Mineral extraction from by-products of brown rice using electrodialysis and production of mineral salt containing lower sodium (전기투석을 이용한 현미부산물로부터의 미네랄성분 추출 및 나트륨감량형 미네랄 소금 제조)

  • The purpose of this study was to develop a supplemental healthy food that can help prevent high blood pressure-related diseases caused due to the excessive consumption of sodium in salt. This was achieved by using ion-displacement techniques to produce mineral salt with lower sodium content by using fermented brown rice by-products rich in minerals. Mineral salt containing 2019.2 mg/100 g of potassium, 678.5 mg/100 g of magnesium, 48.7 mg/100 g of calcium, and 19.5 mg/100 g of sodium was obtained by fermenting brown rice by-products to create a culture medium for the mineral salt. Mineral salt containing 1769.7 mg/100 g of potassium, 573.6 mg/100 g of magnesium, 35.3 mg/100 g of calcium, and 19.5 mg/100 g of sodium was obtained by filtering and refining the by-product extract of fermented brown rice. The results showed that when the stream velocity of the instrument used for electrolysis was 200 mL/min and the current and the concentration of the reactive liquid in the purified water chamber were higher, the effect of electrolysis was greater. Ion hot water extraction of the fermented brown rice by-products improved by up to 95% and was collected as purified water within 90 min of the reaction time. Chloride ions with pH 7.4 were produced by mixing sodium hydroxide in a purified saline water chamber with electro-analyzed water. The salt produced in this study contained low sodium, 5.7~30%, as compared to 40% sodium content of the normal salt.

Antioxidant capacity and nutritive components from biji sub-micron suspension by ultra-high pressure homogenization process (초고압균질 가공에 의해 제조된 초미세 비지 현탁액의 영양성분 및 항산화성)

  • Biji is a tofu by-product made by squeezing the liquid out of the dregs left over from making tofu. The objectives of this research were to break the biji into sub-micron-scale particles and to prepare a biji sub-micron suspension having increased quality characteristics such as antioxidant capacity, polyphenol, dietary fiber, and soluble protein contents, in comparison with untreated biji. Disruption of biji by an ultra-high-pressure homogenization (UHPH) process was used to prepare the sub-micron suspension of biji. UHPH can be used to prepare emulsions or suspensions with extremely small particle sizes. The effect of the UHPH process on biji was studied at 1,000, 1,500, and 2,000 bar. The extraction yield increased up to 1.64 times by breaking the biji to form a sub-micron suspension. The soluble dietary fiber, protein, and free amino acid contents were increased by the UHPH process (p<0.05), in comparison with those of untreated biji. Furthermore, the total sugar, free sugar, and total polyphenol contents of biji were augmented by the UHPH process. Antioxidant activity (ABTS) after exposure to UHPH (1,000-2,000 bar) was well retained (p<0.05). The extraction efficiencies and nutritive components were enhanced by increasing the pressure in the UHPH process.

Treatment of Food Processing Wastewater bearing Furfural by Candida utilis (Candida utilis를 이용한 furfural 함유 식품가공 폐수의 처리)

  • A yeast treatment process was applied to treat food processing organic wastewater containing inhibitory material to anaerobic bacteria. The wastewater contained high concentration of the furfural as a by-product from the food processing. Aerobic yeast (Candida utilis) was selected to remove organics in wastewater. The batch test showed that the wastewater had an inhibition to anaerobic bacteria. The optimum level of temperature for yeast treatment was ranged from 25 to 45$^{\circ}C$. The pH range from 4 to 8 was favorable to yeast growth. The continuous flow reactor was operated at various SRTs. The results were satisfactory with the reduction of COD up to 90% at SRT of more than 1 day. Through the kinetic study of the yeast, the remained COD concentration was mainly caused by the formation of soluble microbial product (SMP).

