Traditionally mungbean(Vigna radiata L.) sprouts has been eaten soon after washing. The study was carried out to measure the effect of washing before packaging on morphological characters and color of mungbean sprouts. The seeds of cv. Zhong Lu 1 were soaked in 50 ppm BA solution immediately before 4 hour aeration and then cultured for 6 days. The sprouts were washed immediately before packaged with PE envelops or not, and then stored 5 days at $8^{\circ}C$. Their morphological characters, fresh and dry weights, and colors were measured everyday. Compared to washed, nonwashed sprouts had more lateral roots although the two sprouts did nearly same in hypocotyl and root lengths, hypocotyl diameter, fresh and dry weights. Non-washed sprouts, moreover, showed higher brightness in hypocotyl and root and cutting resistance in hypocotyl although there were not significant differences in color a and b, meaning that the latter ones were more rapidly changed during their storage. In non-washed sprouts, number of lateral roots, hypocotyl length and diameter, total fresh and dry weights were nearly same up to 3 days and afterward were declined. Brightness and color b of hypocotyl were decreased with increased storage period although cutting resistance of hypocotyl was since 3 days after storage.
Chinese foxglove(Rehmannia glutinosa) is receiving much attention as one of the principal medicinal crops and the crud drug. This study was conducted to obtain the basic breeding information of Chinese foxglove derived from tissue culture. To compare plant characteristics between local variety and tissue cultured seedlings, plant growth and root yield has been investigated. In addition, catalpol and free sugar contents were also analized. The ability for the storage of root stock originated from tissue culture seedlings were better than that of local variety. The growth and root yield of in vitro propagated plants were superior to those of conventionally propagated plants. Root yield of 1-year-old and 2-year-old seedlings investigated 112% and 246% respectively than Seacheon local shows 384 kg/10 a. Although there were no significant different between tissue culture seedlings and conventionally propagated one, slight decline of component contents in tissue culture plants were still existed. Investigated sugar content among Seocheon local, 1-year-old tissue culture seedlings, and 2-year-old tissue culture seedlings were 1.86%, 1.21%, and 1.10% respectively. Catalpol content as one of standard materials indicates 0.46% in Seocheon local and 0.40% in tissue cultured ones.
This study was performed to provide basic rheological data of dandelion root concentrates in order to predict their processing aptitude and usefulness as functional foods material. The hot water and 70% ethanol extracts of dandelion root were concentrated at 5, 20, and 50 Brix, and their static viscosity, dynamic viscosity, and Arrhenius plots were investigated. Almost all hot water concentrates showed the typical flow properties of a pseudoplastic fluid, but evaluation using the power law model indicated that the 70% ethanol concentrates showed a flow behavior close to a Newtonian fluid. The apparent viscosity of hot water and 70% ethanol concentrates decreased with increasing temperature. Yield stresses of hot water and 70% ethanol concentrates by Herschel-Bulkley model application were in the range of 0.026 - 1.368 Pa and 0.022 - 0.238 Pa, respectively. The effect of temperature and concentration on the apparent viscosity was examined by Arrhenius equation. The activation energies of hot water and 70% ethanol concentrates were in the range of $8.762-23.778{\times}10^3\;J/mol{\cdot}kg$ and $3.217-20.384{\times}10^3\;J/mol{\cdot}kg$ with increasing concentration, respectively. Storage (G') and loss (G") moduli were generally increased with increasing frequency. For the 70% ethanol concentrates, G" predominated over G' at all applied frequencies and so they showed the typical flow behavior of a low molecular solution. However, for the hot water concentrates, G' predominated over G" at more than 1.9 rad/sec (cross-over point) and so they showed the typical flow behavior of a macromolecular solution.
