  • Investigated kinds and utilization frequency for traditional food and Particular food to systematize Gwangju city and Chollanamdo area traditional food culture. Awareness for traditional food had pride because taste is various, and did that must use much when was festive day. Investigation subject were feeling necessity about accession, development of traditional food, and manufacture of traditional food, succession did that must take charge in home. Characteristic of taste for Gwangju city, Chollanamdo food was deep taste. Difference between variable was significant that age, religion that have pride about traditional food, attainments in scholarship, monthly income that used time much traditional food, degree that give from traditional food to snack is age, attainments in scholarship, years of married life, religion, reason that give snack to traditional food is daughter-in-law order, kind of traditional food that give to snack is age, monthly income mouth, opinion about accession and development of traditional food is age, religion, daughter-in-law order, reason that must inherit and develop traditional food is attainments in scholarship, time that eat much traditional food is attainments in scholarship, a person, medium that learn cuisine of traditional food is age, opportunity that is been interested to traditional food is age, attainments in scholarship, years of married life. By utilization rate of food-tasting food subdivisions of the season, used much by rice-cake soup, fermented rice punch, order of cake made from glutinous rice New Year's Day, by herbs, Gimgui, Ogokbap's order January Full Moon Day on the lunar calendar. By a cake made in the shape of a flower, azalea honeyed juice mixed with fruits as a punch order to Samjitnal, by beans panbroiling, dropwort raw order Buddha's Birthday, Tano Festival uses Charyunbyeong and used Tteoksudan in Yudu and used much by young chicken soup with ginseng and other fruits, watermelon order period of midsummer heat. Used songpyon and fermented rice punch in Full-moon Harvest Day, and Junggujeol used Chrysanthemum griddle cakes made in flower Pattern, and red-bean gruel taken on the winter solstice, and Nappyeongjeolsik was utilizing Goldongban. Pyebaek food utilization ratio was high the utilization rate by chestnut, jujube, chicken, wine order. The contributiveness food utilization rate was high the utilization rate by rice cake, dried croaker, fruit, oil-and-honey pastry order. The large table food utilization rate was high the utilization rate by fermented rice punch, fruit, steamed short-ribs order.

전통음식에 대한 의식과 식생활행동에 관한 조사연구 - 서울 및 경기도 일부지역 주부들을 중심으로 - (The Study for Consciousness, Dietary Life Behaviors on Korean Traditional Food)

  • Generally, the culture of dietary life in a country is closely related to the heritage of racial culture, and it is very important to inherit and develop the culture of the traditional dietary life. This research is to investigate consciousness and behaviors of dietary life using a questionnaire survey for 521 housewives living in Seoul and Kyonggido. The data was analyzed with frequency, percentage, T-test, $X^2$ (Chi-square)-test, dispersion analysis, Pearson's correlation and hierarchical multiple-regression analysis. The results of the survey are summarized as follows; 1. Consciousness of Traditional Foods. They thought that traditional foods were Sinsollo, sorts of beverage, Dduk (Korean cake), Kim-chi, Hankwa (Korean cookies), and Kujolpan, and that traditional foods were proud for its various tastes. But they thought the cuisine of the traditional food is very complicated, accordingly the frequency of traditional food was decreased. Therefore they thought that its tastes was important to develop and spread traditional foods. 2. Dietary Life Behaviors for Traditional Food. They take traditional foods on big holidays and religious service days. It is their mother who taught them the traditional cooking method. Most ftequently used cooking method is boiling. They gave their children a traditional snack such as 'Dduk (Korean cake), noodles, and fried food. Frequency of taking beverage, Hankwa (Korean cookies), Juk (guel) and Dduk (Korean cake) have been decreased. 3. The Correlation of General Environment and Consciousness, Knowledge, Dietary Life Behaviors of Traditional food. The older they are, the more eager to teach traditional food cooking, to preserve the traditional table setting, to give their children traditional snack and the more traditional dietary life behaviors are.

학부모와 어린이급식소 교직원의 전통간식에 대한 인식연구 -대전·충남·세종지역을 중심으로- (A Study on the Recognition of Korean Traditional Snacks of Parents and Teachers at Children's Foodservice Facilities in Daejeon, Chungnam and Sejong)

