Job Stress among School Nutrition Teachers and Dietitians in Seoul during the Early Stage of the COVID-19 Pandemic: Effects on Self-Efficacy, Job Satisfaction, and Job Involvement (코로나19 팬데믹 초기 서울지역 영양(교)사의 직무스트레스가 자기효능감, 직무만족 및 직무몰입에 미치는 영향)

  • This study was undertaken to assess levels of job stress, self-efficacy, job satisfaction, and job involvement as perceived by school dietitians/nutrition teachers during the early stage of the COVID-19 pandemic and to determine the effects of these three factors. An online survey was sent from May 18 to May 26, 2021, to school dietitians/nutrition teachers in Seoul with experience of foodservice operations during 2020; 250 responses were used for this analysis. Job demands contributed most to job stress, whereas human relations contributed most to job satisfaction. Job stress caused by COVID-19 had a negative impact on self-efficacy (P<0.01) and job satisfaction (P<0.01), but a positive impact on job involvement (P<0.05). Self-efficacy positively impacted job involvement (P<0.01) but did not significantly influence job satisfaction. However, job satisfaction during early COVID-19 positively impacted job involvement (P<0.05). In conclusion, job stress associated with job requirements was greater during the early stage of the COVID-19 pandemic than before the pandemic guidelines are needed that enable school dietitians/nutrition teachers to better cope with the job pressures generated by infectious diseases.

  • To meet the requirements in the global age, the necessity and importance of global education in the field of education is rapidly increasing. However, according to the viewpoint on global education, a general consensus of its definition and model is not clear yet and the substantial outcome falls short of our expectation due to high cost, low effectiveness, and lack of persistency in the process of global education. Furthermore, there has been little research on global education for fostering global capabilities of pre-teachers. In this research, we compared and analyzed the ongoing global education programs for training global teachers in domestic universities. Also, through a study on IT fusion education system for tackling the difficulties in global education, we examined appropriate IT fusion education methods. In particular, beased on big data analysis techniques, we presented a recommendation system to complete a global curriculum, which can help a dual-degree or exchange student program.

A Study on improving the Functions of Authoring Tool for Educational Contents (교육용 콘텐츠 저작을 위한 개발 툴 기능 개선 연구)

  • With the development of information and communications technologies, there have been increasing cases of services and use free educational materials in educational field through the Web. However, as most of the materials are provided in a finished form via the Web services, teachers are in a situation where they have difficulty in using the materials through development or revision according to their educational goals. In this background, this study aimed to develop requirements and functions necessary for the educational contents development tools by having teachers as actual users develop contents using existing tools of the educational contents development. As a result, this study developed 10 requirements, including intuitive interface environment, support for various multimedia materials, and diversification of output versions etc. Also, the study suggested 13 functions, including links with external resources, automatic format conversion function, usage and editing of existing documents, writing learner's answers, and hiding function etc.

Requirements and Self-evaluation of Competencies Necessary to be Effective Nutrition Teachers Perceived by School Food Service Dieticians (학교급식 영양사가 인식하는 효과적인 영양교사의 역량 요구도와 자기 평가)

  • The purposes of the study were to identify a comprehensive competency list related to the jobs of nutrition teachers and to compare the competency needs for nutrition teachers and dieticians' competency levels. Job functional areas and a competency list for nutrition teachers were developed based on a review of literature and revised through expert panel reviews. A total of 53 competency statements associated with 11 job functional areas were specified. Questionnaires were distributed to 457 dieticians engaged in school food service and 148 responses were returned (response rate: 32.4%). Excluding incomplete responses, 142 questionnaires were used for data analysis. Approximately half of the respondents were enrolled in an 1-year nutrition teacher certificate program, 25% in a graduate school of nutrition education, and 19% had completed an 1-year nutrition teacher certificate program. The dieticians highly rated requirements of the competencies related to sanitation and employee safety, nutrition counseling, nutrition education, and teaching practices; in contrary, their competency levels for nutrition education, nutrition counseling, and teaching practices were low. Respondents' competency levels were significantly lower than the required competency levels of effective nutrition teachers in all functional areas. A quadratic analysis based on the requirement and self-evaluation of the competencies revealed that priorities of education programs targeting school nutrition teachers or students preparing to be nutrition teachers should be placed on improving competencies related to nutrition education, nutrition counseling, teaching practices, sanitation and employee safety, menu management, and human resource management. These results can be used to develop curriculum materials for basic and continuing professional education for nutrition teachers. It is necessary to review and update competencies regularly to reflect environmental changes in school food service programs.