Objective: This study investigated the effects of dry radish leaf and root on the quality of pork patties during refrigeration storage. Methods: The patties were divided into the following three groups: the control containing 0% dry radish leaf root powder, RL1 containing 0.5% dry radish leaf root powder, and RL2 and RL3 containing 1% and 2% dry radish leaf root powder, respectively. Proximate composition, pH, cooking loss, microbial analysis, lipid oxidation analysis, color, texture profile analysis and sensory test were performed. Results: Moisture, crude protein, and crude ash contents in RL2 and RL3 were significantly higher than those in other groups (p<0.05), whereas crude fat contents in RL2 and RL3 were significantly lower than other groups (p<0.05). Lightness was significantly lower in RL2 and RL3 than in CON (p<0.05). Cooking loss for RL2 and RL3 were significantly lower than those for the other groups (p<0.05). The pH, thiobarbituric acid levels, and total plate counts of RL2 and RL3 were significantly lower than those of CON at days 7 and 14 (p<0.05). Hardness values of RL2 and RL3 were significantly lower than those of CON, whereas chewiness values were higher than those of CON (p<0.05). In addition, the juiciness of RL2 were significantly greater (p<0.05) than those of the other groups. Conclusion: Dried radish leaves and roots improved the proximate composition and quality characteristics of pork patties, providing a basis to produce high-quality patties with extended expiration dates. Thus, dried radish leaves and roots are effective ingredients for health or functional foods.
A study was made on the design of the prediction model concerning blasting vibration in a constraction site, Namgu, Daegu City. The geology in this area consists of hornfels of shale and mud underlain by quartize, of which the main strike of the geological structure is NW direction. Measurements were carried out on the top of the wall concrete water storage tank, which is burried in the ground earth. The attenuation due to the vertical wall of the concrete structure may be experted because of spherical divergency at the bottom corner of the wall by the Huygens principle. For design of blasting prediction model, thus among scaled distance(SD) may be preferable to use in the regression model, since they represents most likely the average ground condition. Judging from the regression results, the cube root method may be more suitable for this area. The SD values for the maximum allowable vibration velocity of 0.5 cm/s, in this area are 22.5, 28.0 and 30.6 for the significance level of 50%, 95% and 99%, respectively.
The research was conducted to provide basic information for store temperature which were low and room temperature and packing methods which were vacuum, packing and nitrogen of 3 year-old Platycodon grandiflorum. We investigated hardness and content of saponins, 1) platycodin D3, 2) polygalacin D and 3) deapioplatycodin D, in Platycodon grandiflorum and hardness of Platycodon grandiflorum, which were reduced by increasing storage period and decreased with increasing storing temperature, respectively. The packed storing method was better than others storing methods in low temperature. The high root hardness was significantly related with storing temperature and methods. The content of saponins in Platycodon grandiflorum, i.e., platycodin D3 and polygalacin D were reduced during storing period, however, the content of deapioplatycodin D was increased during storing period.
The objective of this study was to develop a functional vinegar beverage using yacon roots, and examine the components' changes during fermentation. The alcohol fermentation was conducted by inoculation of Saccharomyces cerevisiae into yacon root juice with sugars. After 10 days of fermentation at $27^{\circ}C$, yacon wine contained 13% alcohol and $7.8^{\circ}Brix$ sugar contents. The yacon wine at 5% alcohol was fermented by Acetobacter aceti(KCTC1010) with 250 rpm agitation rate at $29^{\circ}C$ for 12 days. The acidity of yacon vinegar reached 4.4% after 12 days' fermentation. Statistically (p<0.05), the amount of Acetobacter aceti, pH, alcohol, with total polyphenol content of samples decreased with acidity, whereas individual sugar contents increased. Furthermore organic acids, total sugar, phenolic acids content, total antioxidant capacity, and color were not different among the five samples. The yacon vinegar beverage was prepared with high fructose syrup through the dilution of yacon vinegar. After making the yacon vinegar beverage, the pH, acidity, total sugar, and total microbial content were examined every week over 4 weeks' storage. There were no changes in the samples during that time.
