자폐증 어린이에 있어서 아연투여 효과 (Effect of Zinc Administration on the Autistic Children)

  • 자폐증 어린이에 있어서 아연투여의 효과를 알아보기 위하여, 대구시 소재 모 특수학교의 자폐증으로 진단된 남자 어린이 24명, 여자 어린이 10명을 대상으로 조사하였다. 대조군으로는 성과 연령을 짝지운 2배수의 정상어린이를 선정하였다. 두발 중 아연함량은 여자의 경우 자폐증군이 대조군보다 유의하게 낮은 것으로 나타났으나(p<0.01), 남자는 전 연령군에서 자폐증군이 유의하게 높게 나타났다(p<0.05) 두발 중 아연함량과 연령은 여자 자폐증군을 제외한 남자 자폐증군(p<0.05)과 대조군 모두(p<0.01)에서 유의한 상관성을 나타냈다. 자폐증 점수와 관련된 변수 중 아연함량, 연령, 성 등의 설명력은 37.2%로 나타났고, 두발 중 아연함량과 자폐증 점수와는 통계학적으로 유의한 상관관계가 있었다(p<0.01). 자폐증 어린이를 두발 중 아연함량에 따라 150 ppm 이하군은 아연이 함유된 영양제를, 150 ppm 이상군은 아연이 함유되지 않은 영양제를 각각 8주간 투여하였을 때, 아연투여군에서 투여 후의 자폐증 점수가 감소하는 양상을 보였으나 통계적 유의성은 없었으며, 두발 중 아연함량은 남자에서 다소 증가하였으나 유의성은 없었다. 두발 중 아연함량은 남자에서 다소 증가하였으나 유의성은 없었다.

만성 질환 노인에서의 면역 성분 양상과 식이예방인자 (Inflammatory Cytokines and Dietary Factors in Korean Elderly with Chronic Disease)

  • The purpose of this study was to investigate the association between inflammatory cytokines and chronic disease status in Korean elderly. The subjects were 248 elderly people aged over 65 years recruited from Health Center in Seoul. The subjects were classified into 3 groups based on their disease (diabetes, hypertension, and hyperlipidemia) status: subjects with one diagnosed disease of diabetes, hypertension, and hyperlipidemia fall into singular group (n=89), subjects with more than 2 disease into multiple group (n=39), and those with free of the diseases into normal (n=122). Anthropometric and biochemical characteristics, and dietary intakes were assessed. Dietary intakes were surveyed by 24-recall method. The means of IL-2, IL-6, MCP-1 and C3 were not differ among 3 groups. However, when subjects classified into tertiles of IL-6, MCP-1, TNF-$\alpha$ and C3 and frequencies of each fertile were compared, the multiple group showed significantly lower frequencies in lowest fertile than normal group (p<0.05), suggesting higher tendency of inflammatory responses. For hematological values, blood pressure, triglycerides, fasting blood glucose levels were highest in multiple group (p<0.05) compared to other 2 groups. BMI, body fat(kg), and triceps skinfold thickness were also significantly higher in multiple group than in 2 other groups(p<0.05). Moreover, the concentrations of IL-2, IL-6 and C3 were significantly correlated with hematologic values of fasting blood glucose, total cholesterol, LDL-cholesterol, and triglycerides or obesity factors such as triceps skinfold thickness, BMI, and body fat(%). Among singular and multiple group, the subjects with higher intakes for vitamins A, C, and E showed the higher level of IL-2 and the lower level of MCP-1, and C3. In conclusion, blood concentrations of triglycerides and proinflammatory cytokines, blood pressure, obesity parameters (BMI, body fat, triceps skinfold thickness) were higher in multiple group than in normal, but this result strongly suggest that the increasement of the vitamin A, C, and E intakes would modify the cytokine levels to reduce the inflammatory response in the elderly people with chronic diseases.

솔방울 에틸아세테이트 분획물의 항산화 및 산화적 DNA 손상 억제 활성 (Antioxidant Activity and Inhibitory Effect on Oxidative DNA Damage of Ethyl Acetate Fractions Extracted from Cone of Red Pine (Pinus densiflora))

  • 본 연구에서는 솔방울을 새로운 천연 식물자원으로서의 이용 가치를 평가하기 위해 솔방울 ethyl acetate 분획물의 항산화 활성과 DNA 손상억제 효과를 조사하였다. 솔방울 ethyl acetate 분획물의 DPPH, Fe2+ 킬레이팅 및 환원력 활성은 대조군인 L-ascorbic acid와 유사한 활성을 나타내었다. 특히 ABTS 소거 활성의 IC50값은 L-ascorbic acid (10.49 ㎍/㎖)에 비해 솔방울 ethyl acetate 분획물(7.80 ㎍/㎖)이 더욱 높은 활성을 보였다. 또한 총페놀성 화합물과 비타민 C 함량은 각각 27.3 ㎎/g, 1.8 ㎎/g로 나타났다. Hydroxyl radical과 fenton reaction에 의한 산화적 DNA 손상억제 효과는 모든 농도에서 50% 이상의 높은 손상 억제 효과를 나타냈다. 따라서 본 연구결과를 통한 솔방울 ethyl acetate 분획물의 항산화 활성과 산화적 DNA 손상 억제 효과 입증은 다소 부가가치가 낮게 평가되어온 솔방울은 식품이나 천연 의약품 분야에 새로운 천연소재로써의 활용가치가 높을 것으로 판단된다.

