The Effect of Eating Habits and Nutrient Intake on the Physical Growth Indices in Preschool Children (학령 전 아동들의 식습관과 영양소 섭취가 신체발달 지수에 미치는 영향)

  • The purpose of this study was to estimate the nutrient intake, dietary habits, and body indices among preschool children. The study subjects were 166 kindergarten children, aged 4 to 6 years. A measurement of the weight, height, chest circumference, and head circumference of the children was conducted. The general home environment and factors related to the eating habits of children were collected using a questionnaire that included information about physical activity, outdoor playing time, television watching, family income, and parents education and occupations. Underweight, overweight were defined based on a value of less than 110 and more than 140 on the Rohrer Index, or less than 90 and more than 120 on the weight-length index (WLI). The average Rohrer and WLI for the preschool children were 14.3 $\pm$ 23.2% and 104 $\pm$ 13.5%. Using the WLI, 12.7% of the preschool children were underweight 62.6% were normal, and 24.7% were overweight or obese. On the Rohrer Index, 32.0% of the preschool children were underweight, 34.7% were normal, and 34.1% were overweight or obese. With regard to frequency of regularity of eating breakfast, 2.5% of preschool children skipped breakfast every morning. The risk of being overweight increased in preschool children who had faster eating times. The Rohrer and WLI were negatively related to faster eating times. The average daily energy intake was 1272 Kcal, which corresponded to 79.5% of the Korean RDA. In particular, the average intakes of calcium, iron, and vitamin B$_2$ were much lower than the Korean RDAs for each of those nutrients. Children whose mothers had occupations were at greater risk of decreased nutrient intake than those whose mothers were at home. The data presented in this study confirm that, in preschool children, undernutrition remains the nutritional problem of great concern in Korea, even though Koreans are starting to have worrisome rates of overweight. Therefore, during the early years of life, focus should remain on sustaining Proper growth and development.

Evaluation of Elementary School Foodservice Menus on Its Contents and Diversity of the Food Served. (한국 초등학교 급식 식단의 영양가 및 식품 구성의 다양성 평가)

  • This study was conducted to evaluation the quality of meals served in elementary school based on nutrient contents and food diversity . A questionnaire was mailed to school foodservice dietitians requesting one week menus for April and October . Menus served in 388 schools from each province and from major cities in Korea were analyzed. Mean nutrient contents per meal of persons served, and food expenses per meal. Mean percentages of energy from fat was 20.2% , and was significantly l different by foodservice system. When nutrient contents were converted to amount per 1, 000kcal, all were higher than that calculated from RDA except calcium, iron, and Vitamin A. Most of these were not significantly different according to area, foodservice system, the number of persons served, and food expense per meal. Compared to 1/3 of RDA for children , many meals provided lower amounts of energy, Vit A, VitB2, and Ca. More than half of the meals provided less iron than 1/3 RDA for 10-12 years girls. Using the highest values of RDA for the elementary school age group as evaluation, criteria nutrient adequacy ratios(NAR) were lowest for Ca(0.61), Vit A(0.57), and iron(0.77). The mean adequacy ratio(MAR) was 0.86. Mean numbers of food items and dishes per meal were 15.3 and 5.1 , respectively. 66.3% of the meals provided three food groups of grain, meat, and vegetable. Except for the number of different food items served per meal, the aspect of food diversity was similar to that of nutrient contents. There was significant positive correlation between mean number of different food items served per meal and nutrient content . In summary , schools in small cities and rural areas than those in large cities, schools adapting commissary or joint management than those or density. Also the more food groups served per meal, the higher the nutrient content per meal . In summary , schools in small cities and rural areas than those in large cities, schools adapting commissary or joint management than those adapting conventional foodservice system, schools serving smaller number of persons, and schools with higher food expenses provided higher energy contents and food diversity.

