Effect of Paprika Powder on the Antioxidant Capacity of Emulsion-Type Sausages

  • Antioxidant activity of freeze-dried paprika powder and storage properties of emulsion-type pork sausages containing diverse concentrations of this powder (0%, 1%, 2%, and 3%) were analyzed. Antioxidant activities of red and yellow paprika powders were analyzed by evaluating their 2,2-diphenyl-1-picrylhydrazyl (DPPH) radical scavenging activity, ferric reducing antioxidant power (FRAP), total phenol content (TPC), and total flavonoid content (TFC). The yellow paprika powder exhibited remarkably higher DPPH radical scavenging activity, FRAP values, and TPC than the red paprika powder (p<0.05), while TFC showed no remarkable difference between them (p>0.05). Storage properties of sausages containing the yellow paprika powder were analyzed by evaluating their water holding capacity, cooking yield, and thiobarbituric acid reactive substance (TBARS), and volatile basic nitrogen (VBN) values. The 3% yellow paprika powder group showed remarkably higher water-holding capacity and cooking yield compared to the 0% group (p<0.05). TBARS values were remarkably lower in the 2% and 3% yellow paprika powder groups than in the 0% group at all weeks (p<0.05). VBN value was remarkably lower in the 3% yellow paprika powder group than in the 0% group at all weeks (p<0.05). Overall, addition of 3% yellow paprika powder improved the storage properties of emulsion-type sausages.

축산식품 중 아미노글리코사이드계 항생제 잔류량 분석 및 실태조사 (Analysis and Monitoring of Residues of Aminoglycoside Antibiotics in Livestock Products)

  • 본 연구에서 개발된 시험법은 고감도를 가지고 선택성이 뛰어난 LC/MS/MS를 이용함으로서 한번의 시료 전처리와 동시 분석을 통하여 아미노글리코사이드계 항생제 5종의 잔류량 분석을 가능케 하였다(15,16). 개발된 시험법은 CODEX의 가이드라인에 따라 검량선의 직선성, 회수율, 정성한계 및 정량한계, 정확성 및 정밀성 등을 고찰하여 시험법의 실효성을 검증하였다. 확립된 시험법을 이용하여 돼지고기, 닭고기, 쇠고기 등 총 250건을 분석한 결과 5건이 검출되었으며 검출율은 2%로서 검출된 양은 모두 각각의 잔류허용기준보다 낮은 수준이었으나 한 시료에서 겐타마이신과 디하이드로스트렙토마이신이 동시 검출되었다. 이 결과는 여러 종류의 항생제들을 동시에 처방하고 있다는 사실을 입증하고 있다. 그러나, 기기분석을 이용하여 아미노글리코사이드계 항생제의 잔류량 실태조사 결과 검출율 및 검출량이 낮은 안전한 수준이었다.

  • 본 연구는 축산물에 사용되는 식용유지의 기준설정을 위하여 모니터링을 실시하였다. 축산물에 사용되는 유지(대두유, 카놀라유, 팜유, 돈지)를 선정하여 식품공전에 고시되고 있는 규격과 비교하여보았다. 상관관계를 구축하여 축산물에 사용되는 식용유지와 일반식품에 사용되는 식용유지의 신선도여부를 파악하였으며, 축산식품과 일반식품의 사용유지 실험값 비교분석을 통한 식품공전에 따른 유지기준(산가 2.5 mg KOH/g 이하, 과산화물가 50 meq/kg 이하)을 축산물에도 적용 가능한 지의 여부를 검토하였다. 또한 튀김유지 뿐만 아니라, 유지별 튀김횟수에 따른 튀김식품에 대한 산가, 과산화물가 값을 측정하여 축산물(돈까스)이 일반식품(냉동감자)보다 적은 튀김횟수에서 일반식품의 산가 기준치(5.0 mg KOH/g), 과산화물가 기준치(60 meq/kg)에 도달하는 것을 알 수 있었다. 따라서 본 연구를 통하여 축산물에 사용되는 유지의 기준 규격마련을 위한 기초자료로 사용될 수 있다.

Dietary intake of fats and fatty acids in the Korean population: Korea National Health and Nutrition Examination Survey, 2013

  • BACKGROUND/OBJECTIVES: The aim of this study was to estimate average total fat and fatty acid intakes as well as identify major food sources using data from the Korea National Health and Nutrition Examination Survey (KNHANES) VI-1 (2013). SUBJECTS/METHODS: Total fat and fatty acid intakes were estimated using 24-hour dietary recall data on 7,048 participants aged ${\geq}3years$ from the KNHANES VI-1 (2013). Data included total fat, saturated fatty acid (SFA), monounsaturated fatty acid (MUFA), polyunsaturated fatty acid (PUFA), n-3 fatty acid (n-3 FA), and n-6 fatty acid (n-6 FA) levels. Population means and standard errors of the mean were weighted in order to produce national estimates and separated based on sex, age, income, as well as residential region. Major food sources of fat, SFA, MUFA, PUFA, n-3 FA, and n-6 FA were identified based on mean consumption amounts of fat and fatty acids in each food. RESULTS: The mean intake of total fat was 48.0 g while mean intakes of SFA, MUFA, PUFA, n-3 FA, and n-6 FA were 14.4 g, 15.3 g, 11.6 g, 1.6 g, and 10.1 g, respectively. Intakes of MUFA and SFA were each higher than that of PUFA in all age groups. Pork was the major source of total fat, SFA, and MUFA, and soybean oil was the major source of PUFA. Milk and pork were major sources of SFA in subjects aged 3-11 years and ${\geq}12years$, respectively. Perilla seed oil and soybean oil were main sources of n-3 FA in subjects aged ${\geq}50years$ and aged < 50 years, respectively. CONCLUSIONS: Estimation of mean fatty acid intakes of this study using nationally represented samples of the Korean population could be useful for developing and evaluating national nutritional policies.

