A comparative study on the language of food related to rice and wheat in East Asia (동아시아의 쌀과 밀 관련 식품의 언어 비교)

  • This paper aims to compare the language of food related to rice and wheat in Korean, Chinese and Japanese. These three countries in East Asia are very close in terms of geography, history, and culture. As of language, Korean and Japanese are classified as a same language family, while Chinese, to another. However, since three countries have been sharing Chinese character and words composed of it, there are many alike things in their languages. It is natural that food and the language of food are shared in neighboring areas. Among many food, I will explain the names of rice and wheat and the details of the names of various food made of them. In particular, rather than a simple comparison, the language of food is analyzed in the viewpoint of migration. And I will look into the names of food not only in relation to language, but also in culture, society and history.

Effects of Chemical Treatments and Ensiling on the Chemical Composition and Degradation Rate in the Rumen (볏짚의 화학적 처리와 사일리지 제조가 화학성분 변화 및 한우 반추위 분해율에 미치는 영향)

  • This study was conducted to examine of rice straw after chemical treatments and ensiling on its feeding value, in situ studies using a rumen fistulated Korean cow and nylon bag technique. NaOH treatment greatly improved the degradation the Dry matter and Neutral detergent fiber degradation in the rumen but the intake was not affected. Ammonia treatment did not improve the degradation rate of rice straw in the rumen, but remarkably increased the rice straw digestibility and intake by sheep. Making silage of rice straw did not affect its rumen degradation rate, but the digestibility and its take by sheep were greatly improved especially when a little molasses together with Lactobacillus were supplemented. Degradation rate of rice straw in the rumen measured by nylon bag technique was influenced by various treatments but did not appear to coincide with digestibility by sheep. This would be due to the fact that feed intake affect digestibility as well as the degradation in rumen. Therefore, it can be said that making silage with some molasses and Lactobacillus is one of the easest way of using rice straw for animal feed. (Key words : NaOH, Digestibility, Silage, Molasses )

Increased Thermotolerance of Transgenic Rice Plant by Introduction of Thermotolerant Gene

  • To increase thennotolerance of forage crops, transgenic rice plants as a model for transformation of monocots were generated. A cDNA encoding the chloroplast-localized small heat shock protein (small HSP) of rice, Oshsp21, was introduced into rice plants via Agrobacterium-mediated gene transfer system. Calli induced from scutella were co-cultivated with a A. tumefaciens strain EHAlOl canying a plasmid, pIGhsp21. A large number of transgenic plants were regenerated on a medium containing hygromycin. Integration of Oshsp2l gene was confirmed by PCR and Southern blot analyses with genomic DNA. Northern blot and immunoblot analyses revealed that the Oshsp21 gene was constitutively expressed and accumulated as mature protein in transgenic plants. Effects of constitutive expression of the OshspZl on thermotolerance were first probed with the chlorophyll fluorescence. Results indicate that inactivation of electron transport reactions in photosystem I1 (PSII), were mitigated by constitutive expression of the Oshsp21. These results suggest that the chloroplast small HSP plays an important role in protecting photosynthetic machinery during heat stress. (Key words : Thermotolerance, Rice, Transgenic, cDNA)

A Kinetic Study on the Phosphate Efflux in Rice Roots - Rhythmic Phenomena of Phosphate Flux - (벼의 인산유출기작에 대한 연구 -인산유출의 Rhythm현상)

  • This study was performed to elucidate the mechanisms involved in efflux process of phosphate from intact and excised roots of Oryza sativa (Tongil). The rapid loss of phosphate during the first 40-minutes of treatment is mainly from the cytoplasmic fraction, and the gradual loss taking place afterwards is possibly reflecting the losses at the tonoplast. During the first 60 minutes, loss of phosphate from the excised roots treated with KCN was more rapid than the control but slower thereafter. The effect of $CaCl_2$ and KCl appeared to decrease the rate of phosphate efflux in excised roots of rice. The mechanism of phosphate efflux by rice roots seems to be passive and oscillatory in the short period. Key words: Oryza sativa(Tongil), Phosphate efflux.

