Changes of Vacuum Packed Pork Quality during Storage after Aging with Korean Traditional Sauces

  • Sixteen somimembranosus muscles were seamed out from sixteen left carcasses. They were cut into $7{\times}10{\times}2cm$ pieces and mixed randomly. Samples were assigned to four treatments: (T1) soy-based sauce; (T2) Kimchi-based sauce; (T3) pickled shrimp-based sauce; and (T4) onion-based sauce. Each treatment was aged in plastic box at $1^{\circ}C$ for 10 days. These samples were vacuum-packaged after treatment with sauces and held in a chill at $1^{\circ}C$ for 28 days. The pH of aged port in general, was decreased significantly (p<0.05) with storage in all treatments. Its falling rate was the slowest in T4 of all treatments, while it was faster in T2 and T3 than in T4. The salinity of aged pork was decreased (p<0.05) for T2 with increased storage days, but increased (p<0.05) for T1. The salinity showed T2 to be significantly higher (p<0.05) than T1 and T4 on 1 day, but to be lower(p<0.05) than T1 on 28 day. The saccharinity of T3 was significantly higher (p<0.05) on 1 day than those of T1 and T4, but decreased (p<0.05) on 14 and 28 day. While saccharinity of T1 was significantly the lowest(p<0.05) of all treatments on 1 day and increased (p<0.05) with increased storage days. For T1 and T2, the WHC (water holding capacity) results showed higher (p<0.05) on 14 day than on 1 and 28 day. On 28 day, the WHC result showed T4 to be the highest(p<0.05) of all treatments, but T2 to be the lowest (p<0.05). On 28 day, the shear force results showed a big difference (p<0.05) among treatments, being in order of T4>T3>T2>T1. Panelists rated T1 as having higher(p<0.05) aroma, flavor and overall acceptability than other treatments.

Influence of Fatigue and Role-Overload on Depression in Nurses Caring for COVID-19 Patients (COVID-19 환자를 간호하는 간호사의 피로와 역할과부담이 우울에 미치는 영향)

  • This study aimed to investigate depression, fatigue, and role-overload in nurses caring for COVID-19 patients and identify factors affecting depression. Data were collected from 142 nurses caring for COVID-19 patients at four designated COVID-19 hospitals using self-report questionnaires, from September 8, 2020, to September 17, 2020. The subjects' scores for depression, fatigue, and role-overload were 14.51±9.54, 3.19±0.64, and 3.30±0.64 points, respectively. Depression was positively correlated with fatigue (r=.40, p<.001) and role-overload (r=.30, p<.001), and fatigue was positively correlated with role-overload (r=.54, p<.001). Factors affecting depression included fatigue (β=.23, p=.014), health status (moderate: β=.28, p=.001; unhealthy: β=.26, p=.002), and hospital type (university hospital: β=.18, p=.024). The explanatory power (R2) of the model was 28.1%. In order to manage the nurse's depression level, a strategy for lowering the fatigue level and a strategy for improving the nurse's health statue are needed.

Effects of Dietary Lysine and Energy Levels on Growth Performance and Apparent Total Tract Digestibility of Nutrients in Weanling Pigs

  • Two experiments were conducted to determine the effects of dietary lysine and energy level on performance and apparent total tract digestibility (ATTD) of nutrients in weanling pigs. In Exp. 1, a total of 288 weaned pigs (initial BW $5.77{\pm}0.85\;kg$) were randomly allotted to 4 treatments (4 replicates per treatment with 18 pigs in each replicate). Experimental diets were fed in the 3 phases: phase I (d 0 to 7), phase II (d 8 to 14) and phase III (d 15 to 28). Isocalorific diets (3,450 kcal/kg) with incremental lysine levels (Phase I: 1.51, 1.61, 1.71 and 1.81; Phase II: 1.35, 1.46, 1.56 and 1.66; Phase III: 1.18, 1.28, 1.39 and 1.49% lysine respectively for T1, T2, T3 and T4) were used as treatments. An increase in the dietary lysine levels linearly improved (p<0.05) the ADG and G:F during phases I, II and III as well as overall study period. The ATTD of DM (d 7 and 28) and CP (d 7, 14 and 28) were linearly improved (p<0.05) with increasing dietary lysine levels. ATTD of ash, Ca and P were not affected by dietary lysine level. In Exp. 2, 64 weanling pigs (initial BW $4.79{\pm}0.79\;kg$) were randomly allotted to 4 treatments (4 replicates per treatment with 4 pigs in each replicate) in a $2{\times}2$ factorial arrangement on the basis of BW. Effects of two levels of energy (high, 3,450 or low, 3,350 kcal/kg) and lysine (high or low; 1.70 or 1.50, 1.55 or 1.35 and 1.40 or 1.20% in phase I, II and III diets, respectively) on performance and ATTD of nutrients were investigated. High energy and lysine diets improved ADG (p<0.05) in pigs during phase I, II and III and overall period (p<0.001), while G:F increased (p<0.05) during phase I and overall period. Pigs fed high lysine diets consumed more (p<0.05) feed during phase III and overall period. Additionally, pigs fed high energy diets had greater (p<0.05) ATTD of GE (d 7 and 14), CP (d 7 and 28) and DM (d 28); whereas, pigs fed high lysine diets had greater (p<0.05) ATTD of GE and CP during d 7, 14 and 28. ATTD of ash, Ca and P remained unaffected (p>0.05) by dietary energy and lysine level. However, there was no energy${\times}$lysine interaction for any of the measured variables. Results obtained in present study suggested that high energy and lysine level improve the growth performance and ATTD of nutrients in weanling pigs.

