The Nutritional Evaluation, and Antimutagenic and Anticancer Effects of Kimchi (김치의 영양학적 평가와 항돌연변이 및 항암효과)

  • The nutritional evaluation, and antimutagenic and anticancer effects of Kimchi were reviewed. Kimchi contains high levels of vitamins including vitamin C, $\beta$-carotene, vitamin B complex, niacin, and of minerals such as calcium, potassium, iron and phosphorous, etc. Kimchi is a low energy food, byt contains high quantities oforganic acids, dietary fiber and lactic acid bacteria in addition to the vitamins and minerals. Thus Kimchi could be developed as a protective food as it contains the various regulatory nutrients. The levels of NO3, NO2 and nitrosamines in Kimchi ingredients and Kimchi during theripening are not significant. However, high level of NaCl that could be used when prepared Kimchi in the warm region can be a problem, since high concentraitons of NaCl(>9.5%) in Kimchi could be comutagenic to themutagen of MNNG. The methanol extract of Kimchi, red pepper powder, garlic and lactic bacteria revealed antimutagenic or anticancer activities. The Kimchi extract also inhibited the growth of various human cancer cells.

Babesia gibsoni Infection in Three Hunting Dogs (사냥개에서의 Babesia gibsoni 감염)

  • Babesia gibsoni infection was diagnosed and treated in three hunting dogs which were hospitalized to the Veterinary Teaching Hospital, College of Veterinary Medicine, Seoul National University between April 4 and August 29, 1987. All three dogs revealed severe anemia, hemoglobinuria, splenomegaly and markedly decreased PCV, RBC count and hemoglobin. The anemia was regenerative, as characterized by increased numbers of nucleated erythrocytes, polychromasia, anisocytosis, reticulocytosis. B. gibsoni was identified by examination of blood smear stained with Giemsa stain. The forms of B. gibsoni identified in this report were pleomorphic such as singnet ring, oval, comma, dot and elongated forms. The maximal percentages of erythrocytes infected with one or more B. gibsoni organisms were 39%, 20% and 40%, respectively. The Tick, Haemophysalis longicornis was assumed to be the vector of babesiosis in these cases. Specific treatment consisted of diminazene aceturate and supportive treatment consisted of whole blood transfusion, lactated Ringer's solution, vitamin B complex and broad spectrum antibiotics. All three dogs had convalesced successfully after treatment.

  • The nutritional requirements for Prevotella sp. 4PCCNB2 isolated from the rumen of a native goat in Korea and those of the ATCC 19189 strain isolated from the bovine rumen were investigated. The two strains grew well with ammonium sulfate as the sole added nitrogen source. However, neither a complex of amino acids nor casein hydrolysate effectively replaced ammonium sulfate. Biotin, p-aminobenzoic acid, and vitamin $B_12$ were essential to culture the ATCC 19189 strain. Unlike the ATCC 19189 strain, however, $B_12$ was only stimulatory for the growth of the 4PCCNB2 strain. The 4PCCNB2 strain grew well in the basal medium without an individual acid such as acetic acid or valeric acid. In contrast, either acetic or valeric acid was absolutely required for the growth of the ATCC 19189 strain.

The influence of various medicines and nutritional supplements against bacteria with gastrointestinal relevance (다양한 약물과 영양제가 장내세균에 미치는 영향)

  • Recently, change of Western pattern diet and lifestyle is caused by various metabolic disorders and chronic diseases. These diseases need to take medicine regularly. Also, many people take health functional food, various vitamins and nutritional supplements in order to maintain a healthy life. But, there was no study about affects taking medicines against bacteria with gastrointestinal relevance. This study was performed by antibacterial activity test to evaluate the influence of a long time or commonly used medication. As a result, medicines of Vitamins & Minerals or Central nervous system show antibacterial activity against beneficial enteric bacteria and harmful enteric bacteria. Dexibuprofen of the Anti-inflammatory Drugs that acts on the central nervous system has shown high antibacterial activity at beneficial enteric bacteria strains (Lactobacillus casei, Lactobacillus rhamnosus) and harmful enteric bacteria (Staphylococcus aureus). Also, fenofibric acid of the antilipemic agents that acts on the Cardiovascular & Hematopoietic system has shown high antibacterial activity at beneficial enteric bacteria strains (Lactobacillus casei). Vitamins & Minerals appeared antibacterial activity against most intestinal bacteria. Vitamin B-Complex/with C and vitamin C were especially high with beneficial enteric bacteria strains (Bifidobacterium infantis) and harmful enteric bacteria (E. coli, E. aerogenes, S. flexneri, S. Typhimurium, S. aureus). Therefore, these results indicate that variously taking medicines have generally antibacterial activity against harmful enteric bacteria strains and beneficial enteric bacteria strains.

