Quality changes in carrot during storage were studied to investigate the efficiency, cooling properties and the washing and storage effects of hydrocooling method. As a result of plotting the nondimensionalized carrot temperature versus cooling time, its cooling rate coefficient was shown $-0.0171min^{-1}{\sim}-0.0121min^{-1}\;(R^{2}=0.99{\sim}0.95)$, and $-0.141min^{-1}{\sim}-0.0038min^{-1}\;(R^{2}=0.98{\sim}0.92)$ in package condition7. Rate of weight loss and change in moisture content of carrot were not significantly different by treatment conditions during storage at $5^{\circ}C$. During storage at $15^{\circ}C$, however, weight loss of hydrocooled carrot was lower than that of non-treated carrot from the 30th to 40th day. Especially, PE was more effective than tray for packaging hydrocooled carrots. Carrot pretreated wish sterilizing agent, packed with PE vinyl film and with residual water removed after hydrocooling showed a lower decaying-rate than any other carrots. Changes in Hunter L and b values of hydrocooled carrot were slower than those of non-treated one. The carotenoids contents of stored carrot $(0.736{\sim}0.780mg%)$ decreased to $9{\sim}43%$ after 40 days of storage at $5^{\circ}C$ and before 20 days of storage at $15^{\circ}C$. It could be presumed that the addition of sterilizing agent reduced the initial level of overall microbial and coliform counts and their growth rate during storage.

Lemon and eucalyptus oils were known to have various biological effects such as anti-aging and sterilizing action. However these essential oils were not well studied about their antioxidant activity and antimicrobial activity against specific skin flora. In this study, we investigated antioxidant activity and antimicrobial activity of lemon and eucalyptus oils by using DPPH radical scavening activity and paper disc method. Lemon oil showed the high DPPH scavenging activity, while eucalyptus oil did not. Blending oils of lemon and eucalyptus had little enhancememt onantioxidant activity. Paper disc method demonstrated that each oil had a high antimicrobial effect against C. albicans and P. acnes in a concentration dependent manner. The blending oils had enhancememt on antimicrobial effect against P. acnes. In conclusion, the blending oil of lemon and eucalyptus can be used as a more effective natural agents for cure of skin trouble and acne.

Various COVID-19 quarantine guidelines and measures are being taken by country at the WHO, but the number of confirmed cases has not decreased significantly. In order to prevent the inflow and outflow of COVID-19 through individual droplets, it is mandatory to wear a mask anytime, anywhere. However, as virus bacteria entering the mask amplify, it pollutes the mask and causes a disgusting smell. In this paper, a new method of preventing the spread of COVID-19 was proposed by sterilizing the mask with a dental gait spray introduced into the mask that has been used for a long time. Dental gargle water is usually produced by electrolysis of tap water, and the unstable ion water (HOCl) dissolved in water penetrates the cell barrier of various viruses and fails to act in its nucleus, causing water to self-purify. As a result of the experiment, when the mask used for a long time was washed with gargle water spray, the washed mask was dried after 10 minutes, and the smell of virus droplets or saliva almost disappeared. In particular, as a result of MOS testing the fit of the subjects who participated in the mask cleaning, it was excellent at 4.4 on average. Therefore, the mask was disposable, but if the spray was washed in the proposed method more than twice a day, the mask could be used in a comfortable state for more than a week.
Helicobacter pylori (H. pylori) is the main causal bacteria occurring stomach diseases such as gastritis and gastric ulcer. These bacteria are found in most adults' stomach. Especially, 60~90% of H. pylori is found in Korean stomach. As a lot of curing methods have been applied to remove H. pylori and certain effects have been done but it's impossible to remove it perfectly with the existing medicines for curing. Therefore, it's very urgent to develop a certain substance showing more excellent effect than the existing medicines. In this study, it wasfound that organic acids can be accessed easily, inserted into mouth for curing and has excellent sterilizing effect among the substances showing excellent antibiotic power. Among them, acetic acid showed the most excellent effect. To confirm the refraining power against H. pylori, we performed tests through in vitro contact testing methods by concentration and tsta. In the result, H. pylori were terminated perfectly in the solution of acetic acid more than 0.3% within 1 minute. With a base of the result of In vitro test, It was performed in vivo test. As the results, H. pyloriwere terminated perfectly on 0.2% solution of acetic acid from the result of confirming through urease test, ELISA method and RT-PCR. Therefore, the result of this research will be very useful information in developing the functional foodstuffs using acetic acid in order to terminate H. pylori on the people's stomach, who suffers from H. pylori.
