The Development of the Dietary Fiber Food Frequency Questionnaire and the Dietary Fiber Intake of Middle School Students in the Chungbuk Province (식이섬유용 식품섭취빈도조사지 개발 및 이를 이용한 충북지역 중학생의 식이섬유 섭취 실태)

  • In this study, the FFQ-50 questionnaire which composed of 50 food items frequently eaten as sources of dietary fiber, was developed and used to estimate the dietary fiber intake of middle school students in the Chungbuk province. According to the survey, the average daily intakes of dietary fiber for the boys and girls were $23.3{\pm}12.3$ g (93.2%) and $20.8{\pm}11.5$ g (104.0%), respectively, showing a significant difference between the gender. The proportions of boys and girls who did not reach to the sufficient dietary fiber intake were 66.2% and 53.9% respectively. The major sources of dietary fiber were grain foods and vegetables, which measured at 77.24%, followed by fruits, seaweeds, tofu and tofu products, potato and starch, and mushrooms. The cooked white rice contributed the highest (17.81%), followed by baechu-kimchi, cooked brown rice, ramyeon (instant noodle), tangerine, sesame leaf jangajji (pickled sesame leaf), topokki (spicy rice cake stir-fry), blanched and seasoned bean sprouts, bread, and radish kimchi. The study showed that the cooked white rice was the major source of dietary fiber in the boys' diet followed by baechu-kimchi, ramyeon, cooked brown rice, tangerine, bread, strawberry, blanched and seasoned bean sprouts, sesame leaf jangajji, radish kimchi. Girls were taking in dietary fiber mostly from boiled white rice followed by baechu-kimchi, boiled brown rice, tangerine, ramyeon, sesame leaf jangajji, topokki, blanched and seasoned bean sprouts, radish kimchi, and boiled barley.

Establishment of Sesame Cultivation Practices as Succeeding Cropping System of Watermelon in the Greenhouse Condition

  • This experiment was conducted to develop optimum sesame cultivation practices as succeeding cropping system of watermelon in the greenhouse condition. We also compared major components in sesame seed cultivated in the greenhouse and open field condition. The adaptable varieties under the greenhouse condition were white sesame 'Pyoungan' and black sesame 'Jinki' which showed higher yield and disease resistance. We also conducted several experiments to determine optimum sowing date, planting density and pinching time. Grain yields were statistically different according to the several sowing dates. In general, sesame sowing on June 30th showed higher grain yields than July 10th, July 20th and July 30th in the greenhouse. We also found out sesame cultivation practice with the row spacing of 40 cm and interplant spacing of 30 cm (a few branch type) or 40 cm (many branch type) showed higher yield than other treatments. Optimum pinching time was 25 days after first flowering in main stem when thousand seed weight and grain yield were highest. In the comparison of major components of sesame at the different cultivation conditions, sesame seeds cultivated in the greenhouse contained 4% much more oil content than open field condition. The lignan compounds, sesamin and sesamolin were also higher by 6% in the greenhouse than open field condition. It was concluded that sesame cultivation practices as succeeding cropping system of watermelon in the greenhouse condition guaranteed higher grain yield with less labor input which is now emerging alternative farming practice system in present aging rural society and will also give sesame cultivation farmers to increase net income in Korea.

Effects of Procedures for Preparing Fatty Acid Methyl Esters on Fatty Acid Composition of Korean Vegetable Oils (Sesame Seed Oils) (지방산 메틸에스테르 조제방법이 한국산 식물성 기름(참깨 기름)의 지방산 조성에 미치는 영향)

