Fat replacers are divided into three categories. These include carbohydrate-based, protein-based and fat-based replacers. Carbohydrate-based replacers occupy half of the fat replacers market. The main ingredients of carbohydrate-based are gums, starch, modified starch, cellulose and fiber. The functional properties of fat replacers are to retain moisture, to retard staling, to provide mouthfeel and texture, to emulsify, to stabilize emulsion, and to reduce fat. Using these functionalities, fat replacers are used in various foods such as baked goods, salad dressing, sauces, meat products, dairy products, frying foods, bakery, and confectionery. Success factors of fat replacers in the market are sensory equivalent, texture and safety as food ingredients.
Recently, functional foods and bioactive components in foods have drawn the attention and interest of food scientists, nutritionists, health professionals, and general consumers. Bioactive whey protein is a highly concentrated milk serum isolate or concentrate, which is high in protein (80~90% protein by weight), carbohydrate- and sugar-free, and nonfat or very low in fat. Bioactive whey protein enhances both healthy and deficient immune systems. In general, ultrafiltered whey protein contains various whey protein concentrate peptides, which could be used for manufacturing probiotics added to health beverages. Hence, the objective of this paper was to review the published literature on research of new functionally improved health beverages using various bioactive components extracted from milk and dairy products.
Various peptides derived from food are among the most potent physiologically active agents known, and include anticancer peptides, angiotensin converting enzyme(ACE) inhibitor exhibiting antihypertension action, opioid peptides, antithrombotic peptides, hypocholesterolemic peptides, immunomodulators, calcium absorption enhancers, and other peptides. Hydrophobic peptides extracted from a Cheddar-type cheese slurry were fractionated by gel chromatography and repeated HPLC. A peptide fraction from HPLC showed high cytotoxicity on the tumor cell lines such as a human colon carcinoma, and comprised of Tyr, Ser, Leu, Gly, and others. Hypocholesterolemic peptides were isolated from peptic hydrolyzates of casein and soy proteins. Macropeptides of 1,000${\sim}$5,000 dalton were effective on reducing the cholesterol level of mouse serum. Peptides showing high Krigbaum hydrophobicity and ANS surface hydrophobicity resulted in high hypocholesterolemic effect and fecal steroid concentrations. Caseinomacropeptides (CMP) were isolated from whey powder and treated with soluble and immobilized trypsin to obtain antithrombotic peptides. One fraction from the CMP hydrolyzed with immobilized trypsin for 24h exhibited high antithrombotic activity with 52.5% inhibition of platelet aggregation. These results suggested that peptides from various milk products could be utilized as a good bioactive agents for developing health functional foods.
This study was carried out in order to facilitate the consumption of milk which tend to decrease in recent years and to improve the school milk program. The survey by means of prepared questionnaire was conducted to investigate a perception and satisfaction of school milk program, and milk intake at home and school with elementary, middle, and high school students. Most of the subjects thought drinking milk is important for their health but only 50.2% of them were actually drinking milk everyday. In particular, the frequency of consuming milk at home was significantly lower in students being provided with school milk program than the students without school milk program. Most of the students commonly drunk plain milk rather than flavored milk, however actually they preferred flavored milk to plain milk. The frequency of consuming milk and the degree of satisfaction for milk being served in the school milk program was lowered. The major reason of disliking milk being served in school milk program was ‘poor taste’. And to promote milk consumption in school milk program, the subjects anticipated the serving of various milk and dairy products, flavored milk and yogurt etc. Thus, it was suggested that to improve the school milk program and promote milk consumption among the students, serving various products that can satisfy their preferences and demands and the proper food guide and education on nutrition are called for.