Evaluation of host and bacterial gene modulation during Lawsonia intracellularis infection in immunocompetent C57BL/6 mouse model

  • Background: Proliferative enteritis caused by Lawsonia intracellularis undermines the economic stability of the swine industry worldwide. The development of cost-effective animal models to study the pathophysiology of the disease will help develop strategies to counter this bacterium. Objectives: This study focused on establishing a model of gastrointestinal (GI) infection of L. intracellularis in C57BL/6 mice to evaluate the disease progression and lesions of proliferative enteropathy (PE) in murine GI tissue. Methods: We assessed the murine mucosal and cell-mediated immune responses generated in response to inoculation with L. intracellularis. Results: The mice developed characteristic lesions of the disease and shed L. intracellularis in the feces following oral inoculation with 5 × 107 bacteria. An increase in L. intracellularis 16s rRNA and groEL copies in the intestine of infected mice indicated intestinal dissemination of the bacteria. The C57BL/6 mice appeared capable of modulating humoral and cell-mediated immune responses to L. intracellularis infection. Notably, the expression of genes for the vitamin B12 receptor and for secreted and membrane-bound mucins were downregulated in L. intracellularis -infected mice. Furthermore, L. intracellularis colonization of the mouse intestine was confirmed by the immunohistochemistry and western blot analyses. Conclusions: This is the first study demonstrating the contributions of bacterial chaperonin and host nutrient genes to PE using an immunocompetent mouse model. This mouse infection model may serve as a platform from which to study L. intracellularis infection and develop potential vaccination and therapeutic strategies to treat PE.

Effects of cyanocobalamin and its combination with morphine on neuropathic rats and the relationship between these effects and thrombospondin-4 expression

  • Background: Thrombospondin-4 (TSP4) upregulates in the spinal cord following peripheral nerve injury and contributes to the development of neuropathic pain (NP). We investigated the effects of cyanocobalamin alone or in combination with morphine on pain and the relationship between these effects and spinal TSP4 expression in neuropathic rats. Methods: NP was induced by chronic constriction injury (CCI) of the sciatic nerve. Cyanocobalamin (5 and 10 mg/kg/day) was administered 15 days before CCI and then for 4 and 14 postoperative days. Morphine (2.5 and 5 mg/kg/day) was administered only post-CCI. Combination treatment included cyanocobalamin and morphine, 10 and 5 mg/kg/day, respectively. All drugs were administered intraperitoneally. Nociceptive thresholds were detected by esthesiometer, analgesia meter, and plantar test, and TSP4 expression was assessed by western blotting and fluorescence immunohistochemistry. Results: CCI decreased nociceptive thresholds in all tests and induced TSP4 expression on the 4th postoperative day. The decrease in nociceptive thresholds persisted except for the plantar test, and the increased TSP4 expression reversed on the 14th postoperative day. Cyanocobalamin and low-dose morphine alone did not produce any antinociceptive effects. High-dose morphine improved the decreased nociceptive thresholds in the esthesiometer when administered alone but combined with cyanocobalamin in all tests. Cyanocobalamin and morphine significantly induced TSP4 expression when administered alone in both doses for 4 or 14 days. However, this increase was less when the two drugs are combined. Conclusions: The combination of cyanocobalamin and morphine is more effective in antinociception and partially decreased the induced TSP4 expression compared to the use of either drug alone.

Nutritional and Sensory Quality of Prepared Tomato (Solanum lycopersicum) Leather

  • Tomato has a limited shelf life and is highly perishable due to its high moisture content. As fruit leather, is a traditional food of Nepal, it can be beneficial to move towards value addition and diversification of the traditional product. The main aim was to analyze the nutritional values and phytochemicals of the tomato pulp and prepared leather, and sensory evaluation of prepared tomato leather. Five samples A, B, C, D and E were prepared with 80:20, 72.5:27.5, 95:5, 87.5:12.5 and 65:35 fruit pulp: sugar ratio respectively. Analysis of raw tomato pulp and all the five samples was performed. Sensory quality of the product sample A was found superior to that of other samples but chemical and phytochemical properties of product sample C was found superior than that of other prepared samples. Therefore, we had two best products, in terms of sensory properties and in terms of nutritional properties. The best product on the basis of nutrients (sample C) had acidity (%), TSS (°Bx), pH, total ash content (%), crude protein (%), crude fat (%), crude fiber (%), carbohydrate (%), vitamin C (mg/100 g), total energy (Kcal/100 g), TPC (mg GAE/g of dry extract), TFC (mg QE/g of dry extract), DPPH scavenging activity (% of inhibition) and lycopene content (mg/100 g) was found to be 3.70.1, 20 ± 0.02, 3 ± 0.1, 2.30 ± 0.05, 2.69 ± 0.04, 0.87 ± 0.02, 5.46 ± 0.01, 69.68 ± 0.02, 25.17 ± 1.25, 297.31 ± 0.01, 85.35 ± 0.02, 65.39 ± 0.02, 59.23 ± 0.03 and 98.57 ± 0.02 respectively. A tasty and nutritious product of tomato, leather can be prepared which can be more appealing to the consumer.

