Under Article 19, Paragraph 1 of the Food Industry Promotion Act, Rural Development Administration renews the Korean foods composition table every five years. Before the publication of the tenth revision of the Korean foods composition table in 2021, this paper suggests methods for collecting representative samples of 182 highly consumed foods in Korea. Food markets are categorized by their distribution channels, which are supermarkets and local markets. Eight samples are collected from each category by applying the National Food and Nutrient Analysis Program (NFNAP)'s stratified multi-stage sampling. The NFNAP was implemented in 1997 as a collaborative food composition research effort between the National Institute of Health (NIH) and the US Department of Agriculture (USDA) to secure reliable estimates for the nutrient content of food and beverages consumed by the US population. Selected supermarkets for selecting representative food samples are Emart Kayang, Homeplus Siheung, Lottemart Dongducheon, Emart Suwon, Lottemart Dunsan, Lottemart Yeosu, Emart Ulsan, and Hanaroclub Ulsan. Selected local markets also are Doksandongusijang in Geumcheon-gu and Pungnapsijang in Songpa-gu, Seoul, Ilsansijang in Ilsanseo-gu, Goyang, Unamsijang in Buk-gu, Gwangju, Beopdongsijang in Daedeok-gu, Daejeon, Bongnaesijang in Yeongdo-gu and Jwadongjaeraesijang in Haeundae-gu, Busan, and Jungangsijang in Jinhae-gu, Changwon.

The purpose of this study was to designed the structure and elements of metadata that can manage and share research data produced in the food composition database. In order to derive metadata elements, mapping crosswalk was performed on 5 metadata such as DCAT, DataCite metadata schema 4.4, TTAK.KO-10.0976, AgMES, and FoodData Central. As a result of the study, the top 15 elements of the 'Resource information' metadata were derived, and 7 mendatory, 3 recommended and 5 optional elements, and the 'Composition analysis' metadata included 8 mendatory, 3 recommended and 1 optional element were derived to describe food composition research data, respectively. The derived metadata elements will be used as an item for systematic management of food composition data and can be used as basic data for sharing with domestic and international food composition databases.

Vitamin E and K are essential micronutrients required by our body in small amounts for proper metabolic functions; however, the content of vitamin E and K commonly consumed in foods has not been comprehensively defined. In this study, the contents of vitamins E and K in sea algae and vegetables were analyzed and the analytical methods were validated. The α-tocopherol equivalent (α-TE) and vitamin K1 content in sea algae ranged from 0.15 to 1.14 mg/100 g and from 11.91 to 1,629.5 ㎍/100 g, respectively. In addition, α-TE and vitamin K1 of vegetables were detected in the range of 0.02-2.48 mg/100 g and 16.15-979.60 ㎍/100 g, respectively. In particular, β- and γ-tocopherol and α- and β-tocotrienol were detected in several vegetables. The analytical methods were accurate and reproducible. These results provide reliable data on the vitamin E and K contents of foods consumed in Korea for the development of National Standard Food Composition Database.

In order to create the national food nutrient database, a total of 41 animal foods (ham, seafood, edible insects and eggs) were analyzed for their vitamin B12 content and the applied immunoaffinity-HPLC was verified. Ham vitamin B12 contents were 0.30-0.65 ㎍/100 g. Seafood showed relatively high vitamin B12 level, where the values of fermented clam were the highest (26.80 ㎍/100 g) followed by fermented pollack roe. Vitamin B12 was not detected in silkworm pupae and beetles, while relatively high levels were found in the two-spotted cricket imago (6.70 ㎍/100 g). Chicken and quail egg yolk had roughly 100- and 30-times higher vitamin B12 levels as compared to their egg white. Vitamin B12 contents in quail and chicken eggs were significantly enhanced by boiling (p<0.05). Results based on accuracy (97-102% recovery) and precision (<5% RSD) indicate that this study provides reliable vitamin B12 information on animal foods consumed in Korea.

Vitamin K is a group of fat-soluble vitamins that naturally exist in phylloquinone (vitamin K1) and menaquinone (vitamin K2). In this study, the vitamin K content in different meats commonly consumed in Korea was analyzed using HPLC, and the analytical method was validated. Vitamin K1 was not detected in any of the meat samples. Vitamin K2 contents in different cuts of beef ranged from 0.00 to 5.87 ㎍/100 g, whereas the corresponding value in different parts of chicken ranged from 16.59 to 46.64 ㎍/100 g. In the case of pork, vitamin K2 contents varied from 4.33 to 22.90 ㎍/100 g. Among the different types of meat, the highest vitamin K2 content was found in boiled chicken meat and skin (46.64 ㎍/100 g). The analytical method was found to be reliable and had high accuracy. These results provide accurate nutritional information and contribute a food composition database for meat consumption.
This study was performed to update the National Standard Food Composition Table (NSFCT) published by Korea Rural Development Administration, especially focusing on vitamin $B_{12}$ for Korean pork. Total 7 primal and 22 retail fresh cuts of Korean pork were analyzed for vitamin $B_{12}$ and the applied immunoaffinity-HPLC was validated. Vitamin $B_{12}$ assay by immunoaffinity-HPLC obtained recoveries over 95% and coefficient variations of precision below about 10%, which met the limits required for validation acceptance. Limits of detection and quantification of immunoaffinity-HPLC were 0.01 and $0.33{\mu}g/100g$, respectively. Quality control chart showed that analysis performance was excellent during the entire of study. Vitamin $B_{12}$ contents of pork cuts significantly varied depending the types of primal and its retail cuts (p<0.05). Belly, Boston butt, rib cuts showed relatively high vitamin $B_{12}$ contents compared to other primal cuts. Vitamin $B_{12}$ content of pork retail cuts were also significantly different within the same primal cuts (p<0.05). Among 22 retail cuts, the highest vitamin $B_{12}$ was observed in Tosisal in belly primal part ($0.98{\mu}g/100g$) while both Aldeungsimsal in loin and Hongdukkaesal in hide leg were the lowest by $0.33{\mu}g/100g$. This study provides reliable vitamin $B_{12}$ data for the Korean pork fresh cuts through standard sampling, method validation and analytical quality control, which would be used for update of Korean NSFCT.

