녹색 홀그레인 보리, 밀, 찹쌀, 멥쌀 분말을 첨가한 발효유의 특성 (Characterization of fermented milk added with green whole grains of barley, wheat, glutinous rice and common rice powders)

  • Yogurt was prepared from skim milk added with 2, 4 or 6% of green whole grain of barley, wheat, glutinous rice and common rice, respectively. Changes in pH, titratable acidity, viable cell counts and viscosity during fermentation were monitored and its sensory evaluation was also performed. The optimum level of additives such as green whole grain of barley, wheat, glutinous rice and common rice for yogurt manufacture was selected to 2%. The samples added with green whole grain of barley and wheat powders reached pH 4.5 in 12 hours. After 4 hours of fermentation, pH, the viable cell counts and viscosity in samples added with 2% green whole grain of barley, wheat, glutinous rice and common rice powders were the highest. Especially, in overall sensory evaluation using 5 parameters, the sensory scores of glutinous rice and common rice 2% yogurts were significantly high. From this experiment, the additives optimum level of glutinous rice and common rice powders was selected to be 2%.

Evaluation of Feeding a Fibrolytic Enzyme to Lactating Dairy Cows on Their Lactational Performance during Early Lactation

  • Twenty eight multiparous lactating cows were utilized in an experiment to evaluate the response to an exogenous fibrolytic enzyme on their lactational performance during early lactation period (in terms of milk production, milk composition, feed intake, milking efficiency, body weight change) and the exact time of this response. Cows were randomized into two groups (14 each) with similar parities and were fed a concentrate ration of barley, ground corn, soybean meal, and wheat bran and roughage ration of alfalfa hay. One of the two groups was supplemented with the fibrolytic enzyme immediately after parturition up to 100 post partum. The experiment was of two phases with 50 days each. The enzyme, which has a cellulase/hemicellulase activity (derived from Trichoderma group), was added to the concentrate part of the ration in a dry powder form. Milk production, 3.5% fat corrected milk, energy corrected milk were higher (p<0.05) for cows fed treated diet. At the same time, No differences were observed in percentages of milk components, feed intake, body weight, body weight change, or rectal temperature for the whole experimental period or during any of the two phases. Efficiency of milk production was higher (p<0.05) for treatment group cows than for that of the control ones. However, efficiency was better during the second phase than during the first phase. Feeding enzyme treated diets to dairy cows improved lactational performance during early 100 day of the lactation period. However, the first 50 days of lactation looked to be the critical.

Effect of isoflavone-enriched whole soy milk powder supplementation on bone metabolism in ovariectomized mice

  • BACKGROUND/OBJECTIVE: There is intense interest in soy isoflavone as a hormone replacement therapy for the prevention of postmenopausal osteoporosis. A new kind of isoflavone-enriched whole soy milk powder (I-WSM) containing more isoflavones than conventional whole soy milk powder was recently developed. The aim of this study was to investigate the effects of I-WSM on bone metabolism in ovariectomized mice. MATERIALS/METHODS: Sixty female ICR mice individually underwent ovariectomy (OVX) or a sham operation, and were randomized into six groups of 10 animals each as follows: Sham, OVX, OVX with 2% I-WSM diet, OVX with 10% I-WSM diet, OVX with 20% I-WSM diet, and OVX with 20% WSM diet. After an 8-week treatment period, bone mineral density (BMD), calcium, alkaline phosphatase (ALP), tartrate-resistant acid phosphatase (TRAP) 5b, osteocalcin (OC), procollagen 1 N-terminal propeptide (P1NP), and osteoprotegenin (OPG) were analyzed. RESULTS: BMD was significantly lower in the OVX group compared to the Sham group but was significantly higher in OVX + 10% I-WSM and OVX + 20% I-WSM groups compared to the OVX group (P < 0.05). Serum calcium concentration significantly increased in the OVX + 10% and 20% I-WSM groups. Serum ALP levels were significantly lower in the OVX + 10% and 20% I-WSM groups compared to the other experimental groups (P < 0.05). OC was significantly reduced in the OVX group compared to the Sham group (P < 0.05), but a dose-dependent increase was observed in the OVX groups supplemented with I-WSM. P1NP and OPG levels were significantly reduced, while TRAP 5b level was significantly elevated in the OVX group compared with the Sham group, which was not affected by I-WSM (P < 0.05). CONCLUSIONS: This study suggests that I-WSM supplementation in OVX mice has the effect of preventing BMD reduction and promoting bone formation. Therefore, I-WSM can be used as an effective alternative to postmenopausal osteoporosis prevention.