Microbiome-metabolomics analysis of the effects of decreasing dietary crude protein content on goat rumen mictobiota and metabolites

  • Objective: The objective of this study was to investigate the effects of decreasing dietary crude protein content on rumen fermentation, mictobiota, and metabolites in goats. Methods: In an 84-day feeding trial, a total of twelve male Anhui white goat kids with initial body weight 15.9±1.13 kg were selected and randomly classified into two groups, feeding a normal crude protein diet (14.8% CP, NCP) or a low crude protein diet (12.0% CP, LCP). At the end of the experimental trial (on day 84), six animals were randomly selected from each group and were slaughtered to collect rumen fluid samples for the analysis of rumen fermentation parameters, microbiome, and metabolome. Results: The concentrations of ammonia-nitrogen, total volatile fatty acid, acetate, and propionate were decreased (p<0.05) in the LCP group in comparison with those in the NCP group. The abundances of genera Prevotella, Campylobacter, Synergistetes, and TG5, which were associated with nitrogen metabolism, were lower (p<0.05) in the LCP group compared with those in the NCP group. The levels of 78 metabolites (74 decreased, 4 increased) in the rumen fluid were altered (p<0.05) by the treatment. Most of the ruminal metabolites that showed decreased levels in the LCP group were substrates for microbial protein synthesis. Metabolic pathway analysis showed that vitamin B6 metabolism was significantly different (p<0.05) in rumen fluid between the two treatments. Conclusion: Decreased dietary protein level inhibited rumen fermentation through microbiome and metabolome shifts in goat kids. These results enhance our understanding of ruminal bacteria and metabolites of goat fed a low protein diet.

Comparison of Nutritional Status of the Daejeon Metropolitan Citizens by Frequency of Eating Out (외식 빈도에 따른 대전시민의 영양상태 비교)

  • This study aims at investigating the health and nutritional status of the adults according to frequency of eating out. One day food intake data were collected by 24 hr recall dietary survey and body size, blood pressure and some blood lipids and other constituents were measured on 137 Daejeon metropolitan citizens 20 yrs old and above who visited Chungnam National University Hospital for physical examination during the period of December 6, to December 15, 2008. The frequency of eating out were categorized into four levels: less than once a week, once a week, 2-3 times a week, 4 times a week and above. Body mass Index, waist circumference, blood pressure, blood lipid, blood glucose, GPT and GOT did not showed any significant difference according to the frequency of eating out of the subjects. Though, systolic blood pressures and serum levels of total cholesterol and LDL-cholesterol showed a little tendency to be high in the subjects eating out 2-3 times a week. In the contrary, serum triglyceride level tended to be low in the same group. The subjects eating out 4 times a week and over took more total protein, animal protein, animal fat, phosphorus and vitamin $B_2$ than any other group. Also protein energy ratio was the highest in the group eating out 4 times a week and above and they took more animal food group, other food group, beverages teas and alcohols than other groups eating out. These results showed that higher frequency of eating out leads to higher intake of protein, fat, phosphorus, animal food groups and other food groups (oils, beverages, seasonings) and to lower intake of vitamin C and plant food groups. It, thus, suggested that the strategy for restaurant business is required to provide the menu substituted animal food by more plant food.