Exploration of Pre-service Elementary Teachers' Science Teaching Practices to Cultivate Elementary Students' Digital Literacy (초등학생의 디지털 소양 함양을 위한 예비 초등교사의 과학 수업 실행 탐색)

  • In this study, the implementation of science classes by pre-service elementary teachers were explored to foster the digital literacy of elementary students. To this end, interviews were conducted with four university students in their 4th year of study at 'G' Education University in Gwangju, also their teaching plans and class implementation videos were analyzed. Interview questions were divided into the science class planning stage, the science class implementation stage, and the post-science class implementation stage, and the interview contents were transcribed and categorized after recording. The results of the study are as follows. First, in the science class planning stage, pre-service elementary teachers considered the degree of elementary students' familiarity when choosing digital teaching and learning tools to foster digital literacy. While writing the teaching plan, it was difficult to set standards related to fostering digital literacy. Second, while pre-service elementary teachers had positive experiences such as improving students' participation in classes and increasing student-specific guidance through real-time data sharing, class time was exceeded due to poor use of digital teaching and learning tools. Third, after teaching their science classes, pre-service teachers presented reflections and requirements for the class. Based on these results, the necessity of developing digital literacy for pre-service elementary teachers and the need to improve the curriculum of education university were proposed.

Requirements and Self-evaluation of Knowledge and Skills Necessary for Effective Nutrition Teachers Perceived by School Foodservice Deititians (학교급식 영양사가 인식하는 영양교사의 효과적인 직무수행을 위한 지식 및 기술의 요구도와 자기평가)

  • The purposes of the study were to identify knowledge and skill levels required for effective nutrition teachers and to compare perceived need and dietitians' self-evaluation of the knowledge and skills. A total of 60 knowledge statements and 70 skill statements associated with 11 job functional areas were specified through a literature review and expert panel reviews. A total of 457 dietitians working at school foodservices in Seoul and Gyeonggi province were surveyed using a self-administrated questionnaire and 148 responses were returned. Excluding responses with significant missing data, 142 responses were used for data analysis. In terms of knowledge, 'sanitation, food safety and employee safety(4.60)' category received the highest perceived need score, followed by 'nutrition education(4.56)' and 'nutrition counseling(4.45).' The knowledge category that received the highest self-evaluation was 'nutrition and menu management(3.66)' while the category that received the lowest self-evaluation was 'teaching practices(2.83).' In terms of skills, the highest perceived need was associated with 'nutrition education(4.49)', followed by 'sanitation, food safety and employee safety(4.46)' and 'nutrition counseling(4.39).' The dietitians rated their skills related to 'sanitation, food safety and employee safety(3.67)' the highest but their skills related to 'teaching practices(2.84)' the lowest. The dietitians' self-evaluated knowledge and skill scores were significantly lower than their perceived need of the knowledge and skills in all job functional areas(p<0.001). A quadratic analysis based on the requirement and self-evaluation of the knowledge and skills revealed that priorities of the education programs targeting school nutrition teachers or students preparing to be a nutrition teacher should be placed on improving knowledge and skills related to nutrition education, nutrition counseling, teaching practices, sanitation and employee safety, and nutrition and menu management. Educational programs for nutrition teachers should be designed to decrease the gaps between the need and self-evaluation of the knowledge and skills for effective nutrition teachers. The findings of the study can be used to develop education materials for nutrition teachers. The knowledge and skills identified in the study should be updated and revised regularly to reflect changes in regulations and current practices in school foodservice programs.

