To delineate the relationship between the nutrient intake from diet and the serum biochemical markers of bone metabolism, 56 postmenopausal women of 50 to 77 years of age were recruited. The biochemical markers including osteocalcin, calcium, phosphorus, estradiol and free testosterone were measured in fasting blood. Bone mineral density(BMD) was measured also by dual energy X-ray absorptiometry, and the nutrient intake of earth individual subject was estimated by 24-hour recall of 3 days. The age of the subjects was 64.8 $\pm$ 7.7 years, and the BMDs of the subject were 0.86 $\pm$ 0.26g/$cm^2$(Lumbar spine), 0.60 $\pm$ 0.10g/$cm^2$ (Femoral neck), 0.49 $\pm$ 0.10g/$cm^2$(Trochanter), and 0.41 $\pm$ 0.14g/$cm^2$(Ward's triangle). There were no significant differences among age and nutrient intake level groups due to the small sample size. The biochemical markers showed certain degree of relationship with nutrient intake levels. The results were compared among 3 groups with different nutrient intake level classified by the percentage of Recommended Daily Allowances(RDA) for Koreans as follows low < 75% RDA, 75% RDA $\leq$ adequate < 125% RDA, high $\geq$ 125% RDA. The low energy and low riboflavin groups showed significantly higher serum osteocalcin levels than those of the high intake groups(p < 0.05). On the other hand, there was a trend for serum Ca level to be higher with high nutrient intake. In this case, protein and thiamin were the only nutrients that reached a statistical significance(p < 0.05). And the groups with low intake for protein and Ca showed significantly lower serum free testosterone levels than that of other intake groups(p < 0.05). This study suggests an important role of nutrient intake levels on blood biochemical markers of bone metabolism.
The nutritional balance of the menu plans prepared according to the target pattern was examined. Total of 81 home economics teachers throughout the nation and 161 3rd-grade middle-school girls in Chungnam area participated. The data was collected by questionnaire and analyzed by using SPSS WIN 12.0. Although both teacher and student groups had fairly good knowledge on preparing menu plans related concepts, they rarely make use any menu planning currently. More than 85% of menu plans investigated exceeded their energy goal in the target pattern. The energy contribution ratios of carbohydrate: protein: fat were 56.1%: 17.4%: 26.5% in teachers' menu plan and 55.1%: 17.2%: 27.7% in students' menu plan. The NAR of the protein, phosphorous, iron, zinc, vitamin A and C, thiamin, riboflavin, niacin, B6 was 1 or near 1. But in case of calcium, 56.5% of the menu plan prepared by the students was less than 1, and in case of folate 75.3% of teachers', and 85.1% of students' were less than NAR 1. The MAR of the 12 nutrients examined were 0.98, 0.97, and the DVS were 51, 49 for menu plan prepared by teachers and students, respectively.
The purpose of the study was to examine the changes of food and nutrient intakes of college students between 1999 and 2009. Dietary survey of 169 college students was conducted by a 24-hour recall method for three days in 2009. Food and nutrient intakes in 2009 were compared with the data from 106 students collected by the same methods in 1999. The intakes of cereals & grain products and vegetables in 2009 were lower than those of 1999, but the intakes of meats, eggs, milk & milk products, and manufactured food were higher. The intake of rice per person decreased greatly from 452.2 g in 1999 to 351.4 g in 2009 in males, and from 306.9 g to 237.2 g in females. While the intakes of protein, fat, thiamin, niacin, vitamin $B_6$, phosphorus, potassium, zinc, and cholesterol were significantly higher, the intakes of dietary fiber were significantly lower in 2009 compared to 1999 both in males and females. The nutrients consumed less than the Recommended Intakes were vitamin A, riboflavin, vitamin C, and calcium in males and additionally folate, iron, and zinc in females in both 1999 and 2009. The ratio of carbohydrate, protein and fat as energy was 61 : 15 : 24 and 60 : 14 : 26 in 1999, and 54 : 16 : 30 and 56 : 15 : 29 in 2009 in males and females respectively, showing that carbohydrate intake decreased and fat intake increased greatly. Our data suggest that nutrition education is necessary for college students to help them consume more vegetables and fruits and less fat and cholesterol.
