Quality Characteristics of Sprouted Brown Rice Dasik with Yujacheong Added (유자청을 첨가한 발아현미다식의 품질 특성)

  • The principal objective of this study was to assess the quality characteristics of Sprouted Brown Rice Dasik(SBRD) manufactured with various addition levels of honey and Yujacheong(Yuja syrup and Yuja sarcocarp) in accordance with the traditional method for the preparation of Korean Dasik(a kind of cookie). The nutritional components, color value, physical tests, volatile compounds, and sensory evaluation of SBRD to which Yujacheong was added were conducted. The results were summarized as follows. In SBRD to which Yujacheong had been added, the moisture contents and crude fat content did not differ significantly among the sample groups, and the contents of crude protein and crude ash increased with increasing additions of Yuja syrup and Yuja sarcocarp. The pH(p<0.001) and sweetness(p<0.001) were significantly higher in sample D1 than in samples D2 and D4. The L color value was highest in D2, the a value was highest in D3, and the b value was highest in sample D2. The texture property analysis showed that the cohesiveness, springiness, gumminess, and chewiness of SBRD to which Yujacheong was added were all significantly higher compared to sample D1. According to the results of our volatile analysis, the D1 and other experimental groups evidenced different flavors and antibacterial compositions. According to the results of our sensory evaluation, the appearance of the D1 sample was superior to the other samples. However, flavor, taste, texture, and overall preference were higher in the samples to which Yuja syrup and Yuja sarcocarp were added. These results indicate that SBRD to which Yujacheong was added, and particularly those to which Yuja syrup was added, is superior to Dasik prepared with honey in terms of flavor and taste, and this method will improve the flavor and preparation time, due to its lower pH.

Anti-proliferative effect of methanolic extracts from Citrus junos seeds and seed oils on HT-29 human colon cancer cells and identification of their major bioactive compounds (유자(Citrus junos)씨와 유자씨 유지의 메탄올 추출물에 의한 HT-29 대장암 세포 생장 억제 효과 및 유효 성분 분석)

  • The purpose of this study was to investigate the anti-proliferative effect of methanolic extracts from Citrus junos (yuja) seeds and yuja seed oils against HT-29 human colon cancer cells and to identify the key compounds responsible for this effect. Extracts from yuja seeds, yuja seed oil prepared using hexane, and cold-pressed yuja seed oil were prepared using 60% methanol (ES, EHO, and ECO, respectively). The key compounds in the extracts were determined using HPLC-MS. Among the extracts, EHO and ECO inhibited proliferation of HT-29 cells. EHO and ECO were fractionated using preparative LC and the bioactive compounds were determined. Five of the fractions showed a significant anti-proliferative effect and the main compounds in the fractions were isopimpinellin, bergapten, and ichangensin. These compounds showed anti-proliferative effects on HT-29 cells when treated individually, and ichangensin showed the highest anti-proliferative activity. These results suggest that these compounds may be responsible for the anti-cancer effect of EHO and ECO.

  • This study was carried out to manufacture microcapsules from natural aromatic essential oils by polymeric emulsification and to evaluate their properties using microscopical and electro-chemical analysis techniques. It was shown that aromatic essential oils (yuja, lavender, and peppermint) could be microcapsulated and their emulsion has a good stability and storage characteristics.

  • This article examines the types of Sujeonggwa as recorded in 15 royal palace studies of the Joseon dynasty (1392-1909). The types of Sujeonggwa during the Joseon dynasty appeared Sujeonggwa(水正果), Geunsi-Sujeonggwa, Saengri-Sujeonggwa(生梨水正果), Weigamja-Sujeonggwa(倭柑子水正果), Gareun-Sujeonggwa(假蓮水正果), Yuja-Sujeonggwa(柚子水正果), Jabgwa-Sujeonggwa(雜果水正果), Duchung-Sujeonggwa (杜沖水正果), Yukyeldo-Sujeonggwa(六月桃水正果), Bokbunja-Sujeonggwa(覆盆子水正果), Aengdo-Sujeonggwa(櫻桃水正 果), Sansa-Sujeonggwa(山査水正果. The frequency of the Sujeonggwa types during the Joseon dynasty in order were; Geunsi-Sujeonggwa(20%), Saengri-Sujeonggwa(生梨水正果)r(15%), Sujeonggwa(水正果)(10%), Weigamja-Sujeonggwa(倭柑子水正果)(10%), Gareun-Sujeonggwa(假蓮水正果)(10%). The other Sujeonggwa each(5%). Through this study, through new lighting and menu development for Sujeonggwa used as a basis for hope to contribute to the globalization of Korean food.

