Optimization of the Blanching and Dewatering Processes to Stabilize Quality of Boiled Frozen Ark Shell Scapharca subcrenata for Use as a Non-thermally Prepared Seasoned Seafood Products (비열처리 조미수산가공품용 냉동 자숙 새고막(Scapharca subcrenata)의 품질안정성을 위한 블랜칭 및 탈수공정 최적화)

  • Commercial boiled frozen ark shell Scapharca subcrenata (BFAS) is generally used as a seasoned seafood products. One problem facing the industry is that quality decreases during thawing. This study investigated ways to improve quality and shelf-stability of BFAS for use as a non-thermally prepared seasoned seafood products. The Viable bacteria were detected in BFAS after thawing under running water, but were not detected after blanching for over 2 min at 95±5℃. Blanching and dewatering times were optimized by response surface methodology (RSM) to reduce the initial number of bacteria and improve BFAS texture. Experimental design was deemed appropriate because no significant difference (P>0.05) was observed between predicted and actual moisture content, hardness, and overall acceptance values. Optimal blanching and dewatering times were 210 s and 80 s, respectively. Optimized blanching and dewatering processes can significantly improve safety and BAFS qualities including texture. These results indicate that BFAS demand as a staple for home meal replacements can be increased by application of optimized blanching and dewatering processes, especially in Korean seafood processing companies where running water thawing is common.

Effects of steam blanching pretreatment on quality of spray-dried powders prepared from pressed juice of garlic chives (부추의 증숙처리가 착즙액 분무건조 분말의 품질에 미치는 영향)

  • This study was conducted to develop a spray-dried garlic chives (Allium tuberosum) powder and to evaluate its quality characteristics depending on the treatment of steam blanching pretreatment $100^{\circ}C$, 3 min) and the addition of forming agents (dextrin (DE=10), ${\beta}$-cyclodextrin) during process. The steam blanching pretreatment showed an increase in $L^*$ value while a decrease in $-a^*$, $b^*$, $C^*$, and $h^o$ values of the powder. Moisture content and water soluble index were not affected by the treatment of steam blanching and the addition of forming agents, whereas the particle diameter was the smallest in the steam blanching treatment and dextrin addition. Chlorophyll, phenolic compound, and vitamin C content, and DPPH radical scavenging activity of non-pretreated powder were significantly higher than those of the steam blanching treated powders. However, there was no significant difference between the two forming agents. The sensory acceptability (color, smell, and overall acceptability) of powder treated with steam blanching were significantly higher than those of non-pretreated powders. Therefore, the steam blanching pretreatment of fresh garlic chives affected on the better quality characteristics of the spray-dried powders when compared with non-pretreated powder though it adversely affected the natural chemical quality of fresh garlic chives.

Changes in Carotenoid Contents of Several Green-Yellow Vegetables by Blanching (녹황색 채소류 중의 카로티노이드 함량과 Blanching에 의한 변화)

  • Carotenoids in commercial green-yellow vegetables(carrot, mugwort, perilla leaf, leek and water dropwort) were analyzed by HPLC. Carotenoids detected were lutein, ${\alpha}$-carotene, and ${\beta}$-carotene. ${\beta}$-Carotene and lutein were detected in every sample analyzed, but ${\alpha}$-carotene could only be detected in carrot. Blanching vegetables in 3% saline increased the content of carotenoids, however, the components of carotenoids were not changed. This result suggests that blanching increases the amount of available carotenoids.

Properties of Chestnut Starches and Steamed Chestnuts with Different Pretreatment and Storage Conditions

  • This study investigated the effects of pretreatment and storage conditions on the properties of stored chestnuts. Effects on chestnuts of refrigerated storage (RNT) and frozen storage (FNT) with no pretreatment, frozen storage after oxalic acid treatment without blanching (FON) and with blanching (FOB) were examined. Water binding capacity, swelling power, solubility, and viscosity of the starch produced from RNT, FNT, and FON were similar to those of the starch produced from control (CON). FOB showed significant differences in these properties from CON. Textural properties of starch gels prepared from stored chestnuts except FOB also were very similar to those of CON starch gels. The sensory characteristics of steamed FON and FNT were similar to those of steamed CON except in brown color and hardness. Steamed FNT tended to have higher brown color and lower hardness than steamed FON. Steamed RNT showed significant differences in all the sensory properties except in hardness and cooked chestnut flavor. Steamed FOB was significantly higher than steamed CON in water release and off-flavor. Among the storage conditions examined, frozen storage with oxalic acid treatment is recommended for the long-term storage of chestnuts.