In Vivo Effects of CETP Inhibitory Peptides in Hypercholesterolemic Rabbit and Cholesteryl Ester Transfer Protein-Transgenic Mice

  • We previously reported that cholesteryl ester transfer protein (CETP) inhibitory peptides (designated $P_{28}$ and $P_{10})$ have anti-atherogenic effects in hypercholesterolemic rabbits (Biochim. Biophys. Acta (1998) 1391, 133-144). To further investigate those effects, we studied rabbit plasma that was collected after 30 h of a $P_{28}$ or $P_{10}$ injection. We found that there is a strong correlation between the in vivo CETP inhibition effects and alterations of lipoprotein particle size distribution in rabbit plasma, as determined on an agarose gel electrophoresis and gel filtration column chromatography. In vivo effects of the peptide were observed again in C57BL/6 mice that expressed simian CETP. The $P_{28}$ or $P_{10}$ peptide ($7\;{\mu}g/g$ of body weight) that was dissolved in saline was injected subcutaneously into the mice. The $P_{28}$ injection caused the partial inhibition of plasma CETP activity up to 50%, decreasing the total plasma cholesterol concentration by 30%, and increasing the ratio of HD/total-cholesterol concentration by 150% in the CETP-transgenic (tg) mice. The CETP inhibition by the $P_{28}$ or $P_{10}$ made alterations that modulated the size re-distribution of the lipoproteins in the blood stream. Particle size of the very low (VLDL) and low density lipoproteins (LDL) from the peptide-injected group was highly decreased compared to the saline-injected group (determined on the gel filtration column chromatography). In contrast, The HDL particle size of the $P_{28}$-injected group increased compared to the control group (saline-injected). The expression level of the CETP mRNA of the $P_{28}$-injected CETP-tg mouse appeared lower than the saline-injected CETP-tg mouse. These results suggest that the injection of the CETP inhibitory peptide could affect the CETP expression level in the liver by influencing lipoprotein metabolism.

Domestic Distribution and Temperature-dependent Development on Pseudococcus longispinus and P. orchidicola (Hemiptera: Pseudococcidae) in Korea (긴꼬리가루깍지벌레와 붉은몸긴꼬리가루깍지벌레의 국내 분포 및 온도별 발육특성)

  • We surveyed 281 sites of tropical plants and 666 sites of fruit plants for three years (2015~2017) on Pseudococcus longispinus and Pseudococcus orchidicola which have not been surveyed domestically. In tropical plants, P. longispinus were found at 34 sites, while P. orchidicola were found at 87 sites. However, both species were not found in fruit plants. The developmental characteristics of P. longispinus and P. orchidicola were investigated under various temperatures. The female nymph of P. longispinus did not develop at $14^{\circ}C$ and the developmental period was the longest at $16^{\circ}C$ for 361.4 days and the shortest at $32^{\circ}C$ for 39.0 days. The longevity of female adult of P. longispinus was the shortest at $28^{\circ}C$ as 71.7 days. The number of offspring was highest at 177.7 at $32^{\circ}C$. The female nymph of P. orchidicola did not develop at $12^{\circ}C$. However, the developmental period was the longest at $14^{\circ}C$ for 184.9 days and the shortest at $28^{\circ}C$ for 21.5 days. The longevity of female adult of P. orchidicola was the shortest at 51.5 days at $28^{\circ}C$. The number of offspring was highest at 143.8 at $28^{\circ}C$. The net reproductive rate ($R_0$) and intrinsic rate of increase ($r_m$) of P. longispinus were 162.3 and 0.127 at $32^{\circ}C$, respectively. The $R_0$ and $r_m$ of P. orchidicola were 98.3 and 0.139 at $28^{\circ}C$, respectively. These results suggest that the optimum temperature of P. longispinus and P. orchidicola was $32^{\circ}C$ and $28^{\circ}C$, respectively. Therefore, we guess that they can never be able to survive the winter of Korea.