Removal Efficiency of Microorganism and Pesticide Residues by a Using Surface Washing System on Yuja (Citrus junos Sieb ex Tanaka) (표면 세척 시스템에 의한 유자의 미생물 및 잔류농약의 제거효과)

  • This study was conducted to assess the effects of the removal of pesticide residues and microorganisms from yuja (Citrus junos Sieb ex Tanaka) using a surface-washing system, under the following washing conditions: 0.11, 0.42, and 0.73 m/s spray rotation speeds; 0.6, 0.9, and 1.2 MPa water pressure and 0.046, 0.092, and 0.138 m/s conveying speeds. Tap-water treatment was used as the control. The washing efficiency when using squid ink was highly correlated with the conveying speed and the spray rotation speed. In addition, the highest washing efficiency was achieved when the water pressure was 0.9 MPa. The microorganisms were reduced to 0.40 log CFU/g for the tap-water treatment, and all the treatments, except those at the conveying speed of 0.138 m/s and the spray rotation speed of 0.11 rpm (6.07 log CFU/g), produced higher removal efficiencies compared with the tap-water treatment. Reductions of 2.20 and 2.05 log CFU/g were achieved at the spray rotation speeds of 0.42 and 0.73, respectively. The largest reductions were observed when the conveying speed was 0.046 m/s. Higher pesticide residue removal efficiency values were obtained at slower conveying speeds and higher spray rotation speeds. Higher than 50% removal efficiency was achieved when the spray rotation speed was 0.046 m/s for spirodichlofen, deltamethrin, benomyl, thiophanate-methyl, and acequinocyl. Especially, the removal efficiency for benomyl and thiophanate-methyl was more than 90%. It can thus be concluded that the pesticide residues in yuja can be effectively reduced by washing the latter with a less-than-0.092-m/s conveying speed and a higher-than-0.42-m/s spray rotation speed.

Chemical compositions and antioxidant activities depending on cultivation methods and various parts of yuza (유자 재배방법에 따른 부위별 화학적 성분 및 항산화 활성)

  • This study was conducted to investigate the quality properties depending on the cultivation methods (general, organic, pesticide-free) of yuza and its various parts (peel, pulp, seed). The contents of hesperidin were the highest in yuza feel grown by pesticide-free method (13.23 mg/g). The contents of naringin presented a higher content in the peel, especially which of the general (4.62 mg/g) showed the highest value. Vitamin C analysis showed the highest content in the peel, significantly varied according to the cultivation method and various parts (p<0.05). Vitamin C value was significantly highest in organic peel, which was 770.02 mg/100 g, whereas among the peel, the pulp and the seed were it the lowest in the seed. The content of total polyphenols were the highest in general peel (0.85 mg/g). Flavonoid content of pesticide-free seed was significantly higher than those of the other yuja samples which was 0.89 mg/g (p<0.05). The DPPH radical scavenging activity was relatively more active in the peel among the above-mentioned three parts, especially the pesticide-free peel was most active, which was 73.94%. The ABTS radical scavenging activity of organic peel was significantly active among the samples, which was 84.47% (p<0.05). Based on these results, it can be said that yuja has variety of useful components in the pulp and the seed as well as the peel: and thus it's hight recommended to develop more varied yuja products.

