A Survey Of Infant Feeding Practices In Seoul, 1991. (영아의 수유 및 보충식에 대한 조사연구)

  • A survey of infant practices was conducted to provide information on which to base planned nursing interventions. The subjects were a convenience sample of 168 mothers visiting out - patients departments of five general hospitals and one public health center in Seoul for immunizations or treatment for common colds for their infants from two to 12 months of age. Data collection was carried out from July 8th to September 30th, 1991 using a questionnaire of 84 questions, 31 on the type of feeding, 22 on supplementary feeding and 21 on demographic infer mation. The results are summarized as follows : 1) The type of feeding was primarily artificial feed-ing (63.1%), followed by mixed feeding (22%) and breast feeding (14.9%) of the 59 mothers expecting during pregnancy to breast feed, 54. 2% changed artificial feeding and 30.5% went on to breast feed as they had expected. For mothers expecting to continue breast feeding over seven months. only one infant was being breast fed for over seven months. 2) For the 106 mothers using artificial feeding, 70. 8% hed attempted breast feeding, 64% of them for less than a month. Breast milk had been suppressed by for medication (38.7%) : 34.9% had used no specia] means. 3) The major reasons for replacing breast feeding with artificial feeding were the infants' demand for more milk (47.2% ) and insufficient supply of breast milk (49.3%). 4) Most mixed feeding was started at the age of one to three months (59.5%). Only 34.4% gave an artificial feeding after breast feeding : most (46%) alternated breast feeding with artificial feeding. On the whole, the motive for mixed feeding was the lack of breast milk (70.3%). 5) Many mothers (81.8%) were adding vitamin or mineral supplements to artificial milk and 51.5% were adding something to faciliate digestion. As for the method of sterilizing milk bottles and nipples, 56% had sterilized them together in boiling water from the beginning : 27% were just washing the bottles after boiling only once initially when measuring artificial milk powder, 31. 5% of the mothers over filled the measuring spoon rather than to the level. 6) The mother's occupation was related to her way of feeding. Mothers at home full time did more breast feeding than mothers employed outside the home. (x²=5.72, p=〈0.05). 7) Most mothers began supplementary food, from three to four months (48.8%) : 11.2% began later than seven months. Supplementary food was given between milk feedings by 67.2% of the mothers : 19.2% gave it before a milk feeding. Some mothers(26.4%) made their own supplementary food : 19.2% used ready - made supplementary food products for convenience. Recommendations for nursing interventions included : 1. Prenatal education about the advantages of breast feeding and breast care, and home visits after delivery for counselling related to breast feeding. Correct preparation of artificial feeding methods need to be taught in both pre & postnatal periods. In addition, specific education about supplementary feeding needed. 2. Further research is indicated about the Perceived lack of supply of breast milk and about the effectiveness of nursing interventions to Promote breast feeding.

Effect of Various Presoaking Treatments on the Microbial Contamination and Germination Ratio of Soybeans (다양한 침지처리가 대두의 미생물 오염 및 발아율에 미치는 영향)

  • The presoaking conditions of soybeans in various solution for decreasing microbial contamination and improving germination were investigated. Soybeans were treated with presoaking solutions (sterilized water, 0.1% grape fruit extract, 0.1% vitamin $B_1$ derivate solution AS5 and vitagen) at $25^{\circ}C,\;35^{\circ}C,\;45^{\circ}C\;and\;55^{\circ}C$ for $3\sim12$ hr and germinate at $25^{\circ}C$, 95%RH for 3 days. Total bacterial count and coliform count of soybeans were $6.0\times10^5CFU/g$ and $3.0\times10^5CFU/g$, respectively, and the most of presoaking treatments decreased the microbial contamination. The increase of presoaking time induces low germination ratio compared with unsoaked soybeans and the germination of soybeans was not detected at $55^{\circ}C$. The germination of soybeans was effected by presoaking solutions, temperature, and time. The optimal presoaking condition for decreasing microbial contamination and promoting initial germination was using grape fruit extract at $35^{\circ}C$ for 6 hr.

