Effect of potato starch on suitability for 3D printing in golden threadfin bream (Nemipterus virgatus) surimi mixture preparation (감자 전분의 첨가가 수리미 혼합물 제조에서 3D 프린팅 적합성에 미치는 영향)

  • In this study, we investigated the physical properties, color values of mixtures with starch from potato in preparing a cartridge for 3D printing using golden threadfin bream (Nemipterus virgatus) surimi as raw material. The results show that the hardness and gumminess of the surimi mixture added potato starch increased but cohesiveness decreased compared to the negative control. This means that the starch makes surimi stronger texture than the negative control. After 7 days of cold storage at 4 ℃, for unheated surimi, firmness is increased but adhesiveness is decreased. And among physical properties of surimi stored after heating, hardness and gumminess were decreased compared to before storage. Lastly, after storage for 7 days, the hardness and gumminess of fried surimi decreased compared to fried surimi before storage. As a result of sensory evaluation, texture, elasticity scent of surimi stored after heating were decreased but overall favorability was similar. Compared to the after storage, result of sensory evaluation of fried surimi, result of the before storage showed no significant differences. From these results, it is suggested that potato starch, which increases overall physical strength and have little effect on preference, can be used as an additive for golden threadfin bream surimi.

  • Granular shapes and size, physicochemical properties and gelatinization properties of potato starches from Irish cobber (the dry type), Dejima (the moist type), Shepody and Superior were investigated. The starch granule was round or oval and the size of Irish cobbler and Shepody starch were $11~30\mu\textrm{m}$ and those of Superior and Dejima were$ 21~40\mu\textrm{m}$. Blue value, amylose content, relative crystallinity and density of Irish cobbler were the highest, but that of Dejima were the lowest. Water binding capacity, swelling power, transmittance. peak viscosity and breakdown of amylogram of Superior starch were the highest, but that of Irish cobbler starch were the lowest. Gelatinization temperature of DSC of Irish cobbler starch was the highest, but that of Superior starch was the lowest.

  • Physicochemical properties on defatted potato starches, Irish Cobbler and Dejima, were investigated. The average diameter of the Irish Cobbler and Dejima starch were $22.5-29.8\mu\textrm{m}$, and both the starches had birefringence. Irish Cobbler starch was lower than that of Dejima starch in water binding capacity, swelling power and solubility. Relative crystallinity of both the starches was decreased after defatted. The blue value of Irich Cobbvler and Dejima starch was measured 0.37 and 0.35 respectively Transmittnace of 0.1% starch suspensions was higher on defatted starch than on untreated starch. Differential Scanning Calorimetry of untreated potato starch showeed higher gelatinization temperature in Irish Cobbler starch than in Dejiam starch. The gelatinization enthalpy of untreated starch was higher in Irisch Cobbler starch than in Dejima starch, but, after defatted, it was decreased.

  • Physicochemical properties of potato starches with degree of substitution of 0-0.2645 hydroxypropylated with propylene oxide were examined. Hydorxypropyl group content of the starch was proportional to propylene oxide concentration. Water binding capacity increased but pH decreased with the increase of degree of substitution. Blue value and iodine absorption property decreased with the increase of hydroxypropylation. Differential scanning calorimeter showed that hydroxypropylation lowered the gelatinization temperature of the starch. Relative crystallinity in X-ray diffraction patterns decreased and starch granule observed by scanning electron microscopy was destroyed by hydroxypropylation. This result implied that high level hydroxypropylation affected the crystal region as well as amorphous region of starch.

  • The objective of this study was to increase the efficiency of starch extraction from potato sludge by different concentration of food-grade hemicellulase. The potato sludge, which is a by-product of potato processing industry, was treated with food-grade hemicellulase. Starch extraction efficiency displayed no significant difference in hemicellulase concentration. The purities of potato starch increased from 83.40 to 95.91, 97.44, 95.58, and 97.79%, with treated 0.5, 0.75, 1.0, and 1.5% hemicellulase, respectively. The physicochemical properties of the starches, such as granule structure, particle size, pasting, and thermal transition, were not affected by the concentration of hemicellulase. These results indicate that food-grade hemicellulase treatment is an efficient method for starch extraction from potato sludge.

Physicochemical Properties of the Durian Seed Starch (Durian 종자 전분의 이화학적 특성)

  • The granular size and shape of durian seed starch were $2.0-10.0\;{\mu}m$ and oval and polygonal. Amylose contents of durian seed, corn, sweet potato and potato starch were 28.3%, 27.5%, 20.3% and 21.7%, respectively. Blue value of durian seed (0.370) higher than that of corn (0.368), sweet potato (0.332), and potato starch (0.338). Alkali numbers of durian seed, corn, sweet potato and potato starch were 7.39, 9.02, 7.08 and 5.43, respectively. Swelling power of durian seed starch was similar to that of sweet potato starch. X-ray diffraction patterns of durian seed starch showed an A-type crystalline structure. According to pasting properties by Rapid Visco-Analyzer, the gelatinization temperature of durian seed starch $(76.6^{circ}C)$ was higher than that of corn $(73.0^{circ}C)$, sweet potato $(72.3^{circ}C)$ and potato starch $(70.2^{circ}C)$. The breakdown of durian seed starch were lower than that of corn, sweet potato and potato starch.