This study aims at making a HACCP(Hazard Analysis Critical Control Point)plan to be applied to soybean curd and verifing its effectiveness. First, we develped a general model of HACCP according to the guidelines of Codex (FAO/WHO). And we applied the model to 4 soybean curd workshops for 3 months. The HACCP model is composed of these procedures; HACCP team organization, production description, work flow chart, hazatd analysis, CCP (critical control point) decision, CL (critical limit) establishment, monitoring method decision, correction, verification and documentation. CCP were selection procedure and refrigeration procedure in non-wrapped soybean curd. CCP were selection procedure, heat-sterilizing and refrigeration in wrapped soybean curd. The result of bacterial experiment after apling the model for 3 months, the bacterial numbers of soybean curd box, wrapper, and soybean curd production were lower after appling than before appling, the model. We could verify that the appications of the HACCP model were effective to the soybean curd workshops.

This study attempted to investigate the usefulness of Rhus javanica L., Cinnamomum verum and Rosmarinus officinalis extracts which have antimicrobial and antioxidant effects without any harm on human health as natural preservatives. In terms of extraction, extraction by 70% ethanol and hot-water extraction were used for Cinnamomum verum and Rhus javanica L. respectively. For Rosmarinus officinalis, a mixed method (70% ethanol and hot-water extraction) was adopted. In terms of experimental methods, antimicrobial effects, antioxidant activity through DPPH and safety and stability of cosmetics were assessed, and a challenge test was performed, and the results found the followings: According to an antimicrobial test, good antimicrobial effects were found in bacteria (Rhus javanica L. extract) and fungi (Cinnamomum verum extract). In contrast, the Rosmarinus officinalis extract was set aside because of poor antimicrobial activity. In the mixed extract (Rhus javanica L. + Cinnamomum verum), antimicrobial effects were observed in 'complex C (mixed in a 1:1 ratio)' while both inhibitory and sterilizing effects were found in 5 different test strains at minimum inhibitory concentration (MIC) and minimum bactericidal concentration (MBC). In addition, antioxidant effects were detected in non-mixed extract and mixed extract ('complex C'). Furthermore, a test on cosmetics which adopted '10% complex C' instead of synthetic preservative revealed safety and stability. Therefore, this study has confirmed the potential of the Rhus javanica L., Cinnamomum verum and Rosmarinus officinalis extracts as materials for natural preservatives.
This study was intended to develop a sanitary and economic storage method using gamma irradiation for chicken. The samples, which were irradiated with doses of 0, 5, 8 and 10 kGy and stored at 3 to $4^{\circ}C$ for 41 days, were subjected to an investigation of the sterilizing effect on microorganisms. In the number of microorganisms contaminated, psychrotrophiles, mesophiles and thermophiles were $7.8{\times}10^5,\;3.6{\times}10^5$ and $1.1{\times}10^3$ per gram of the samples, respectively, and yeast & mold and coliform group were $3.0{\times}10^3$ and $2.1{\times}10^3$ per gram of the samples, respectively. Also, other enteric bacilli were isolated up to 90% out of total test groups on a selective medium(S-S agar). The number of total bacteria was reduced by over 2 to 4log cycles with an irradiation of 5 kGy to 10 kGy, and an irradiation treatment of over 5 kGy was shown to be effective for the radurization of yeast & mold, coliform group and other enteric bacilli. Thus, it was possible to extend the microbiological self-life of chicken for about 2 to 7 weeks compared with the control.