  • The effects of procedures for preparation of fatty acid methyl esters for gas chromatography were investigated. A quantitative comparison of four procedures for the preparation of the fatty acid methyl esters from Korean sesame seed lipids which can be representative of fatty acid ranges of Korean vegetable oils has been made. The procedures employed were $BF_3$-methanol, HCI-methanol, sodium methoxide-methanol, and tetramethylammonium hydroxide-methanol. Twelve fatty acids ranged from 14:0 to 24:0 were identified in the lipids from Korean white and black sesame seeds. All four procedures gave similar results for the fatty acids, 16:0, 18:0, 18:1, 18:2, and 18:3 present in the range of $1{\sim}44%$ but only in the HCI-methanol procedure, the fatty acids, 16:1, 20:0, 22:0, 24:0 present in the range of $0.02{\sim}1%$ showed the lowest values. When using tetramethylammonium hydroxide-methanol procedure for determination of total fatty acid composition from white and black sesame seed lipids, unsaponifiable matters including sesamol, sesamolin and sesamin present in the seed lipids are not removed from the resulting reaction mixture. Thus the transesterification mixture is used without further treatment for injection into the gas chromatography. However, the gas chromatographic analysis of the transesterification mixture showed that the unsaponifiable matters had no effect on the fatty acid composition of the seed lipids. From the results, it appears that the $BF_3$-methanol, sodium methoxide-methanol and tetramethylammonium hydroxide-methanol procedures can be used to prepare fatty acid methyl esters from Korean vegetable oils. Among the methods, the tetramethylammonium hydroxide-methanol procedure, which give total fatty acid composition, glyceride fatty acid composition and composition of free fatty acids present, appears to be a simple, convenient and quantitative procedure and applicable to samples containing broad ranges of fatty acids.

Effects of White Sesame Seed Extract and β-Sitosterol on Growth, Migration, and Adhesion of H1299 Human Lung Cancer Cells (흰깨 추출물과 β-Sitosterol이 H1299 폐암세포의 성장, 이동, 부착에 미치는 효과)

  • The current study aimed to investigate effects of ethanol extract of white sesame seed (WSE) as well as a major constituent of white sesame seed, ${\beta}-sitosterol$, on the growth, migration, and adhesion of H1299 human lung cancer cells. Treatment with WSE at concentrations of 150, 300, and $600{\mu}g/mL$ dose-dependently inhibited cell growth (to 51.5~82.6% of control). Treatment with ${\beta}-sitosterol$ at concentrations of 3.125, 6.25, 12.5, and $25{\mu}M$ inhibited cell growth to a greater extent (to 27.5~49.0% of control) than that with WSE (P<0.05). Treatment with WSE (at concentration of $600{\mu}g/mL$) or ${\beta}-sitosterol$ (at concentration of $25{\mu}M$) resulted in increased sub-G1 cell population, indicating their apoptosis-inducing activities. ${\beta}-sitosterol$ was effective in inhibiting both cell migration (to 80.8~86.2% of control at a concentration range of $3.125{\sim}25{\mu}M$) and adhesion (to 21.5~37.4% of control at a concentration range of $6.25{\sim}25{\mu}M$), whereas WSE at a concentration range of $150{\sim}600{\mu}g/mL$ was ineffective. These results indicate that ${\beta}-sitosterol$ is more active than WSE in inhibiting growth, migration, and adhesion of H1299 human lung cancer cells. Further studies are needed to determine if similar effects are reproduced in vivo.

Chemical and Nutritional Studies on Sesamum indicum - I. Effects on the Quality of Sesame Oil and its Meal by Decortication - (참깨에 대한 식품영양학적인 연구 - 제1보 탈피(脫皮)과정이 참기름 및 박(粕)의 품질에 미치는 영향 -)

  • In this study, the several chemical compositions, which include general components (moisture, fat, protein, sugar, fiber, ash, acid insoluble ash), minor components (sesamol, sesamolin, sesamin), the characteristics of oil (specific gravity, refractive index, iodine value, saponification value, unsaponificable matter, insoluble impurities), fatty acid components (analyzed by GLC), amino acid patterns (analyzed by autoanalyzer), of Korean whole white Sesamum indicum were investigated and were compared with decuticled sesame samples. The results were summarized as follows: 1) The crude fiber, total ash and acid insoluble ash contents of the decuticled sesame seed and it meal were significantly lower as compared to the whole sesame samples. 2) The specific gravity, refractive index, iodine value, unsaponificable matter and insoluble impurities contents of the whole sesame oil were greater than the decuticled samples. 3) The fatty acid contents of the whole and decuticled sesame oil were approximatly equal amounts. But unsaturated fatty acid contents of the decuticled sesame oil was significantly lower than the whole sesame oil. 4) The decuticled sasame meal was concentrated higher protein than the whole sasame meal. But amino acid contents of the protein in their was approximatly equal amounts and sesame proteins are found to be rich in methionine, cystine and tryptophan, they are deficient in lysine. 5) The sesamol, sesamolin and sesamin contents of the whole and decuticled sesame oil were approximatly equal amounts. 6) The oxalate and calcium contents of the decuticled sesame seed and its meal were also significantly lower as compared to the whole sesame samples.

