In this study, we assessed the functional characteristics of Aralia continentalis Kitagawa (AcK) and Aralia continentalis Kitagawa leaf (AcK-leaf), including crude saponin contents, antioxidant activity, nutritive elements, dietary fiber, and chlorophyll contents. The results of our analysis of nutritive elements in AcK, the contents of the general components, inorganic components, and vitamins were all relatively high. The contents of inorganic components were also high in the following order: K>Ca>P>Na>Mg. Among vitamins, $\beta$-carotene and vitamin C contents were all high. The crude saponin content was 63.7 mg/g in the AcK and 63.5 mg/g in the AcK leaf, and the antioxidant activity was determined to be relatively high. With regard to the dietary fiber content, the total dietary fiber content was 2.13% (soluble 0.40, insoluble 1.72) in the AcK and 5.98% (soluble 1.06, insoluble 4.89) in the AcK leaf, and the total chlorophyll content was 92.58 mg in the AcK and 147.25 mg/100 g in the AcK-leaf.

The production of carotenoids, lipid content, and fatty acid composition were all studied in a strain of Sporobolomyces ruberrimus when using different concentrations of technical glycerol as the carbon source and ammonium sulfate as the nitrogen source. The total lipids represented an average of 13% of the dry weight, and the maximum lipids were obtained when using 65.5 g/l technical glycerol (133.63 mg/g). The optimal conditions for fatty acid production were at $27^{\circ}C$ using 20 g of ammonium sulfate and a pH range from 6 to 7, which produced a fatty acid yield of $32.5{\pm}1\;mg/g$, including $1.27{\pm}0.15\;mg$ of linolenic acid (LNA), $7.50{\pm}0.45\;mg$ of linoleic acid (LLA), $5.50{\pm}0.35\;mg$ of palmitic acid (PA), $0.60{\pm}0.03\;mg$ of palmitoleic acid (PAL), $1.28{\pm}0.11\;mg$ of stearic acid (SA), $9.09{\pm}0.22\;mg$ of oleic acid, $2.50{\pm}0.10\;mg$ of erucic acid (EA), and $4.25{\pm}0.20\;mg$ of lignoceric acid (LCA), where the palmitic, oleic, and linoleic acids combined formed about 37% of the total fatty acids. The concentration of total carotenoids was 2.80 mg/g when using 20 g of ammonium sulfate, and consisted of torularhodin (2.70 mg/g) and $\beta$-carotene (0.10 mg/g), at $23^{\circ}C$ and pH 6. However, the highest amount with the maximum specific growth rate was obtained (${\mu}_{max}=0.096\;h^{-1}$) with an ammonium sulfate concentration of 30 g/l.
Sweetpotato [Ipomoea batatas (L.) Lam] leaves are excellent source of low molecular weight antioxidants such as polyphenols, anthocyanins and carotenoids compared to other leafy vegetables. Endogenous antioxidants in sweetpotato help our bodies to prevent ageing, heart diseases and cancer. In this study, to develop the proper cultivars for the functional feed materials, we investigated the contents of anthocyanin, $\beta$-carotene, and polyphenols as well as DPPH radical scavenging activity in leaves of 14 different cultivars at the time of the harvest. They showed a diverse antioxidation activity. In DPPH radical scavenging activity, cultivars of Nanjing 9, Yulmi and Shinzami showed higher activity, whereas cv. Huiza 6 showed the lowest. Cultivars of Shinzami and Shinhwangmi had the highest anthocyanin (3.5 mg/g fr wt) and polyphenol (15.8 mg/g fr wt) content, respectively. Interestingly, there was a high correlation between cultivars with colorful pigments in storage roots and antioxidants activity in leaves. These results suggest that sweetpotato leaves with high antioxidant activity at harvest would be suitable for functional feed materials.

