High Level of Trans-Resveratrol, a Natural Anti-Cancer Agent, Found in Korean Noul Red Wine

  • Resveratrol (trans-3,5,4'-trihydroxystilbene), a phenolic substance present in both grapes and wines, has been reported to have certain pharmacological effects. Using an ethylacetate-phase extraction followed by a high performance liquid chromatographic analysis, the concentration of trans-resveratrol was measured in 9 red wines commercially available in Korea, including the Korean red wine (Noul). Noul red wine with a 1998 vintage had a trans-resveratrol concentration of 3.3 ㎎/l, which was rather higher than the concentrations found in other wines (0.19-2.45 ㎎/l) with the exception of the French wine, J. P. Chenet (3.39 ㎎/l). In addition, the grapes of Vitis labrusca cv. Sheridan cultivated in the Kyungsan area showed a trans-resveratrol content of 6.4 ㎎/㎏.

Sasang Constitution Analysis and Wine Recommendation App suggestion through Mobile Face Recognition

  • With the global COVID-19 pandemic, the tourism sector and all consumption have contracted with the untact era. Wine will also be sold and developed in various ways non-face-to-face in the future. Therefore, it is necessary to develop apps and web servers that focus on health in the era of single-person households and non-face-to-face. This study used facial recognition data based on photos of adult men and women in their 40s and 50s to analyze the Sasang constitution through a mobile app and web server, and suggested wine recommendations suitable for their constitution. First, the user's body information is entered. And through the facial recognition mobile app, recommend the right wine after analyzing the body type. if it's not like the first recommended wine, it is configured to receive another wine recommendation. In the future, the number of single-person households will increase further, and in the age of well-being, wine recommendations that fit my body will be useful. 와인 선택속성이 만족도 및 재구매의도에 미치는 영향 -와인 관여도의 조절효과를 중심으로- (Effects of Wine Selection Attributes on Satisfaction and Repurchase Intention -Focused on the Moderating Effect of Wine Involvement-)

  • 본 연구는 와인 소비자를 대상으로 와인 선택속성이 만족도 및 재구매의도에 미치는 영향을 알아보고, 와인에 대한 관여도에 따라 차이가 있는지를 분석하는데 목적으로 갖고, 와인 구매와 음용 경험이 있는 만 20세 이상 와인 소비자를 대상으로 2011년 12월 1일부터 12월 31일까지 설문조사하여 실증분석하였다. 분석결과 와인 선택속성이 만족도에 미치는 영향을 검증한 결과 가격, 레이블, 와인특성이 만족도에 통계적으로 유의한 정(+)의 영향을 미치는 것으로 나타났고, 재구매의도에 미치는 영향을 분석한 결과 지역성, 가격, 와인특성이 재구매의도에 통계적으로 유의한 정(+)의 영향을 미치는 것으로 나타났다. 또한 만족도에 영향을 미치는 와인 선택속성에 있어 와인관여도는 와인 선택속성의 지역성, 가격과 만족도간의 관계를 조절하는 것으로 나타났고, 재구매의도에 영향을 미치는 와인 선택속성에 있어 와인관여도는 와인 선택속성의 레이블과 재구매의도간의 관계를 조절하는 것으로 볼 수 있다. 즉, 와인 재배지역의 지역적 특성과 적절한 가격, 그리고 품질자체 와인 고유특성은 기존 선행된 연구결과들을 지지해주었으며, 이들 결과가 와인 관여정도에 따라 만족과 재구매의도에 조절된다는 점에서 그 특징을 시사해 주었다.

포도 숙성 정도에 따른 청포랑 화이트 와인의 향기 및 품질 특성 (Aroma and Quality Characteristics of Cheongporang White Wines using Grapes at Different Stages of Ripening)

  • To investigate the aroma and quality characteristics of wine bestowed by the degree of ripening of Cheongporang grapes, the general quality composition, color, organic acid, physiological activity, aroma component and sensory evaluation were analyzed. The general characteristics of the wine assessed were pH 3.34~3.50, total acidity 0.46~0.67%, color intensity 0.074~0.116, lightness 98.99~99.74, redness -0.39~0.01, and yellowness was 1.52~3.10. Malolactic fermentation was not relative to the contents of malic acid and lactic acid. The total polyphenol content and antioxidant activity were lowest in C3 wines made with ripe grapes and highest in C4 wines made with mixed grapes. Aroma analysis identified 6 alcohols, 15 esters and 5 miscellaneous compounds. Compounds with higher odor activity value (OAV) were 3-methyl-1-butanol, ethyl butanoate, isopentyl acetate, ethyl hexanoate, ethyl octanoate, ethyl decanoate and octanoic acid. The C4 wine, a mixture of grapes with different degrees of ripening, had the highest ester content and ratio. The lowest values were found in the C3 wine made with ripe grapes. Results of the sensory evaluation related the C4 wine, containing a large amount of ester compounds having high OAV values as the aroma component, as the best and most preferred wine.