Analysis of Flavonoids in Raw and Blanching of Several Green-Yellow Vegetables (시판 녹황색 채소류 중의 플라보노이드 함량과 조리과정에 의한 변화)

  • Flavonoids in commerical green-yellow vegetables (carrot, mugwort, perilla leaf, leek and water dropwort) were analyzed by HPLC. Flavonoids analyzed in samples were myricetin, luteolin , qercetin, apigenin and kaempferol. When 2N HCI and a reaction period of 1 hours was used, quercetin and kaempferol could be detected in leek and water dropwort, luteolin and apigenin could be detected in perilla leaf. Increasing reaction period up to 6 hours with 2N HCI led a degradation of quercetin and kaempferol to approximately 90% in leek and water dropwort, but it led to a increasing of luteolin and apigenin of maximum 300% in perilla leaf. After the blanching process, the amount of the flavonoids increased whereas the components of the flavonoids were not changed.

Effect of Blanching Conditions and Thawing Methods on Quality Properties of Platycodon grandiflorum (데침 조건과 해동 방법이 도라지의 품질 특성에 미치는 영향)

  • This study was performed to identify the quality characteristic of Platycodon grandiflorum for blanching(1, 2, 3 min), drying(5, 10, 15 min) conditions and thawing methods($4^{\circ}C$, $25^{\circ}C$, running water). The color, moisture contents, pH, hardness, viable cell count of blanched Platycodon grandiflorum were lower than those of native Platycodon grandiflorum. The sensory properties of blanched Platycodon grandiflorum for blanching and drying time showed the most highly evaluated in terms of texture. The optimum blanching and drying times selected for producing of frozen Platycodon grandiflorum were 1 min, 5 min. At this condition, the blanched Platycodon grandiflorum was frozen at $-40^{\circ}C$. After thawing of frozen Platycodon grandiflorum, the thawing time was the shortest in the case of thawing in running water, and drip loss was the lowest. The color, hardness and sensory properties did not significantly differ with different thawing methods. These results show that thawing in running water is the most suitable for frozen Platycodon grandiflorum.

Microbial Analysis of Aster scaber Blanched with NaCl for Storage (NaCl을 첨가한 데침 열처리 취나물의 미생물 보존성)

  • To improve microbiological quality of Aster scaber during storage and distribution, hurdle technology with the sanitizers and packaging methods was used. After blanching, total aerobic bacteria of Aster scaber treated with 20% ethanol and 10% NaCl were measured at 2 log CFU/g after 6 days. Total aerobic bacteria of blanched Aster scaber at $100^{\circ}C$ were measured at 2 log CFU/g, and the storage at $4^{\circ}C$ effectively inhibited the growth of bacteria. Repeated blanching using water with added NaCl at $80^{\circ}C$ showed similar microbial growth inhibition compared with treatment at $100^{\circ}C$. After vacuum packaging, blanched sample showed 2 log CFU/g of total aerobic bacteria during 10 days (the storage at $4^{\circ}C$). Therefore, repeated blanching using the water with added 10% NaCl improved the microbiological quality of Aster scaber. We also found that repeated blanching after vacuum packaging was an effective way for storage and distribution of Aster scaber. In conclusion, blanching two times in the 10% salt water or in vacuum packaging at $80{\sim}100^{\circ}C$ would be helpful to control the microbes during storage and distribution.

Effect of Blanching Condition, Acid and Alkali Treatments on the Qualities of Carrot Juices (Blanching 조건(條件) 및 산(酸)·알칼리 처리(處理)가 당근주우스의 품질(品質)에 미치는 영향(影響))

