훈제 처리가 가열소지에 미치는 영향 (The effect of smoking on the quality boiled sausage)

  • The effect of smoking on the quality sausage Sausages were prepared from beef, port, chickens, games, fish and shellfish with polyphosphate salt and spices. Sausage history goes back to 3,000 years of age. The procedure of sausage 1) Meat Curing 2) Meat Control 3) Add Spices 4) Permissible Ingredients 5) Grinding 6) Mixing Emulsion 7) Stuffing 8) Showing 9) Smoking 10) Cooking 11) Drying 12) Packaging Sausage Product to get information on the effect of smoking onto the quality of meat produces. Sausage was smoked under a given conditions. Smoking was conducted as 35f$^{\circ}C$to 6$0^{\circ}C$ the related humidity of smokehouse was still at 60 to 70 percent. Results are as follows: 1. The Penetrated smoke in sausage was prolonged < p.<0.02 when sausage was smoked 2hours at 60~$65^{\circ}C$ the penetrated amount of free acetone in sausage was 0.5mg%. 2. Peroxide value of sausage as heating treatment both at 3$0^{\circ}C$ and at 5$0^{\circ}C$ was prolonged. 3. When sausage was heated at 3$0^{\circ}C$, bacteria of sausage increased In number while at 60~$65^{\circ}C$ bacteria of sausage increased In number fourteen hours. 4. When sausage was treated with smoking the distribution of free amino acids in sausage was changed markedly. 5. The longer smoking time of the products was the higher the content. 6. In case of oak wood smoke flavoring all of test samples. 7. Rapid decrease of does-response mutagenic curve of the smoke flavoring of oak wood and apple wood by in the peak of curve and phenol in the smoke flavoring. Continuous efforts are required to make sausages easily in the butcher shops and in the restaurants. 8. Sausage texture evaluation has 13 rules. It is Elasticity, Surface Moisture, Surface Smoothness, Center Hardness, Skin Toughness, Cohesiveness, Denseness, Moisture Release, Cohesiveness of Mass, Lumpiness, Graininess (of Contents), Skin separation, Oiliness and sensory 11 rules evaluation is color, texture, mold, flavor, sweet test, salty, sourness, bitter, and savory taste. 9. Smoked, component, peroxide value, bacteria, color, free amino acid, tenderness, flavor, shrinkage are important values.

건축용 외장재와 접착제의 발연특성에 관한 연구 (A Study on the Characteristics of Smoke Release for Architectural Surface Materials and Architectural Adhesives)

  • In this study, we have investigated the maximum smoke density and the initial stage smoke density in order to see the characteristics of smoke release of the architectural surface materials and the architectural adhesives, using smoke density chamber. As a result of the study, polyurethane foam showed the highest smoke density index, 206.55 within 10 min. In the case of the other samples, reinforced styrofoam was followed as 39.90, general styrofoam 33.73, and glass fiber 5.40, respectively. In the intial stage of a fire, it is forecasted actually to give hardship at the clear visibility. In the case of architectural adhesives, the highest ranking was those for windows and doors 509.64, stone 275.63, wood 232.25, tile 18.65, and styrofoam 6.44 were followed, respectively. This result is an early research to show characteristics of smoke release through experiment. However, it is meaningful that this study can be used as a basic for further study on architectural fire hazard prediction.

다양한 화재조건에서 플라스틱 종류에 따른 연기입자의 크기분포 변화 측정 (Measurement of the Size Distribution of Smoke Particles with Plastic Types Under Various Fire Conditions)

  • 화재발생 시에 대부분의 인명 피해는 연기에 의해 발생되는데, 최근 건축 내장재에서 차지하는 플라스틱의 양이 많아지며 발생되는 연기의 유독성이 점차적으로 증가되고 있다. 연기에 의한 인체피해의 상당부분은 흡입연기의 폐침전과 관련이 있으며, 연기입자의 크기분포는 폐침전 특성에 직접적인 영향을 미친다. 따라서 플라스틱 종류에 따른 연기입자의 크기별 발생량 검토는 폐침전에 의한 인체피해 연구에 필수적으로 요구된다. 최근의 목재와 폴리프로필렌(PP)에 대한 연기입자의 발생특성 연구에서 PP의 연기입자 크기분포 특성이 몇 가지 측면에서 목재와는 확연히 다르게 나타났다. 이에 따라, 본 연구에서는 다른 플라스틱들도 연기입자 크기분포에서 PP와 같은 특성을 보이는지 알아보기 위해서 대표적인 4가지 플라스틱(LDPE, PA66, PMMA, PVC)에 대하여 연기입자 크기분포 측정실험을 수행하였다. 특정 조건에서 연소생성물을 균일하게 생성하고 분석하기 위하여 ISO/TS 19700 기준에 따른 등속튜브연소로를 이용하여 연소로의 온도와 산소공급량에 따라 다양한 화재조건에서 연기입자를 균일하게 발생시키고, 정전저압 임팩터를 사용하여 연기입자의 크기에 따른 개수농도를 실시간으로 측정하였다. 실험 결과 4가지 플라스틱의 연기입자 크기분포 특성은 여러 측면에서 PP와 유사하며 목재와는 확연히 다르게 나타났다.

