Antioxidative Ability of Some Produces in Ulleungdo and Quality Characteristics of the Taffy Made from the Produces (울릉도 주요 농업특산물의 항산화능 및 이를 이용하여 제조한 엿의 품질 특성)

  • This study was conducted to investigate the anti-oxidative abilities of certain products in Ulleungdo, such as sweet pumpkin (Danhobak), goat's beard (Samnamul), and Aster glegni (Bugigangyi), quality characteristics of sweet pumpkin taffy containing these products. Total polyphenolic contents of the Samnamul water and ethanol extracts were 2.95 mg% and 3.57 mg%, respectively, whereas those of the Bugigangyi water and ethanol extracts were 2.77 mg% and 2.75 mg, respectively. However, the total polyphenolic contents of the pumpkin water and ethanol extracts were 0.32 mg%. Reducing power ($OD_{700}$) of the Samnamul and Bugigangyi water and ethanol extracts (0.01%, w/v) was in the range of 1.62~1.91, which was higher compared to those of sweet pumpkin (0.02~0.03). Electron donating abilities (EDA) of the 0.01% Samnamul and Bugigangyi water and ethanol extracts were in the range of 74.91~79.21%, whereas those of the sweet pumpkin water and ethanol extracts were 3.79~14.99%. Optimum mixing ratio of steamed sweet pumpkin and water taffy for the preparation of taffy was 25:75 (w/w), as evaluated by sensory evaluation. Optimum adding ratio of Samanmul and Bugigangyi ethanol extracts to pumpkin taffy were 0.4% and 3%, respectively. However, the adding ratios of Samanmul and Bugigangyi powder to pumpkin taffy were 0.5~1.0% (w/w) and 1% (w/w), respectively.

Changes in Quality Attributes of Chang-pyung Yeot (taffy-like foods) with Storage Temperature (창평쌀엿의 저장온도에 따른 품질특성의 변화)

  • In order to find a critical temperature for keeping the quality of Chang-pyung yeot (one of the Korean traditional taffy-like rice foods), a sensory evaluation and a puncture test were done, and the changes in the appearance of cross section and the surface color were investigated for 10 day's storage. There was no change of quality at storage temperature below $10^{\circ}C$, but at storage temperature above $15^{\circ}C$, the quality of Chang-pyung yeot deteriorated with storage time. After storage for 1 week at temperature above $15^{\circ}C$, they sticked each other as results of structure deformation and melting, and sticked to teeth In mouth resulting in an offensive feeling. The estimated critical storage temperature of Chang-pyung yeot was $12{\sim}13^{\circ}C$.

Composition of Corn Taffy Residue and Its Dietary Effects on Milk Production and Composition of Holstein Cows (엿밥의 조성 및 산유량과 유성분 조성에 미치는 영향)

  • This study was conducted to the evaluate nutritional value of corn taffy residue (CTR), a by-product from Korean traditional taffy, and to investigate the dietary effect of CTR on the yield and composition of milk from dairy cows. Relatively high concentrations of residual enzymes and sugars were found in CTR. Protein and fat concentrations were high, comparable to those of corn gluten meal. Inclusion of 1, 3, and 6% CTR in total mixed rations yielded more milk (p<0.05) than in the control group, and increased milk fat (p<0.05) in high-producing cows (approximately 30 kg). In low-producing cows, (approximately 20 kg), milk yield was increased by 1 and 6% CTR, and milk protein was enhanced by 3% CTR (p<0.05). Based on these results, utilization of CTR is recommended for production of high quality and economical animal products.

  • UV-curable high refractive index di-functional epoxy acrylate, 4,4'-thiodibenzenethiol diglycidyl ether diacrylate, was synthesized from acrylic acid and 4,4'-thiodibenzenethiol diglycidyl ether that was obtained by reacting 4,4'-thiodibenzenethiol and epichlorohydrin using a direct method (Taffy process). Its chemical structure was identified by $^1H$ NMR and FTIR. After its dilution with a reactive diluent, 2-phenoxythiol ethyl acrylate as 5, 10, 15, 20, and 30 wt% content, the relationship between their viscosity and refractive index was investigated. Their degree of cure decreased with increasing the amount of reactive diluent, and the refractive index of UV-cured film increased with increasing the degree of cure.