나이와 성별에 따른 지역사회 거주 노인에서 무증상 경동맥 죽상경화증에 대한 혈관위험인자 및 인지장애와의 관련성 (Age and Gender Differences in the Relationship of Cognitive Impairment, Vascular Risk Factors, and Subclinical Carotid Atherosclerosis from Community-based Elderly)

  • To evaluate age and gender differences in the relation of cardiovascular risk factors, cognitive impairment, and subclinical carotid atherosclerosis from aged people using by a cross sectional method. Sixty-nine healthy elders living in the community who had not previously undergone carotid ultrasonography were included. We conducted life style surveys, and cognitive function tests including Korean-mini-mental state examination (K-MMSE) and clinical dementia rating-Korean. Various biomarkers from blood were assessed; fasting insulin-like growth factor-1, lipid-profile, high sensitivity C-reactive protein, total homocysteine, glucose, insulin, Homeostasis model assessment (HOMA) for insulin resistance index, vitamin B12, and folate level. Carotid intima-media thickness (C-IMT), and plaques were measured using carotid ultrasonography and aortic ultrasonography, a valid index of atherosclerosis. For the elderly subjects (aged 65-82 years), cognition impairment was more prevalent in females while subclinical atherosclerosis was more prevalentin males. Increased C-IMT has been kept in males, and C-IMT shows increasing trend and the peak at about 80 year-old in females with increasing age. The significant correlations between C-IMT and many vascular risk factors including age, triglyceride, abnormal homocysteinein male, and K-MMSE, insulin, HOMA index and abnormal aortic ultrasonography in female were different in each gender, with the exception of homocysteine (p<0.05). This data suggests that there were differences of age and gender characteristics in terms of subclinical atherosclerosis, cognitive impairment and vascular risk factors in community-living elders. Further larger and longitudinal studies across entire age are required to better understand the effects of risk factors on subclinical atherosclerosis.

열풍 건조 무청의 품질특성 (Quality Characteristics of Hot-air Dried Radish (Raphanus sativus L.) Leaves)

  • 무청별 무청의 성분분석과 반응표면 분석법을 이용하여 건조조건에 따른 무청 고유의 색도, 칼슘, 철분, 비타민 등의 성분을 조사하였다 일반성분의 경우 품종이 다른 미농단백무(RL5)를 제외하고는 품종 간에 회분, 단백질, 지방, 칼슘 및 철분함량에 유의적인 차이가 없었고, 건물량으로 환산한 비타민류, 클로로필 함량, 색도에는 품종 간 유의적인 차이가 있었다. 한편 중심합성 실험계획에 따라 건조한 미농단백무 무청의 품질특성을 조사한 결과 수분함량, 클로로필 함량 및 색도차이를 나타내는 ${\Delta}E$ 값은 건조온도와 시간에 따라 유의적인 차이가 있었고, 칼슘, 철분함량은 각각 $31.41{\sim}35.80\;mg,\;0.21{\sim}0.29\;mg$으로 시료 간 유의성이 없었다. 무청의 건조조건을 독립변수로 하고, 시료 간 유의적인 차이를 보였던 종속변수인 수분, 클로로필 및 색도 값의 상관관계를 나타내는 $R^2$값이 0.97 이상으로 높았다. 또 회귀분석한 모델식중 반응표면 분석법으로 도시한 결과 총 클로로필 함량은 독립변수인 건조시간보다는 건조온도의 영향이 더 컸으며 무청의 고유 초록색을 유지하면서도 수분 감소효과를 얻기 위한 최적조건은 약 $70^{\circ}C$에서 $5{\sim}6$시간 정도로 예측할 수 있었다.