A Study on the Teacher's perception in Vocational High School for the Subject of NCS-based Metal Machining (NCS기반 절삭가공 실무과목 수업에 대한 특성화고 기계계열 교사의 인식)

  • The Ministry of Education has been quick to apply National Competency Standars (NCS) to industrial sites and educational·training institutions in order to resolve discrepancies between practical affairs in industrial sites and vocational education, training & requirements. Full implementation of NCS-based curriculum in vocational education of vocational high schools has been mandatory since 2018. This research used a region-stratified sample of 350 from teachers in 'machinery' and 'machine·metal' majors in mechanical departments of vocational high schools to investigate the awareness of practical courses for metal machining among the teachers. The research results are as follows. First, a majority of the respondents indicated the availability of turning process, milling process, computer integrated manufacturing and measuring courses in mechanical departments. Second, capabilities required by the industry are considered most in selecting practical courses and competence units. Third, positive changes with the introduction of practical courses in the school education are students' practical skills improvement and satisfaction of industrial requirements. Fourth, negative changes with the introduction of practical courses in the school education are too difficult learning modules used in practical courses for students and students' difficulty in learning because of the difference between equipment in schools and industrial equipment in learning modules. Fifth, teachers' satisfaction with practical courses classes and overall conditions is above the average, and their satisfaction with the level of practical courses and bookbinding or purchase of rearranged textbooks of practical courses is below the average. Therefore, application conditions of above-mentioned representative 4 practical courses should be examined and taken care of for consistent improvement to stabilize NCS-based educational courses in mechanical departments.

A suggestion for organization and enforcement of the curriculum appropriate for the student's level (수준별 교육과정 편성.운영 방안 -공통영어 읽기를 중심으로-)

  • The purpose that the curriculum appropriate for the student's level pursues is to offer to a student the curriculum that can satisfy the student's interest, aptitude, and requirements. This curriculum has recently enforced all over the country, but the careful research and the plan for verification on its effect are required so that it may accomplish its purpose. This study, centered on the reading comprehension ability of Freshman English of the High School, aims to suggest a more desirable procedure for organizing and enforcing the curriculum appropriate for the students' level. In order to provide the best curriculum appropriate for the student's level. (1) the diagnosis of the individual student's level should be made first ; (2) the syllabus focused both on the grammar and on the communicative functions should be prepared ; (3) the teaching material on the basis of the syllabus should be selected considering the student's interest. and requirements. The new method of teaching-learning English should also be developed with the enforcement of the new curriculum discussed here. The curriculum appropriate for the student's level has many kinds of problems but these disadvantages should be overcome for providing the better educational system for the individual student.

The Evaluation of Day Care Center In-service Education Program Using the CIPP Evaluation Model (CIPP 평가모형을 적용한 어린이집 보수교육프로그램 평가)

  • A CIPP model-based evaluation of day care centers in-service education was performed to improve the quality of infant teachers. This study covered 203 infant teachers of a day care center located in Chungnam and Daejeon city. The analysis results are summarized as follow. The education situation, such as a suggestion of a target and pre-analysis, was more positive than other evaluation areas, but the education course, which is a personal variable of infant teachers, was found to require modifications in day care center in-service education. Uniform education that does not reflect the characteristics of the individual teacher have limitations to education systematically and effectively. Therefore, it is essential to consider the education environment and to reflect the requirements of the infant teacher. Finally, this study provides basic data for a desirable in-service education and qualification improvement program to improve in-service education through an evaluation of day care center in-service education.

Forestry Education Support by a Forest Research Institute: Development of Forestry Educational Programs for Vocational High Schools

  • Forestry education in vocational high schools is one of the fundamental keys for achieving sustainable forest management. However, support systems for forestry education have not been well developed in Japan. Forest research institutes, which have accumulated relevant information, should have sufficient ability to develop new educational programs in this field. This study examined the possibility of support systems for forestry technical education by a research institute. Educational programs for vocational high schools were developed, and the programs were examined for their practical applications through a workshop for these teachers. We set the following five requirements for the programs: They should 1) incorporate new contents related to sustainable forest management, 2) be based on forestry education textbooks, 3) meet recent demands of the schools and society, 4) allow participants to learn through actual practice and experience, and 5) utilize readily available teaching materials. With these criteria, we developed the following two educational programs: (a) Forest management program to teach advanced techniques, (b) A timber-program to teach about biomass resources. The workshop was held on July $28^{th}$, 2007 with ten teachers attending. The programs were very interesting, who gave them high average evaluation of 4.6 on a scale of 1 to 5. Only a few issues need to be resolved before classroom instruction can begin, such as making wood structure easier to understanding for some teachers, and obtaining base maps of school forests. In conclusion, forest research institutes can effectively support forestry education by providing and implementing programs based on scientific information.