Studies for the Processing Factors of Pesticides during the Milling of Wheat Grain (밀의 제분에 따른 밀가루 중 농약 가공계수 산출 연구)

  • Processing factors of pesticides in milling process of wheat grain, which are consumed and imported at large quantity were examined to establish reasonable MRL of the processed food. Azinphos-methyl, chlorpyrifos, chlorpyrifos-methyl, fenitrothion, malathion, and trichlorfon were selected for the study according to annual usage and the previous detection record in wheat grain. Dipping process for pesticide application was performed in laboratory, while milling process was conducted under pilot plant system. Processing factors were calculated by analyzing residual pesticides on wheat grain and processing products as wheat flour, bran and red dog. Processing factors were 0.05 for azinphos-methyl, 0.06 for chlorpyrifos, 0.05 for chlorpyrifos-methyl, 0.07 for fenitrothion, 0.07 for malathion, 0.06 for trichlorfon, respectively. Recovery test was also performed to establish extraction efficiency of analytical procedure. The recovery value ranged from 93.2% to 98.6% with standard deviation of 0.1-0.9%.

  • 인간의 생활수준은 산업의 발달과 함께 꾸준히 향상되고 있으나 환경은 산업발달의 부산물로 배출되는 공해물질들로 인하여 급속히 열악해지고 있다. 대표적인 악취물질로는 암모니아, 황화수소 및 트리메틸아민 등을 들 수 있으며 공간으로부터 악취분자들을 적극적으로 제거하는 탈취소취법에 오늘날 많은 관심이 집중되고 있다. 일반적인 탈취재료는 활성탄, 제올라이트 등의 무기물이 오래전부터 사용되고 있으나 이들의 대표적인 악취물질인 암모니아가스, 황화수소 등 유해가스에 대한 흡착능력은 매우 낮으며 흡착제 형태가 입상이기 때문에 성형가공면에서 한계가 있다. Effects of Hydrolysates from Aquatic By-Product on Feeding Attraction and Growth of Sea Cultured Fish (수산 가공부산물 가수분해물에 의한 해산 양식어의 섭식 유인 및 성장에 미치는 효과)

  • This study was conducted to investigate the effects of different dietary enzymatic hydrolysates using squid and mackerel by-product on feed efficiency, growth and chemical composition in Korean rockfish (Sebastes schlegeli) after a eight weeks feeding experiment. Effects on the weight gain and feed efficiency in the enzymatic hydrolysates added groups were very effective. Weight gain were significantly higher in the squid hydrolysates whole added group than in the other groups. Moisture and crude ash contents of muscle were not significantly affected by hydrolysates supplementation in all groups. Crude protein and lipid contents of muscle were increased after eight weeks feeding trial. Amino acid contents of muscle were higher in squid hydrolysates whole added group than in the other groups. Amino acids were not affected by hydrolysates supplementation in all groups. Fatty acid contents of muscle were increased after eight weeks growth trial. Fatty acids were not significantly different in the dietary groups.

  • 질병의 예방, 노화억제, 돌연변이 억제 등 다양한 생리활성을 나타내는 안토시아닌 색소 C3G가 다량 함유되어 있는 흑자색 유색미의 성분연구를 수행한 결과 9가지의 천연화합물을 분리하였으며, 그 중 항산화 기능이 매우 뛰어난 페놀성 화합물 oryzafuran을 최초로 분리 그 구조를 확인하였다. 또한 allantoin과 같은 알칼로이드도 쌀에서는 처음으로 분리하였다. 이러한 결과를 통해 흑자색 유색미는 식용이상의 역할을 수행할 것으로 판단된다. 아울러 이러한 성분의 정량분석 방법과 합성과 관련된 메커니즘, 성분의 약리적 기능, 유전자원 평가 등 산업화를 위한 체계적인 연구가 수행되어야 할 것이며, 더 나아가 고C3G, 저단백, 저알레그렌, 고불포화지방산 등과 같은 다기능성 유색미 품종을 육성 보급함으로써 국민보건 및 농가소득에 크게 기여할 것으로 판단된다. 특히 이와 같은 성분이 주로 분포하는 미강은 도정과정을 통해 대부분 제거되기 때문에 회수하기가 용이하고, 따라서 부산물로 발생하는 흰쌀을 식품가공분야에서 이용할 수 있어 산업적으로 가치가 매우 높다고 판단된다.