Snake tomato (Trichosanthes cucumerina) has been cultivated and used as a replacement for Lycopersicum esculentum in many Asian and African diets. Matured T. cucumerina fruits were harvested at different ripening stages and separated into coats and pulps for analyses to determine their suitability for use in culinary. They were analyzed for the nutritional composition and antioxidant potential using different biochemical assays [1,1-diphenyl-2-picrylhydrazyl, 2,2'-azinobis(3-ethylbenzothiazoline-6-sulfonic acid) radical scavenging activities, and ferric reducing antioxidant power] and antioxidative enzymes activities. The nutritional composition revealed that T. cucumerina contains over 80% water and is very rich in fiber, thus it can serve as a good natural laxative. The lycopene and ${\beta}$-carotene contents were especially high in the ripe pulp with values of $21.62{\pm}1.22$ and $3.96{\pm}0.14mg$/100 g, respectively. The ascorbic acid content was highest in the pulp of unripe fruit with a value of $56.58{\pm}1.08mg$/100 g and significantly (P<0.05) decreased as ripening progressed. The antioxidant potential of the fruits for the 3 assays showed that unripe pulp> ripe coat> ripe pulp> unripe coat. There were decreases in the antioxidant enzymes (superoxide dismutase, ascorbate peroxidase, and glutathione reductase) activities, with the exception of catalase, as ripening progressed in the fruits. These decreased activities may lead to the softening of the fruit during ripening. Harnessing the antioxidative potential of T. cucumerina in culinary through consumption of the coats and pulps will alleviate food insecurity and help maintain good health among many dwellers in sub-Saharan Africa and Southeast Asia.
The purpose of this study was to estimate the daily intake of vitamin A in Korean female university students. Vitamin A intake was estimated using an inconsecutive 3-day dietary intake survey from 481 young women. Vitamin A intake values were calculated based on the data in USDA database. Average age, height, and weight of the subjects were 20.05 years, 162.13 cm and 54.38 kg, respectively. The subject's average intake of energy was 1645.67 kcal. The mean vitamin A, retinol and ${\beta}$ carotene intakes were $908.35{\pm}863.18$ ug retinol equivalent/day, $199.19{\pm}166.00$ ug/day and $3872.59{\pm}4972.17$ ug/day, respectively. The 21.83% of the subjects consumed less than the Estimated Average Requirement (EAR) for vitamin A. And subjects consumed 141.69% of the Recommended Nutrient Intake (RNI) for vitamin A. Food groups consumed with high vitamin A content in our subjects included vegetables (423.96 ug RE/day), potato and starches (213.64 ug RE/day), cereals (62.60 ug RE/day), eggs (55.17 ug RE/day) and milks (53.45 ug RE/day). The major food sources of vitamin A were sweet potato, carrot, spinach, egg, and cereal, and the top 30 foods provided 89.57% of total vitamin A. Also animal-derived food provided 9.65% of the vitamin A intake from the top 30 foods. In conclusion, judging from RNI, the vitamin A intake of the Korean female university students in this study was generally adequate. The result of our study may be used as a basis for follow-up studies of vitamin A intake like assessment of vitamin A nutritional status or evaluation of carotenoid food sources in Korean young women.

Atmospheric-pressure plasma technique is a technology for sterilizing agricultural product. In this study, dielectric barrier discharge plasma was applied to silkworm powder for 1 to 5 h with less than 2 ppm of $O_3$ and $NO_2$. Quantitative compositions including proximate contents, mineral and heavy metal contents, fatty acids, vitamins, and DNJ contents were measured. Proximate contents of silkworm powder were protein (57.2%), fat (9.9%), fiber (4.6%), ash (10.1%), and moisture (5.7%). These compositions were not affected by the treatment of plasma. Silkworm powder has 5 abundant minerals potassium (K), phosphorus (P), sulfur (S), calcium (Ca), and magnesium (Mg). Among these minerals, plasma treatment decreased the contents of P and S sharply from 732.3 to 176.8, and 492.7 to 185.2 mg/100g, respectively. Heavy metal contents including lead (Pb), cadmium (Cd), arsenic (As), and mercury (Hg) were not detected in the silkworm powder. Five vitamins such as ascorbic acid (13.6 mg/100g), riboflavin (5.4 mg/100g), ${\beta}$-carotene (1.8 mg/100g), niacin (0.6 mg/100g), and thiamine (0.4 mg/100g) were not significantly changed by plasma treatment. Silkworm powder is composed of 30 parts saturated fatty acids and 70 parts unsaturated ones. The fatty acid composition was not significantly changed by plasma treatment. The DNJ content of silkworm powder (3.72 mg/g) was also nearly constant within the experimental condition of plasma treatment.

