재료의 종류에 따른 김치의 유기산 및 휘발성 향미 성분의 변화 (Changes of Organic Acids and Volatile Flavor Compounds in Kimchis Fermented with Different Ingredients)

  • 김치의 주재료인 배추와 부재료를 한가지씩 첨가한 각 시료들을 $12{\sim}16^{\circ}C$에서 숙성시키면서, 유기산, 이산화탄소, alcohol 및 카보닐 화합물의 함량 변화를 측정하였고, 관능 검사를 실시하였다. 비휘발성 유기산은 lactic succinic, fumaric, malic acid가 분리되었고, 휘발성 유기산은 acetic, formic, propionic, butyric, valeric n-heptanoic acid 등이 분리되었으며, 카보닐 화합물은 acetaldehyde와 acetone이 분리되었다. Lactic acid는 숙성 시간에 따라 점차 증가했고, 고춧가루, 마늘, 파가 첨가된 김치에 많았다. Acetic acid도 발효가 진행됨에 따라 함량이 증가하였으며, 특히 마늘이 첨가된 김치에서 두드러졌다. 이산화탄소의 함량은 마늘이 첨가된 김치에 많았으며, alcohol류는 전 시료에서 ethanol 만이 확인되었다. Acetaldehyde와 acetone은 김치의 off-flavor와 직접적인 관계가 없는 것으로 나타났다.

휘발성 지방산의 주입을 통한 생물학적 영양염류 제거공정의 효율증진에 관한 연구 (Enbancement of Treatement Efficiency in a Biological Nutrient Removal Process by addition of Volatile Fatty Acids)

  • The removal efficiencies of organic substrates, nitrogen and phosphorus in the anaerobic-aerobic biological phosphorus removal process were investigated by addition of acetic acid, propionic acid and butyric acid which are normal volatile fatty acids contained in anaerobic digester supernatants. Substrate utilization coefficients for the phosphorus release and uptake were also estimated. The effect of a VFA, which showed higher phosphorus removal efficiency than the other VFAs did, was also studied in an anaerobic-aerobic-anoxic biological nutrient removal process. For the anaerobic-aerobic process added by VFA, the phosphorus removal efficiencies were up to about 68%, 55% and 61% for the reactors of acetic acid, propionic acid and butyric acid added, respectively, which indicates the efficiencies were increased by about 8-21%, comparing to that of 47% for the reactor with no VFA added. There were no significant difference in removal efficiencies for organic substrate and $NH_3-N$ without regard to addition of VFA. However, the removal efficiency of total nitrogen was increased in the case of VFA added, since $NO_3-N$ was less produced. For the anaerobic-aerobic-anoxic process added VFA, the removal efficiencies for $NH_3-N$ and $PO{_4}^{3-}-P$ were increased by 5% and 13%, respectively, comparing with them in the reactors not added VFA.

Composition of Secondary Metabolites in Various Parts of 'Seolhyang' Strawberry Plants

  • The objective of this study was to identify the content of phenolic and volatile organic compounds in edible and non-edible parts of 'Seolhyang' strawberry plants. We performed a comparative chemical analysis of the compounds found in roots, leaves, petioles, runners, and unripe and ripe fruits during vegetative propagation and reproductive growth. The contents of ellagic and gallic acids in the leaves of runner plants during vegetative propagation were $7.36{\pm}1.10$ and $5.07{\pm}3.66mg{\cdot}g^{-1}$ FW, respectively, and were higher than those in the other parts. The main volatile organic compound was identified as 3-hexen-1-ol, and it was mostly detected in leaves. The content of ellagic acid in leaves during reproductive growth was $12.96{\pm}2.30mg{\cdot}g^{-1}$ FW, while that in the other parts was below $6.00mg{\cdot}g^{-1}$ FW. The content of gallic acid in unripe fruits was $2.75{\pm}0.48mg{\cdot}g^{-1}$ FW and was higher than that in the other parts. Ripe fruits contained the lowest contents of ellagic and gallic acids but contained the most diverse volatile organic compounds, including sesquiterpenes, among the tested plant parts. The results indicate that non-edible parts (e.g., leaves and unripe fruits) of strawberry plants can be used as a raw material for antioxidant and anti-inflammatory agents, and edible parts (i.e., ripe fruits) can be available for making an essential oil.