Purpose: The atherogenic index of plasma (AIP) is gaining recognition as a superior predictor of coronary artery disease. This study examined the relationship between the AIP and the intake of various food groups in Korean adults, using the baseline data from the Korean Genome and Epidemiology Study-The Health Examinees (KoGES-HEXA) study. Methods: This study included 133,381 adults (46,288 men, 87,093 women) who completed the nutrition survey and biochemical tests of the KoGES-HEXA study. The AIP was calculated as the log (triglycerides/high-density lipoprotein-cholesterol) and was divided into quintiles according to sex for further analysis. Data on food group intake were obtained using the semi-quantitative food frequency questionnaire, and daily food group intake (g/d) was evaluated for each individual. The association between the food group intake and the AIP was examined using the linear regression analysis after adjusting for the confounding variables. Results: In this study population, there was a positive correlation between energy intake and the AIP in men whereas an inverse assocation was shown in women (p < 0.001). In women, a rise in the AIP significantly correlated with an increased percentage of energy intake derived from carbohydrates but decreased percentages of energy from protein and fat (p < 0.001). In men and women, the consumption of grains and kimchi/pickles increased as the AIP rose, while the intake of legumes, nuts, meat and its products, eggs, fish, and milk and dairy products decreased. Among men, individuals in the highest AIP group showed higher intake of wheat products than those in the lowest group of the AIP. In women, the AIP was inversely correlated with potatoes and beverages consumption. Conclusion: This study highlights the importance of a balanced diet, including various protein sources, milk and dairy products, legumes, and nuts, for preventing cardiovascular diseases. Further research into sex-specific dietary patterns is essential for tailoring appropriate dietary recommendations.
This study examined awareness and information acquisition behavior regarding food hygiene and safety and information search behavior of college students. The sample was obtained from 284 students in Yeungnam region through a self-administered questionnaire. To describe characteristics of the respondents, frequency distributions were used. In addition, $t$ tests, analysis of variance and Duncan multiple range tests were conducted. Data were analyzed by SPSS Windows V.18.0. The results of the study were as follows: (1) most respondents were concerned about food hygiene and safety. They were mostly interested in the expiration date label on breads, milk/dairy products, fish products and meat products, and price of cookies. Many respondents answered that foods produced and distributed in Korea were not safe. The respondents were most worried about endocrine disruptors among various food risk factors. The respondents received information on food hygiene and safety from blogs, mini-homepages, or Kin-searches on the Internet, electronic media, and food labeling in decreasing order.

The objective of this study was to evaluate the organoleptic profiles of Kefir and yogurt supplemented with Mentha piperita's (peppermint) oil. The organoleptic profiles of Kefir and yogurt were evaluated by 15 trained panelists between 20 to 50 years of age. The products of Kefir and yogurt were prepared with Mentha piperita's oil at concentrations of 0%, 0.1%, 0.3%, 0.5%, and 1.0%. Taste, color, and overall acceptability scores were the same or lower in Kefir supplemented with 0.1%, 0.3%, 0.5%, or 1.0% Mentha piperita's oil than the control group (0%). The scores of all categories were higher for yogurt containing 0.1% Mentha piperita's oil than the control group. Taste, color, and overall acceptability decreased in proportion to the added amount of Mentha piperita's oil. Further studies are needed to evaluate the functionalities and effectiveness of Mentha piperita's oil in promoting human health.
