At beginning the fermentation is naturally occurred by natural microbes. Fermentation techniques apply as two ways, one is fermentation to produce fermented foods and the other is preservation of the foods for longer time for future. They contain various biological active ingredient, like as vitamins. Microorganisms concerning fermentation are well known the functionalities. Each nations in the world have unique and distinct foods and dietary habits on their own specific cultures and accessible edible raw resources of plant or animal origins. Many countries have their unique traditional fermented foods based on their natural conditions. Korea has very famous traditional fermented foods, as Kimchi, fermented soybean products(Jang), fermented fish products(Jeotgal) and vinegar. In this review will discuss the overall fermented foods and typical Korean traditional fermented foods with functionalities, and future effort to enlarge into wide range of new industry.

Previously, we found the operon random primer (OP-5A) that is characteristic the genus Panax by randomly amplified polymorphic DNA (RAPD) analysis. However, OP-5A primer is limited to apply on the differentiation of only crude herbal plants. To construct more sensitive and unique primers on the genus Panax, ginseng-specific DNA profile (350 bp) that was amplified by OP-5A primer were inserted in a plasmid vector in the TA cloning method and sequenced. We designed the PCR primers (Forward: 5＂-AGGGGTCTTGCTAT AGCGGAAC-3＂, Reverse: 5＂-AGTCTTAATTTCATATTTTCGTATG-3＂) and identified the unique ginseng band (350 bp) in commercial granule products including ginseng extracts as well as crude ginseng plants by nascent PCR.(omitted)

This study reports the pagurid hermit crab Porcellanopagurus japonicus in Korean waters for the first time. This species has a right cheliped larger than the left one, reduced and globular abdomen, and symmetrical uropods. Porcellanopagurus japonicus is similar to P. nihonkaiensis, a previously reported congeneric species in Korea, but also has distinguished morphological and ecological characters. There are currently issues with the Korean scientific name for P. japonicus, we suggest a reasonable Korean scientific name of this organism with its etymology. In addition, this species inhabits bivalve shells, which is not a typical habitat for hermit crabs, and the unique habitats of this and several other Korean hermit crabs are reviewed.

Milk proteins, such as casein and whey protein, exhibit significant potential as natural emulsifiers for the preparation and stabilization of emulsion-based delivery systems. This can be attributed to their unique functional properties, such as the amphiphilic nature, GRAS (generally recognized as safe) status, high nutritional value, and viscoelastic film-forming ability around oil droplets. In addition, milk protein has been used as a coating material in emulsion-based delivery systems to protect bioactive compounds during food processing and storage owing to its unique functional properties. These properties include the ability to bind lipophilic bioactive compounds and antioxidant activity. In this review, we present the use of milk proteins as emulsifiers for the formation of emulsions and food applications of milk protein-stabilized emulsion delivery systems.

This paper analysed the architectural images on Pleasant Gathering of Leeum, Samsung museum of art, which has been assumed as a work of the Koryo dynasty. Through the comparison between the unique wooden structure at roof edge on the building images and real architectures, it found the buildings on the painting were from China Fujian(福建), not from Korea. It also analysed the color painting on buildings, trees, themes from previous famous paintings and dresses to confirm these images were came from the early period of the Ming dynasty. It is a very unique painting containing various information on the Fujian ancient architecture, but its architecture drawing is not as skillful as typical ancient Chinese paintings.

Hemifacial microsomia (HFM) is a complex congenital condition with heterogeneous malformations of the facial skeleton that almost always involves mandibular hypoplasia. Here we introduce a unique case in which a patient with HFM had initially successful optimization of facial symmetry using a polyetheretherketone implant for mandibular augmentation. However, multiple factors associated with the intraoperative and postoperative course, including hardware failure and infection, led to diminished mechanical strength of the mandible, ultimately resulting in a mandibular fracture. In this unique case presentation of HFM, we discuss the various factors that contributed to mandibular weakness and increased susceptibility to fracture.

Penicillium vietnamense sp. nov. was isolated from Nha Trang Bay, Vietnam in June 2017. It is phylogenetically distinct from the sister species of Penicillium section Charlesia series Indica based on multi-locus sequence typing results using internal transcribed spacer, large subunit ribosomal RNA, b-tubulin, calmodulin, and RNA polymerase II second largest subunit regions. It showed strong growth on Czapek yeast autolysate agar at 37 ℃, a strong acid production on Creatine sucrose agar, and produced short stipes, small vesicles, and subglobose to globose conidia delicately roughened with very short ridges. As the first novel marine fungi species described from Vietnam and discovered in a unique environment, the data could be significant for understanding the taxonomy and geographical distribution of marine fungi in tropical coastal systems such as Vietnam.

Besides unexpected growth perceived by IoT's, the variety and volume of threats have increased tremendously, making it a necessity to introduce intrusion detections systems for prevention and detection of such threats. But Intrusion Detection and Prevention System (IDPS) inside the IoT network yet introduces some unique challenges due to their unique characteristics, such as privacy inference, performance, and detection rate and their frequency in the dynamic networks. Our research is focused on the privacy inferences of existing intrusion prevention and detection system approaches. We also tackle the problem of providing unified a solution to implement the open-source IDPS in the IoT architecture for assessing the performance of IDS by calculating; usage consumption and detection rate. The proposed scheme is considered to help implement the human health monitoring system in IoT networks

Local Interconnect Network(LIN)은 저속의 차량 통신 버스로 윈도우, 도어, 공조, 조명 등 바디 어플리케이션에 널리 사용되고 있다. 본 논문에서는 LIN 버스의 프로토콜과 메시지 프레임에 대해 자세히 설명한다. LIN 버스에서는 기본적으로 메시지 프레임에서 ID와 페이로드만 전송하며, 이들 ID와 페이로드를 해석하는 방법은 LIN Description File(LDF)를 통해서 각각의 LIN 버스마다 다르게 정의한다. 본 논문에서는 LDF의 문법과 예제에 대해서도 자세히 설명한다.

Little research on sensory study has been conducted from a marketing perspective and most of sensory studies have been done from a science perspective. Thus, this study examined wine sensory perceptions in the consumers' minds, which is how wine consumers associate grape variety Shiraz/ Syrah by the three different region of origins with specific sensory images. Total 234 questionnaires were collected from online wine community members at restaurants in Korea. The main results show that the most two shared sensory images of Shiraz/ Syrah were 'Dry' and 'Fruity' across the three region of origins. For Barossa Shiraz, the unique images were mainly found in Aroma image category such as 'Chocolate', 'Prune', whereas for Rhone Syrah, the unique images were mainly revealed in Overall image category e.g. 'Deep', 'Fascinating'. Additionally, this study confirmed that Maipo Valley is not recognizable region of origin of Shiraz/ Syrah. This study employed a free choice, Pick Any and conducted correspondence analysis to find out the degree of associations of sensory images and each region of origin.
