녹두전분과 감자전분 복숭아편의 질감과 관능적 특성 (The Effect of Addition of Mungbean Starch and Potato Starch on the Textural and Sensory Characteristics of Peach Pyun)

  • This study was evaluate of chemical properties. textural charact6eristics and sensory properties prod-uced peach pyuns through the change of gelling agents such as mungbean starch potato starchy and pec-tin and of sugar density with 10%, 20%, and 30%. Sensory evaluation was that peach pyun added mun-gbean starch was more preferable in appearance and texture than peach pyun added potato starch. Peac-h pyun added 0% pectin was more preferable than peach pyun with 1% pectin. As a result of texture analysis the texture of peach pyun added mungbean starch was denser than that added potato starch. Adding 1% pectin to peach pyun increased mechanical properties such as hardness and chewiness. Mun-gbeaan starch pyun with pectin on lightness Potato starch pyun with pectin on redness and potato star-ch pyun with pectin on yellowness were significant(p<001). Lightness has a tendency to decrease with increasing sugar density. Adding 1% pectin has the effect to increase lightness redness and yellowness. The subject parameters that effect overall quality on sensory evaluation were found taste quality tex-ture quality hardness adhesiveness and taste by using regression analysis.

  • Solubility and degree of swelling of the starch were about 15% and 30%, respectively when the starch in agueous solution was heated at 90$^{\circ}C$ for 30minutes. The starch showed no singnificant differences in the degree of swelling and soblubility with a growing period of ginseng. The starch was begun gelatinize at 50-55$^{\circ}C$ and completed at 65-70$^{\circ}C$ by the amy tical methods of X-ray diffraction, disappearance of crystalinity. Brabender angly lographic analysis and amylase digestion test. The maximum and minimum peak viscosities of 10% starch solution were 5.500 B.U and 1960 B.U, respectively. The starch showed no significant differences in pasting temperature, maximum and minimum viscosities on amylogram with a growing period of ginseng. The intrinsic viscosities of the starch and amylose were 0.54 and 1.5-1.9, respectively.

타피오카 전분을 첨가한 모과편의 품질 특성 (Quality Characteristics of Mokwapyun Containing Various Amount of Tapioca Starch)

  • The purpose of this study is to evaluate chemical properties, textural characteristics and sensory properties which produces the mokwapyun from the tapioca starch. The mokwapyun-added tapioca starches hold higher moisture contents than mung bean starches. And, the ratios of tapioca starch indicate differences in the study (p<.001). The pH increases with the increasing amounts of tapioca starch and acidity measurement decreases as amount of tapioca starch increases. The 0% addition of tapioca starch is the highest for lightness and 20% addition of tapioca starch is the lowest. Both the redness and yellowness are being increased with increases in the addition of tapioca starch. According to the results of texture, 0% addition of tapioca starch is the highest for hardness, springiness and chewiness of mokwapyun which increases with additional percentages of tapioca starch. Nevertheless, it decreases the cohesiveness and brittleness due to increases in the percentage of tapioca starch. According to the result of DSC analysis, the more tapioca starch added to the mokwapyun, the higher the To, Tp, Tc temperatures become. The result of this study shows that the right contents of tapioca starch with 15% additions make positive acceptability, prepared sensory and machinery characteristics.

마(Dioscorea batatas DECAISNE)전분의 Rheology 및 열적 특성에 관한 연구 (Study on Rheological and Phermal Properties of Dioiscorea batatas DECAISNE Starch)

  • The purpose of this study was to investigate the rheological and thermal properties of yam starch. Yam starch had a hydrodynamic volume with the intrinsic viscosity,[$\eta$], of 0.29dl/g deionized water. The values of the intrinsic viscosity of yam starch, determined to pH 2-11, varied between 0.07 to 0.18 dl/g. The highest intrinsic viscosity was obtained at pH 7. At salt concentrations 0-0.2 M NaCl, the intrinsic viscosity of yam starch was decreased up to 0.05 M NaCl concentration then increased to 0.07 M NaCl concentration and remained constant to reach 0.2 M NaCl concentration. The overlap parameter, calculated with the intrinsic vicosity data, was 3.45 g/dl in deionized water. The thermal properties of yam starch were investigated by Differential Scanning Calorimetry. Three endotherms were observed both pH solution and salt concentation. In the presence of pH 9, the onset temperature of gelatinization peak was the lowest temperature of 50.$32^{\circ}C$ and the enthalpy ($\Delta$H) was increased in this solution. The effect of salt on the thermal properties of yam starch was determined at salt concetration of 0-0.2 M NaCl. The enthalpy significantly decreased to salt concentration 0.07 M NaCl and the lowest onset temperature of this concentration was 52.$90^{\circ}C$.

  • 탈지한 분질과 점질 감자전분의 형태 및 크기, 이화학적 성질, 호화 특성을 생전분과 비교하였다. 감자전분 입자는 복굴성을 갖는 원형이나 타원형으로 평균 크기가 $22.5~29.8\mu\textrm{m}$이었다. 물결합 능력, 팽윤력 및 용해도는 남작 전분이 데지마 전분보다 낮게 나타났으며 탈지 후에는 두 전분 모두 물결합 능력과 용해도는 감소하였으나 팽윤력은 약간 증가하였다. X-선 회절도에 의한 상대적 결정도는 탈지 후에 다소 감소하였다. 남작과 데지마 생전분의 blue value는 각각 0.37과 0.35이었으나 탈지 후 0.29및 0.28로 낮아졌다. 광투과도는 생전분보다 탈지전분이 더 높았다. DSC에 의한 호화 개시 온도는 생전분의 경우 남작 전분이 데지마 전분보다 높게 나타났으며 생전분의 호화엔탈피도 남작 전분이 더 컸으나 탈지후에는 두 전분 모두호화 엔탈피가 감소하였다.