Intake of Traditional Beverages in Female University Students (여대생들의 전통음료 섭취 실태에 관한 연구)

  • This study was conducted to investigate the actual conditions of intake of Korean traditional beverages in 273 female university students in Seoul, Korea. The subjects of this study consisted of 128 food and nutrition majors and 145 non-majors. Questionnaires were administered to the subjects who had an average age of 20 years. Two-hundred and nineteen students (80.2%) lived with their parents. Regarding the type of beverages subjects often drink, coffee was the most preferred (51.3%) overall, and non-majors (4.1%) were shown to drink traditional beverages more often. Regarding preference for traditional beverages, most subjects (72.5%) responded that they liked their own traditional beverage. However, for frequency of intake of traditional beverages, 48.7% answered they do not drink any traditional beverages. The reasons why subjects like traditional beverages were taste (71.7%) and health (26.3%), and the type of traditional beverages they often drink were Yulmu tea (35.9%), Sik hae (30.8%), and Yuja tea (10.6%), in order. Regardless of major, ginseng tea, jujube tea, mulberry-leaf tea, Chinese matrimony vine tea, ssanghwa tea, ginger tea, and omija tea were found to be satisfactory traditional beverages. Therefore, due to the low intake frequency, preference, and satisfaction of traditional beverages, new traditional beverages that can meet the standards of female students should be immediately developed.

Quality Characteristics of Doenjang prepared with Yuza Juice (유자즙 첨가 된장의 품질 특성)

  • The influence of the yuza juice addition on quality of the doenjang was investigated by analyzing their chemical properties. The 80 days pre-fermented(PFD) and non-fermented(NFD) doenjangs used in the present study were mixed with yuza juice designed at different ratio (0, 1, 3, 5% (w/w)), These doenjangs were fermented for 60 days and then analyzed chemical properties, respectively. The moisture content was higher in yuza juice added groups than control group. But Ash, crude lipid and crude protein contents were higher in control than yuza juice added groups. The pH and formol-N were higher in yuza juice added NFD groups however, acidity was reversed. Among the free sugars, glucose contents was the highest. And, free sugars contents were higher in yuza juice added PFD groups than control group. Five kinds organic acids were detected, and succinic acid content was the highest. The organic acid contents were higher in proportion to adding volume of yuza juice, in all groups. The contents of Free amino acids were higher in yuza juice added PFD groups and among these, 1% yuza juice added PFD group(3970.0 mg%) was the highest. Hunter L value was lower by yuza juice added volume and higher in PFD groups. Hunter a and b values were non-significantly difference in PFD and NFD, respectively.

The Preference and Frequency of Beverages related to Health Factor in University Students (대학생들의 건강관련 요인이 커피와 전통음료의 기호도와 섭취빈도에 미치는 영향)

  • This study was performed to investigate the effect of the health related factors on the preference and frequency of intake of coffee and traditional beverages among 280 university students (128 males and 152 females) who were residing in Incheon areas. The results were as follows; 1. Male students of over weight and obese were more than female students and female students of under weight were more than male students. Female students were interested in weight control and had an experience in weight control more than male students. 2. The group who was much interested in weight control preferred green tea, yuja tea and dunggulre tea. The group who was much interested in health when drink beverages preferred green tea, ginseng tea, dunggulre tea, vinegar drinks and water but didn’t prefer coffee. 3. The frequency of intake of green tea is high in the group who had an experience in weight control. And the frequency of intake of honey tea was high in the group who drank alcohol almost every day. Coffee intake was the highest among beverages in smokers and water intake was the highest among beverages in nonsmokers. In conclusion this study showed that as an interest in health is higher, the preference and frequency of intake of coffee was low whereas those who intake of traditional beverages was high in general.

A Study on Integrated Platform for Prevention of Disease and Insect-Pest of Fruit Tree (특용과수의 병해충 및 기상재해 방지를 위한 통합관리 플랫폼 설계에 대한 연구)

  • Recently, IoT technology has been applied in various field. In particular, the technology focuses on analysing large amount of data that has been gathered from the environmental sensors, to provide valuable information. This technique has been actively researched in the agro-industrial sector. Many researches are underway in the monitoring and control for growth crop environment in agro-industrial. Normally, the average weather data is provided by the manual agro-control method but the value may differ due to the different region's weather and environment that may cause problem in the disease and insect-pest prevention. In order to develop a suitable integrated system for fruit tree, all the necessary information is obtained from the Jeollanam-do province, which has the high production rate in the Korea. In this paper, we propose an integrated support platform for the growing crops, to minimize the damage caused due to the weather disaster through image analysis, forecasting models, by using the micro-climate weather information collection and CCTV. The fruit tree damage caused by the weather disaster are controlled by utilizing various IoT technology by maintaining the growth environment, which helps in the disease and insect-pest prevention and also helps farmers to improve the expected production.