Identification of three pathways for p-cresol catabolism and their gene expression in Pseudomonas alkylphenolica KL28 (Pseudomonas alkylphenolica KL28에 존재하는 3종류의 p-cresol 분해 경로 및 유전자 발현)

  • Previously our laboratory showed that Pseudomonas alkylphenolica KL28 possesses two different lap and pcu gene clusters for p-cresol catabolism. In this study, additional gene cluster (pchACXF-pcaHG-orf4-pcaBC) has been identified to encode enzymes necessary for catabolism of p-cresol to ${\beta}$-carboxy-cis,cis-muconate. This gene cluster showed almost identical nucleotide sequence homologies to those in the plasmid of Pseudomonas putida NCIMB 9866 and 9869, British origins, indicating the possibility of a horizontal gene transfer. Through mutagenesis of each gene cluster and gfp-based promoter reporter assays, it has been shown that the three gene clusters are functionally operated and pch genes are induced by p-cresol. Furthermore, the pcu gene cluster of the three was shown to be dominantly expressed in utilization of p-cresol. Mutation of the pcu gene was defective in aerial structure formation under p-cresol vapor, indicating the utilization rate of carbon source is one of key elements for the multicellular development of this strain.

Effect of Fertilizers on Yield and Storage Quality of Early Maturing Variety in Onion (조생종양파의 수량과 저장성에 미치는 비료의 영향)

  • To find out the optimum fertilizer level for onion, early maturing cultivar Fechongjoseng, experiment with four fertilizer levels was conducted of the field of the paddy and upland in Muan and Changyeong from Sep.1993 to Feb.1995. The yield character of onion was higher and rate of the rottenness was lowest under the treatment of $N-P_2O_5-K_2O$=28-9.5-23Kg/10a in the soil of paddy and upland field of Muan area. But the onion yield was excellent and rate of the rottenness was lowest under the treatments, $N-P_2O_5-K_2O$=21-19-17.3Kg/10a, in the soil of paddy field and $N-P_2O_5-K_2O$=28-9.5-23Kg/10a, in the soil of upland field of Changyeong area.

Effects of Pseudomonas aureofaciens 63-28 on Defense Responses in Soybean Plants Infected by Rhizoctonia solani

  • The objective of this work was to investigate the ability of the plant growth-promoting rhizobacterium Pseudomonas aureofaciens 63-28 to induce plant defense systems, including defense-related enzyme levels and expression of defense-related isoenzymes, and isoflavone production, leading to improved resistance to the phytopathogen Rhizoctonia solani AG-4 in soybean seedlings. Seven-day-old soybean seedlings were inoculated with P. aureofaciens 63-28, R. solani AG-4, or P. aureofaciens 63-28 plus R. solani AG-4 (P+R), or not inoculated (control). After 7 days of incubation, roots treated with R. solani AG-4 had obvious damping-off symptoms, but P+R-treated soybean plants had less disease development, indicating suppression of R. solani AG-4 in soybean seedlings. Superoxide dismutase (SOD) and catalase (CAT) activities of R. solani AG-4-treated roots increased by 24.6% and 54.0%, respectively, compared with control roots. Ascorbate peroxidase (APX) and phenylalanine ammonia lyase (PAL) activities of R. solani AG-4-treated roots were increased by 75.1% and 23.6%, respectively. Polyphenol oxidase (PPO) activity in soybean roots challenged with P. aureofaciens 63-28 and P+R increased by 25.0% and 11.6%, respectively. Mn-SOD (S1 band on gel) and Fe-SOD (S2) were strongly induced in P+R-treated roots, whereas one CAT (C1) and one APX (A3) were strongly induced in R. solani AG-4- treated roots. The total isoflavone concentration in P+Rtreated shoots was 27.2% greater than the control treatment. The isoflavone yield of R. solani AG-4-treated shoots was 60.9% less than the control.

  • Objectives : The aim of this experiment is to investigate the effects of moxibustion on SP6, Sp9 and BL28 in uranyl acetate-induced acute renal failure in rats. Methods : To induce experimental acute renal failure, uranyl acetate was intraperitoneally injected to rats by 5mg/kg. 3 days later moxibustion treatment was done at SP6, Sp9 and BL28 bilaterally of the rats. And then 4 days later, we measured rats' body weight, kidney weight, serum BUN, creatinine and serum electrolytic levels(Na, K and Cl). Results : In the SP6 group, serum BUN were significantly decreased (p<0.01). In the BL28 group, serum Na level were significantly decreased (p<0.05). In the $SP6{\cdot}SP9$ group, serum creatinine level were significantly increased but serum Na level, serum Cl level were significantly decreased(p<0.05). In the $SP6{\cdot}BL28$ group, hypertrophy index of kidney and serum creatinine level were significantly decreased(p<0.01) and serum BUN were marginally significantly decreased (0.1