  • This experiment was carried out to evaluate the results of fire retardancy of sealer coated plywood by Building material combustibility tester and Inclined panel tester. At this study, weight loss percentage, flame exhausted time, burning point and smoke yield coefficient were examined. The findings of this study lead to conclusions as listed below. 1. It was obvious that weight loss percentage and flame exhausted time of Inclined panel tester had more remarkable tendency than those of Building material combustibility tester. 2. Burning point was determined by Inclined panel tester while smoke yield coefficient by Building material combustibility tester. 3. Weight loss percentage decreased remarkably with proportion to the increase of sealer coated amount during 5 minutes burning. 4. Flame exhausted time decreased with proportion to the increase of sealer coated amount during 3 minutes burning. 5. Burning point indicated increasing tendency with proportion to the increase of sealer coated amount. 6. Smoke yield coefficient of urea scaler showed definite inclination decreasing with the increase of sealer coated amount.

  • Liquid smoke is made by concentration of smoke generated from charcoal of broad-leaved trees, or by refinement of smoke originated from incomplete combustion of wood condensate (Park et al., 1994). Generally, it is well known that phenol and its derivatives have antioxidative effect, while acids and formaldehyde have antimicrobial effect (Park et al., 1994). Meanwhile, some studies (Alonge, 1988; Dungel, 1961) reported that the high incidence of stomach cancer has been associated with the consumption of smoked fishes, and these were investigated to direct intake of fishes treated with smoke, containing polycyclic aromatic hydrocarbons(PAHs)(Moret et al., 1999). FDS에 의한 목재 및 지하철 화재의 열 및 연기 거동 시뮬레이션 (Simulation of Heat and Smoke Behavior for Wood and Subway Fires by Fire Dynamics Simulator(FDS))

  • 본 연구에서는 CFD 기반의 화재시뮬레이터인 FDS에 의해 화재에서 열 및 연기 거동을 해석하는 방법을 제시하기 위하여 시뮬레이션 결과와 실험결과를 비교하였고, FDS 시뮬레이션의 그리드 크기변화에 대한 사고결과의 민감도 분석을 실시하였다. 목재 화재에서는 실험에서 얻은 열화상 이미지와 FDS 시뮬레이션을 비교한 결과, 최대온도에서도 약 4.3 %의 적은 오차를 나타내어 FDS에 의해 화재현상을 해석할 수 있었다. 또한 지하철 화재에서 그리드 크기변화에 대한 FDS 결과의 민감도를 분석한 결과, FDS 시뮬레이션의 그리드 크기를 $28(L){\times}28(W){\times}14(H)$보다 작게 하는 경우에는 연기 온도, CO 농도 및 가시거리의 시뮬레이션 결과가 거의 일정한 값을 나타내어 본 연구에서 설정한 화재 모델링으로 FDS에 의해 화재현상을 해석할 수 있음을 알 수 있었다.

화재로부터 연소성 물질에 대한 연기위험성 및 연기위험성 등급 평가 (Evaluation of Smoke Risk and Smoke Risk Rating for Combustible Substances from Fire)