Objectives: This study was conducted to compare the nutrient intake of normal healthy adults with those having hypercholesterolemia. Methods: We analyzed data from the 6th Korea National Health and Nutrition Examination Survey (KNHANES VI). A total of 12,636 adults (5,223 males and 7,413 females) aged 19 or older were included in the study. Results: Males with hypercholesterolemia were older and had a higher waist circumference, body mass index, fasting blood sugar levels (FBS) and serum triglyceride (TG) concentrations compared to the normal group. Females with hypercholesterolemia were older and had higher FBS levels and serum TG concentrations compared to the normal group. While comparing nutrient intake by the 24-hour recall method, the male normal group showed a higher intake of fat, saturated fatty acid (SFA), monounsaturated fatty acid (MUFA), vitamin A and thiamin compared to the hypercholesterolemic group. However, the male normal group had a lower intake of iron and vitamin C compared to the hypercholesterolemic group. The female normal group had a higher intake of energy, protein, fat, SFA, MUFA, polyunsaturated fatty acids, cholesterol, riboflavin, and niacin compared to the hypercholesterolemic group, but had a lower intake of iron compared to the hypercholesterolemic group. A comparison of nutrient intake by food frequency questionnaire (FFQ) showed the following: There was no significant difference in nutrient intake between the normal men and women and those with hypercholesterolemia. After adjustment for confounding factors, nutrient intake by FFQ of the male normal group showed higher levels of n-3 fatty acid and vitamin C compared to the group with hypercholesterolemia. However, there was no significant difference in nutrient intake between the two groups of women. Conclusions: The average intake of n-3 fatty acids and vitamin C of the male group with hypercholesterolemia was lower than that of the normal group. However, since KNHANES is a cross-sectional study, prospective cohort studies are required to analyze the risk factors of hypercholesterolemia.
Soy sprouts cultured in a lab with five soybean cultivars and three commercial soy sprouts purchased in a market were investigated to compare the mineral and vitamine contents. In case of minerals, K, Ca, Mg, and Na were found as major minerals and a small quantity of Fe, Zn, Mn, and Cu was also analyzed in soy sprout. The all minerals were distributed in the cotyledon and the hypocotyl but their concentration orders were different between in cotyledon and in hypocotyl. After boiling, much of minerals eluted in water, the pattern of release of the minerals from the soy sprout to water was similar in all soy sprouts. The vitamin C was concentrated a great amount in hypocotyl than in cotyledon whereas vitamin B was found in the cotyledon generally. And their contents were reduced after boiling owing to heat-mediated degrading. The vitamin C and B contents were different according to cultivars, which shows chemical composition of soybean seed was important to soy sprout characters. The present results provide a basis for attempt to improve seed quality in soybean breeding program for soy sprout.
Eating breakfast provides crucial nutrition for brain function and helps promote overall health. It is especially critical in growing adolescents, as it is known to form good eating habits and better study habits. This study investigated the effects of skipping breakfast on nutritional state, fatigue level, and attention level. A cross-sectional study was conducted in 2010 on total of 828 adolescents composed of 414 boys and 414 girls. Students who ate breakfast never to twice per week were placed in the breakfast-skipper group while students who ate breakfast more than five times per week were included in the breakfast-eater group. Students performed a self-reported questionnaire on food behaviors, amount of food consumption, fatigue level, attention deficient hyperactivity disease (ADHD) level by Conners-Wells' Adolescent Self-Report Scales, depression scale, and self-esteem level. Statistical analysis was conducted using the SAS program (version 9.1). A total of 135 boys (32.6%) and 138 girls (33.3%) were included in the breakfast-skipper group, whereas 241 boys (58.2%) and 223 girls (53.9%) were included in the breakfast-eater group. The breakfast-skipper group showed irregular food behaviors and lacked nutrients. Specifically, energy (p< .001), protein (p< .001), dietary fiber (p< .001), calcium (p< .01), vitamin A (p< .01), thiamin (p< .05), niacin (p< .001) levels in boy breakfast-skippers were statistically lower compared to boy breakfast-eaters. Intakes of all nutrients except fat in girl breakfast-skippers were statistically lower than in girl breakfast-eaters. Girl breakfast-skippers (41.3%) showed significantly higher fatigue risks compared to girl breakfast-eaters (21.5%). Low attention level was also observed only in girls in the breakfast-skipping group. Moreover, students in the breakfast-skipper group showed higher scores for depression and low self-esteem (p< .001). In conclusion, skipping breakfast has effects on young adolescents' nutrition, manifesting as high fatigue level and low attention level, especially in girls.