고수의 가열처리에 따른 향미 성분의 변화 (Variation of flavor components of Coriandrum sativum L. by blanching)

  • The present study investigated free sugar, organic acid, volatile components in fresh leaf and root of the coriander respectively, and in blanched leaf and root of the coriander, respectively. The research results are as follows : Glucose, fructose and sucrose were detected in leaf and root of the coriander. The content of total free sugar was 22.91mg% in leaf and 23.84mg% in root. By blanching, the contents of total free sugar decreased to 21.28mg% and 21.89mg% in leaf and root respectively. Malic acid, trataric acid were detected in leaf and root of the coriander. The content of total organic acid in leaf was higher than that in root of the coriander. By blanching, the content of total organic acid significantly decreased in leaf and slightly decreased in root. A total of 98 flavor components were detected in the leaf of coriander and total contents of those were 878.485mg/kg. The major components were (E)-2-Decen-1-ol, (E)-2-Decenal, and (E)-2-Tetradecenal. And a large amount of aldehydes and alcohols were shown in the leaf of coriander. By blanching, a total of 75 flavor components were detected in the leaf of coriander and total contents of those were 846.49mg/kg. The major components were (E)-2-decenal, (E)-2-Tetradecenal, decanal. The amounts of aldehydes were increased more. However, the amounts of alcohols were decreased more than those of the fresh leaf, respectively. A total of 77 flavor components were detected in the root of coriander and total contents of those were 455.064mg/kg. The major components were (E)-2-Tetradecenal, (E)-2-Decenal, and (E)-2-Dodecenal. By blanching, the kinds and the contents of the flavor components decreased and the major components is the same of the fresh root. And the contents of aldehydes and alcohols, acids decreased. However, the contents of esters and ketons increased.

보리등겨로 제조한 간장의 발효기간별 맛성분 변화 (Changes in Taste Components of Kanjang Made with Barley Bran during Fermentation)

  • 보리등겨로 제조한 간장의 발효 기간별 맛성분 변화를 조사하였다. pH의 변화는 숙성초기에 pH 5.7로 나타났으나 이후 $4.9{\sim}5.1$로 일정하였다. 총질소는 숙성 90일째에 식품공전상 간장의 총질소 기준인 0.7%에 도달하였다. 유리당은 arabinose, xylose, fructose, glucose, 및 maltose 5종이 검출되었으며 휘발성 유기산으로는 acetic acid, propionic acid 및 butyric acid 3종이 검출되었다. 비휘발성 유기산으로는 lactic acid, fumaric acid, levulinic acid, succinic acid, malic acid, ${\alpha}-ketoglutaric\; acid$, citric acid 및 pyroglutamic acid 8종이 검출되었으며 특히, lactic acid는 기존 콩간장에 비해 거의 검출되지 않았다. 총 유리아미노산의 함량은 $442.9{\sim}803.6\;mg%$였으며, glutamic acid>proline>phenylalanine등의 순으로 높았다. 총 필수아미노산의 함량은 $151.9{\sim}298.6\;mg%$로 전체 아미노산 함량의 $34.3{\sim}37.3%$였다. 관능검사 결과, 숙성 45일과 60일이 기호도가 가장 높았다.

생마늘과 동결건조마늘의 휘발성 유기성분 비교 (Comparison of Volatile Organic Components in Fresh and Freeze Dried Garlic)

  • SDE추출방법 과 GC/MS로 분석에 의하여 생마늘과 동결 건조마늘의 휘발성 유기성분을 비교하였다. 생마늘과 동결 건조마늘에서 각각 42종, 32종의 화합물이 확인되었으며 , 대부분이 황화합물이었고 alcohol류, aldehyde류, ester류도 확인되었다. Diallyl disulfide, diallyl trisulfide, allyl methyl disulfide, allyl methyl trisulfide는 생마늘과 동결건조마늘 에서 확인된 주요 황화합물이었다. 3-Methyl pyridine, 2-methyl-4-pentenal, 2,3,3-trimethyl-1,4=pentadiene, methional등 생마늘에서 확인된 화합물은 동결건조마늘에서 소실되었고 propanethiol, 2-ethyl-3-butenal, acetic acid 등은 동결건조마늘에서 확인되었으며, 전체적인 휘발성 유기성분의 총량에는 영향을 미치지 않는 수준이었다. 동결건조에 의 하여 마늘의 주요 휘발성 유기성분 중 diallyl disulfide, diallyl trisulfide, allyl methyl disulfide, allyl methyl trisulfide, diallyl sulfide,3-vinyl-4H-1,2-dithiin 등 대부분의 황화합물 함량이 감소하였으며 methyl propyl trisulfide, 3- allylthiopropionic acid, cyclopentyl ethyl sulfide 등은 증가하였다. 그 외 ethyl acetate, ethanol,2-propenol, 2-propenal, hexanal 등의 휘발성 유기성분이 증가하는 것을 확인하였다.