The aim of this study was to investigate the bioactivity and antioxidant activity of peel from Gardenia jasminoides Ellis fructus (GJE). We were separated into GJE peel. After that, we determined anthocyanin. GJE peel were extracted by 70% methanol, distilled water (DW) and ethyl acetate (EA) three solvents. To investigate by the solvent extract of total phenol content and value as a functional food ingredient of GJE peel through nitrogen oxide scavenging activity, antioxidant activity, reducing power and lipid peroxidation inhibition were performed. Solvent extract bioactivity of increasing concentrations (0.2, 0.4, 0.6 mg/mL) were significantly increased (p<0.05). GJE peel extracts showed lower activity than positive control (ascorbic acid, BHA, trolox). The total phenol contents of GJE peel extracts were highest in EA extract. However, the order of total phenol content of the solvent in the GJE peel and the results of analysis of various physiological activities were inconsistent. Considering the extraction yield and various physiological activities, it is expected to be effective when extracted from 70% methanol and DW extract. The results suggest that GJE peel is highly expected to be useful as a functional foods and natural antioxidant.
This experiment was carried out to determine optimal concentration of organic liquids for the improvement of antioxidant in pepper. As human beings enter the age of 100, they are naturally recognized as a standard of high quality agricultural products for safety and improvement of functional materials. Tomatoes are among the most consumed vegetables in the world and there is a growing interest in varieties with high functional content. However, there is a limit to the improvement of functional materials of certain varieties, so it is necessary to study the improvement of materials by cultivation physiology and environmental conditions. The test material was sown on March 15th in Wanju province and on June 15th in rain shelter house using pepper "suppermanidda" varieties. To investigate the optimum concentration of organic liquids for the improvement of antioxidant, 15 kinds of treatments were carried out including control, tomato liquid fertilizer etc. The liquid fertilizer of organic material was treated with 6 times of irrigation, and the analysis of nutrients and antioxidant was done by harvesting pepper on the September 10th. The contents of beta-carotene was increased in the T3, T4, T12 treatments, vitamin C was in the P14 treatments, flavonoid, polyphenol were in the P12 treatment compared to the control. In T12 treatment, flavonoid increased by 115.9%, polyphenol by 121.7%, beta-carotene by 117.2% and vitamin C by 136.1% compared to the control. There was no significant difference in the growth characteristics and characteristics of pepper fruit of pepper according to liquid fertilizer treatment. Therefore, it has been confirmed that the organic antioxidant is affected by the liquid fertilizer treatments of organic materials and it is necessary to study the environmental conditions such as temperature, moisture and photosynthesis.
The phenolic contents, antioxidant effects, and acetylcholinesterase inhibitory activities of hot water extracts prepared from various Korean commercial teas(green tea, puer tea, oolong tea, and black tea) were investigated. Total phenolic contents were in the range 72.03-85.62 mg/g. Flavonol contents of hot water extracts from green tea, puer tea, oolong tea, and black tea were 350.96, 254.17, 334.48, and 240.23 mg/100 g, respectively. Catechin contents were 2,920.35 mg/100 g in green tea, 1,016.23 mg/100 g in puer tea, 2,824.22 mg/100 g in oolong tea, and 1,006.51 mg/100 g in black tea. The highest caffeine content was in the green tea extract. All four extracts scavenged $ABTS^{{\cdot}+}$ radicals in a concentration-dependent manner, and the green tea extract was the most potent in this regard. The highest reducing power was observed in the green tea extract. All four extracts exhibited considerable antioxidative activities in linoleic acid autoxidation, $\beta$-carotene bleaching, and acetylcholinesterase inhibition assays; the effects were concentration-dependent and decreased in the order green tea > oolong tea > puer tea > black tea.