Optimal Culture Conditions and Food Waste Decomposition Effects of Mixed Strains Separated from Traditional Fermented Food and Soils (전통발효식품과 토양으로부터 분리된 혼합균주의 최적생육조건 및 음식물쓰레기 분해 효과)

  • In this study, for the purpose of decomposing food waste, the strain was screened from traditional fermented food and soils. The enzyme activity (protease, amylase, cellulase, lipase) experiment was carried out using the paper disc method in 212 strains isolated from 5% NaCl media. Among them, only the strains having enzyme activity of more than 2 (soil) or more than 4 (traditional fermented food) with the halozone of enzyme activity of 15 mm or more were selected first, and microorganism identification through 16S rRNA sequencing was performed. Finally, were identified such as Bacillus subtilis, Bacillus amyloliquefaciens, Bacillus siamensis, Bacillus licheniformis, Bacillus aquimaris, Bacillus megaterium, Bacillus koreensis, Bacillus stratoshericus, Bacillus aryabhattai, Bacillus safensis, Marinobacter hydrocarbonoclasticus. 11 species of mixed strains were confirmed that the culture time was 24 hours, the incubation temperature was $30^{\circ}C$ and the optimum pH was 7.0. In order to confirm the degree of decomposition of standard food wastes (100 g) by treating 11 kinds of mixed strains (25%), solid content of more than $2000{\mu}m$ was determined to be 103 g for the sterilized water group and 18 g for the mixed strains group. And the rest was decomposed to a size of less than $2000{\mu}m$.

A Study on the Tracking of Count-Based Volumetric Changes in Nuclear Medicine Imaging (핵의학 영상에서 계수기반 체적변화 추적에 관한 고찰)

  • Purpose: Quantitative analysis through count measurement in nuclear medicine planar images is limited by analysis techniques that are useful for obtaining various clinical information or by organ overlap or artifacts in actual clinical practice. On the other hand, the use of SPECT tomography images is quantitative analysis using volume rather than planar, which is not only free from problems such as projection overlap, but also has excellent quantitative accuracy. In the use of developing SPECT quantitative analysis technology, this study aims to compare the accuracy of quantitative analysis between ROI of the conventional planar images and VOI of the SPECT tomographic images in evaluating the count change happened by the volume change of the source. Materials and Methods: A 99mTcO4- source(200.17 MBq) was filled with sterilized water in the syringe to create a phantom with an inner diameter volume of 60 cc, and a planar image and a SPECT image were obtained by reducing the volume by 15 cc (25%) respectively. ROI and VOI(threshold: 1~45%, 5% interval) were set for each image obtained to estimate true count and measure the total count, and compared with the preseted volumetric change rate(%). Results: When volume changes of 25%, 50%, and 75% occurred in the initial volume of 60 cc(100%) of the phantom, the average count changes of the measured planar image were 26.8%, 53.2%, 77.5%, and the average count changes of the SPECT image were 24.4%, 50.9%, and 76.8%. In this case, the VOI size(cm3) set showed an average change rate of 25.4%, 51.1%, and 76.6%. The highest threshold value for the accuracy of radioactive concentration by VOI size (average error -1.03%) was 35%, and the VOI size of the same threshold had an error of -17.1% on average compared to the actual volume. Conclusion: On average, the count-based volumetric change rate in nuclear medicine images was able to track changes more accurately using VOI than ROI, but there was no significant difference with relatively similar value. However, the accuracy of radioactive concentration according to individual VOI sizes did not match, but it is considered that a relatively accurate quantitative analysis can be expected when the size of VOI is set smaller than the actual volume.

Effects of Storage Temperature on the Survival of Vibrio mimicus K-1 in Seawater and Arkshell (해수와 피조개에서 Vibrio mimicus K-1의 생존에 대한 보관온도의 영향)

  • The cell density changes of Vibrio mimicus K-1 in sea water and arkshell feeding it were examined at various temperature. The strain was suspended in sterilized sea water and storaged at experimental temperature $(5,\;10,\;15,\;20,\;and\;28^{\circ}C)$). At intervals of up to 10 days, aliquots of each suspension were plated onto BHI agar. At 5 and $10^{\circ}C$, the plate counts of V. mimicus K-1 showed a rapid decline, which 3s known to be a reault of this bacterium's entering into the viable but non culturable state. At 20 and $28^{\circ}C$, however, V. mimicus K-1 are stable over the 10 days experimental periods. V. mimicus K-1 was fed to arkshell, which was subsequently stored at temperatures ranging from 5 to $20^{\circ}C$ for 10 days. The samples of arkshell were homogenized and plated at intervals to determine the cell density of V. mimicus K-1 and total aerobic population of bacteria present. At 5 and $10^{\circ}C$, the numbers of V. mimicus K-1 in sea water rapid decreased over the 10 days experimental periods. However, little change of V. mimicus K-1 density was observed in shellstock arkshell at 5 and $10^{\circ}C$. While, V. mimicus K-1 density was decreased more rapidly to level below limit of dectection in shucked arkshell at same temperature. Incubation at the higher temperature $(20^{\circ}C)$ resulted in large increase in total aerobic bacterial number of shellstock arkshell. These results suggest that even with proper storage, indigenous levels of V. mimicus may remain sufficiently high in shellstock arkshell to produce infection in compromise hosts.