Evaluation of Chemical Properties of White Sesame Produced from Different Origin (산지가 다른 참깨의 이화학적 특성 평가)

  • 중국, 수단, 인도 및 파키스탄에서 생산된 참깨(각 10종)의 조지방 함량, 지방산 조성, 세사민, 세사몰린 및 세사미놀 배당체 함량을 측정하여 품질 특성을 평가하였다. 참깨의 조지방 함량은 파키스탄산 42.47 %, 중국산 38.95%, 인도산 34.96% 및 수단산 33.93%로 파키스탄산이 가장 높았으나 지역간에는 유의적인 차이가 나타나지 않았다. 세사민 함량은 중국산 634.75 mg/100 g seed, 수단산 630.66 mg/100 g seed, 인도산 381.55 mg/100 g seed 및 파키스탄산 401.00 mg/100 g seed으로 중국산이 유의적으로 높게 나타났다. 세사몰린 함량은 중국산 218.99 mg/100 g seed, 수단산 234.49 mg/100 g seed, 인도산 (185.64 mg/100 g seed) 및 파키스탄산 (127.04 mg/100 g seed)으로 지역간에 유의적인 차이가 있는 것으로 나타났다. 세사미놀 배당체 함량은 중국산 321.40 mg/100 g seed, 수단산 218.99 mg/100 g seed, 인도산 505.04 mg/100 g seed 및 파키스탄산 342.87 mg/100 g seed로 인도산이 가장 높은 함량이었다. 참깨 핵산 추출물의 전자공여능을 측정한 결과 인도산의 전자공여능이 유의적으로 높았고 파키스탄산 및 중국산순 이었다. 이상의 결과 지역별 참깨 품질 특성에는 유의적인 차이가 있었고 특히 최근에 기능성 성분으로 관심이 집중되고 있는 세사민과 세사몰린 및 세사미놀 배당체는 지역에 따라 현저한 차이가 있는 것으로 나타났다.

Studies on the Improvement of Roasting Condition of Sesame Seeds for Producing Seed Season and Oil (볶음 및 참기름용 참깨 가공방법 개선에 관한 연구)

  • This study was carried out to find optimum roasting condition of sesame seeds for making seed season and oil treated with different temperatures and time intervals. Sesame seeds with 17~18% of moisture content were treated under fixed and changed roasting temperature conditions. The fixed temperatures are ranged from 160 to $240^{\circ}C$ with $20^{\circ}C$ intervals. The changed temperatures were treated at low(160 and $180^{\circ}C$) and medium(200 and $220^{\circ}C$) for 10 minutes, and at high(220 and $240^{\circ}C$) for 3 minutes. Meanwhile, roasting times were 20-30 minutes longer under low temperature condition and 3-5 minutes shorter under high temperature condition. The optimum roasting temperature and time were determined as $220^{\circ}C$ and 3 minutes for producing seed season, and as $220^{\circ}C$ and 5 minutes for sesame oil, respectively, in roasting with small quantity of sesame seeds. On the other hand, in the large scale roasting condition, those showed $240^{\circ}C$ and 15 minutes in for producing seed season, and $280^{\circ}C$ and 10 minutes and $260^{\circ}C$ and 15 minute for producing seed season in white-colored sesame variety and black-colored sesame variety, respectively.