Comparison of Micronutrients and Flavor Compounds in Breast Meat of Native Chicken Strains and Baeksemi for Samgyetang (삼계용 토종닭과 백세미 가슴살의 미량영양소 및 풍미물질 비교)

  • The micronutrients and flavor compounds of three new native chicken strains (A, C, and D) being developed in a breeding program (Golden Seed Project) were compared with a commercial native chicken strain (H) and the Baeksemi (W, white semi broiler). After 100 male chicks in each strains were reared for 5 weeks, the breast muscles from randomly selected 40 birds were analyzed at 8 replications. Native chicken strain A had greater amounts of α-tocopherol and α-tocotrienol compared with strain W. Native chicken strains showed higher contents of vitamin B12 than Stain W. Stain H strain had the highest values of cholesterol content and strain D did the lowest. There was no different content of most minerals between native chickens (A, C, D, and H) and W, but Cu were more contained in native chicken strains compared with W. In terms of nucleotide-related flavor compounds, Stain A had the lowest content of hypoxanthine and strain D had highest inosine monophosphate. Native chicken strains had higher contents of umami-related free amino acids (glutamate and aspartate) than W. Among native chickens, strain A had more amounts in the contents of taurine, tasty flavor compounds, and certain vitamins, despite of the relatively low growth productivity. This result will provide information to select a strain with characteristic meat quality in a chicken breeding program.

Comparative Study of Dietary Habits, Mini Dietary Assessment Scores, and Health Interest between Female Students in the Department of Food and Nutrition and Other Departments, Sahmyook University (식품영양학 전공 및 비전공 여대생의 식습관 및 건강관심도에 관한 비교 연구 - 삼육대학교를 중심으로 -)

  • The dietary habits of 156 female college students in the Department of Food and Nutrition (n=79) and other departments (n=77) at Sahmyook University, Nowon-gu, Seoul were evaluated from September to December, 2009. All participants completed a questionnaire designed to determine the mini dietary assessment score, as well as to evaluate nutrient intake, healthrelated questions and to determine a physical score. The students in the department of food and nutrition tended to consume more vegetables than Kimchi for each meal (39.2%), fried foods twice a week (38.0%) (p<0.05) and less fruits and fruit juices (29.1%). In addition, 15.2% of students ate Samgyeopsal and Galbi less than two times a week (p<0.05). The subjects in the department of food and nutrition took less vitamin $B_1$ and more vitamin C and E than the subjects in the other departments (p<0.05). All subjects regularly exercised for 30 minutes to 1 hour (45.7%), one or two times weekly (43.5%). The subjects in the other departments consumed more nutrient supplements. Overall, 69.1% of the subjects consumed nutrient supplements. A total of 87.8% of the subjects in the other departments consumed alcoholic beverages and all subjects began to drink when they were in high school (50.4%). The primary reason given to continue drinking was to maintain good relationships with friends (76.7%). Overall, the results of this study indicate that students in the department of food and nutrition of Sahmyook university have better dietary habits and nutrient intake than those in other departments. The results highlight the necessary to introduce a practical method of inducing good dietary habits to the everyday life of students. One approach may be to provide greater opportunity for students in other departments to attend classes in the department of food and nutrition.

Systematic review of the effect of dried ginger powder on improvement of nausea and vomiting associated with early pregnancy or motion sickness (생강 건조 분말의 임신 및 멀미에 의한 오심, 구토 개선 기능성에 대한 체계적 고찰)

  • Purpose: Ginger (Zingiber officinale) has been widely used as an antiemetic agent. This systematic review was aimed at evaluation of the effect of dried ginger powder supplementation on improvement of nausea and vomiting associated with early pregnancy or motion sickness. Methods: We searched Pubmed, Cochrane, Science Direct, and KISS (Korean studies Information Service System) using keywords such as ginger or Zingiber officinale in combination with nausea, vomiting, motion sickness, or pregnancy, published in March 2013. Results: The strength of the evidence was evaluated on the selected 12 RCTs (randomized controlled trials). Eleven trials including 2,630 subjects showed that supplementation with dried ginger powder resulted in significant improvement of nausea or vomiting related to early pregnancy or motion sickness. Among the nine studies including 809 women in early pregnancy before 20 weeks of gestation, ginger supplementation was superior to placebo in five studies (n = 305), and as effective as positive control (vitamin $B_6$ or dimenhydrinate) in four studies (n = 504). Ginger intake significantly reduced the episodes or severity of vomiting related to motion sickness compared to placebo or showed the same effect as several antiemetic drugs in two studies (n = 1,821). Conclusion: Our findings added evidence indicating that ginger powder supplements might improve the symptoms of nausea or vomiting related to early pregnancy or motion sickness without significant adverse events.
