  • In this study, the cellular protective effect, antioxidative property and component analysis of Euphorbia humifusa extracts were investigated. The ethyl acetate fraction ($3.68\;{\mu}g/mL$) and aglycone fraction ($3.15\;{\mu}g/mL$) of Euphorbia humifusa extract showed prominent free radical (1,1-diphenyl-2-picrylhydrazyl, DPPH) scavenging activity ($FSC_{50}$). Reactive oxygen species (ROS) scavenging activity ($OSC_{50}$) of Euphorbia humifusa extract on ROS generated in $Fe^{3+}$-EDTA/$H_2O_2$ system was investigated using the luminol-dependent chemiluminescence assay. The ethyl acetate fraction ($0.43\;{\mu}g/mL$) and aglycone fraction ($0.35\;{\mu}g/mL$) of extract showed higher ROS scavenging activity than L-ascorbic acid ($1.50\;{\mu}g/mL$). The cellular protective effects of fractions of Euphorbia humifusa extract on the rose-bengal sensitized photohemolysis of human erythrocytes were investigated. The ethyl acetate fraction and aglycone fraction of extract protected cellular membranes against ROS in a concentration dependent manner ($5{\sim}25\;{\mu}g/mL$), and was more effective than (+)-${\alpha}$-tocopherol, lipid peroxidation chain blocker. Aglycone fraction from Euphorbia humifusa extract showed 2 bands in TLC and 2 peaks in HPLC. In HPLC chromatogram of aglycone fraction, peak 1 and peak 2 were identified as quercetin and kaempferol, respectively. And these components are very effective as antioxidant. Thus, these results indicate that fractions of Euphorbia humifusa extracts can function as antioxidant in biological systems, particularly skin exposed to UV radiation by scavenging $^1O_2$ and other ROS, and protect cellular membranes against ROS. Fractions of Euphorbia humifusa extracts can be applicable to new functional cosmetics for antioxidant.

  • Kochujang was prepared by replacement of rice (25%, control) with pumpkin or purple sweet potato by 0. 5, 10, and 15% (total addition ratio of rice and sweet potato=25% of sample). Effects of the addition of sweet potato on physiochemical properties of fermented Kochujang were investigated. Viable cells of yeast decreased in the sweet potato-added Kochujang at the later stage of fermentation, while there was no significant difference in the number of bacteria among the test groups. As the addition ratio sweet potato increased, ${\alpha}$-amylase activity increased while protease activity decreased. Hunter L, a, and b values of Kochujang prepared with purple sweet potato were lower than those with pumpkin sweet potato. Changes in ${\Delta}E$ value was greater in Kochujang prepared with pumpkin sweet potato than that with purple sweet potato. Oxidation-reduction potential and water activity were higher in sweet potato-Kochujang than control, but reducing sugar content was higher in control. Alcohol and amino-type nitrogen contents were higher in Kochujang prepared with pumpkin sweet potato than that with purple sweet potato, but it was not significant. Overall sensory acceptability was highest in Kochujang prepared with 10% of purple sweet potato while that with 15% pumpkin sweet potato was the least preferred.

  • Gallic acid is a representative hydroxybenzoic acid and is found in free form in several plants and in various esterified forms as a part of hydolyzable tannins. Convenient enzymatic transformation of trihydroxylated gallic acid with polyphenol oxidase originating from pear was evaluated to investigate whether polyphenol oxidase can be used as a valuable compound to improve the biological activity of gallic acid. Enzymatic oxidation processing of gallic acid using polyphenol oxidase was carried out for five different reaction times. The antioxidant effects of transformed gallic acid for different reaction times were evaluated via radical scavenging assays using 1,1-diphenyl-2-picrylhydrazyl and 2,2'-azino-bis(3-ethylbenzothiazoline-6-sulfonic acid) radicals. In addition, the anti-diabetic property of the transformed gallic acid was measured based on ${\alpha}$-glucosidase. Gallic acid reacted for 5 h showed significantly higher antioxidant and ${\alpha}$-glucosidase inhibitory activities compared to the tested positive control substances. Biotransformation of simple gallic acid induced by polyphenol oxidase might be responsible for enhancing the biological activity of gallic acid.