발효탄수화물 첨가 사료가 양돈 슬러리의 휘발성 지방산과 휘발성 유기화합물 농도에 미치는 효과 (Effect of Fermentable Carbohydrate in Diet on the Concentration of Volatile Fatty Acid and Volatile Organic Compound in Pig Slurry)

  • This study was performed to investigate the effect of beet plup and IRG (Italian ryegrass) dry powder in fattening pig diet on reducing concentration of odorous compounds in the pig slurry. Fifty fattening boars [(Landrace ${\times}$ Yorkshire) ${\times}$ Duroc] were randomly assigned to one of 3 treatments (control, beet plup 5%, and IRG 5%). Pigs (BW 50~110 kg) were fed diets formulated to meet the Korean Feeding Standard (2012) and their excretion was collected from the slurry pits. Short chain fatty acid (SCFA) and branched chain fatty acid (BCFA) were higher in beet plup (31,786, 3,985 ppm) and IRG (32,755, 4,261 ppm) treatments, which was not different among treatments (p>0.05), compared to control (p<0.05). Concentrations of phenols and indoles were highest in beet plup (183.83, 168.59 ppm) and IRG (9.32, 8.92 ppm) treatments. Altogether, addition level of two contents was not appropriate to decrease concentration of odorous compounds.

양돈 슬러리에 첨가된 악취저감물질 수준별 휘발성 지방산과 휘발성 유기화합물 농도 비교 (The Effect of the Addition Levels of Odor Reducing Contents on the Concentration of Volatile Fatty Acid and Volatile Organic Compound in Pig Slurry)

  • This study was to investigate the effect of addition levels of odor reducing contents on reducing the concentration of odorous compounds. Slurry treatments included three levels mixture of horseradish powder (HP), mushroom waste (MW) and probiotics powder (PP), and non-treatment control (n=4 each group). Levels of odorous compounds were measured from the liquid slurry incubated in room temperature ($20{\sim}25^{\circ}C$) for 2 wk in chamber whose structure is similar to slurry pit. Concentration of phenols and indoles was lower (p<0.05) in level 1, which was mixed HP 0.01%, MW 0.4% and PP 0.004% (98.69, 1.87 ppm) compared to control. Short chain fatty acid (SCFA) and branched chain fatty acid (BCFA) was lowest (p<0.05) level 1 (6,557, 1675 ppm). Taken together, lower level are effective in reducing odorous compounds in pig slurry.

목초액 처리가 돈분 퇴비화 과정중 악취저감에 미치는 영향 (Reduction of the Odors during Pig Manure Composting Using of Pyroligneous Acid Liquor)

  • 본 연구는 친환경농자재로 선정된 유기성폐자 원인 목초액을 농 축산분야의 적용과 활용성 평가를 위해 돈분퇴비화 과정 중 발생되는 악취에 대한 저감효과를 조사하여 그 이용가치를 검증하고자 실시하였다. 이상의 결과에 대한 요약은 다음과 같다. 암모니아 가스의 분석결과 목초액을 처리한 PA-100과 PA-300 처리구에서 초기 암모니아가스 발생량이 관행구보다 높게 나타났으며, 목초액 처리구에서는 약 18일 이후부터는 측정되지 않았다. 반면, 관행구에서는 보다 오랫동안 나타났으며 약 25일후로 검출되지 않았다. 또한 달관적인 조사를 통하여 PA-100과 PA-300 처리구에서는 발생하는 암모니아가스 냄새의 정도가 현저히 낮았다. 이러한 결과는 목초액내에 함유된 초산성분에 의한 암모니아의 중화반응과 탄화된 목재의 특유의 향으로부터 가려지는 가리움효과(eclipsed effect)에 의한 것으로 해석된다. 휘발성 유기산의 발생량을 GC를 통해 분석한 결과 PA-100 처리구에서 가장 낮은 함량을 보였으며 휘발성 유기산 중에서 acetic acid와 propionic acid 및 butyric acid 등이 가장 많이 발생하였다. 특히, propionic acid와 butyric acid는 PA-100 > PA-300 > 관행구 순으로 퇴비화 과정중 감소효율이 높게 나타났다. 그러나 acetic acid는 관행구보다 다소 높은 경향을 보였는데 이는 목초액의 주성분인의 하나인 초산(acetic acid) 때문인 것으로 판단된다.

Prediction of Sediment-Bound Metal Bioavailability in Benthic Organisms: Acid Volatile Sulfide (AVS) Approaches

  • Benthic organisms dwell in sediment-water interface that contains significant amount of organic and inorganic contaminants. Their feeding behavior is highly related with sediment itself and pore water in the sediments, especially in ease of deposit feeder (i.e. polychaete, amphipod). The acid volatile sulfide (AVS) is one of the important binding phases of sediment-bound metals in addition to organic matter and Fe and Mn oxide fractions in sediments, particularly in anoxic sediments. The AVS model is a powerful tool to predict metal bioavailability and bioaccumulation in benthic organisms considering SEM/AVS mole ratios in surficial sediments. However, several biogeochemical factors must be considered to use AVS model in the sediment-bound metal bioavailability.