부인과 암 생존자와 정상 대조군의 영양소 섭취와 식사의 질(Diet Quality Index-International) 비교 - 2013~2016년 국민건강영양조사 자료이용 - (A Comparisons of Nutritional Intake and Diet Quality Index-International in Gynecological Cancer Survivors and Normal Women - Using the Korea National Health and Nutrition Examination Survey 2013~2016 -)

  • Objectives: The aim of this study was to compare the nutritional intake and Diet Quality Index-International (DQI-I) of gynecological cancer survivors and normal women. Methods: This study compared the anthropometric indices, dietary behavior, nutritional intake, and DQI-I in women with previous history of breast or uterine cancer [Gynecological cancer survivors group (GCSG, n=126)] and normal women [Normal control group (NCG, n=7,011)] using the 2013~2016 Korea National Health and Nutrition Examination Survey data. Results: Body mass index and waist circumference were lower in the GCSG compared the NCG. The frequency of skipping breakfast and eating out was higher in the NCG compared to GCSG. Energy and fat intake were significantly higher in the NCG than in the GCSG, whereas intake of all minerals and vitamins (excluding thiamine), and dietary fiber intake were higher in GCSG. It was observed that the fatty acid intake of the GCSG was significantly lower than that of the NCG. The diet quality evaluation using DQI-I results showed that GCSG was higher in the "within-group" diet variety and adequacy of vegetable group than the NCG, whereas the intake level of the fruit group was higher in NCG. Besides, protein, calcium, and vitamin C intake were higher in the GCSG than in the NCG. The GCSG showed higher levels of total fat and saturated fat moderation than the NCG, whereas cholesterol moderation showed the opposite results. The results of DQI-I comparison according to the cancer survival years showed that the overall score and scores related to diet adequacy and balance were higher in the below 5-year group, whereas the over 5-year group scored higher in terms of moderation of diet. Conclusions: The results of this study suggest that a chronic disease based management approach is needed in cancer survivors. The study provides important data which can help in the preparation of guidelines for long-term lifestyle and diet management, in these patients.

인천지역 청소년 여자 운동선수의 식행동, 체형에 관한 인식 및 영양상태평가 (Eating Behaviors, Perception of Body Image, Hematological Indices and Nutrient Intake of Adolescent Female Athletes in Incheon)

  • The purpose of this study was to investigate the eating behaviors, the self-perception of body images, the hematological indices and the nutrient intake of adolescent female athletes in Incheon. The subjects were 112 female athletes(track and fleld: n=32, target shooting: n=27, fencing n=29, swimming: n=14, badminton: n=10) from middle and high schools in Incheon. This cross-sectional study was conducted by means of a sol(-administered questionnaire. Fasting blood samples were obtained and analyzed for hemoglobin (Hb), hematocrit (Hct), ferritin, serum iron, mean corpuscular volume (MCV), mean corpuscular hemoglobin (MCH), mean corpuscular hemoglobin concentration(MCHC), unsaturated iron binding capacity (UIBC), total iron binding capacity (TIBC) and transferrin saturation (TS). Nutrient intakes obtained by means of the 3 day-recall method were analyzed using the Computer Aided Nutritional Analysis Program. Statistical analysis was conducted using the SPSS 10.0 program. Most of the female athletes had dietary problems such as eating unbalanced meals, skipping meals, and preferences for processed foods. More than 60% of the female athletes skipped breakfast. As for perception of their body images, track and field athletes in particular, controlled their weights significantly better than the other athletes (p<0.05). With regard to their physical exertion during exercise, 56.3% of the swimmers and 31.3% of the track and field athletes answered “very hard”, which was a significant difference (p< 0.001). More than 80% of the female athletes experienced vertigo during exercise (p< 0.01). Also more than 50% of the female athletes, with the exception of the badminton players, had experienced irregular menstruation (p<0.05). The average serum iron levels (p<0.05), the serum ferritin levels (p<0.05) and TS (p<0.05) of the track and field athletes was significantly lower as compared to that of the other athletes. The nutrient intakes of the female athletes, with the exception of Vitamin B$_{6}$, niacin and phosphorus were lower than the Korean Recommended Daily Allowances (RDA). In particular, the calcium and iron intakes of the female athletes were under 50% of the Korean RDA. Therefore, proper nutritional education and supplementation are required for female athletes to encourage desirable eating habits, as well as to improve their nutritional status and exercise performances.s.

딱총나무(Sambucus williamsii var. coreana) 추출물의 항산화효과 (Antioxidative Activity of Extracts from Sambucus williamsii var. coreana)