국산 시판 머루 와인의 품질 특성 (Quality Characteristics of Korean Domestic Commercial Meoru Wines)

  • This study was carried out to investigate quality characteristics of Korean domestic commercial meoru wines, 8 kinds of wines were purchased from the Korea Wine Festival in 2016 and we compared the characteristics and physiological activity of 8 domestic wine. The results of this study have shown that the alcohol contents of wines ranged from 9.8 to 14.3%, pH of wines ranged from 3.86 to 4.22 and the total acidity of wines ranged from 0.56~0.75%. The hue value of meoru wines ranged from 0.81 to 1.02, The brightness of meoru wines ranged from 0.77 to 5.55, the redness from 3.97 to 31.16, and the yellowness from 0.99 to 5.63. The organic acid analysis of wine revealed lactic acid content at 4.281~9.606 mg/mL, followed by malic acid, tartaric acid, and acetic acid. The concentrations of total polyphenol and anthocyanin contents in the samples were investigated by spectrophotometric methods. Total polyphenol contents of the M8 (172.24 mg%) wine was higher than those of the other wines and total anthocyanin contents represented from 356.69 to 601.33 mg/mL. The DPPH radical scavenging activity of meoru wines was between 57.23 to 73.98%. Volatile flavor component analysis of meoru wines identified 7 alcohols, 16 esters, 5 acids, 3 terpenes and 4 other compounds.

Lycium barbarum Polysaccharide Inhibits Lipid Oxidation and Protein Degradation in Tan Sheep Meatballs during Frozen Storage

  • The aim of the present study was to evaluate the effectiveness of Lycium barbarum polysaccharide (LBP) on lipid oxidation and protein degradation in Tan sheep meatballs during the frozen period. The meatballs were treated with LBP at 0.01%, 0.02%, and 0.03% and stored at -18±1℃ for 0, 3, 6, 9, and 12 weeks. The effects of LBP treatment were investigated using the contents of total volatile basic nitrogen (TVB-N), texture profile (TP), thiobarbituric acid reactive substances (TBARS), colour, and pH values, compared with 0.02% butylated hydroxytoluene treatment and the blank control. The results showed that LBP treatment significantly decreased TBARS content compared with the control, which confirmed LBP to be a highly effective component in preventing lipid oxidation of Tan sheep meatballs during frozen storage, and protein degradation in Tan sheep meatballs had a significant inhibition effect because of TVB-N value reduction. In addition, the colour, TP and pH values of meatballs treated with LBP were improved dramatically. To further determine the quality changes of the blank control and all treated groups during storage, the comprehensive score evaluation equation based on principal component analysis was obtained: Y=0.51632Y1+0.29589Y2 (cumulative contribution rate=81.221%), and the 0.02% LBP-treated group had a higher comprehensive score than the other groups, and the quality of LBP-treated meatballs was better as well. In summary, LBP may reduce or inhibit lipid oxidation and protein degradation, and enhance overall quality and shelf-life in prepared meat products.

토종효모를 이용한 복분자 발효주의 바이오제닉아민 함량 및 향기성분 분석 (Analysis of Biogenic Amines Content and the Main Volatile Flavor Compounds in Black Raspberry Wine Using Traditional Yeast)