The Effect of Addition of Apple Pomace on Quality and in situ Degradability of Rice Straw Silage (사과박 첨가가 볏짚 사일리지의 품질과 in situ 소실율에 미치는 영향)

  • The quality of the rice straw silage added with apple pomace was investigated in this study and the amount of apple pomace added in different treatments were 0, 20, 40 and 60%, respectively. Crude protein contents (6.4-7.5%) of rice straw silage added with apple pomace were significantly (P<0.05) higher than that of 100%. rice straw silage (5.3%), however, crude ash contents were lower (P<0.05) in supplementation of apple pomace. The trends of changing chemical composition between raw materials and end products of silages particularly in the contents of crude protein and crude ash were more apparent in the silages added with apple pomace by 40-60%. Values of pH and the contents of lactic acid and total acid in 40-60% apple pomace added silages were 3.9-4.1, 1.0- 1.5% and 2.7-4.5%, respectively which were significantly (P<0.05) higher than those of 4.6, 0.02% and 0.34% in 100% rice straw silage, respectively. In situ dry matter (DM) and neutral detergent fiber (NDF) disappearance rates in the rumen in the treatments of 40- 60% apple pomace added silages were significantly (P<0.05) higher than those of 100% rice straw silage particularly since after 3 and 24 hour incubation on DM and NDF disappearance, respectively. Although quickly degraded fraction (a) among the treatments were not significantly different, 28.4-28.5% of slowly degraded fraction (b) and 27.2-27.4% of effective degradability (ED, k=0.08) for DM were significantly (P<0.05) higher than those of 100% rice straw silage (12.5 and 24.6% respectively). NDF was in the same trend as in DM. 31.6-63.2% of NDF for b fraction and 18.7- 19.4% for ED in 40-60% apple pomace added silages were significantly (P<0.05) higher than those of 100% rice straw silage (12.4 and 17.6% respectively).   • The purpose of this study is to research and systematize Jeju dialectal words about Jeju traditional housing culture and study them on the basis of lexical semantics. Vocabularies related to the names of the traditional thatched-roof house and its partial names, thatching, supplementary facilities, housing culture, etc. were categorized after recording in an ethnographic way from Seongeup folk village which is Important Folklore Material no.188, and studied them linguistically. Informants are fore people who were born and bred in Seongeup-ri and they are over 70. They have a lot of experiences building thatched-roof houses from a young age. There are 9 different categories - the kind of the house, partial names, exterior space, materials, tools, words about actions, doers, units, and folklore. Some new words related to Jeju traditional housing, which had not been in the list of Korean dictionary, could be introduced as a result of the study. For example, rice which are made when doing earth work is called Heukppap and adzes used to sharpen stones are called Dolchagui. The finding of These new words hopefully contribute to the promotion of Korean language as well as enrich vocabulary on housing. Furthermore, the collected vocabularies and oral materials could be used as important educational materials to comprehend Jeju traditional housing culture.

Assessment of the Impacts of Rice Self-sufficiency on National Rresources in Korea through Water-Energy-Food-Land Nexus Approach (물-에너지-식량-토지 넥서스를 통한 미래 쌀 수급 변화에 따른 자원별 이용량 변화 분석)

  • The aim of this study is to apply the Water-Energy-Food-Land Nexus approach which can analyze the trade-offs among resources, and assess the holistic impacts of food security. First, we applied rice as a study crop and analyzed the trend of consumption of rice and the area of paddy fields. Second, the portfolios of water, energy, and land for rice production were constructed using data of footprints and productivity. Finally, the self-sufficiency ratio (SSR) of rice in target year was set as food security scenario and assessed the impacts of food security on water, energy, and land availability. In 2030, the SSR of rice decreased to 87 %, and water use for producing rice decreased from 4,728 to $3,350million\;m^3$, and the water availability index increased from 0.33 to 0.53. However, food security is essential issue and we set the 50 % and 100 % SSR of rice as high and low food security scenarios. For 100% SSR in 2030, about $3,508million\;m^3$ water was required and water availability index reached to 0.5. In other words, there is the trade-off between food security and water-energy-lands availability. Therefore, it is difficult to make a decision whether a high level of SSR is better or worse. However, this study showed the both positive and negative impacts by change of food security and it can be useful for setting the policy decision considering both food security and sustainable resource management at the same time.