  • 본 연구에서는 딱총나무의 항산화 활성을 조사해 보았다. 딱총나무 잎과 줄기의 물추출물에는 6.6 mg/g과 2.0 mg/g의 phenolic compound가 함유되어 있었다. 추출물의 항산화 활성 실험에서 전자공여능은 딱총나무 잎의 물과 에탄올 추출물 phenolic 200 ${\mu}g/mL$의 함량에서는 99.5%, 89.7%, 줄기의 물과 에탄올 추출물 phenolic 200 ${\mu}g/mL$의 함량에서는 92.2%, 94.3%의 높은 항산화 효과를 나타내었다. 또한 ABTS radical cation decolorization 측정에서도 딱총나무 잎의 물과 에탄올 추출물 phenolic 200 ${\mu}g/mL$의 함량에서는 79.8%, 99.1%, 줄기의 물과 에탄올 추출물 phenolic 200 ${\mu}g/mL$의 함량에서 90.8%, 97.2%의 매우 높은 항산화 효과를 나타내었다. Antioxidant protection factor에서는 딱총나무 잎의 물과 에탄올 추출물 phenolic 200 ${\mu}g/mL$의 함량에서는 1.1과 1.1 PF, 줄기의 물과 에탄올 추출물 phenolic 200 ${\mu}g/mL$의 함량에서는 1.4와 1.0 PF의 항산화효과를 나타내었다. Thiobarbituric acid reaction substance 측정에서도 딱총나무 잎의 물과 에탄올 추출물 phenolic 200 ${\mu}g/mL$의 함량에서는 88.7%, 98.1%, 줄기의 물과 에탄올 추출물 phenolic 200 ${\mu}g/mL$의 함량에서는 93.6%, 90.6%로 positive control인 BHT 및 vitamin C보다 우수한 항산화 효과를 나타내었다. 본 연구의 결과로 딱총나무의 항산화 활성을 이용한 천연 기능성 식품소재로서의 활용이 가능할 것으로 판단되었다.

고강도 광원을 이용한 새싹 채소의 살균 (Sterilization of Rapeseed Sprouts by Intense Pulsed Light Treatment)

  • 비가열 살균 기술 중 하나인 광펄스 기술을 이용하여 신선편이 식품 중 하나인 새싹채소에 존재하는 미생물의 저감 효과를 검토하였다. 새싹 채소에 존재하는 미생물의 오염도는 총균수 $1.2{\times}10^7CFU/g$, 대장균군 $3.3{\times}10^6CFU/g$, E. coli O157:H7, Staphylococcus aureus, Salmonella 및 Listeria는 각각 $2.1{\times}10^5CFU/g$, $4.9{\times}10^5CFU/g$, $1.7{\times}10^5CFU/g$, $4.3{\times}10^4CFU/g$이었다. 펄스 수 5 pps, 광원과 시료 사이의 거리 6.7 cm의 동일한 조건에서 빛의 세기를 달리하여 처리하였을 경우 빛의 세기가 강할수록 사멸율은 증가하였으며, 빛의 세기 1000 V에서 일반세균은 1.0 log CFU/g, 대장균군은 1.6 log CFU/g, 병원성 대장균은 1.8 log CFU/g의 사멸율을 보였다. 광원과 시료 사이의 거리에 따른 사멸효과는 거리가 짧을수록 사멸율은 증가하여, 광원과 시료 사이의 거리 6.7 cm, 빛의 세기 1000 V, 펄스 수 5 pps에서 일반세균 0.9 log CFU/g, 대장균군 0.8 log CFU/g, 병원성대장균 1.9 log CFU/g의 사멸율을 나타내었다. 광펄스 처리 전후 새싹채소의 수분함량과 비타민 C의 함량변화는 처리 후의 시료가 감소하는 경향을 보였으나 유의적인 차이를 나타내지는 않았다. 새싹채소의 살균에 있어 광펄스 기술은 처리 조건에 따라 90-99%의 사멸율을 나타내어 신선편이 식품의 비가열 살균 기술로서의 적용 가능성을 보였다.

국내 시판 주요 냉동수산식품의 영양 특성 (Nutritional Characteristics of the Major Commercial Frozen Seafood Products in Korea)

  • We investigated the nutritional components of the major commercial frozen seafood products (MCFSP) [sliced frozen-skipjack tuna (ST), -bigeye tuna (BET), -bluefin tuna (BFT), -yellowfin tuna (YT), fish steaks (FST), fish pancakes (FP), fish cutlets (FC), seafood cake balls (SCB), fried shrimp (FS), shrimp patties (SP), shrimp cutlets (SC)] in Korea. All species of sliced frozen tuna and FST were classified as low-calorie foods; the other frozen seafood products were classified as medium-calorie foods. The MCFSP were significant sources of nutritional and functional minerals: the SCB and SC provided calcium; the FST, FC, and SCB provided phosphorus; the BET, YT, and FST provided potassium; the FST, FC, and BFT provided magnesium; the FST, FP and SC provided iron; the SCB, FS, SP, and SC provided zinc; the YT and SCB provided copper; and the FC provided manganese. The total amino acid contents of the MCFSP were in the range of 6.85-26.34 g/100 g. Glutamic acid was the major amino acid in the SCB, FS, SP, and SC. Fatty acid contents were in the range of 386-2,925 mg/100 g; the major fatty acids in the ST, BFT and YT were 16:0, 18:1n-9, 22:6n-3. The MCFSP were not a significant source of vitamin A or riboflavin.