This study was performed to assess the antioxidant activity of Allium hookeri root extract (AHE) on lipid oxidation of raw sulfur-fed pork patties for 14 d of refrigerated storage. Different concentration of ethanol (0-100%) and time (1-12 h) were applied to determine the extraction condition. Water (0% ethanol) extraction for 1 h was selected as an optimal extraction condition of AHE for the following study showing the highest total phenolic content and total flavonoid content, as well as the strongest antioxidant activity. The 1% AHE (SP1), 3% AHE (SP2), and 0.05% ascorbic acid (SP3) were added into sulfur-fed pork patties against controls; SP0 (sulfur-fed pork patties with no AHE) and P0 (normal pork patties with no AHE). The pH values of P0 and SP0 significantly increased (p<0.05) than others on 14 d and redness of P0 showed the largest decrement during storage. P0 and SP0 showed higher production of conjugated dienes on d 7 than others (p<0.05). Thiobarbituric acid reactive substances (TBARS) values were decreased in proportion to the increased level of AHE on 14 d (p<0.05) resulting in higher TBARS values on P0 and SP0 (p<0.05) and the negative correlation between AHE level and TBARS were also demonstrated (r=-0.910, p=0.001). Therefore, the results suggest that AHE effectively retarded the lipid oxidation rate of sulfur-fed pork patties indicating the potential usage of AHE as a natural preservative.

In recent, a demand for sweetpotato cultivation technology to expand the cultivated area of field crops in paddy fields is increasing. This research was carried out to establish suitable varieties and cultivation techniques for mass production of sweetpotato for processing raw materials. For the selection of varieties suitable for cultivation in rice fields for each processing purpose, 12 varieties in 2018 (8 varieties for starch, 4 as dried, chips and beverages), and 6 varieties in 2019 (4 varieties for starch including 'Daeyumi'; chips, semi-dried 'Pungwonmi'; beverage and coloring 'Shinjami') were used. Sweetpotato stems were planted in mid-May and harvested after 120 days to investigate the yield. Results revealed that the yield of sweetpotato (2019) for starch production, varied with variety as 'Gogeonmi' 3,926 > 'Jinhongmi' 3,428 > 'Daeyumi' 2,873 > 'Singeonmi' 2,752 kg/10a. The starch content was 20.2% in 'Daeyumi', 18.2 in 'Gogeonmi', 21.2 in 'Singeonmi', and 20.6% in 'Jinghongmi'. The total amount of starch was higher in 'Daeyumi' (730 kg/10a) and 'Gogeonmi' (731 kg/lOa). The yield of chips and edible varieties 'Pungwonmi' was 4,688 kg/10a. The yield of 'Shinjami' of purple variety such as beverages and powder was 3,139 kg/10a. Aaa result of evaluation sweetpotato yield by waterlogging treatments on different growing stages in paddy fields, the yields of 'Daeyumi' and 'Jinhongmi' varieties treated with waterlogging at the storage root formation stage decreased by 11.8% and 11.7%, respectively, compared to the control. In the case of waterlogging treatment at storage root swelling stage, Both varieties showed the lowest yield reduction at 7.0% and 4.8%, respectively. Based on these results, stable production and substitution effect of processing raw materials can be expected by cultivating sweetpotato varieties suitable for paddy cultivation.

This study was conducted to improve the managing and storing methods of the seeds of Aralia cordata var. continentalis (Kitagawa) Y.C.Chu, to examine the viability and the germination ability of seeds with different storing conditions and methods, and to develop new ways to propagate and have better healthy seedling. Therefore, the germination rate, days required for germinating seeds, and early growth responses of Aralia cordata var. continentalis (Kitagawa) Y.C.Chu were investigated with different storing temperatures, durations and methods. The germination rate was higher in stratified storage than that in dry storage condition. The highest germination rate was with outdoor temperature at 30 days after stratified storage. The days required for germinating seeds were less than 10 days with the treatment of $25^{\circ}C$ and outdoor temperature in stratified storage. In dry condition, they were shorter with $4^{\circ}C$ and $25^{\circ}C$ than those with $-20^{\circ}C$ and outdoor temperature. Leaf number of seedling was higher in stratified storage compared to that in dry condition, while it was not clearly different according to storage temperatures and durations. Leaf length and leaf width of seedling was not difference among the treatment of storage methods, temperatures, and durations. Stem length of seedling was higher in stratified storage than those in dry condition, while root length was not clearly different among the treatments. It would be assumed that temperatures, methods and durations of storage could affect much to the germination rate and the early seedling growth response.