  • Objectives : In pediatrics, one of the most difficult thing might be medication because infant or child cannot take medicine easily. In traditional medicine, Korean taffy or paste preparations sometimes prescribed. Xiao'eryaozhengzhijue was published by Qianyi in 1119 and is specialized for pediatrics text. So I tried to research paste preparations in Xiao'eryaozhengzhijue. Methods : I derived paste preparations from Xiao'eryaozhengzhijue ; paste preparations named on it, and used as paste preparations etc. Results : 1. There were external and internal application of paste preparations. 2. Diverse secondary materials were used for making paste preparations. 3. Several chief complains were recorded in Xiao'eryaozhengzhijue. Conclusions : Paste preparations are really useful way to disease of pediatrics because infant or child cannot take his or her medicine easily. Through the research, I could find out the facts that there are diverse shapes of paste preparations and usages of paste preparations in Xiao'eryaozhengzhijue.

  • The wheat-gluten vendor's Shears Sound which was ever able to hear barely at the conventional market place or some specific gala period is a familiar sound to us, also a delightful sound even without any reason. The blunt Shears Sound spreading faraway attracts the mind of hearer and it makes neighbors gathering. Nevertheless, it becomes to be left as being a forgotten sound little by little to our society that rapidly growing with high degree. In this Study, as for an acoustic analysis of the wheat-gluten Shears Sound, as being a forgotten our own sound, in order to examine the difference according to the character of various shears, after making 26 pieces of various Shears and we had ever measured, appraised on the sound pressure level by each wave-form and frequency of respective Shears Sounds at the semi-anechoic chamber, W University. At the study result, the acoustic character of wheat-gluten vendor's Shears Sound was able to be grasped, and we could find out 4 pieces of Shears which were judged as more superior in acoustic capability than the existing wheat-gluten Shears among the 26 pieces of various Shears.

A Study on the Literature of the Cooking Product of Cho(Misutkaru) in Imwonshibyukji ("임원십육지(林園十六誌)”의 초류(麨類) 조리 가공에 관한 문헌 연구 )

  • Imwonshibyukji(1827) is an important and stupendous ancient scientific book, which is much like an encyclopedia, that can discern the dietary life of the latter period of Choseon. This article is assorted, which is mentioned in this book, as Cho(Misutkaru-in parched grain that is weed out into powder) to the main material of grain Youmicho, Wandoocho, Youcho, also the medicinal plant as the main material Youkhangcho, Backyupcho, Chungumcho, Unyoungcho, and Naecho, Haengcho, Eicho, Imgumcho, Joyou, Bokbunjacho, made by fruit. The results of inquiring the property by the assortment is as you see in the following. Youmicho, Wandoocho, Youcho, Youkhyangcho, Backyupcho, and Chungumcho, which consist of glutinous rice, nonclutinous rice, barley, buckwheat, pea, and black soybean are among 13 kinds of methods to make Cho. The manufacturing process is similar to that of Misutkaru, but in the case of Unyoungcho 6 different medicinal powders are mixed with Chundang and Sookmill to form a hard portable taffy substance, which is quite unique. Naecho, Haengcho, Eicho, Imgumcho, Joyou, and Bokbunjacho are extracted from pulp and processed in a powder form like Misutkaru, which can also be considered as a fruit tea. Youcho is unique in its sense, since it is fermented by maggots that are bred in order to obtain the juice. Cho is known to calm thirst and empty stomachs, and has various medicinal materials to act as food to aid virility. It is also known to have multiple functions as an alternative staple, refreshment to aid virility, portable food, and preferable beverage. There are ten references on Cho, 37% are Korean in Ongheejobji and 63% Chinese in Jaeminyosool, Bonchogangmok, Chungmoonbobang, Nongjungchunsuh, Wangshinongsuh, Shikgyung, Sukmyung, Bonchoseupyou, and Wisaengbogam. The citations are in the general introduction and 13 types of Cho are cited 19 times overall, but citations based on Chinese references are non existe.