A Study on the Standardization of the Preparation Method for Whiteseed Sesame Yut Kang Jung (횐깨엿강정 만드는 법에 관한 연구)

  • "Yut Kang Jung" is a kind of Korean traditional cookie. The purpose of this study is to examine the effects of various kinds of syrups and cooking methods of Yut Kang Jung. The quality of Yut Kang Jung was evaluated by sensory and Instron machine test. The results is as follows; 1. The Recipe of the best Yut Kang Jung is this: White sesame 120g, sugar syrup 40g, and crude maltose watery 50g are used. Mixing sugar syrup crude maltose watery boiling for 4 min, in temperature $105^{\circ}C$. The sugar density after boiling was 86%. 2. Yut Kang Jung made by sugar syrup and crude watery maltose got the best result in sensory best. 3. Yut Kang Jung made by crude watery maltose got the best result in mechanical test. 4. The comparison between the sensory test & mechanical test were as follow; The hardness in the mechanical test was comparable with hardness & fracturability in the sensory test, and the chewiness in the mechanical test was comparable with flavor, adhesiveness, fractur ability in sensory test.

Variation of Lignan Content for Sesame Seed Across Origin and Growing Environments (참깨 원산지 및 재배지역에 따른 리그난 함량 변이)

  • Sesame lignan, including sesamin and sesamolin has been reported to have various content according to accessions and environmental factors. The objective of this study were to analyze the lignan variation of 143 sesame accessions from core collection in Korea and to test the effects of growing years and locations on lignan and lipid content of Korea sesame elite lines. The results showed that the core sesame germplasm in Korea has broad variation of lignan content from 2.33 to 12.17 mg/g with an average 8.18 mg/g. Among tested sesame accessions, the IT184615 had the highest lignan content of as 12.17 mg/g. So this accession will be a good genetic resource for developing a high lignan sesame variety. The sesamin and sesamolin content for sesame accessions across origin had significant difference. The average lignan content of accessions collected from Russia (10.0 mg/g) and Nepal (9.08 mg/g) were relatively higher than other countries. The sesamin and sesamolin content for sesame accessions across seed coat color had significant difference. The average lignan content of sesame with white, brown and black seed coat color was 8.61, 7.51, and 5.49 mg/g, respectively. The variation of lignan and lipid content was significantly different across elite lines, locations and growing years. Therefore, it is important to find sesame accessions having high lignan content with environmental stability.

The Study on the Storage Time of Jangduck - The Second Report, A Study on the Texture and Sensory Characteristics of Jangduck during Storage - (장떡의 저장성에 관한 연구 -제2보: 저장기간에 따른 장떡의 조직특성과 기호도에 관한 연구-)

  • This investigation was undertaken for the purpose of studying the quality and sensoryptability of Jangduck during storage containing various levels of glutinous rice flour. Composition of experiment Jangduck made with different components and contents. A standard samples of Jangduck were soybean paste : glutinous rice flour : ground beef : green onion : garlic : toasted white sesame=100 : 10 or 20 or 30 : 30 : 10 : 5 : 2 (%) and measured acceptability by 15 days. Jangduck estimated for texture characteristics through acceptability. The acceptability of Jangduck was by both objective and subjective methods. Objective measures were made utilizing the Rheometer and Hunter colorimeter. Sensory evaluated was done by a panel of 10 judges. The data analysis revealed following as for estimate of texture changes during storage by Rheometer, the hardness tended to increase as the addition level of glutinous rice flour and beef till 30 days. Hardness decreased slightly after 30 days of storage. Elasticity and cohesiveness tended to increase as the addition level of glutinous rice flour till 15 days and decreased slightly from 16 days to 60 days later By color value of Jangduck, Lightness tended to increase as the addition level of beef during storage periods. Redness tended to increased as addition level of beef before storage and decreased 15 days later. Yellowness increasde than others from days later to 15 days later as the addition level of glutinous rice flour. The result of sensory evaluation revealed that Cl [soybean paste : glutinous rice flour : ground beef : green onion : garlic : toasted white sesame=100 : 30 : 30 : 10 : 5 : 2(%)] produced the best quality in most sensory characteristics during storage.
