of this study was to examine height, weight, chest circumference, sitting height, hemato logical status, eating behaviors and nutrient intakes for primary school children in Gwangju. The subjects consisted of 101 boys and 109 girls aged $10{\sim}12$ years old. There were significant differences in the height, weight, chest circumference, sitting height between the boys and girls. Hct, WBC, RBC, Hb, serum GOT, GPT and cholesterol were measured. With regard to meal regularity, 47.4% of the subjects has been 'regular'. With regard to meal volume, 15.8% of the subjects has been 'heavy'. With regard to meal balance, 44.7% of the subjects has been 'no'. The study also found that 63.4% of the subjects skipped breakfast, liked western food. Their dietary intakes were assesed for 1 day by means of 24 hours dietary recall method. The mean energy intakes of the subjects were 1,663kcal for boys and 1,427kcal for girls. The subjects for boys(girls) consumed 58(52)g protein, 43(60)g lipid, 4.8(6.5)g fiber, 470(514)mg calcium, 896(824)mg phosphorous, 9.6(16.4)mg iron, 3,301(3,468)mg sodium, 2,169(2,192)mg potassium, 388(466)RE retinol, 1.1(0.9)mg thiamin, 1.1(2.2)mg riboflavin, 12.2(26.3)NE niacin, 146(99)mg ascorbic acid and 251(159)mg cholesterol respectively. Energy, protein, calcium, iron and retinol intakes were lower than the Korean RDA. The intakes of fat, fiber, calcium, iron, sodium, retinol, riboflavin and niacin of the boys were significantly lower than those of the girls. There were positive correlations between meal time and protein intake or fat intake of fiber intake or iron intake or retinol intake : negative correlations between meal time and sodium intake : negative correlations between saltiness and cholesterol intake : positive correlations between use of perilla seeds and riboflavin intake or niacin intake : negative correlations between energy intake or carbohydrate intake or phosphorous intake : negative correlations between frequency of eating-out and protein intake or fat intake or fiber intake or iron intake or retinol intake or thiamin intake or riboflavin intake or niacin intake.

A Study on the Contents of Inorganic Compounds in Soft Drinks (청량음료류 중 무기금속의 함량에 관한 연구)

  • This study was conducted to determine the content of inorganic metals in soft drinks distributed locally in markets.6 trace metals (Fe, Ca, Zn, Na, Mg, and K) were detected in 16 kinds of drinks,80 samples. The average concentration of inorganic metals in vegetable drinks was relatively higher than that of mixed drinks or carbonated drinks. The concentration of calcium, which is advisable inorganic metals for the growth of skeleton and the prevention of osteoporosis, hypertension, was very high and needed to be careful for the consumer who is suffer with lithiasis. Although carbonated drinks are very popular with the children and adolescence owing to the unbalance of the intake of Ca and P, habitual drinking could cause obstruction in skeletal growth and metabolism of Fe, Cu, and Zn. So, it is suggested that more practical study is needed fur the intake of inorganic metals.

Influence of Maternal Diet on Mineral and Trace Element Content of Human Milk and Relationships Between Level of These Milk Constituents (수유부의 식이섭취가 모유의 무기질 및 미량원소 함량에 미치는 영향과 모유의 각 무기질 농도 사이의 상관성 연구)

  • This study was conducted to assess the relationships between maternal dietary intakes and milk contents of minerals and trace elements, and the correlation among levels of these milk constituents. Maternal dietary intakes were measured and milk samples were collected at 2∼5 days, 2, 4, 6 and 12 weeks postpartum from 29 lactating women. The results obtained are sumarized as follows: 1) The overall mean nutrient intakes of lactating women in this study were below the recommended allowances and there were extensive individual variations between subjects. 2) Concentrations of minerals and trace elements in matured human milk showed the same range reported from different countries with the exception of calcium, magnesium, manganese and molybdenum which were relatively high. 3) There were no significant relationships between maternal dietary intakes of minerals and the corresponding mineral levels of human milk. In addition, no significant correlations were found between maternal vitamin C intake and the iron contents of milk. These were significant positive correlations between maternal calcium intake and the magnesium level of milk ; between maternal protein intake and the contents of zinc and copper in human milk. Maternal energy intake was negatively correlated with milk sodium level. 4) Pearson correlation coefficient showed positive significant relationships between levels of 17 pairs of various mineral and trace elements : sodium and potassium, iron ; potassium and calcium, phosphors, magnesium, iron, copper, manganese ; calcium and magnesium, iron manganese, molybdenm, nickel ; magnesium and iron, molybdenum ; iron and copper ; nickel and manganese.