A Literature Review on the Recipes for Pheasant - Focus on Recipe Books from 1800's to 1990's - (꿩고기 조리법의 문헌적 고찰 - 1800년 대 말~1990년대까지의 조리서들을 중심으로 -)

  • The main purpose of this study was to survey the various kinds of recipes for pheasant found in seventeen Korean cookbooks published from the 1800's to the 1990's. There were 95 pheasant recipes found in the literature which could be classified into three major groups: cooking with moist heat, cooking with dry heat, and other. The three major groups were then broken down into thirteen smaller groups. A detailed look at the frequency of terms in each recipe shows that Gui Sanjeok (grilled Korean shish kebabs) appears 24 times, Guk Tang and Jeongol (soup and stew) 23 times, Kimchi (fermented cabbage) 11 times, Po (jerky) 9 times, Jorim (boiled in soy sauce) 7 times, Jjim (steamed) 6 times, Bokeum (stir-fried) 5 times, Twigim (deep-fried) 3 times, Buchim (fried) 2 times, Jigae jijim (stewed) 2 times, and Jang (paste), Myeon (noodles), Gooum (boiled) and Yeot (Korean hard taffy) 1 time each. The main ingredient is always the pheasant. We investigated the use of the whole pheasant cooked, how to slice and tenderize pheasant meat, use the meat only, or use only certain parts. Depending on the characteristics of cooking recipes, pheasants with thin, soft bones and organs were investigated for cooking. Substituted materials were used for a few of the vegetables, meat, and seafood in the recipes, and seem to go well together. Garnishes used included pine nut powder and fried eggs. Seasoned salt, soy sauce, pepper, sesame, sesame oil, chopped onion, garlic, and ginger were also reported to have been used.

Review on Literature Dealing with Food Cure for Cough (해수(咳嗽)에 활용된 식치방(食治方)에 대한 문헌적 연구(硏究))

  • Objectives : This study first acknowledges that cough, which is a light symptom, can act as a link that leads to more serious disease. With this acknowledgement, the study ponders upon how the people of the past, before the introduction of western medicine, attempted to cure the first sign of cough and how to stop it from developing. Methods : China's Eumsunjungyo and Sikgamboncho, and Chosun's Singnyochanyo and Donguibogam are used mainly to analyze the food cure that were used in relation to sea water, and to discover what types of ingredients and preparation forms were used, how they were taken, what types of food cure there were, and how they were used. Results : There was no ingredient used commonly in all of the four literatures. Eumsunjungyo utilized ingredients related to lamb. Singnyochanyo and Donguibogam were both used in Chosun, but some similarities with the Chinese literatures were discovered in terms of food cure since they were put together with their Chinese counterparts as references. Ingredients that were used commonly in two or more of the literatures were ginger, taoren, xingren, honey, pear, liyu, and pig lung. Conclusions : Some staple folk remedies that later becamce cultural cuisines included drinking the water from boiling pear and honey and boiling and eating pears with peppers stuck in them. The eating of ginger together with korean traditional taffy have taken its own form and became saenggang jeonggwa and pyeongang. The oriental food cure method has been continuing among the folk people in the form of traditional food with the food philosophy of edible homologous as its basis.

Effect of feeding a by-product feed-based silage on nutrients intake, apparent digestibility, and nitrogen balance in sheep

  • Background: Literature is lacking on the effects of feeding by-product feed (BF)-based silage on rumen fermentation parameters, nutrient digestion and nitrogen (N) retention in sheep. Therefore, this study was conducted to determine the effect of replacing rye straw with BF-based silage as a roughage source on ruminal parameters, total-tract apparent nutrient digestibility, and N balance in sheep. Methods: The by-product feed silage was composed of spent mushroom substrate (SMS) (45 %), recycled poultry bedding (RPB) (21 %), rye straw (11 %), rice bran (10.8 %), corn taffy residue (10 %), protected fat (1.0 %), bentonite (0.6 %), and mixed microbial additive (0.6 %). Six sheep were assigned randomly to either the control (concentrate mix + rye straw) or a treatment diet (concentrate mix + BF-based silage). Results: Compared with the control diet, feeding a BF-based silage diet resulted in similar ruminal characteristics (pH, acetate, propionate, and butyrate concentrations, and acetate: propionate ratio), higher (p < 0.05) ruminal NH3-N, higher (p < 0.05) ether extract digestibility, similar crude protein digestibility, lower (p < 0.05) dry matter, fiber, and crude ash digestibilities, and higher (p < 0.05) N retention (g/d) Conclusion: The BF-based silage showed similar energy value, higher protein metabolism and utilization, and lower fiber digestion in sheep compared to the control diet containing rye straw.