  • High loading of printing and writing grades with fillers has many advantageous aspects in papermaking because it allows decreasing fiber use and reducing manufacturing cost. High loading technology, however, has some disadvantageous aspects as well. It decreases physical properties of papers, especially strength properties. The problem associated with high loading can be reduced by applying surface sizing starch solution onto paper surface. It is important to control the penetration of the surface sizing starch solution into paper web to obtain the desired property improvement. In this study, the effect of the addition of two polymers into starch solution on paper properties has been examined. PVOH and polyDADMAC were used as polymeric additives for surface sizing with oxidized starch. Viscosity of starch solutions and surface roughness of dried starch films on glass slides showed that some interactions between polymeric additives and oxidized starch have been occurred and the most extensive interaction with starch solution was obtained with high molecular weight polyDADMAC. Low molecular weight PVOH was most effective in improving folding endurance and internal bond strength. On the other hand, polymer addition showed no effect on surface strength of paper. This indicates that not the level of starch holdout but the bonding strength of starch itself has predominant influence on surface strength of paper.

Durian 종자 전분의 이화학적 특성 (Physicochemical Properties of the Durian Seed Starch)

  • Durian 종자 전분의 입자크기범위는 약 $2.0-10.0\;{\mu}m$ 이었으며 구형과 다각형의 형태를 갖고 있었다. Durian종자, 옥수수, 고구마, 감자전분의 아밀로오스 함량은 28.3%, 27.5%, 20.3% 및 21.7%이었다. Durian 종자, 옥수수, 고구마, 감자전분의 blue value는 0.370, 0.368, 0.332 및 0.338이었으며, 알칼리도는 7.39, 9.02, 7.08 및 5.43이었다. Durian 종자 전분의 팽윤력과 용해도는 감자전분보다 낮았다. Durian 종자자전분의 X-선 회절도에 의한 결정성은 곡류전분과 같은 A형이었다. RVA로 측정한 durian 종자 전분의 호화개시온도 $(76.6^{circ}C)$는 옥수수$(73.0^{circ}C)$, 고구마$(72.3^{circ}C)$, 감자전분 $(70.2^{circ}C)$보다 높았으며 breakdown은 낮은 반면 setback은 높았다.

Textural Properties and Structures of Wheat and Maize Starch-Gum Mixed Gels During Storage

  • Effects of commercial and lab-generated gellan gums on the textural properties, structure, and aging of wheat and maize starch gels were investigated using a rapid visco-analyzer (RVA), rheometer, scanning electron microscope (SEM), and X-ray diffractometer. Gellan and guar gums increased the peak and final viscosities, but xanthan gum and gum arabic reduced them. The maize starch had higher breakdown viscosity than the wheat starch, regardless of the type of gum. The hardness of all starch gels increased during storage, but their cohesiveness and springiness decreased. The degree of the gel hardness showed higher in maize starch than in wheat starch and the effect of gum addition had a difference with gum type. The wheat starch-guar and -gellan gum mixed gels showed higher elasticity and cohesiveness after storage. The starch-gellan gum mixed gels had dense and stable network structures, and were well maintained even after 7 days of storage. Most of the gums had anti-aging effect on X-ray diffraction pattern of starch gels.

탈지옥수수와 녹두전분겔의 특성 (Characteristics of Defatted Corn and Mung Bean Starch Gels)

  • 묵과 같은 텍스쳐 특성을 갖는 전분겔을 제조하고자 옥수수전분과 녹두전분을 탈지하여 전분겔을 제조한 다음 실온에서 24시간과 72시간 저장하면서 관능검사와 기계적 검사를 실시하였다. 관능검사에 의한 물성특성에서는 녹두전분겔은 탈지에 의해 관능적인 특성치에 큰 변화가 없었으나 탈지옥수수전분겔은 옥수수전분겔과 유의적인 차이를 보였으며 녹두전분겔과 비슷한 물성특성을 보였다. 기계적 검사에 의한 텍스쳐 특성에서는 탈지옥수수전분겔은 옥수수전분겔에 비하여 견고성이 매우 높았고 녹두전분겔과는 차이를 보이지 않았으며 응집성과 탄성에서는 녹두전분겔이 옥수수전분겔보다 높았다. 옥수수전분겔과 녹두전분겔은 모든 기계적 특성치에서 유의적 차이를 보였으나 견고성에서는 탈지옥수수전분겔과 녹두전분겔이 유의 차이를 보이지 않았다.

  • 폴리락트산과 상용성을 높이기 위해 전분에 무수 말레산을 그래프팅한 변성 전분을 제조하여 폴리락트산과 혼합하였다. DSC와 TGA 열적거동에서 폴리락트산/변성 전분 혼합체는 폴리락트산에서 관찰되는 172$^{\circ}C$에서의 용융 피크 외에 1$65^{\circ}C$에서 새로운 용융 피크가 관찰되었으며, 열분해 곡선에서는 폴리락트산/변성 전분 혼합체의 분해 온도가 보다 완만하게 감소되는 것으로 나타났다. 또한 기계적 강도의 측정에서는 폴리락트산/변성 전분이 폴리락트산/전분 혼합체와 비교하여 탄성률이 약 12% 증가하였으며, 이는 SEM 이미지에서 나타난 바와 같이 폴리락트산과 변성 전분의 계면 접착력이 향상되었기 때문으로 사료된다.