The purpose of this study was to determine the vitamin B1 and B3 contents in 135 Korean domestic foods using high performance liquid chromatography (HPLC). The Standard Reference Material (SRM) 3233 and in-house control (grain, whole wheat and flour mixture) were used for quality control/assurance. As a result, vitamin B1 was only detected in 54 of the 135 foods, ranging from 0.019 mg/100 g to 28.218 mg/100 g. Among the foods tested, the vitamin B1 content was highest in ramen powder (28.218 mg/100 g) and lowest in boiled jjolmyeon (0.019 mg/100 g). In contrast, vitamin B3 was detected in 108 of the 135 foods, ranging from 0.077 mg/100 g to 32.412 mg/100 g. We found that the vitamin B3 content was highest in beef liver (32.412 mg/100 g) and lowest in boiled chicken heart (0.077 mg/100 g). The results of this study will be used as a nutritional database for the update of the Korean food composition table and will hence contribute to improving public health.
This work aimed to investigate the changes in the nutrient contents and antioxidant activity of Peucedanum japonicum Thunb. by ripening stage, growing condition, and blanching. The crude protein content of the young leaves (3.6~4.3%) was higher than that of the mature leaves (3.1~3.9%). Higher calcium contents were observed in the greenhouse-cultivated samples (225.9~259.2 mg/100 g) compared to the field-cultivated samples (178.5~199.5 mg/100 g). The vitamin C and folate contents (18.1~83.8 and 175.8~220.2 mg/100 g, respectively) of the field-cultivated samples were significantly (p<0.05) higher than those of the greenhouse-cultivated samples (13.1~57.7 and 133.0~148.8 mg/100 g, respectively). The growing condition and blanching were significant factors affecting the changes in the vitamin and polyphenol contents. The ${\beta}$ carotene contents of the blanched samples increased 2.6-fold compared to those of the raw samples. The total polyphenol contents (10.2~17.1 mg/g extract) and DPPH radical scavenging activity ($IC_{50}=2.0{\sim}3.0mg/ml$) of the blanched samples were significantly (p<0.05) higher than those of the raw samples (1.8~4.3 and $IC_{50}=16.2{\sim}21.1mg/ml$, respectively).

The nutrient contents of pumpkins depend on many factors, including the species, climate, soil type, and plant part. The nutritional compositions of five pumpkin cultivars (red boujjang, mini hong, mini gold, boujjang, and yakhobak) were investigated. To analyze the nutrient contents of the edible parts, the other parts (seeds, skin, and stem) of each pumpkin were removed. The results showed that the proximate compositions of the edible parts of the pumpkins ranged from 74 to 87 g per 100 g for moisture, 1.6 to 3.2 g per 100 g for crude protein, 10.1 to 20.7 g per 100 g for carbohydrate content, and 2.0 to 3.4 g per 100 g for total dietary fiber. The proximate contents of the pumpkin samples were not significantly different. The thiamine contents of the pumpkins, except for red boujjang, varied from 0.03 to 0.15 mg per 100 g, but that of red boujjang had the highest level (0.60 mg per 100 g). The vitamin C contents of the pumpkins, except for boujjang, ranged from 13.0 to 14.0 mg per 100 g, but that of boujjang was the highest (49.0 mg per 100 g). In particular, yakhobak showed the highest total carotenoid and folate levels (279.5 and $74.0{\mu}g$ per 100 g, respectively). These results will be useful for coming up with better pumpkin varieties through breeding, and established the nutrient compositions of pumpkins.
The National Standard Food Composition Table published by the Rural Development Administration (RDA) provides the foundations in research, nutrition monitoring, policy and dietary practices in Korea. This databases consists of several sets of data including food descriptions, nutrients, portion weights, and source of data. The National Standard Food Composition Table have been published since 1970 and, recently, new version (8th edition) of Food Composition Table which has quantitative and qualitative nutrient data is released in 2011. In addition, the User-friendly Food Composition Table is divided into adult, children, and elderly categories depending on the subjects because we need different nutrients according to various ages. The Tables of Food Functional Composition is firstly edited in 2009. RDA published the minerals and fatty acids composition table, tables of amino acid, fat-soluble vitamin composition table, and the cholesterol table. The resulting database will be widely used. The users of the databases are from diverse fields, includeing federal agencies, the food industry, health professionals, restaurants, software application developers, academia and research organizations, international organizations, and foreign governments ect. Therefore, consistent improvements of the database is important, so that people can better address such health challenges by providing reliable and accurate data.