Bacteriocidal Effects of Ultraviolet Irradiation for Reducing Bovine Mastitis Derived from Environmental Contamination (우분뇨 유래 젖소 유방염 저감을 위한 자외선 조사 살균의 효과 규명)

  • Bovine mastitis is an important disease causing serious economic loss in dairy production and food poison in public health. The major causative agents of bovine mastitis include Escherichia coli (E. coli), Streptococcus agalactiae (S. agalactiae), Staphylococcus aureus (S. aureus). These bacteria were found in milk and environmental condition such as feces, water, soil and so on. Recently, many cases of mastitis are derived from environmental contamination of micro-organisms, which important factors for the spread of this disease in farm. Ultraviolet irradiation (UV) has been used as disinfection for waste and water in clinical and industrial facilities. Moreover the UV irradiation has been used as useful bactericidal agents to remove bacterial biofilms in environmental condition. In this study, we determined the bacterial replication in different percentage of water content (PWC) in sterilized saw dust and feces complexes from farm, and results showed that slightly decreased growth pattern of E. coli and S. agalactiae but increased growth pattern of S. aureus in various PWC (200, 400 and 600%) until 144 h incubation. In the bacteriocidal effect of UV irradiation to bacteria in saw dust and feces complex, the results showed that bacteriocidal effect was depended on the UV irradiation time, irradiation distance and PWC. Especially the antibacterial activity of UV irratiation is stronger in low PWC (50%), long time irradiation (50 sec), and short distance (5 cm) than other condition of this study. Furthermore UV irradiation with stirring showed increased the bactericidal effect compared without stirring. These results suggested that bovine mastitis causing agents may survive long time in environmental condition especially saw dust and feces complexes in farm and can cause a various disease including mastitis. Moreover, these data can be used as basis for application and development of UV disinfection to control of bovine mastitis from environmental contaminated bacteria in dairy farm.

Studies on Processing ana Keeping Quality of Retort Pouched Foods (3) Preparation and Keeping Quality of Retort Pouched Fried Mackerel Meat Paste (레토르트파우치식품의 가공 및 품질안정성에 관한 연구 (3) 레토르트파우치 튀김어묵의 제조 및 저장중의 품질안정성)

  • Processing conditions of retort pouched fried mackerel fish meat paste and quality stability during storage were investigated. The reasonable amounts of added ingredients to the frozen mackerel meat paste were $10\%$ of corn starch, $1\%$ of soybean protein, $1.5\%$ of sodium chloride, $0.6\%$ of monosodium glutamate, $0.3\%$ of alcoholic extract of red pepper, and $0.1\%$ of sodium erythorbate as an antioxidant and also added water corresponding to $10\%$ of the frozen mackerel meat paste. After grinding the defrosted mackerel fish meat paste with ingredients, the meat paste was molded in bar type and fried in soybean oil at $170-180^{\circ}C$ for 3 minutes. The fried mackerel meat paste was cooled, vacuum-packed in laminated plastic film bag (polyester/polyvinylidene chloride/unoriented polypropylene : $12{\mu}m/15{\mu}/50{\mu}m,\;14{\times}19cm$) and finally sterilized at $120^{\circ}C$ for 20 minutes in a hot water circulating retort. The pH, volatile basic nitrogen, moisture content, water activity, color, thiobarbituric acid value, peroxide value, texture and viable bacterial count of products were examined during 100 days of storage at $25{\pm}3^{\circ}C\;and\;5^{\circ}C$. The results showed that products could be preserved in good condition for 100 days at $25{\pm}3^{\circ}C$. Judging from sensory evaluation, the quality of products was not inferior to that of market products.

Studies on the Processing and Keeping Quality of Retort Pouched Foods (2) Preparation and Keeping Duality of Retort Pouched Seasoned-Oyster Products (레토르트파우치식품의 가공 및 품질안정성에 관한 연구(2) 조미굴 레토르트파우치제품의 제조 및 품질안정성)