  • This study was conducted to obtain the fundamental data for the processing of carrot juices and know the effects of blanching conditions, acid and alkali treatments and sterilization on the quality factors of carrot juices. The result obtained was as follows. 1. Blanching condition, $100^{\circ}C$, 5min. was the most effective for the Brix, amino-N content, suspended solid, light transmittance and yield of carrot juices among $90^{\circ}C$, 15min., $95^{\circ}C$, 10 min., and $100^{\circ}C$, 5min. 2. 0.05N-acetic acid solution was the most effective blanching solution for the suspended solid, light transmittance, viscosity and yield of the juices compared to 0.05N-citric acid and 0.03N-hydrochloric acid solution. 3. The color changes during the processing of carrot juices caused by blanching process rather than sterilization process. 4. The ${\beta}$-carotene in carrot juices was very stable and about 80 % of it was remained in the carrot juice which had been blanched, extracted and sterilized at $115^{\circ}C$ for 30min. 5. Alkali treatment for the juice from acid - blanched carrots formed discoloration after sterilization. 6. Relative content (%) of sugars in raw carrot juice we re ribose, 8.51%; fructose. 10.15%; glucose, 12.25%; sucrose, 49.53% and oligosaccharide, 19.56%. When the carrots were blanched in boiling water, the contents of monosaccharide and disaccharide decreased slightly but that of oligosaccharide increased slightly, however, when the carrots were blanched in acid solution, and then neutralized and sterilized, relative contents of ribose and sucrose decreased remarkably but that of oligosaccharide increased considerably and those of glucose and fructose increased slightly. 7. Nineteen sorts of free amino acid were detected from the carrot juices and the mains of them were threonine+asparagine, alanine, serine+glutamine, aspartic acid, arginine, and glutamic acid.

Changes of Folate Content in Spinach by Cooking and Storage -The Comparisons of Thermal Destruction and Loss of Folate into Cooking Water by Blanching Time of Spinach- (조리 및 저장에 따른 시금치 엽산 함량의 변화 - 조리시간에 따른 엽산의 열파괴 손실과 조리수를 통한 손실의 비교 -)

  • The effects of cooking methods and storage time on folate content in spinach were determined by boiling for 1, 2, 3, 4, 5, 10 and 20min in distilled water or by microwave blanching for 20, 40, 60, 80, 100 sec. The folate content of cooked spinach was decreased to 80.7% after 1min boiling, and to 5.5% after 20min boiling. The folate recovered from the cooked spinach and cooking water was 101.1% after 1min, 68.0% after 2min and 51.3% after 3min. The relative folate content leached out of the cooked spinach into the cooking water varied from 20.2% after 1min boiling to 88.8% after 20min boiling. Total folate content of spinach was decreased to 45% by microwave heating for 40sec. However, the spinach cooked by microwave heating retained more folate due to the minimal loss of folate into cooking water. More than 90% of folate content of spinach was retained during 1 to 2 weeks of storage at 4$^{\circ}C$.

Changes of Nutrient Composition and Retention Rate of Sweet Pepper by Different Types and Blanching Method (단고추 종류와 데침처리에 따른 영양성분 변화 및 잔존율 비교)

  • Purpose: To provide the nutritional information of sweet peppers, we have evaluated changes of nutrient content and retention rates by different sweet pepper types and blanching method. Methods: Four types of raw and blanched ($100^{\circ}C$, 30 sec) sweet peppers were prepared and their weight, nutrient content (3 water soluble vitamins, 10 minerals) and retention rates were analyzed. Results: The weight of blanched sweet peppers was decreased than that of raw sweet peppers. From the results of the two-way analysis, the type of sweet pepper had a greater influence than blanching method used on the thiamine, riboflavin, folate and vitamin C contents (but not niacin) (p<0.05). Red pimento contained the most thiamine (0.1 mg/100 g), riboflavin (0.16 mg/100 g), folate ($47.89{\mu}g/100g$) and total niacin (0.11 mg/100 g). Red paprika contained high levels of riboflavin (0.15 mg/100 g) and folate ($44.96{\mu}g/100g$). Orange paprika contained the highest vitamin C content (116.29 mg/100 g). In addition, the mineral content, with the exception of Se, was strongly influenced by the type of sweet pepper rather than the blanching method (p<0.001). The K content of sweet peppers was higher than other minerals. Overall, after blanching, high retention rates (over 70%) were observed in all types of sweet peppers. However, the retention rates of thiamin, vitamin C and Se showed lower levels (less than 70%). Conclusion: The vitamin and mineral contents depends more on the type of sweet pepper; although vitamin and mineral (except Se) contents showed some changes after blanching. Our results can be utilized to determine the effects of cooking processes on nutritional information.