The food and nutrient intakes from daily processed food in Korean adults: based on the 6th Korea National Health and Nutrition Examination Survey data (2013~2015) (한국 성인의 가공식품으로부터의 식품 및 영양소 섭취량 평가 : 제 6기 (2013~2015) 국민건강영양조사를 바탕으로)

  • Purpose: The consumption of processed foods has recently been increasing due to changes in the living environment. The purpose of this study was to identify the contribution of processed food to the nutrient intake of adult Koreans. Methods: A total of 15,760 adult people in the $6^{th}$ National Health and Nutrition Examination Survey (2013 ~ 2015) were included in this study. According to the Korea Food and Drug Administration's classification criteria for processed foods, the 24 hour dietary recall data of the subjects were classified as processed food or natural food. The processed food intake, nutrient intake and major processed food sources by food groups were analyzed. Results: Men consumed more processed foods than did the women. Consumption of processed foods decreased with age, but it increased with the education level and the income level. The total daily processed food intake accounted for 68.1% of the total food intake. The food groups with high processed food intake were beverage, vegetables, cereals and grain products, fruits, and milk and dairy products in this order. The top food source of each food groups were beer, kimchi, bread, processed apple products, and milk. After adjusting for age, gender, and energy intake, all the nutrient intakes and percentage of dietary reference intakes for Koreans, except carbohydrates, were significantly higher in processed foods than in natural foods. The sodium intake from the processed food was 96.3% of total daily sodium intake. The intakes of nutrients from processed foods, excluding vitamins C, dietary fiber, iron, and vitamin A, were higher in men than in women. The intake of sodium from processed foods was highest for people of 30 ~ 49 years of age, and the intake of sodium from processed foods decreased for people over 50. Conclusion: Korean adults consumed more processed food than the natural food, consuming more calories and most of the nutrients from the processed food overall total daily intakes. The intake of processed foods is expected to further increase in the future, and nutritional education and research on the ingestion and selection of healthy processed foods are necessary.

A Cohort Analysis on Sodium and Sodium-calorie Intake with the Korean National Health and Nutrition Examination Survey (국민건강영양조사를 활용한 나트륨 섭취량과 열량 대비 나트륨 섭취량에 대한 코호트 분석)

  • The purpose of this study was to analyze a cohort, age, and time effects on sodium and sodium-calorie intake using the 2007~2017 Korea National Health and Nutrition Examination Survey (KNHANES). For analysis, we have constructed cohort panel data that combine KNHANES data in a time series. The age effect gradually increased from age 45~49 and then decreased afterwards. The time effect showed an increase in average sodium intake until 2010 followed by a subsequent decrease. The cohort effect showed that the sodium intake was the highest for the War of Liberation 1946~1953, and that the younger the latter, the lower the sodium intake. According to a cohort analysis, the younger the generation, the lower the sodium intake compared to the calorie intake, according to the baby boomers. Based on the results of this study, efforts should be made to educate and promote the dieting and providing low-salt meals to reduce sodium intake by generation. An analysis of the health hazards including sodium by generation and age is thought to enable the establishment relevant policies.

Consumers Perceptions on Sodium Saccharin in Social Media (소셜미디어 분석을 통한 삭카린나트륨 소비자 인식 조사)

  • The purpose of this study was to investigate consumers' perceptions of sodium saccharin in social media. Data was collected from Naver blogs and Naver web communities (Korean representative portal web-site), and media reports including comment sections on a Yonhap news website (Korean largest news agency). The results from Naver blogs and Naver web communities showed that it was primarily mentioned 'sodium saccharin-no added' products, properties of sodium saccharin, and methods of reducing sodium saccharin in food. When media reported the expansion of food categories permitted to use sodium saccharin, search volume for sodium saccharin has increased in both PC and mobile search engines. Also, it was mainly commented about distrust of government, criticism of food product price, and distrust of food companies below the news on the news site. The label of sodium saccharin-no added products in market emphasized "no added-sodium saccharin". These results suggest that consumers are interested in sodium saccharin and especially when media reported the expansion of food categories permitted to use it. Consumers were able to search various information on sodium saccharin except safety or acceptable daily intake through social media. Therefore media or competent authority should report item on sodium saccharin with information including safety or acceptable daily intake based on scientific background and reference or experts' interview for consumers to get reliable information.

Comparison of quality characteristics of Doenjang reduced of sodium content (나트륨 저감화에 따른 된장의 품질 특성)

  • Although Doenjang is a representative traditional fermented food in Korea, made mainly from soybeans, it has been classified into a food group identified as having high sodium in the National Health and Nutrition Examination. It is necessary to develop a low sodium Doenjang to prevent the excessive sodium intake which may cause various diseases. However, the development of Doenjang with low sodium, without significant changes on quality, is an ongoing challenge. Therefore, the experiment was designed to reduce the salt content of the soaking water to 12.5-45%. The pH, saltiness. moisture, sodium, color, amino-type nitrogen, free amino acids and constituent amino acids composition of Doenjang were investigated to determine the effect of this salt reduction on the sensory quality of Doenjang. The reduction of sodium did not affect the pH, moisture and saltiness, and this changed maintained the same range as the control. The sodium content was reduced proportionally, and the amino acid nitrogen level was 500 mg%. Therefore, this study considered that a reduction of 25% of salt in the soaking water does not affect the quality of the Doenjang while reducing the sodium content of the final Doenjang.