  • 본 연구는 건축용 자재인 목재 및 플라스틱의 연기 위험성 평가에 대하여 새로 고안된 연기성능지수-V (smoke performance index-V, SPI-V), 연기성장지수-V (smoke growth index-V, SGI-V), 연기위험성지수-VI (smoke risk index-VI, SRI-VI)를 중심으로 조사하였다. 시험편은 가문비나무, 나왕, polymethylmethacrylate (PMMA), polycarbonate (PC)를 사용하였다. 연기 특성은 콘칼로리미터(ISO 5660-1) 장비를 사용하여 시험편에 대하여 측정하였다. 연소반응 후 측정된 연기성능지수-V는 PMMA를 기준으로 1.0~3.4로 나타났다. 연기성능지수-V에 의한 연기위험성은 PC, 가문비나무, 나왕과 PMMA 순서로 증가하였다. 나왕과 PMMA는 유사한 값으로 나타났다. 연기성장지수-V는 PMMA를 기준으로 1.0~9.2로 나타났다. 연기성장지수-V에 의한 연기위험성은 PMMA, PC, 가문비나무, 나왕의 순서로 증가하였다. 모든 시편의 CO 피크 발생속도는 0.0021~0.0067 g/s로 측정되었다. 결론적으로 연소가 용이한 물질은 연기성능지수-V가 낮고, 연기성장지수-V가 높기 때문에 화재로 인한 연기위험성이 높은 것으로 이해된다. 이는 총괄적으로 연기위험성지수-VI로 정리된다.

미세물분무를 이용한 PPV의 화재진압효과 (Fire Suppression Effect of PPV with Water Mist System)

  • To inject fresh air into a fire room, Positive Pressure Ventilation (PPV) can be used and the blower of PPV increases inside pressure of the room. It makes high flow rate of products of combustion, smoke and heat from the structure, and it is very helpful to fireman on the fire extinguishing work. The flame moves to the direction of airflow and the temperature of flame can be decreased rapidly. In this experiment, a water mist system is applied to PPV to increase the effectiveness, and various effective factors are studied. n-Heptane and pine wood stick were used as fuel. Temperatures at the above and behind the combustion pan were strongly reduced by the water mist system and by the convective cooling with airflow. The smoke density was also decreased by PPV with water mist system and it can be explained by the absorption of smoke particles on the water mist droplet and by the strong exhausting effects of mobile fan.

안개나무 추출물을 이용한 한지의 천연염색 특성 (Natural Dyeing Characteristics of Korean Traditional Paper with Smoke Tree (Cotinus coggygria Scop))

  • The purpose of this study was to estimate natural dyeing properties of Korean traditional paper (Hanji). We dyed the Korean traditional paper with dyestuff which extracted from wood meal of Cotinus coggygria Scop (smoke tree) using hot-water, ethanol and $K_{2}CO_{3}$ solution. As mordants, 0.5% of $AlK(SO_4)_2$, $FeCl_2$, and $CuCH_3(COO)_2$ solution were used respectively. The color of dyed Hanji mainly depended on not the methods of extraction but the kinds of mordant. The dyed Hanji mordant with $AlK(SO_4)_2$ colored vivid yellow, $FeCl_2$ colored dark olive, and $CuCH_3(COO)_2$ colored brown and/or orange. The dyed Hanji with hot-water extractive had the highest K/S value and ethanol and $K_{2}CO_{3}$ solution extractives were followed. The K/S value of dyed Hanji mordant with $AlK(SO_4)_2$ was higher than that of $FeCl_2$ and $CuCH_3(COO)_2$. The dyeing effectiveness of after-mordanting method was superior to the others but sim-mordanting method was the worst.

콘 칼로리미터를 이용한 건축 바닥재의 연소거동과 가스유해성 평가 (Burning Behavior of Flooring Materials in the Cone Calorimeter and Evaluation of Toxic Smoke)

  • 건축 내장재 중 바닥재의 연소거동을 살펴보기 위해 열류량 $50kWm^{-2}$의 콘 칼로리미터를 이용하여 측정하였다. 7종의 국산 바닥재를 이용하여 각각의 연소 거동을 최대 열방출률과 전체 열방출량 그리고 평균 열방출률을 통해서 살펴보았다. 실험한 결과 중밀도섬유판(MDF) 바닥재가 다른 바닥재에 비해 높은 열 방출 특성을 나타났다. 또한 MDF 바닥재는 연소 시 질량의 감소가 다른 바닥재보다 더 큰 것을 확인할 수 있었다. 연소 시 발생하는 가스 발생량을 측정하였는데, PE계 섬유판(PE fiberboard flooring)과 PVC계 plastic resin sheet에서 높은 일산화탄소와 이산화탄소의 발생량을 확인할 수 있었다. 비광소멸면적을 통해서 가스 평균 방출량을 살펴보면 일산화탄소나 이산화탄소와 같은 경향을 나타났다. 바닥재의 가스유해성 평가는 쥐의 행동 정지시간을 기준으로 측정하였다. 측정 결과 MDF 바닥재에서 유해성이 높은 것으로 측정되었다.