Strengthening Food Security through Food Quality Improvement - Focus on Grain Quality and Self-Sufficiency Rate

  • The concern about food security is rising as the unstable situation of food supply and demand due to the Covid-19 pandemic, climate change, and turbulent political situation. Korea's global food security index (GFSI), analyzed by the Economist Group, is considered good, but the level continuously decreases in comparing food security levels by country. In particular, Korea is highly dependent on food imports, and food and grain self-sufficiency rates continuously decrease. Therefore, increasing those rates to strengthen food security is urgent. Among the major grains, the self-sufficiency of wheat, com, and soybeans, except rice, is relatively low. Unlike the decrease in the annual rice consumption, the annual wheat consumption has been continuously maintained or increased, which is required public-private efforts to increase the self-sufficiency rate of wheat. Applying the government's policies implemented to increase the self-sufficiency rate of rice in the past will help increase the self-sufficiency rate of wheat. In other words, expanding wheat production and infrastructure, stabilizing supply and demand, and establishing a distribution system can be applied. However, the processing capability of wheat and rice is different, which is necessary to improve wheat quality and processing technology to produce consumer-preferred wheat-based products. The wheat and flour quality can be improved through breeding, cultivation, post-harvest management, and milling. In addition, research on formulation, processes, packaging, and storage to improve the quality of wheat-based products should be done continuously. Overall, food security could be strengthened by expanding wheat production and consumption, improving wheat quality, and increasing wheat self-sufficiency.

Quality Measurement of Rice - Mixture Extrudate by the Response Surface Regression Analysis (반응표면분석에 의한 쌀 압출성형물의 품질평가)

  • The study was designed to investigate overall acceptability of rice extrudate with added ginseng flour extruded by single screw extruder. Graphic three dimension analysis on response surface regression was conducted for overall acceptability evaluated by balanced incomplete block design. Overall acceptability, which formed a saddle point, increased as moisture content increased at lower die temperature, and as moisture content decreased at higher die temperature. Critical values of each variable which indicated optimum response are 5.0% ginseng content, 17.8% moisture content and 104.6$^{\circ}C$ die temperature, and optimum inferred score of overall acceptability is 59.6 and 90. Airflow Characteristics of Natural Air Drying for Rough Rice (벼 상온통풍건조시설의 송풍특성)

  • This study was conducted to define the characteristics of the fan according to the bed depth of rough rice for the silo used in South Korea. In this study, the characteristics like air flow resistance and air flow rate of the fan were investigated for an independent blowing system with 1 fan and the serial blowing system with 2 fans. In the experiment, the depth of rough rice was determined by 0, 1, 2, 3.2 and 4.5 m for an independent blowing system and the depth of rough rice was 4.5 m for the serial blowing system. The air flow resistances of the blowing fan and the suction fan in an independent blowing system were 55 mmAq and 88 mmAq respectively. In addition, the air flow resistance of the serial blowing system was 61% lower than the blowing fan and 28% lower than the suction fan of the independent blowing system. The air flow rates of the blowing fan and the suction fan in the serial blowing system were 516 $m^3/min$, 570 $m^3/min$, respectively. The former was 22% higher than the blowing fan while the latter was 29% higher than the suction fan in the independence blowing system. In other words, the serial blowing system was superior to the independent blowing system in blowing characteristics because the air flow rate was lower and air flow resistance was higher than the independent blowing system. However, the fan power consumption of the serial blowing system was more than 100% comparing with the independent blowing system.