Effects of Kale Juice Powder on Serum Lipids, Folate and Plasma Homocysteine Levels in Growing Rats (케일녹즙 분말식이가 흰쥐의 혈중 지질, 엽산 및 호모시스테인 수준에 미치는 효과)

  • The purpose of this study was to investigate the effects of green vegetable (kale) juice powder supple-mentation on lipid profiles, plasma homocysteine, folate and vitamin $B_{12}$ in rats fed cholesterol (Chol. ) or Chol. free diet. 7-week old male Sprague Dawley rats (n=40) were divided into 4 groups, and experimental diets containing control diet group (CO), control diet plus 0.5 wt$ \% $ Chol. (CC), control diet added with 5 wt$ \% $ kale (KO), control diet added with 5 wt$ \% $ kale plus 0.5 wt$ \% $ Chol. (KC) were fed for 8 wks. Plasma homocysteine level was examined by amino acid analyzer and serum folate and vitamin $B_{12}$ level were measured by com-petitive radioimmunoassay methods. In various serum lipid profiles, TG level was lower in kale juice powder groups (KO, KC) compared to the corresponding groups (CO, CC) (p<0.001). In Chol. supplemented groups (CC, KC), HDL-Chol. level was lower (p<0.001) and LDL-Chol. level was higher (p<0.05) than Chol. free diet. HDL-Chol. level was higer (p<0.05) in kale juice powder groups. HDL/LDL ratio was lower in Chol. supplemented groups (CC, KC) and tended to be higher in kale juice powder groups (KO, KC) Serum folate and vitamin $B_{12}$ levels were not affected by dietary Chol. and kale juice powder supplementation. Plasma homocysteine level was not affected by dietary Chol. and kale juice powder supplementation, too. Serum folate level was positively correlated with serum vitamin $B_{12}$ level (r=0.5632, p<0.001), but plasma homocysteine level was not significantly correlated with any serum folate, vitamin $B_{12}$ and Chol. levels, respectively. In summary, kale juice powder supplementation have improved serum lipid profiles by increasing the HDL level and decreasing the TG level and have not altered homocysteine level under the sufficient supply of folate and vitamin B complex relating with the homocysteine metabolism.

Patterns of Fortified Food Use among Teenagers in Chungnam Province and Daejeon City in Korea (일부 지역 청소년의 영양강화식품 이용 실태 조사)

  • Fortified foods are consumed widely in modem society according to increased concern on health oriented foods. This study investigated the patterns of vitamin-and/or mineral-fortified food use among 677 teenage students(13-18 years of age) in Chungnam province and Daejeon city in Korea using questionnaire. More than 63.7% of total subjects consumed more than one package of fortified foods belonged to more than three categories of five categories including sweets/biscuits, ramyons, beverages, milk and dairy products, and breads as a frequency of more than 1-2 times/week during previous three months prior to present survey. Consumption of fortified foods was higher in middle school students than in high school students(p<0.05), and in females than in females(p<0.001). Users of fortified foods took the snacks more often(p<0.001), and they tended to believe more positively that fortification can be helpful in health maintenance than did non-users. Users preferred vitamin C and Ca(calcium) as a fortified nutrient. Major fortified nutrients in fortified foods taken by users were various; vitamin B-complex and Ca from sweets/biscuits, Ca from ramyons, vitamin C and Ca from beverages, Ca and iron from milk and dairy products and breads. These results suggest that fortified foods are used commonly and are influenced by several factors among teenagers. Types of fortified nutrient, in fortified foods taken by subjects, are various and fortification is performed unspecifically. As a consequence both nutrition education and government regulation on fortified foods should be enforced to maximize the benefits and minimize the hazard of their use.

Correlation Analysis of Organic Acid Comprehensive Profile Markers with Chemotherapy Induced Peripheral Neuropathy in Cancer Patients (항암제 유발 말초신경병증환자와 유기산검사 마커와의 상관성 연구)

  • Objectives: The purpose of this study is to evaluate the urinary organic acid comprehensive profile for chemotherapy induced peripheral neuropathy (CIPN). Methods: Participants are 66 patients with CIPN who had symptom (Visual analog scale ${\geq}30mm$, Eastern Cooperative Oncology Group ${\leq}2$). Participants were tested with organic acid comprehensive profile markers. Results: Positive Correlation was observed in the neurotransmitter metabolism markers, N-methyl-D-aspartate (NMDA) modulators markers, detoxification markers, energy production markers, amino acid metabolism markers, and intestinal dysbiosis markers. Especially, all the neurotransmitter metabolism markers were showed positive rate of 44%. In addition, neuro-endo-immune was associated with energy metabolism (mitochondrial dysfunction) in CIPN of cancer patient. especially detoxification, intestinal bacterial hyperplasia, vitamin deficiency (folate, complex B group, vitamin C). Conclusions: Significant urinary organic acid comprehensive profile results were obtained in cancer patients who induced peripheral neuropathy by chemotherapy.

