1) The recipe for tea is to mix tea leaves or tea buds with odorous pharmaceuctial materials, which are boiled and drunk, addition of honey only to that odorous pharmaceutical meterials without adding tea buds to that can be used. 2) Viewed from the part of tea plant the fruit of it accoupies most. The cereal does as much. 3) what we have referred to from the records on this subject are "Guogapylyong" which is of the yuan dynasty and "Jeungbo-Salymkeongje" which is of the Yi dynasty, based on which no trace of pure tea can be found but odorous pharmaceutical kinds of tea only were widely spread. 4) The characteristics of tea are to help make stomach strong, mind cleared, the lungs copious, counteract, and quench thirstiness. The tea help build liver as well as bring about health. 5) As a result of sense test, those kinds of tea were much better than contemporary kinds of teas as far as flovor and sweetness are concerned. Those teas had complex tastes, while teas of to day have simple one. 6) Because the history not so clear before the periods of Unified Sila that the recordings of teas are rare, we can hardly know about tea. Our ancestors really began to drink teas from the period of Unified Sila on. This country turning to the Koryo dynasty, tea drinking manner began to prevail so much that drinking tea became a ceremony. Daring the Yi dynasty it was much camplicated to make and boil the leaf tea. As a result of the previous fact pure tea came to have disappeared and odorous pharmaceutical became prevailent. 7) For value of exploiting Kungjuk tea (ginger tea seasoned with phyllostachy and addition of honeyl) was the highest among many. The worth of developing all the teas among all the beverages was regarded as that high of 51%, while even the tea regarded as worthless obtained 4% of support, which is the lowest.

This study was designed to investigate the effect of Korean traditional tea materials on lead (Pb) accumulation and histological changes in Pb-administered rats. Male rats were divided into six groups: a normal, Pb, and Pb-water extract of Korean traditional tea materials (green tea: GT, persimmon leaf: PL, safflower seed: SS, Eucommia ulmoides: EU) groups. Pb (25 mg/kg BW) was orally administered once a day for 4 weeks. The extract of GT, PL, SS, and EU were administered based on 1.26 g of raw traditional tea materials/kg Bw/day. Pb contents of serum and liver were significantly higher in the Pb group than in the normal group. However the water extracts of GT, PL, SS, and EU administration lowered Pb contents of serum and liver in the Pb-administered rats, respectively. Serum Zn content was significantly higher in the Pb group than in the normal group, whereas, Cu and Fe contents were lower in the Pb group. Hepatic Ca content was significantly lower in the Pb group compared to the normal group. In the present study, water extract of Korean traditional tea materials administration effectively improved Cu and Fe contents of serum and liver. Infiltration of the local inflammation was found in Pb group, whereas water extracts of Korean traditional tea materials administration attenuated histological changes of tissues.

The reason why domestic fermented tea is less recognized than the world's top three black[Sri Lanka Uva black tea, India Darjeeling black tea, China Keemun(祁門) black tea] teas is that there is a very lack of scientific basis for clear quality standards and functionality. This researcher identified the major components of the world's top three black teas and fermented teas derived from domestic wild tea trees through analysis of various instruments such as HPLC, TOF-MS, and ELISA reader. In addition, in order to compare the physiological activity of the world's three major black teas and domestic fermented teas, the biological activity was compared and analyzed through DPPH·ABTS free radical scavenging activity and NO production inhibition. Furthermore, comparative analysis data on organic acid, free sugar, and tannic acid were obtained for quality comparison of palatable foods. When the above results are summarized, it is believed that it is possible to present the quality standards of Korean tea, and it is expected that the globalization of Korean tea will be possible.

Antioxidative effect of ethanolic extracts of various tea materials(Camellia sinensis, Cassia tora, Lyc ium chinense, Polygonatum odoratum, Schizandrae chinensis) on red pepper seed oil was investigated. Ethanolic extracts were added to red pepper seed oil at a concentration of 0.05%(w/v). Two experimental conditions were employed : 50$\pm$0.1oC for 45 days and 150$\pm$3oC for 24 hours. Oxidation of red pepper seed oil was determined by measuring peroxide value and acid value. Electron donating ability(EDA) and total phenolic contents of each extract were also determined. The result showed that the extracts possess an antioxidative activities. The effectiveness of them was in the following order: C. sinensis>C. tora>P. odoratum>S. chinensis >L. chinense. Ethanolic extracts of C. sinensis showed substantially higher EDA value and total phenol contents than other tea materials. These results indicate that the antioxidative effect was strongly related with EDA and total phenol contents.
Objectives: The purpose of this study is to investigate the antibacterial effect of Streptococcus mutans of tea tree ingredient. Methods: The experimental groups were each given with different concentrations (30 or 50 vol%) of tea tree prepared in saline solution. The control group applied only saline solution. The tea tree coating of the specimen were examined under a scanning electron microscope. For the antibacterial activity test of the tea tree, the contact angle of the tea tree- coated specimen's surface was analyzed. The antibacterial effect against Streptococcus mutans was determined by counting the colony forming units (CFU). The statical statics were evaluated by using one-way ANOVA and paired t-test. Results: The tea tree treated group of hydrophilic more than non treated group. Antibacterial experiments demonstrated that tee tree solution was effective against Streptococcus mutans. However there was no significant difference in depending solution concentration groups. Conclusions: The antimicrobial activity of the tea tree containing solution showed its potential for use as coating for denture and medical materials.
Carrot, cucumber, spinach which contain carotenoid and chlorophyll pigment, and green tea which contain catechin were selected to natural materials. Although the yield of soybean curd with added natural materials were below than non-added soybean curd. Also, the additive natural materials in the soybean curd had no effect to the texture in soybean curd. The optimum concentration of added natural materials were high acceptability opposed to the non-containing soybean curd. The optimum concentration of added natural materials soybean curds was obtained : 4% of carrot, 10% of cucumber, 1.0% of spinach and 0.05% of green tea powder. And soybean curd with spinach and green tea addition had a longer shelf life because it prevented growing of bacteria in the early stage. Therefore, it could be possible to prevent the deterioration of soybean curd with added natural materials.