This study analyzes the food frequency for the elderly regarding different family types and finds the factors for nutritional risk, offers a basic reference for providing nutritional support for them. The study referred to the dietary behavioral survey data of 3,680 elderly people (1652 male and 2028 female) from 21 regions in the northern Kyeonggi province. The data was collected through the method of one-to-one interviews and was a part of the Community Health Survey for 2008 by the Korea Centers for Disease Control and Prevention (KCDC). We classified family types as a household for elderly people living alone, a household of elderly people with a spouse, a household of the elderly with unmarried children and a household of the elderly with married children, and as for intakes of foods, the frequencies of taking fruits, vegetables, kimchi, rice with mixed cereals, meat, fish, bean tofu soymilk, milk and dairy products, as well as sweet beverages are calculated on a daily basis and skipped meals are calculated on a weekly basis. Elderly women showed lower income, lower education level, higher unemployment rates, and a higher rate of government healthcare subsidies than elderly men. Elderly women tend to live alone and with their children while elderly men tend to live with their spouse. In both males and females, the intake of fruits and vegetables were the least in the elderly living alone, while the elderly with married children ate the most. In both males and females, the household of the elderly living alone ate significantly less amounts of Kimchi than other family types. Elderly people living alone tended to have significantly less meat and fish, especially women. In the case of rice with mixed cereals, the elderly men living alone and the elderly men with unmarried children ate significantly less amounts than the elderly men living with a spouse. The elderly men living alone took significantly less milk and dairy products than the elderly men with unmarried children while the elderly women living with a spouse took significantly less milk and dairy products than the elderly women with married children. With regards to the frequency of meal-skipping, the elderly living alone had the highest frequency for skipping meals. From this result, having various foods is difficult for the elderly living alone. Furthermore, the elderly living with unmarried children demonstrated a low quality of dietary life compared to those of married children. Hence, it can be concluded that social support is important in order for the elderly to have a balanced diet.
The daily food intake and its related factors of the elderly(aged over 60) living in Incheon were compared. Self administered questionnaires were collected from 418 elderly. Statistical data analysis was completed using a SPSS v. 10.0 program. The results are summarized as follows: About 70% of elderly took grains and starch foods relatively high. The daily intakes of them was significantly influenced by ages of elderly, self-perceived health status, degree of drinking, meal regularity and nutritional balance of meals. More than 80% of elderly responded to take the food group of meat, fish and eggs poorly. Among various factors, the residence type and snack intake frequency influenced the daily intake of those foods statistically. A half of elderly took the vegetables and fruits everyday more than average. The daily consumption of vegetables and fruits was significantly influenced by sex, ages, exercise, snack intake frequency and preference of spices. Most elderly consumed fewer servings of milk and dairy products. About 60% of them did not take milk and dairy products daily. The daily contribution of those foods was significantly influenced by residence and exercise. 45.5% of elderly took oils and sugars more than average everyday which was influenced significantly by residence, exercise, snack intake frequency and meal regularity. In conclusion, the important influencing factors on the daily food intakes of elderly might be related to ages, residence, family, smoking, drinking, exercise, snack intake frequency and meal regularity. Therefore, a situation-oriented and practically organized nutrition education and ingestion support programs which consider the elderlies' socioeconomic status may help to improve the daily food intake of elderly in Incheon area.
This study was conducted to identify the characteristics of Korean diet in the view of food and food group intakes. The study subjects consisted of preschool children(PC), elementary school children(EC), high school students(HS), college students(CS), and adults over 30 years old living Seoul and the surrounding areas. The subjects over 30 years old were classified to 30-49 years, 50-69 years, and over 70 years. A dietary survey was conducted using 24-hour recall method and data were collected from 2392 subjects. Rice was a major contributor to many nutrients intake because of the amount of consumption. Vegetable oil made great contribution to fat intakes and eggs, squid, and anchovy supplied much cholesterol compared to other foods in all the age groups. Milk was major contributor of fat and cholesterol as well as calcium in younger age group, and seasoning gave much contribution to iron intakes. Mean dietary variety score(DVS) was 32 for EC group and 17 for subjects over 70 years, and tended to decrease along the increasing age. EC group consumed most variable number of foods of all groups but they consumed many junk foods, therefore the MAR value was low despite their high DVS value. Mean dietary diversity score(DDS) of each age group from PC group to subjects over 70 years was 4.34, 4.28, 3.79, 3.89, 3.76, 3.56, and 3.25, respectively. Food group, which was consumed below the minimum amount, was mainly fruits in all the age groups, and many subjects in HS group and over 30 years consumed dairy products below the minimum amount. From these results, age specific nutritional problems were found. PC group and subjects over 50 years seemed to need more diverse food intake than now, EC group did nutrient dense food, and HS group and subjects over 30 years did dairy products.