첨가재료별 증편의 가공 적성 검토 (Studies on Processing Aptitude of Various Additives on the Preparation of Jeung-pyun)

  • 첨가재료를 달리한 증편의 가공적성을 검토하고자 증편제조시 6가지 첨가재료를 첨가하여 증편반죽의 발효에 따른 이화학적 변화, 증편의 외관, 저장성 및 관능적 특성을 비교 검토한 결과는 다음과 같다. 1. 발효의 진전과 더불어 증편반죽은 경시적인 pH의 감소, 점도의 증가, 부피의 증가를 보였다. 발효 5시간 경과 후 첨가재료를 첨가한 증편반죽의 pH는 높은 경향을 보였다. 반죽의 점도가 높은 콩가루 첨가구의 반죽의 부피도 가장 많이 팽창하였으며 쑥가루, 전지분유, 탈지분유의 경우에도 반죽의 부피증가와 부피증가 간의 변화양상은 유사한 경 향을 나타내었다. 2. 발효과정을 거친 증편반죽을 성형하여 증자한 후 단면의 사진을 관찰한 결과 전지분유, 쑥가루, 난황, 난백 첨가구가 대조구와 유사하게 잘 부풀었으며 콩가루, 전지분유, 난백 첨가구는 기공의 크기가 작고 균일하였다. 3. 첨가재료를 달리한 증편의 DSC thermogram을 비교 분석한 결과 전지분유, 콩가루 첨가구는 대조구에 비해 엔탈피(ΔH)의 값이 낮게 나타나 노화를 상당히 지연시키는 것을 알 수 있었다 또한 저장기간중 Textrometer로 측정한 hardness의 변화와 DSC thermogram을 함께 고려해 보았을 때 hardness를 감소시키고 엔탈피(ΔH)를 감소시키는 것은 콩가루 및 전지분유, 탈지분유, 난백, 쑥가루를 첨가하였다. 4. 증편의 관능검사 결과 콩가루, 전지분유, 탈지분유, 난황첨가구가 대조구에 비해 단단한 정도가 유의적으로 낮았으며 난황 및 쑥가루 첨가구는 증편의 기공이 균일하지 못하였고 기공이 크고 성긴 것으로 평가되었고 콩가루 및 쑥가루 첨가구는 쓴맛이 유의적으로 높았다.

화장품 소재연구를 위한 해조류의 발효 공정 확립 (Establishment of Seaweed Fermentation Process for Cosmetic Material Research)

  • 본 연구에서는 감태, 파래, 서실, 대황, 청각, 불등가사리, 세모가사리, 참도박, 미역, 다시마 등 해조류의 발효공정을 확립함으로써 해양 생물의 화장품 소재로의 사용 가능성에 대한 제안을 하고자 하였다. 해조류의 효과적인 발효를 위해 김치로부터 분리된 유산균인 락토바실러스 사케이(Lactobacillus sakei) 균주를 선정하였고, 첨가제로 전지 분유를 사용하였다. 해조류 분쇄물 2.0 % 와 전지분유 1.0 % 를 투입하고, 이후 $40^{\circ}C$ 까지 방랭하여 준비 한 후 락토바실러스 사케아이 유산균 1.0 % 를 접종 하였다. 발효물을 냉각하고 여과한 후 부틸렌글라이콜, 글리세린 등과 방부 역할을 할 수 있는 1, 2-헥산다이올 등을 첨가하여 혼합 후 제품을 완성하였다. 10 종의 해조류 중 감태, 청각, 미역, 다시마의 발효 효율이 좋음을 확인 할 수 있었다. 화장품에 적용 가능한 발효물의 함량을 결정 하였고, HET-CAM (The Hen's egg test-Chorioallantoic membrane) 법을 이용하여 원료의 안전성을 확인 하였다.

전지분유와 발효유를 이용한 치즈 유사품개발 (The Development of Imitated Cheese Using Whole Milk Powder and Fermented Milk)