  • 미국 내에서 첨단 농업과 관련한 학문 연구 및 기술개발 활동이 가장 활발하며, 농산물의 수확 후 관리기술 등의 분야에서 세계적으로 명성이 높은 University of California, Davis에서 지난 2000년 10월 9일부터 200 1년 10월 7일까지 1년간 해외연수를 수행하였다. 연수 지도교수였던 식품공학과(Food Sci. & Technol.) 및 생물.농공학과(Bio. & Agric. Engin.) 소속의 Dr. John M. Krochta는 천연소재의 환경친화성 생고분자 (biopolymer ) 필름/ 피막의 제조 기술과 특성 평가에 관한 연구분야에서 이미 수많은 탁월한 연구성과를 축적한 저명 과학자로서, 실제 연수를 수행한 식품공학과 내의 Packaging & Biopolymer Film Lab.에서는 최근 10년 동안 주로 유가공 부산물인 유청 단백질(whey proteins )을 원료로 한 생고분자 필름/ 피막을 개발하여 각종 신선 농산물 및 가공식품에 대한 적용 가능성 연구를 수행하면서 다수의 연구논문과 저서, 특허를 배출하고 있었다. 필자는 연수기간동안 whey protein films의 산소 차단특성을 활용하여 기존 합성 고분자 재질의 산소 차단재를 대체할 수 있는 새로운 생고분자 포장재로서 whey protein coating의 제조 및 성능 평가에 관한 연구를 수행한바, 이에 간략히 그 내용과 결과를 소개하고자 한다.

  • 다른 산업과 마찬가지로 식품산업도 세계적인 추세인 자국의 기술보호주의와 무차별 시장 개방 압력 앞에서 존립하려면 우리의 기술을 자립화하는 외에는 방법이 없다. 효소공학, 발효공학, 탄수화물-단백질-지질공학 등 관련 학문의 발전을 통하여 생산성을 향상시키고, 천연원료를 이용한 식품소재를 개발하며, 제품을 다양화한다면 국제 경쟁력을 갖는 식품 산업이 될 수 있을 것이다. 세계 수요의 대부분을 미국과 일본의 몇개 회사에서 독과점적으로 생산되고 있는 지질소재 시장은 현재 약 4억불 정도로 추산되며 각국의 보건, 질병 예방에 대한 관심의 고조에 힘입어 5년 후에는 4배정도 신장할 것으로 예측된다. 우리나라가 상대적으로 우위에 있는 발효기술을 잘 이용하여 세계적으로 수요를 충족시키는 지질소재를 경제적으로 생산하면 세계 시장의 30% 정도는 확보할 수 있을 것이다. 올리고당의 생산기술 개발을 통하여는 국내 기반이 취약한 고도 분리, 정제 기술이 발전될 것이며 세계 대체감미료 시장에의 진출이 기대된다. 식이섬유의 경우 대두와 곡류 부산물의 가공기술 개발은 물론 공해방지기술의 개발도 기대된다.

Natural Occurrence of Mycotoxin and Fungi in Korean Rice (국내산 미곡에 발생하는 곰팡이와 곰팡이독소)

  • Inspection of deteriorated rices in Korea for fungal occurrence revealed that Aspergillus was the most frequently observed genus and some isolates of the Aspergillus spp. turned out to produce aflatoxin. Diverse fungal genera including Fusarium, Aspergillus, Penicillium, or Alternaria spp. were observed in most of the rice samples. Aflatoxin occurred infrequently and the levels of aflatoxin present in the rice samples were lower than regulatory limit but Fusarium toxins such as deoxynivalenol, nivalenol, zearalenone, and fumonisin occurred frequently. In rice processing complexes, fungal and mycotoxin contamination of rice decreased by milling process, resulting in the lowest level of mycotoxin and fungi in polished rice. Currently, it appears that Korean rice and milled by-products need a safety control for Fusarium toxins rather than aflatoxin.