  • 우리나라의 발효식품 산업의 규모는 2010년 약 4조 원으로 식품 산업 전체의 4.0%정도이며, 이 중 전통 발효식품이 50.0% 수준으로 전체 식품 산업 대비 비중은 2.0%에 불과하지만, 발효제품의 세계 시장 규모는 2000년 152억 달러, 2010년 730억 달러로 급속한 성장으로 확대되고 있다. 국내 소금시장의 규모는 2010년 기준 1,300억 원이며, 전 세계적으로 나트륨 대체 염미제의 시장수요는 절실히 필요한 실정으로, 최근 2,000억 원대 규모를 유지하고 있는 간장 시장에서 염도를 낮춘 '저염 간장'매출 성장세를 보이고 있어 소금을 줄이는 식생활 개선에 대한 교육 홍보와 더불어 '나트륨 저감화 식품 개발의 필요성'이 국민건강증진, 경제성 측면에서 날로 커지고 있다. 또한, 2007년부터 웰빙 열풍으로 자연조미료 제품의 비중이 크게 늘어나는 추세이며, 100% 천연재료로 사용하여 소비자용 제품 출시 등 다양한 변화를 가져온 결과, 자연조미료 시장은 2008년 151억 3,200만 원의 매출규모에서 215억 2,600만원으로 무려 42.3%를 차지했으며, 저염을 위하여 활용하는 저염 소금도 연령대가 높아질수록 선호도가 높아지는 있다는 보고가 있다. 식품의약안전처의 '나트륨 저감화 사업'은 2012년부터 연차별로 가공식품의 나트륨 저감화 가이드라인을 개발하여 가공식품 생산업체들의 참여를 유도하며, 다양한 홍보를 펼쳐 2014년 6월 기준으로 165개 제품의 나트륨이 저감화 되었으며, 2015년에는 95종의 면류제품의 나트륨 함량이 약 20% 이상 저감되는 실적을 보여주었다. 여러 지역자체 단체들은 지역의 특성을 최대한 살려 다양한 발효산업 육성을 진행하고 있음에 영남권의 장류 업체를 대상으로 나트륨 섭취량을 줄일 수 있도록 '경북 발효식품 수출농업기술지원단'은 식품의약품안전처와 연계하여 지속적으로 가공식품 중 나트륨 저감화에 노력을 할 것이며 이에 대기업과 함께 중소기업들의 참여도를 높이기 위해 현장 컨설팅을 지역적으로 실시할 계획으로 각 지역별 업체들의 참여도를 높일 계획이다. 이를 통해 전통 발효식품이 기능성을 유지하면서 나트륨 함량을 줄인 건강식품으로 우리나라 식품산업 발전에 기여하고자 노력할 것이다. 향후 발효산업 중 한류의 매운맛, 김치 등을 시작으로 고성장이 기대되는 세계화 전략 품목이며 지역 농산물을 활용한 발효식품 세계화를 위하여 나트륨 저감화는 반드시 선행되어야 할 것으로 생각된다.

A study on the eating behaviors and food intake of diabetic patients in Daegu·Gyeongbuk area (대구·경북지역 당뇨 환자의 식행동 및 식품 섭취에 관한 조사 연구)

  • Rapid economic development has changed the dietary habits and patterns. Especially, western style diet has increased the risk of type 2 diabetes (T2DM) in Korea. To provide more specific and appropriate diet guideline for the prevention and for the treatment of T2DM, the investigation on the characteristics of diebetic patients related to the diet needs to be done. In this study, we therefore analyzed eating behaviors, dietary attitudes, and intake of food and nutrients of normal subjects (control, n=26) and diabetic patients (case, n=18) diagnosed T2DM within one year in Daegu Gyeongbuk area. Body mass index of the patients were significantly higher than the control (p<0.05). Overeating, high fried food and low whole grain intake were revealed as risk factors for T2DM. From the food frequency questionnaire analysis, salty foods such as fermented soybean paste (Doenjang) and watery Kimch intake were associated with T2DM. Intake of vegetable lipid, ${\beta}$-carotene, calcium, copper, and vitamin K were also shown to be associated with T2DM. Taken together, these findings suggest that maintaining ideal body weight and intake the foods with low salt, fat, and refined grain in appropriate amount may help to prevent and to manage T2DM.