  • This study investigated the effects of starches(potato, sweet potato, and corn starch) on the quality characteristics of raw and cooked noodles. The moisture content, color, mixogram, texture profile and sensory evaluation were performed. The mixogram showed the addition of starches shortened the kneading time. Mixing tolerance was higher in the noodles with starch than the control group, which indicates that the addition of starch increases dough durability. Moisture content of raw noodles was the highest in the samples with potato starch. L-value of raw noodles was the highest in the samples added with corn starch, whereas that of cooked noodles was the highest in the samples added with potato starch. The hardness of raw noodles was the highest in the control sample, and the chewiness of raw noodles was the highest in the samples added with sweet potato starch. The hardness of cooked noodles was the highest in the samples added with corn starch and the lowest in the control group. The tension distance of raw noodles was the longest in the control group and the tension force of raw noodles was the highest in the noodle with sweet potato starch. The acceptance test indicated that the noodles prepared with the addition of sweet potato starch scored the highest in flavor, taste, texture and overall acceptability.

Viscosity Properties of Corn, Potato and Sweet Potato Starch according to pH. (옥수수, 감자 및 고구마 전분의 pH에 따른 점도 특성)

  • This study was perfomed to search for how properties of the starch viscosity appear in different qualities, when acetic acid is added. For this study, corn starch which belongs to A-type. Potato starch to B-type. and sweet potato starch to C-type were chosen as an experimental material. which was added to acetic acid controlled as pH 4.0, 4.5, and 5.0 at the time of before and after heating. After that, the viscosity properties of each starch was analyzed using Amylogram and Brookfield viscometer. As a result. the viscosity was shown high in an order of potato. sweet potato, and corn starch. According to addition of acetic acid. tile viscosity appeared to be low. The viscosity differences of before and after heating when the acid is added were shown as follows : Amylogram shows that the lower the pH is. the lower the viscosity is when the acid is added before-heating. In case the acid is added before-heating, gelatinization temperature, consistency and setback was increased. but breakdown decreased. In case the acid is added after-heating, the viscosity goes down at soon as it is added meanwhile consistency and setback was decreased. but breakdown increased. Such properties of the viscosity show a conspicuous variation in an order of potato. sweet Potato. and corn starch. Brookrield viscometer shows that the lower the apparent viscosity is. the lower pH is at the time of before-heating when the acid is added. In case of after-heating, when the acid is added. the apparent viscosity shows a higher inclination than that of before-heating in corn starch and sweet potato starch.

Quality Characteristics for Instant Rice Noodle Marketed in Korea (국내외 산업동향 - 시중유통 즉석 쌀국수의 품질특성)

  • 즉석 쌀국수는 쌀 함량을 10~30% 첨가하는 수준으로 출발하여 최근에는 쌀 함량 100% 생면 및 인디카 품종을 활용한 베트남 쌀국수 타입으로 점차 쌀 함량이 높아지고 있으나, 쌀 고유의 특성으로 면의 가공적성이 어려우며, 조리 시 전분 용출량이 많은 단점이 있다. 따라서 현재 국내 시판 쌀국수 5종을 구입하여 쌀 함량별로 분류하여 품질특성과 관능특성을 비교하여 즉석 쌀국수의 품질특성을 알아봄으로써 즉석 쌀국수 개발 연구에 기초 자료를 제공하고자 하였다. 품질특성 결과 감자전분, 찰옥수수전분을 첨가한 제품의 경우 수분흡수지수가 높게 나타났으며, 조직감 측정결과 밀가루가 첨가된 처리구가 밀가루 무첨가 처리구에 비해 높은 값을 나타내어 전분 및 밀가루 첨가에 따라 경도, 응집성 및 검성이 증가하였으며, 관능특성 결과 국내쌀을 사용한 처리구가 수입쌀을 사용한 처리구보다 높게 나타내어 국내쌀로 만든 쌀국수를 더 선호하는 경향이 있는 것으로 나타났다. 따라서 향후 쌀국수 제품 개발 적용 시 쌀가루 용도별 제분기술의 발달 및 감자전분, 찰옥수수전분, 타피오카전분 등의 전분류를 첨가하여 쌀국수 개발기술을 확보하면 품질이 우수하고 다양한 형태의 즉석 쌀국수 제품개발이 기대된다.

Gelatinization Properties of Legume, Cereal and Potato Starches (두류, 곡류 및 감자전분의 호화 특성)

  • Studies were carried out to investigate physicochemical and gelatinization properties of legume, cereal and potato starches. Cowpea, mung bean, acorn, and buckwheat starches showed similar moisture content and amylose content, however, there is neither similarity nor certaion trend in WBC, swilling power, and solubility among them. DSC thermograms of cowpea, mung bean, acorn, and buckwheat starches showed similar patterns with two endothermic peaks and relatively broad gelatinization ranges. SEM photomicrography of gelatinized cowpea, mung bean, acorn and buckwheat starches showed highly swollen and extremely disintegrated, folded structure.