  • We investigate black raspberry (Rubus occidentalis) wine made using traditional yeast (Saccharomyces cerevisiae A8, B6, GBY2, GBY3) and S. cerevisiae Fermivin (FM), which is widely used in wine manufacturing, and analyze the biogenic amine content and the volatile flavor compounds. Black raspberries were separately inoculated with yeast up to $1{\times}10^9CFU/kg$, followed by incubation at $25^{\circ}C$ for 7 days. FM produced the highest alcohol content, however the final fermentation characteristics of the wine made using four different yeasts were similar. S. cerevisiae A8 had a large biogenic amine (BA) content, specifically tryptamine, thus we excluded this yeast from fermentation. S. cerevisiae GBY3 was selected for black raspberry wine fermentation as a result of sensory evaluation. The volatile flavor compounds of two wines (S. cerevisiae GBY3 and FM) were analyzed by gas chromatography and mass spectrometry. 37 compounds in the samples were separated, and several ester compounds were identified in greater amounts in the wine made with S. cerevisiae GBY3 than in the wine made with FM. A greater amount of the major compound, ethyl benzoate, giving the sweet and fruity flavor, was identified in wine made with S. cerevisiae GBY3 than in the wine made with FM. In conclusion, S. cerevisiae GBY3 was confirmed to produce no major BAs and a better flavored wine. These results give new leads in the production of high quality wine.

국내산 포도주에 대한 소비자 선호 및 가격 민감성 분석 (An Analysis of Consumers Preferences and Price Sensitivity when Purchasing Domestic Wine)

  • 본 연구에서는 소비자의 포도주 속성별 선호분석 및 가격 민감성 분석을 실시하였다. 자료는 대구지역 200명의 소비자들을 대상으로 포도주 시음회 및 설문조사를 통해 수집하였다. 세 종류의 국내산 포도주에 대한 만족도, 재구매 의사 및 타인 추천 의사는 모두 아이스와인(Vin Coree)이 가장 높은 것으로 나타났다. 속성별 만족도는 적포도주 (Royal Campbell)와 백포도주(Vin Coree)의 경우 색깔에 대한 만족도가, 아이스와인(Vin Coree)의 경우 병 디자인에 대한 만족도가 가장 높게 나타났다. 적포도주(Royal Campbell)의 가격은 저가한계점보다 낮기 때문에 가격을 인상하고, 품질을 개선할 필요가 있다. 백포도주(Vin Coree)의 가격은 수용가격대의 범위에 포함되나, 최적가격점보다 상회하므로 가격을 인하하는 것이 유리하다. 아이스와인 (Vin Coree)의 출시가격은 고가한계점의 가격이며, 최적가격점을 훨씬 상회하므로 가격 인하가 필요하다.

  • 시판 식혜에 Saccharomyces cerevisiae를 가해 29$^{\circ}C$에서 10일간 발효시켜서 식혜주를 제조하였다. TLC 및 HPLC 분석 결과 발효에 따라 수크로오스는 2일째부터 글루코오스와 프룩토오스로 가수분해되어 발효되었다. 수크로오스는 6일째에 완전히 없어지고, 8일째에는 글루코오스, 프룩토오스 모두 없어졌다. 에탄올은 6.6%를 나타냈다. 시판 식혜주의 아미노산 함량은 0.32$\mu$mol/ml, 단백질 함량은 226$\mu\textrm{g}$/ml을 나타냈다. pH는 3.21, 산도는 2.5ml를 나타냈다. 한계덱스트린은 1H-NMR로 분석 결과 시판 식혜와 구조상 차이가 없었다. $\alpha$-1,4- 결합에 대한 $\alpha$-1,6- 결합의 비율은 25:1을 나타냈다. 관능검사 결과, 맛은 와인과 비슷하였다.

  • 멥쌀식혜에 Saccharomyces cerevisae를 가해 28$^{\circ}C$에서 10일간 발효시켜서 식혜주를 제조하였다. TLC 및 HPLC 분석 결과 발효에 따라 글루코오스는 하루, 말토오스는 4일, 말토트리오스는 6일까지만 존재하였다. 그러나, 분자량이 큰 말토올리고당과 한계덱스트린은 발효되지 않았다. 에탄올은 6.5%를 나타냈다. 식혜주의 아미노산 함량은 2.9$\mu$mol/ml, 단백질 함량은 457$\mu\textrm{g}$/ml를 나타냈다. pH는 3.67, 산도는 3.1ml를 나타냈다. 한계덱스트린은 1H-NMR로 분석 결과 식혜에 존재하는 것과 구조상 변화가 없었다. $\alpha$-1,4-결합에 대한 $\alpha$-1,6-결합의 비율도 5.6:1을 나타냈다. 관능검사 결과, 맛은 와인과 비슷하였다.