A survey of infant practices was conducted to provide information on which to base planned nursing interventions. The subjects were a convenience sample of 168 mothers visiting out - patients departments of five general hospitals and one public health center in Seoul for immunizations or treatment for common colds for their infants from two to 12 months of age. Data collection was carried out from July 8th to September 30th, 1991 using a questionnaire of 84 questions, 31 on the type of feeding, 22 on supplementary feeding and 21 on demographic infer mation. The results are summarized as follows : 1) The type of feeding was primarily artificial feed-ing (63.1%), followed by mixed feeding (22%) and breast feeding (14.9%) of the 59 mothers expecting during pregnancy to breast feed, 54. 2% changed artificial feeding and 30.5% went on to breast feed as they had expected. For mothers expecting to continue breast feeding over seven months. only one infant was being breast fed for over seven months. 2) For the 106 mothers using artificial feeding, 70. 8% hed attempted breast feeding, 64% of them for less than a month. Breast milk had been suppressed by for medication (38.7%) : 34.9% had used no specia] means. 3) The major reasons for replacing breast feeding with artificial feeding were the infants' demand for more milk (47.2% ) and insufficient supply of breast milk (49.3%). 4) Most mixed feeding was started at the age of one to three months (59.5%). Only 34.4% gave an artificial feeding after breast feeding : most (46%) alternated breast feeding with artificial feeding. On the whole, the motive for mixed feeding was the lack of breast milk (70.3%). 5) Many mothers (81.8%) were adding vitamin or mineral supplements to artificial milk and 51.5% were adding something to faciliate digestion. As for the method of sterilizing milk bottles and nipples, 56% had sterilized them together in boiling water from the beginning : 27% were just washing the bottles after boiling only once initially when measuring artificial milk powder, 31. 5% of the mothers over filled the measuring spoon rather than to the level. 6) The mother's occupation was related to her way of feeding. Mothers at home full time did more breast feeding than mothers employed outside the home. (x²=5.72, p=〈0.05). 7) Most mothers began supplementary food, from three to four months (48.8%) : 11.2% began later than seven months. Supplementary food was given between milk feedings by 67.2% of the mothers : 19.2% gave it before a milk feeding. Some mothers(26.4%) made their own supplementary food : 19.2% used ready - made supplementary food products for convenience. Recommendations for nursing interventions included : 1. Prenatal education about the advantages of breast feeding and breast care, and home visits after delivery for counselling related to breast feeding. Correct preparation of artificial feeding methods need to be taught in both pre & postnatal periods. In addition, specific education about supplementary feeding needed. 2. Further research is indicated about the Perceived lack of supply of breast milk and about the effectiveness of nursing interventions to Promote breast feeding.
This study was conducted on 185 workers at 73 dental clinics and university hospitals in Daegu to investigate the actual prevention of infection and vaccination against B-type hepatitis among dental workers. 1. According to the result of medical examination, only 35 out of 144 (24%) dental clinic workers had periodic health examination while 7 out of 9 (78%) university hospital workers did. 2. In a survey on vaccination against B-type hepatitis, 52 workers aged 29 or younger (96.3%), 38 dental hygienists (51.9%) and 44 dental workers at dental clinics (81.5%) have not had any vaccination against B-type hepatitis. The rest appeared to have had vaccination or be aware that they had antibody against B-type hepatitis without having to have any vaccination. 3. According to the result of a survey on the existence of antibody by job, 42 (56%) of dental hygienists, 15 (20%) of assistant nurses, 12 (16%) of medical assistants and 6 (8%) of dental technicians did not know whether or not they had antibody. This suggests that all types of dental workers except dental hygienists have low awareness of whether or not they have antibody. 4. In a survey on the relation between general characteristics of subjects and the sterilization of dental equipment, alcohol disinfection of high speed handpiece and low speed handpiece was most common among dental workers aged 29 or younger, and all of those aged over 40 used autoclave. By position, alcohol disinfection was used most commonly for high-speed handpiece. antiseptic solution deposition for disposable suction lips, and autoclaving for impression. By workplace, dental workers at university hospitals used autoc1aving most frequently for high/low speed handpiece while those at dental hospitals and dental clinics used alcohol disinfection most frequently and even some respondents replied that they did not disinfect. For metal cups, workers at dental clinics and dental hospitals did not use any sterilizing method while those at university hospitals used autoclaving. For disposable suction tips, workers at dental clinics used antiseptic solution deposition and those at dental hospitals used alcohol disinfection but some respondents replied that they did not disinfect. For metal suctions and impression trays, autoclaving was most common in all workplaces but some dental clinics replied that they did not disinfect impression trays. According to work experience, alcohol disinfection was most common for high/low speed handpiece. For disposable suction tips, dental workers with 3 years' or shorter work experience, those with 3~6 years' experience and those with 9~12 years' experience used antiseptic solution deposition most commonly, and many of those with 6~9 years replied that they did not disinfect. The results of this study stated above suggest that systematic education is necessary for all dental workers for enhancing th eir awareness of B-type hepatitis and the prevention of infection. Moreover, dental workers are required to make efforts to prevent infection with B-type hepatitis voluntarily and actively.
Purpose: This study aimed to evaluate the effectiveness of a dielectric barrier discharge (DBD) plasma module for sterilizing airborne bacteria in indoor spaces and measure the concentration of ozone generated during plasma discharge. Method: The DBD plasma module was installed in a 76m3 space, and air samples were collected under various discharge times to compare the reduction of airborne bacteria. Result: The results showed a significant decrease in airborne bacteria, ranging from 92.057% to 99.999%, with an average ozone concentration of 0.04 ppm, below the reference value. Conclusion: The study suggests that plasma discharge can be used as a means of preventing the spread of airborne bacteria and viruses, while ensuring safety for human exposure.