Comparison of Bioactivities and Antioxidant Activities of Acai Berry (Euterpe oleracea Mart.) by Different Extraction Solvents (추출 용매에 따른 아사이 베리(Euterpe oleracea Mart.)의 생리활성 및 항산화 활성 비교)

  • The acai berry (Euterpe oleracea Mart.) contains vitamin B complex, vitamin C, anthocyanin and so on. Especially acai berry was seen as nutritionally comparable to blueberry and related berries. The acai berry has significant aging-reducing properties. Compounds have been found to have anti-aging and antioxidant components. Acai berry was extracted with 70% methanol, 70% ethanol and CM (chloroform:methanol=2:1, v/v). After sample and reagents of each experiment was reacted, DPPH radical scavenging activity and ABTS radical scavenging activity, ferric reducing antioxidant power, reducing power were measured to determine the antioxidant capacity, and as results of comparing each extract. Ethanol (70%) extraction was measured highest. Anthocyanin, total phenol, flavonoid also appeared similar to the results. In addition, the antioxidant activities of the extraction solvents were increased significantly with increasing concentrations, but showed lower antioxidant activity than the positive control (ascorbic acid). As a result, antioxidant activities of sample supposed to affect by the anthocyanin, phenol and flavonoid contents.

Comparison of Dietary Behaviors and Nutrient Intakes among the Students of Middle Schools between in Industrial Complex and in Non-Industrial Complex of Ansan City in Korea (일부 공단 지역과 비공단 지역 중학생의 식사 행동 및 영양 섭취 비교)

  • This study was carried out to compare the dietary behaviors and nutrient intakes among the students(13 years of age) of middle schools between in industrial complex and in non-industrial complex. The subjects of each group were composed of 192 male and female teenagers living in Ansan city in Korea, and this study was performed by questionnaire and dietary survey. As a result, mothers' education level and monthly family income were lower in industrial complex-families(ICF) than those in non-industrial complex-families(NICF). The subjects in ICF took dinner more irregularly than did those in NICF. The subjects in ICF skipped the meals often as there was no person preparing meals'. The subjects in ICF tended to take ra-myun, cookie or bread more often as a lunch, and they considered size and price of snack more imporandy when they chose snack than those in NICF. And the subjects in ICF had lower degree of flood habits and satisfaction on their meals than those in NICF. The daily intakes of calorie, vitamin B$_2$, calcium and iron of subjects of two groups were lower than the Korean RDA, and these intakes were lower in ICF than in NICF. These findings show that dietary behaviors and nutrient intakes were poor among the students of middle schools in ICF, in part it seems to be related to the fact that the group of ICF has low family income and mothers of ICF have the jobs that are finished late or irregularly. Therefore, these results underscore the need to provide the nutritional education for the students of middle schools and their mothers in ICF with respect to the importance of optimal nutrition through sound dietary behaviors during the adolescence.

Survey on the Patterns of Fortified Food Consumption and Intake of Vitamins and Minerals in Fortified Foods by Elementary School and Middle-School Students in Korea (우리나라 일부 초등학생과 중학생의 영양강화식품 섭취 실태 및 영양강화식품을 통한 비타민과 무기질 섭취량 조사)

  • This study was performed to investigate patterns of fortified food (FF) consumption and intake of vitamins and minerals from FFs among 577 Korean children (12.4 years of age) who attended elementary or middle school. FFs eaten by children as a snack were surveyed using the food record method during 3 days, including 2 week days and one weekend. As a result, 114 FF items were eaten by the children, and several kinds of nutrients such as vitamin A, D, E, B complex, C, calcium (Ca), iron (Fe), and zinc (Zn) were fortified in these foods. Ca-FFs (65.8%) were most frequently consumed, followed by vitamin C-FFs (33.4%) and vitamin D-FFs (33.3%). The number of FF items in each food group was the most in the milk group (n=24, 21.0%), followed by the beverage group (n=19, 16.7%), and the cookie/bread/cake group (n=17, 14.9%). Fortified nutrients in FFs were in various combinations, but the major combination patterns were Ca, Ca plus vitamins, Ca plus vitamins plus other minerals, and Ca plus other minerals. Daily mean intakes of vitamins and minerals from the FFs were 66-300% more than those of the recommended nutrient intake (RNI ) or adequate intake (AI) for most vitamins and minerals. Daily maximum intakes (95th percentile) of vitamins and minerals from FFs were 1-15 times the RNI or AI for most vitamins and minerals. Vitamin and mineral consumption ratios from each FF group were different according to the kind of fortified nutrient. For example, vitamin C was mostly eaten in fortified beverages (46-54%), and Fe was mostly eaten in fortified cookie/breads/cakes (87%). The above results show that FF consumption varied widely among the children, and that most of the children's foods were fortified with several vitamins and minerals without a common rule; thus, subjects risked over consuming vitamins and minerals by eating FFs. Therefore, practical guideline on FF use for children's optimal nutrition and health should be provided through nutrition education.