  • In order to process instant foods which hold appropriate moisture contents and soft texture, four kinds of retort pouched seasoned-oyster products were prepared as control, seasoned products, solid smoked and liquid smoked product after seasoning and their processing conditions and quality stability during 100 days of storage were investigated. The optimum processing conditions of retort pouched seasoned-oyster product were as follows ; namely, raw oyster was seasoned at $105^{\circ}C$ for 10 min with seasoning solution prepared from sugar, sorbitol, salt, monosodium glutamate and 5'-ribonucleotide and then dipped for 30 seconds in Smoke-EZ solution(Alpha Foods Co., Ltd.) after predried for 30 min in hot-air drier. After. smoking, the seasoned and liquid smoked oyster was dried at $40-42^{\circ}C$ for 2.5 hours, vacuum packed in plastic film bag, and sterilized in a hot water circulating retort at $120^{\circ}C$ for 16 min. Comparing their quality before and after sterilization, TBA value of all the products after sterilization slightly decreased and among texture profiles hardness, toughness and chewiness slightly decreased, while elasticity and cohesiveness were rarely changed. Color value (a value) of the product treated with solid smoke or liquid smoke increased after sterilization. During storage pH, VBM and water activity of all products changed little and TBA values of the solid smoked product and liquid smoked one were lower than that of the others. Viable cell count was negative and texture changed little during storage. As for color difference during storage, green meat appeared on the surface of control and seasoned product after 15 days storage, while the masking of green meat could achieved by solid and liquid smoking treatment. And liquid smelling treatment was more effective than solid smoking. As a conclusion, retort pouched seasoned-oyster product treated with liquid smoke kept their good quality during 100 days storage and it seemed to be consumed as one of the instant foods which hold appropriate moisture contents and soft texture.

Cultivation Processes and Yield of Lentinula edodes on Surface Sawdust Bed (표고버섯의 지면 톱밥균상재배에 의한 재배과정과 수확)

  • The process of cultivation and production of oak mushroom (Lentinula edodes (Berk.) Pegler) on sawdust surface beds were investigated. Sawdust surface bed cultivation is the method by which oak mushrooms are cultured and produced on sterilized sawdust surface bed without using bags. The bed was made by inoculating with 3 to 1 ratio of bed sawdust to oak mushroom mycelial inoculum. The sawdust bed medium with 65% water content was pasteurized at $65^{\circ}C$, inoculated with sawdust spawn and spread on the surface on vinyl film in cultivation shed. During 78 days of cultivation period, water content in the medium varied from 61 to 72%, its pH decreased from 5.6 to 3.9~4.6 and ergosterol concentration increased to $0.33{\sim}0.59{\mu}g/g$. $CO_2$ concentration in the medium rapidly increased to 8.06% in two weeks. In seven weeks the medium surface started browning and $CO_2$ concentration increased to about 5.63%. Until 11th week the $CO_2$ concentration was maintained at 6~7%. After removing the plastic cover on the bed for ventilation in 12 weeks, $CO_2$ within the bed reduced dramatically to 1.5%. In the cultivation shed the internal temperature was $7.1{\sim}29^{\circ}C$ and humidity was 27.3 to 100%, while bed temperature ranged $11.6{\sim}30^{\circ}C$. Oak mushroom fruiting started from late July, in 120 days after bed establishment in late March and continued for approximately 100 days until early December with eight cycles of irrigation treatment. The mushroom yield of the eight cycles were 288~352 kg during the 1st (7/29~8/4) to 3rd cycle (9/3~9/7), 800 kg at the 4th cycle (9/19~9/24), 1,296~1,853 kg during 5th (10/3~10/8) to 7th cycle (4.11~11/9) and 990 kg at 8th cycle (11/23~12/7). Total production was approximately 7.4 tons from 33.0 tons of oak sawdust medium, thus harvest efficiency of the mushroom production was approximately 22.4%.

Reduction of the bacteria from fecal contaminated diapers through washing and heating (분변오염 기저귀에서 분리한 플라스틱과 펄프의 미생물 저감화)

  • Three different methods (simple washing of plastic and pulp sample, washing after direct heating of the diapers, and the heating after washing of plastic and pulp sample) were carried out to decrease total coliforms and heterotrophic plate count (HPC) in the diaper's plastic and pulp. Plastic and pulp samples were obtained from diaper by treatment with 10% $CaCl_2$ and 4% sea salt water, dilution with 1,000 ml tap water, and draining by using sieves. Three times washing was the most appropriate for the reduction of microorganisms in plastic and pulp. By three times washing, the number of total coliforms in the plastic and pulp samples showed 92.8% and 99.8% of decrease, respectively, and the number of HPC showed 97.3% of decrease in the plastic and 98.5% of decrease in the pulp. The washing after direct heating of the fecal contaminated diapers was not effective because HPC in the plastic and pulp samples were still detected about 2-3 log CFU/g in the plastic and 1-2 log CFU/g in the pulp, respectively, even after heating at $60^{\circ}C$, $80^{\circ}C$, $100^{\circ}C$ for 12 h. Meanwhile, total coliforms and HPC were completely sterilized at $80^{\circ}C$ for 4 h by heating after washing of plastic and pulp samples, suggesting that this method was the most appropriate method for the reduction of microorganisms in plastic and pulp obtained from fecal contaminated diapers.