To evaluate the functional characteristic and availability for drinking of the fermented Smilax china leaf tea by using different microbial species, various fermented leaf tea was prepared by non-fermentation (C), or the fermentation of Saccharomyces cerevisiae (S), Bacillus sp. (B), Bifidobacterium bifidus (L), Monascus pilosus (M) and Aspergilus oryzae (A), and sensory and antioxidant parameter of each brewed tea was observed. The color of the A tea was red, but the other teas were yellow in color. Furthermore, the aesthetic quality of the A and M tea was 3.95 and 3.30 point, respectively, and other teas (2.55~2.28) were similar to that of the C tea. TP of fermented tea water extract was lower than that of the C, although TF was not significantly different between the fermented and non-fermented tea. Especially, TF of the A tea was significantly lower than those of the other teas. The range of EDA ($1mg/m{\ell}$) of water and ethanol extracts of tea C and the fermented teas was 19.25~22.48%; however, tea A was only 8.04~12.49%. In addition, FRAP, FICA and LPOIA of teas were not significantly different between the fermented and non-fermented teas. On the other hand, XOIA and AOIA of tea ethanol extracts were slightly higher than those of water extracts. XOIA of water extract derived from the teas was 4.83~9.20%, while ethanol extract of these was 9.00~19.00%. However, XOIA of B and L teas water extract was not detected. Furthermore, AOIA of fermented tea water extract (30.17~48.52%) were lower than those of ethanol extract (44.09~66.93%). In this study, interestingly, antioxidant parameters, such as FRAP, FICA, LPOIA and AOIA, of the A tea water extract (0.1%) was higher than that of the other tea in spite of high decreasing rate in the contents of TP and TF. Therefore, above results imply the possibility of fermented Smilax china leaf tea as a functional food.
Green tea and their major constituents such as catechins are famous materials for their anti-oxidative and anti-carcinogenic activity, but many compounds with reducing power can promote the oxidation in their oxidized form or in the presence of metal ion. We investigated the pro-oxidative effect of the ethanol extract equivalent up to 30mg of dried weight of green tea leaves in four in vitro systems which could be used for detecting DNA damage. Although ethanol extract of green tea did not show significant mutagenicity in Salmonella typhimurium TA102, which is sensitive strain to oxidative stress, it degraded deoxyribose extensively in the presence of $FeCl_3-EDTA$ complex, promoted 8-oxoguanine formation in the live bacteria cell, Salmonella typhimurium TAI04, and cleaved super coiled DNA strand with the help of copper ion. It suggested that green tea, famous anti-oxidative material, can be pro-oxidant according to the condition of extraction or metal existence.
Hexachloro-cyclophosphazene(HCCP), a formaldehyde-free flame retardant (FR), was steam-cured with triethanol amine(TEA) to impart durable flame-retardancy to cotton fabrics. While the HCCP treatment alone showed very limited resistance to repeated laundering cycles, the addition of TEA substantially improved the laundering durability of the FR cotton up to twenty laundering cycles. The extended washing resistance was accomplished by the increased nucleophilic substitution of unreacted P-Cl groups in HCCP by the TEA resulting in the more densely crosslinked FR networks. With increasing molar ratio of TEA to the HCCP up to 2, the flame retarding effectivity and the synergistic effectiveness improved to 2.8 and 1.8 respectively. TGA and microscale combustion calorimetry verified the pyrolysis and combustion behaviors of the FR-cotton, which showed lower maximum pyrolysis and combustion temperatures together with substantially decreased peak pyrolysis and heat release rate, synergistically yielding larger amounts of carbonaceous chars. The formaldehyde-free HCCP and TEA can be a durable FR finishing agents for cotton fabrics acting through a solid-phase flame-retarding mechanism.

Different studies have been conducted regarding caffeine as psychostimulant drugs and its effects as well as determination in various materials. Since, coffee and tea are most drinkable beverage in the world and their major constituent is caffeine. So, analysis of the effect of equal amount of caffeine in coffee and tea with respect to SD rats was studied. The present methodology was purposed to determine and validate caffeine amount in different brands of coffee and tea, and canvass locomotor and behavioral patterns of SD rats after administrating coffee and tea orally consisting of same amount of caffeine (10, 30 mg/kg). Determination of caffeine in different brands of coffee and tea and validation of caffeine were evaluated using HPLC. Depending upon different brands of tea and coffee, caffeine amount was altered. Meanwhile, amount of caffeine in tea was directly proportional to the temperature of liquid. Coffee and tea (Instant Maxim original coffee$^{(R)}$ and earl grey black tea$^{(R)}$) consisting 10, 30 mg/kg of caffeine were studied in SD rats for locomotor activity and behavioral patterns using Tru Scan 99. The locomotor activities of SD rats were increased after administration of coffee and tea consisting caffeine compared to water. The coffee consisted of higher amount of caffeine exhibited steep movement of SD rats. Similarly, rearing and scratching of SD rats as frequency and duration were increased in coffee and tea consisting caffeine compared with water. The study revealed that coffee and tea had effects in locomotor activity and behavioral patterns of SD rats.