  • 재고 분유를 이용하기 위하여 유청 배출없이 전지 분유와 발효유를 혼합하여 모조 치즈를 제조하였으며, 숙성 환경과 숙성 기간의 차이를 관찰하여 자연 치즈와 유사한 성질을 나타내는 최적의 숙성 조건을 규명하기 위하여 수분함량 변화, 일반성분, 비카제인태 질소화합물, 비단백태 질소화합물 그리고 유리 아미노산 등의 변화를 관찰하였다. 본 모조 치즈는 제조 후 건조 1일째가 수분함량이 40.27%로 가장 적합하였고, 이들은 진공 포장한 후 $12^{\circ}C$에서 숙성하는 방법과 P. camemberti 곰팡이를 분무한 후 $12^{\circ}C$, 95% RH에서 숙성하는 두 가지 방법으로 숙성하였다. 곰팡이 숙성 시 유당 함량이 24.64%에서 4주 숙성 시 5.43%로 급격히 감소하는 현상이 있었으나 진공 포장 숙성 시에는 유당의 변화가 심하지 않았다. 또한 진공 포장 숙성 시 비카제인태 질소 및 비단백태 질소는 숙성 4주 이후에 각각 28.10 mg/mL에서 50.61 mg/mL으로, 6.58 mg/mL에서 21.59 mg/mL으로 증가하였으며, 곰팡이 숙성 시 비카제인태 질소 및 비단백태 질소는 숙성 4주 이후에 각각 28.10 mg/mL에서 54.05 mg/mL으로, 6.58 mg/mL에서 23.06 mg/mL으로 증가하였다. 진공 포장 숙성 시 4주간의 유리 아미노산 차이를 측정한 결과, arginine, tyrosine, leucine이 두드러진 증가를 보였다. 그리고 총 유리 아미노산이 7.73 nmol/mg에서 9.29 nmol/mg으로 증가하였고, bitter amino acid는 1.36 nmol/mg에서 2.43 nmol/mg으로 증가하였다. 또한 곰팡이 숙성 시 4주간의 유리 아미노산을 측정한 결과, asparagine을 제외한 모든 유리 아미노산이 두드러진 증가를 보였다. 총 유리 아미노산이 8.40 nmol/mg에서 34.87 nmol/mg로 증가하였고, bitter amino acid는 1.53 nmol/mg에서 10.02 nmol/mg로 증가하였다. 치즈 유사품 제조 시에 P. camemberti를 이용한 치즈가 P. camemberti 를 이용하지 않는 치즈보다 단백질 분해 정도나 풍미가 더 우수한 것으로 나타났다.

유청 및 두유의 공동침전에 의해 제조된 치즈의 특성 (Characteristics of Cheese Manufactured by Coprecipitation of Whey and Soy Milk)

  • 대두치즈의 풍미와 조직을 개선하기 위해서 유청-두유치즈를 유청, 유청분말, 두유, 분리대두단백의 여러가지 혼합물의 공동침전에 의해 제조하고, 유산균과 레닛을 첨가한뒤 $15^{\circ}C$에서 10주 동안 숙정시킨다. 치즈의 물리 화학적 특성은 수소이온농도, 적정산도. 수용성질소, 10%TCA가용성질소, 아미노산조성, 풍미, 색, 경도등을 분석함으로 조사하였다. 유청-두유치즈의 pH는 최초 5.3에서 숙설 5${\sim}$6주에 4.2로 떨어져 이후는 일정하였으나 두유치즈의 pH는 시종 높은 값을 나타내었다. 유청-두유치즈의 적정산도는 점차 증가하여 8주후 0.4${\sim}$0.45에 달했으나, 두유치즈는 숙성이 끝난뒤에도 0.2에 불과했다. 수용성 및 10%TCA가용성 질소함량은 숙성중 점차 증가하였다. 치즈의 경도는 3 : 1 치즈와 두유치즈의 경우가 가장 컸으며 숙성 3주째 최고치를 나타내었다. 두유치즈에 비해 유청-두유치즈의 색은 밝았으며 대두치즈의 비린내는 숙성 전기간을 통해 강렬하였으나 유청-두유치즈의 경우 산취로 인해 비린내가 부분적으로 상쇄되었다.

영아의 수유 및 보충식에 대한 조사연구 (A Survey Of Infant Feeding Practices In Seoul, 1991.)