  • This study was carried out to investigate the effect of application of spent mushroom compost(SMC) on soil chemical properties and tomato growth. After the mushroom has been harvested, the SMC contains a lot of organic material, different microorganism and high density of mushroom hypha. SMC of white button mushroom(Agaricus bisporus) contained diverse microorganisms including fluorescent Pseudomonas sp. and actinomycetes. These isolates showed strong antagonistic to bacterial wi1t(Ralstonia solanacearum) and fusarium wi1t(Fusarium oxysporum) of tomato. The growth and sugar content of tomato showed no significant difference with other treatments by stage of maturity. The EC, exchangeable K and Ca contents of the soil during growing stage were increased in comparison to those of farmhouse practice, but available phosphate decreased. Microbial population in the soil in all growing stages showed no significant difference with other treatments, but yield of tomato decreased in some way in comparison to farmhouse practice. As the result of analysis on chemical property of soil and plant growth and yield of tomato, it seems likely that SMC of white button mushroom(Agaricus bisporus) may be used as substitute of practice compost on cultivation of tomato.

  • This study was carried out to determine effects of the feeding length of spent mushroom composts from selenium-enriched mushroom (Se-SMC) on meat quality and carcass characteristics in finishing Hanwoo steers. A total of 20 steers were used in this trial with four treatments. Treatments included control (no Se-SMC), Se-SMC groups of three different feeding lengths (2, 4, and 6 months). After the completion for each feeding length, steers were slaughtered and then loin muscle (Longissimus dorsi) was sampled to evaluate meat quality characteristics. Chemical compositions of the loin, except for protein content, were not different across treatments. Protein content was highest in 6 months feeding groups, however, it was lowest in 4 months. Physical property and meat color (L*, a* and b* values) were not affected by the feeding length of Se-SMC. However, water holding capacity (WHC) for Se-SMC feeding treatments was significantly more improved (p<0.05) in comparison with the control group, showing 63.8 (2 months), 64.4 (4 months), 64.2 (6 months), and 59.5% (control), respectively. Grades for meat quality and quantity, and carcass characteristics were not affected by feeding length of Se-SMC. Our results showed that Se-SMC supplementation was not significantly associated with parameters for meat quality and carcass characteristics. However, as feeding Se-SMC lengthens, WHC for loin was more improved, suggesting that the improved WC may result in the expression of antioxidant effect.

  • This study was performed to elucidate the fermentation and sensory characteristics of Korean traditional rice wine, makgeolli, made from GABA rice, which has a high content of GABA (gamma-aminobutyric acid). GABA rice is a brown rice that is not easily fermented by general makgeolli manufacturing methods. Thus, the Geupchungju method, which is a Korean traditional manufacturing method for makgeolli using a fermentation starter and additional malt, was considered for making makgeolli from GABA rice. We confirmed that Geupchungju method showed a high saccharification and stable alcohol fermentation ability in the early stages of fermentation. However, malt addition more than 2% resulted in a lower score in the sensory evaluation of the final product. It was also confirmed that GABA content of GABA makgeolli was higher than that of commercial makgeolli by 2.3-fold. Our result provides useful information toward improving quality of brown rice makgeolli.

  • Flash memory based storage has been used in various mobile systems and now is to be used in Laptop computers in the name of Solid State Disk. The Flash memory has not only merits in terms of weight, shock resistance, and power consumption but also limitations like erase-before-write property. To overcome these limitations, Flash memory based storage requires special address mapping software called FTL(Flash-memory Translation Layer), which often performs merge operation for block recycling. In order to reduce block recycling cost in NAND Flash memory based storage, we introduce another block recycling scheme which we call migration. As a result, the FTL can select either merge or migration depending on their costs for each block recycling. Experimental results with Postmark benchmark and embedded system workload show that this cost-based selection of migration/merge operation improves the performance of Flash memory based storage. Also, we present a solution of macroscopic optimal migration/merge sequence that minimizes a block recycling cost for each migration/merge combination period. Experimental results show that the performance of Flash memory based storage can be more improved by the macroscopic optimization than the simple cost-based selection.

  • In this study, we analyzed the physical properties of an ethylene oxide adducted amphoteric surfactant such as critical micelle concentration, surface tension, interfacial tension, contact angle, viscosity and phase behavior. The dual function characteristics of an amphoteric surfactant were investigated by determining an isoelectric point, which were attained using zeta potential measurements and quartz crystal microbalance (QCM) experiments. The isoelectric points of DE3-OSA82-AO, DE5-OSA82-AO and DE9-OSA82-AO surfactant systems determined by zeta potential measurements were 6.97, 6.93 and 7.10 respectively and they are in good agreement with the isoelectric point values measured by QCM experiments. The frictional property measured using an automated mildness tester showed that the DE-OSA82-AO surfactant could provide a good softening effect at neutral condition.