This study was conducted to measure the effect of a community-based nutritional intervention program on dietary behaviors and nutrient intakes of low-income elderly women in Korea. The subject of the study was a group of 88 elderly women using the free meal service in Dong-gu, Gwangju city in Korea. The study was carried out from April to July 2009, and the pretest, application of nutrition education, and post-test were applied in each stage. This community-based nutrition intervention program consisted of snack supplement and nutrition education provided three times a week and 36 times in total. The nutrition education was led by the nutritionists and professionals using various educational media. Snack supplement included were milk, soymilk, carrot juice, bread, yogurt, and bananas. The result of pretest showed that the nutrient intakes of the subjects were much below the Recommended Nutrient Intake (RNI) level of Dietary Reference Intake for Koreans. Comparison of the dietary behavior score and nutrient intakes before and after the nutritional intervention program indicated that the food behavior score increased from 3.1 to 5.6 (P<0.001) and intake of energy, protein, carbohydrate, thiamin, niacin, vitamin C, iron, and potassium of the subjects all increased significantly (P<0.05). Mean Adequacy Ratio (MAR) of their nutrient intakes was also improved from 0.53 to 0.64 (P<0.01). These results indicated that the nutrition intervention program conducted in this study was effective in improving dietary behavior and nutrient intakes of elderly women in local community.
This study was performed to develop the semi-quantitative food frequency questionnaire (SQFFQ) for assessing the usual dietary intake of Korean adolescents. For that, we used 24 hour recall data from the 2005 NHANES(the Third Korean National Health and Nutrition Examination Survey). The cumulative percent contribution and cumulative multiple regression coefficients of 17 nutrients(energy, protein, fat, carbohydrate, fiber, calcium, phosphorus, iron, sodium, potassium, vitamin A, retinol, ${\beta}$-carotene, thiamin, riboflavin, niacin, vitamin C) of each food were computed. Among 687 food items, 265 food items were selected and grouped depending on similarities in ingredients, nutrient profiles, and/or culinary usage and re-added food items which were excluded for seasonal effect. Finally, total 19 food groups, 87 food items, were included in SQFFQ. Food intake frequency was quantified using nine categories. The portion size was classified depending on the average size of each selected food item. Each portion size was then categorized as one of three amounts: small (0.5 times), medium (1 times), and large (1.5 times). The SQFFQ covered 91.9% of the intake of 17 nutrients in 2005 NHANES and 86.6% in 2001 NHANES. Therefore, by testing the validity of developed SQFFQ using nutrient intakes, this list was valid to evaluate the usual daily intake in Korean adolescents.
The food composition tables are frequently used to health and nutrition practices. But it is difficult to find out food exchange lists with food exchange groups in the food composition table. Over 2500 items and many kinds of nutrients are in the food composition table. But now food exchange lists are used a few foods. The internet demands the users needs for obtaining more food exchange lists and nutrient information from food composition. This basic study is to solve the users need and the supply more efficient and effective manipulation system for e-food exchange database construction and search system:ENECC/e-food exchnage(E-Nutrition Education and Couseling Center/e-food exchange). This paper introduces the food exchange database construction and search system(ENECC/e-food exchange) using the formula which calculates the food exchange quantity of 6 food exchange groups and added one extra groups(alcohol) based on the internet. The ENECC/e-food exchange database is basically based on the 6th food composition table(2001) of the National Rural Living Science Institution in Rural Development Administration, Korea. The e-food exchange database are consisted of 2,261 foods in 6 basic food groups and one extra groups by using ENECC calculating formula. Also, the e-food exchange database has the proximate composition, mineral and vitamin content such as energy, moisture, protein, fat, carbohydrate, ash, calcium, phosphorus, iron, sodium, potassium, retinol equivalent, retinol, â-carotene, thiamin, riboflavin, niacin, ascorbic acid, refuse per 100g of each food.

This study was conducted to select e-food exchange of commonly used foods(456 foods) and improve search system based on internet. Also, the e-food exchange database was developed as having the proximate composition, mineral and vitamin content such as energy, moisture, protein, fat, carbohydrate, ash, calcium, phosphorus, iron, sodium, potassium, retinol equivalent, retinol, a-carotene, thiamin, riboflavin, niacin, ascorbic acid, refuse per 100g of each food. The e-food exchange database developed is basically based on the 6th food composition table(2001) of the National Rural Living Science Institution in Rural Development Administration, Korea. The 456 commonly used foods or 2,262, all foods can be searched easily in a new system. A specific food of e-food exchange can be searched by a given set of food groups or food name and can give information about food one exchange lists, weight and nutrient value per 100g of each food user-friendly on internet. It can be used to make a nutritionally balanced meal plan, nutrition education and counseling.