  • A survey of infant practices was conducted to provide information on which to base planned nursing interventions. The subjects were a convenience sample of 168 mothers visiting out - patients departments of five general hospitals and one public health center in Seoul for immunizations or treatment for common colds for their infants from two to 12 months of age. Data collection was carried out from July 8th to September 30th, 1991 using a questionnaire of 84 questions, 31 on the type of feeding, 22 on supplementary feeding and 21 on demographic infer mation. The results are summarized as follows : 1) The type of feeding was primarily artificial feed-ing (63.1%), followed by mixed feeding (22%) and breast feeding (14.9%) of the 59 mothers expecting during pregnancy to breast feed, 54. 2% changed artificial feeding and 30.5% went on to breast feed as they had expected. For mothers expecting to continue breast feeding over seven months. only one infant was being breast fed for over seven months. 2) For the 106 mothers using artificial feeding, 70. 8% hed attempted breast feeding, 64% of them for less than a month. Breast milk had been suppressed by for medication (38.7%) : 34.9% had used no specia] means. 3) The major reasons for replacing breast feeding with artificial feeding were the infants' demand for more milk (47.2% ) and insufficient supply of breast milk (49.3%). 4) Most mixed feeding was started at the age of one to three months (59.5%). Only 34.4% gave an artificial feeding after breast feeding : most (46%) alternated breast feeding with artificial feeding. On the whole, the motive for mixed feeding was the lack of breast milk (70.3%). 5) Many mothers (81.8%) were adding vitamin or mineral supplements to artificial milk and 51.5% were adding something to faciliate digestion. As for the method of sterilizing milk bottles and nipples, 56% had sterilized them together in boiling water from the beginning : 27% were just washing the bottles after boiling only once initially when measuring artificial milk powder, 31. 5% of the mothers over filled the measuring spoon rather than to the level. 6) The mother's occupation was related to her way of feeding. Mothers at home full time did more breast feeding than mothers employed outside the home. (x²=5.72, p=〈0.05). 7) Most mothers began supplementary food, from three to four months (48.8%) : 11.2% began later than seven months. Supplementary food was given between milk feedings by 67.2% of the mothers : 19.2% gave it before a milk feeding. Some mothers(26.4%) made their own supplementary food : 19.2% used ready - made supplementary food products for convenience. Recommendations for nursing interventions included : 1. Prenatal education about the advantages of breast feeding and breast care, and home visits after delivery for counselling related to breast feeding. Correct preparation of artificial feeding methods need to be taught in both pre & postnatal periods. In addition, specific education about supplementary feeding needed. 2. Further research is indicated about the Perceived lack of supply of breast milk and about the effectiveness of nursing interventions to Promote breast feeding.

Preparation of Yogurt Added with Angelica keiskei Juice and Its Quality Characteristics

  • Mixtures prepared from whole milk with added skin milk powder(2.5%, w/v) and Angelica keiskei juice (1.5%, w/v) were fermented with lactic acid bacteria (single and mixed culture of Lactobacillus bulgaricus and Strpetococcus thermophilus) for 24 hours. The fermented mixtures (curd yogurt) were evaluated for acid production (pH and titratable acidity), cell numbers, viscosity, sensory property and keeping quality. Results indicated that the addition of Angelica keiskei stimulated the acid production by lactic acid bacteria. The number of viable cells reached 4.5~7.3$\times$10$^{9}$ CFU/mL for Angelica keiskei-added yogurts, while 3.3~5.1$\times$10$^{9}$ CFU/mL for control yogurts. Viscosity of Angelica keiskei-added yogurts was higher (3,609~3,854 centipoises) than that of control yogurts(3,346~3,700 centipoises). Of the microorganism tested, mixed culture of Lactobacillus bulgaricus and Streptococcus thermophilus was most effective in acid production. The overall sensory score showed that Angelica keiskei yogurt fermented with Streptococcus thermophilus was evaluated as good as control yogurt. When yogurts were stored at 4$^{\circ}C$ for 12 days, pH, titratable acidity and viable cells of lactic acid bacteria were not significantly changed(p<0.05).

고구마와 호박을 첨가한 요구르트 제조에 관한 연구 (Studies on the Preparation of Yogurt from Milk and Sweet Potato or Pumpkin)

  • 본 연구에서는 전유(全乳)에 고형분 함량(15%)을 증가시키기 위해 탈지분유 대신 고구마와 호박을 첨가하여 요구르트를 만들고, 젖산균의 산생성, 생균수 및 요구르트의 품질(관능성, 저장성)에 미치는 영향을 조사하였다. 산생성은 12시간까지 급격히 증가하였고 그 이후에는 완만히 증가하였으며 호박첨가구보다 고구마첨가시 높았다. 생균수은 24시간 발효 후 모든구에서 $6.4{\times}10^{9}cfu/ml$이상이였으며 접종 후 12시간만에 정상기에 도달하였다. 발효액 중의 유기산은 탈지분유를 첨가한 경우보다 고구마나 호박을 첨가할 때 총산에 대한 젖산 함량 비율이 감소하여 대조구는 83%, 고구마첨가구는 76%, 호박첨가구는 74%이었다. 관능검사 결과를 보면 고구마첨가 요구르트가 대조구보다 우수하였고 호박첨가요구르트가 가장 나빴다. 발효가 완료된 모든 요구르트의 저장성은 $5^{\circ}C$에서 15일간 산생성과 pH, 생균수에 거의 변화가 없어 매우 우수한 것으로 나타났다. 이상의 결과를 요약하면 고구마를 첨가하여 기호성이 높고, 식품 영양학적인 가치가 있는 새로운 형태의 요구르트제조가 가능하였다.