  • The purpose of this study was to increase the utilization of traditional snacks in the Daejeon, Chungnam and Sejong regions by investigating the awareness of traditional snacks by parents and teachers of Children's foodservice facilities. The survey method was a self-monitored survey, and 576 people (298 parents, 278 teachers) were used for statistical analyses. 66.4% of parents believed that the snacks provided at facilities are nutritious, and that traditional snacks are rich in nutrition but difficult to cook (66.1%). Further, 77% of parents preferred traditional snacks, and 92% thought that traditional snacks should be passed on to future generations and continuously developed. Increasing the number of stores selling traditional snacks (41%) and a generalized awareness of traditional snacks (34%) are needed to expand the use consumption of traditional snacks. For teachers of Children's foodservice facilities, 92.8% said that the number of snacks provided per day was twice, and snacks were made and served more than twice a week (77.7%). The reasons for not making these traditional snacksit more often were the long cooking time (47.1%) and lack of labor (20.5%). There were no differences in the perceptions of traditional snacks among the types of children's foodservice facilities, but the private and public facilities showed a higher usage demand than the family type foodservice facilities for of traditional snack-focused food education programs. In order to increase the utilization of traditional snacks, it is necessary to create programs according to the facility types and to develop traditional snacks to meet the needs of consumers. The results of this study are expected to be used as basic data for the development of instructions and programs for increasing the consumption of traditional snacks at children's foodservice facilities.

Characterization of Bacteria Isolated from the Traditional Steeping Process and Their Application as Starters for the Production of Yugwa, a Korean Traditional Snack

  • During the traditional production process of yugwa, a Korean traditional oil-puffed snack, three bacterial isolates, 12, 37, and B1 from waxy rice slurry were characterized by using the molecular techniques, and the quality of the yugwa prepared by using three isolates was examined in relation to physical and sensory properties. Isolates 37 and B1 were identified as Lactobacillus sp. by 16S rDNA sequence analysis, while isolate 12 was as Bacillus amyloliquefaciens by gyrA sequence analysis. Waxy rice inoculated with isolate 12 demonstrated the lowest hardness and the highest peak and [mal viscosity. Yugwa prepared from isolate 12-inoculated waxy rice indicated the lowest hardness and the highest volume expansion, the key characteristics of yugwa. This result presents the possibility for the use of a starter in the commercial production of yugwa and other rice-based snacks.

인천 지역 중학생의 체중군별 식행동 및 간식섭취실태에 관한 연구 (Study of Dietary Behaviors and Snack Intake Patterns by Weight of Middle School Students in Incheon)

  • We surveyed 553 middle school students living in Incheon using questionnaires to compare their food behaviors and snack intake patterns according to weight groups based on BMI. Mean BMI was 20.3 for males and 19.6 for females. The rate of underweight, normalweight and overweight students was 33.3, 51.7, and 15.0%, respectively. Compared to the other two groups, the overweight students perceived their body shape more accurately (p<0.01). Regarding the reasons for skipping dinner, the most frequent answer by the underweight students was 'because of snacks', while that of the overweight students was 'to lose weight' (p<0.01). The normalweight students were found to eat a Korean traditional type breakfast more frequently than the other weight groups (p<0.05). The overweight female group was more likely to overeathabitually, whereas the normalweight and underweight groups tended to overeat when they were under stress (p<0.05). As for the amount of the snack intake, the overweight male students replied that they eat quite a lot of snacks. As a conclusion, the problems found in the underweight group were unbalanced diet and the disturbance of regular meal patterns due to inappropriate snack intake. The problems shown in the overweight group were overeating due to habit or stress, fast eating speed and large amount of snack intake.

The amelioration of plasma lipids by Korean traditional confectionery in middle-aged women: A cross-over study with western cookie

  • BACKGROUND/OBJECTIVES: The purpose of this study was to examine whether plasma lipid profiles are affected differently by snack kinds with equal calorific values. SUBJECTS/METHODS: We compared a Korean traditional confectionery (dasik) with Western confectionery (cookie) in this regard. Controlled cross-over study consisted of two 3-week snack intake phases and for separating, a 2-week washout period (3-2-3) was carried out with 30 healthy women aged between 40-59 years old. Brown rice based Korean traditional confectionery and wheat flour based Western confectionery were used. The participants consumed either dasik or cookie every day for 3 weeks, providing 93 kcal a day. RESULTS: The total cholesterol (TC) in the dasik group had decreased significantly after 3 weeks (P < 0.05). Furthermore, in the dasik group, reduction in TC and low-density lipoprotein-cholesterol were greater than those in the cookie group (P < 0.05). CONCLUSIONS: Prioritizing functional snacks like dasik improves plasma lipid profiles; this may be useful information for individuals who cannot refrain from snacking.

유과의 저장성과 팽화방법 개선시험 (Shelf-life Study of Yukwa(Korean Traditional Puffed Rice Snack) and Substitution of Puffing Medium to Air)

  • 콩기름으로 팽화시킨 유과의 저장가능 시간을 확인하고 저장 중 물리화학적 변화를 관찰하였으며 팽화매체를 대체하기 위하여 공기팽화를 시도하였다. 기름팽화 유과의 저장가능 기간은 $30^{\circ}C$에서 4주 이내였으며 9주 저장 중 조직의 물리적 변화는 미미하였다. 고온 공기에 의하여 유과의 팽화는 가능하였고 최적 팽화온도는 $250^{\circ}C$였으며, 기름팽화 유과와 비교할 때 팽화도는 떨어지나 경도는 비슷하였고 아삭아삭한 정도는 높았다. 공기팽화 유과는 기름팽화 유과에 비하여 냄새, 굳은 정도 및 조직에서 관능적인 차이가 없으나 맛은 떨어지는 결과였고 이는 기름 맛에 기인하는 것으로 보고 이의 개선이 필요하였다. 팽화된 조직의 형태는 팽화매체에 따라 차이가 없었다.

전통 유과가공공정의 분석(I): 수침 및 꽈리치기 공정 (Analysis of Traditional Process for Yukwa Making, a Korean Puffed Rice Snack (I): Steeping and Punching Processes)

  • 유과가공공정의 개선 및 새로운 공정개발을 위하여 전통적인 유과가공공정의 올바른 분석이 중요하다. 전통적인 유과제조 공정에서 많은 시간을 필요로 하는 수침공정과 꽈리치기 공정을 분석하였다. 찹쌀의 수침은 증자만을 고려한다면 $15^{\circ}C$에서 3일 수침으로 충분하였지만 전통유과 특유의 부드러운 조직감은 6일 이상의 수침이 필요하였다. 수침한 찹쌀의 변화를 관찰한 결과 찹쌀 과피층에 존재하는 단백질이 감소하였고 수침한 찹쌀가루의 페이스트점도는 7일 수침한 찹쌀가루가 최대점도를 나타내고 감소하는 경향을 보였다. 수침에 의한 찹쌀 전분의 미세구조를 관찰한 결과 수침공정을 통해 전분표면이 손상되었다. 수침시간의 증가와 함께 유과의 팽화도는 증가하는 경향을 보였다. 꽈리치기에서 수침시간이 증가할수록 기공의 크기는 감소하였으며 균일한 기공의 분포를 나타내었고 반죽에너지 투입량은 감소하였다. 전통유과의 특징인 부드러운 조직감은 수침시간의 조절뿐만 아니라 반죽에너지 투입량의 조절에 의해 조절이 가능할 수 있었다.

들깨 엿 강정의 품질 특성 및 저장 중 변화 (Quality Characteristics of the Traditional Korean Snack, Yut-gang-jung with Perilla and Changes During Storage)

  • The quality characteristics of the traditional Korean snack Yut-gang-jung with Perilla, and the changes that occur during storage were investigated. The water and protein content of a fresh sample were 9.67% and 10.83%, respectively. The water content in the sample stored at 20$^{\circ}C$ changed slightly, but that of the sample stored at 60$^{\circ}C$ showed larger changes from 9.33 % to 4.33%. The acidity of the sample stored for 8 days was significantly higher. The hardness of the sample stored at 60$^{\circ}C$ for 4 days was increased significantly. Results of the sensory evaluation indicated the sample stored at 60$^{\circ}C$ had a significantly decreased roasted perilla flavor. The rancid flavor of the sample stored at 20$^{\circ}C$ increased slightly, while that of the sample stored at 60$^{\circ}C$ showed a drastic increase during storage. Therefore, a one week storage of the Yut-gang-jung with Perilla at room temperature is recommended for a product to have a shelf-life with similar physicochemical and sensory properties to fresh samples.

웰빙 트랜드가 한과류 선택 속성에 미치는 영향에 관한 연구 (A Study on Effects of the Well-being Trend on Korean Traditional Confectionary Selection)

  • Korean Traditional Confectionary is a part of our traditional culture taking a great part in our food culture for a while. However, it is now barely maintaining its name. In this research, a new consumption trend 'Well-being' is adopted to suggest the ways to develop the Korean Traditional Confectionary industry. This research intends to find out what effects the 'Well-being' trend, which originated from interest in health, have on Korean Traditional Confectionary selection. A survey includes the questions about the Well-being trend, selection and uses of Korean Traditional Confectionary, and demographic data. This research conducted analysis on 249 people who have used Korean Traditional Confectionary in Busan and Kyeongnam Province to find out effects of the Well-being trend on Korean Traditional Confectionary selection. This empirical study showed that the Well-being trend has some effects on Korean Traditional Confectionary selection while it has the greatest effects on healthy properties and commercial values of Korean Traditional Confectionary.