LC-MS/MS를 이용한 육류 중 페니실린계 항생제 8종의 동시분석 및 적용성 검증 (Simultaneous Determination of Penicillin Antibiotics in Meat using Liquid Chromatography Tandem Mass Spectrometry)

  • 본 연구에서는 LC-MS/MS를 이용하여 페니실린계 동물용의약품 8종, 암피실린, 아목시실린, 클록사실린, 디클록사실린, 나프실린, 옥사실린, 페니실린 G, 페니실린 V의 동시분석법을 확립하고 잔류실태조사를 수행하였다. 피페라실린을 내부표준물질으로 적용하였으며, 이동상으로는 0.05% 포름산 용액와 0.05% 포름산 아세토니트릴 용액을 gradient mode로 사용하였고 $C_{18}$ 칼럼을 이용하여 분석하였다. 각 분석물질은 MRL의 0.25, 0.5, 1, 2, 4, 8배 농도범위에서 검량선을 작성하여 $R^2{\geq}0.99$의 직선성 및 재현성을 확인하였다. 소고기, 돼지고기, 닭고기에 대하여 MRL의 0.5, 1, 2배인 세 가지 농도에서 6회 반복으로 분석을 실시한 결과, 평균 회수율은 71.0~106%, 상대표준편차는 4.0~11.2%, LOD는 0.003~0.008 mg/kg, LOQ는 0.01~0.03 mg/kg이었다. 국내 유통 소고기, 돼지고기, 닭고기에서 페니실린계 항생제 8종의 분석결과, 총 193건 중 경기도 지역의 국내산 소고기 1건에 대해서 클록사실린이 MRL 이하인 0.08 mg/kg이 검출되었으며, 나머지 192건의 검체에서는 불검출로 분석되었다. 본 연구를 통하여 확립된 페니실린계 동물용의약품 8종 동시분석법은 식육에 대한 페니실린계 동물용의약품의 안전관리 체계 방안을 제시하기 위한 기초자료로 활용 가능한 것으로 사료된다.

Development of Analytical Method and Monitoring of Veterinary Drug Residues in Korean Animal Products

  • This study was conducted to determine the residual amount of veterinary drugs such as meloxicam, flunixin, and tulathromycin in animal products (beef, pork, horsemeat, and milk). Veterinary drugs have been widely used in the rearing of livestock to prevent and treat diseases. A total of 152 samples were purchased from markets located in major Korean cities (Seoul, Busan, Incheon, Daegu, Daejeon, Gwangju, Ulsan and Jeju), including Jeju. Veterinary drugs were analyzed by liquid chromatography-tandem mass spectrometry according to the Korean Food Standards Code. The resulting data, which are located within 70-120% of recovery range and less than 20% of relative standard deviations, are in compliance with the criteria of CODEX. A total of five veterinary drugs were detected in 152 samples, giving a detection rate of approximately 3.3%; and no food source violated the guideline values. Our result indicated that most of the veterinary drug residues in animal products were below the maximum residue limits specified in Korea.

초등학교 고학년 학생의 성별, 학년별, 체형인식도와 식행동 및 식품기호도 비교 (Grade and Gender Differences in Dietary Behavior, Food Preference and Perception about Body Image of 4,5 and 6th Grade Students in Elementary School)

  • This study was undertaken to assess grade and gender differences in dietary behavior, food preference and perception about body image of students in 4, 5 and 6th grades in elementary school in Kwangju. Anthropometric data showed that mean height and weight were $137.98{\pm}6.79cm\;32.69{\pm}6.09kg$, in the 4th grade, $144.11{\pm}6.91cm,\;36.88{\pm}7.60kg$ in the 5th grade and $151.52{\pm}7.47cm,\;42.68{\pm}8.06kg$ in the 6th grade. Height and weight of male and female students of each grade were very similar to those of the Korean standard Growth data. Females in the 5th and 6th grades were taller than those in male students, which suggested the height growth spurt in females. Furthermore, both genders showed marked variability even in the same group. All the three different obesity indices(BMI, Rohrer and % of ideal body weight) showed higher value in males than in females consistently. Male respondents desired taller and heavier body shape while females perceived they were heavy and desired only taller and thinner body image. There were significant differences in satisfaction with height, weight and body image by grade(p<0.05). 36.7% of subjects responded that they did not eat despite hunger. In higher grade they felt guilty after eating sweet things. Strikingly, it was noted a small number of students tried to take a diet pills or vomited on purpose. Data on food preference showed that female did not like sweet food and pork. While male students preferred red meat and chicken. Thus result indicated that there was a great difference in food preference by gender.

식육 중 메타미졸 잔류물의 LC/MS/MS 시험법 개발 (Analytical method development for residual metamizol in meat using LC/MS/MS)

  • 본 연구에서는 쇠고기 및 돼지고기 중 의약품인 메타미졸(metamizol)의 잔류량을 LC/MS/MS를 이용하여 정량하는 방법을 개발하였다. 분석은 그 주대사체인 4-methylaminoantipyrin (MAA)을 대상으로 하였으며, 식육에서 acetonitrile로 추출하여 간단한 정제를 거쳐 multiple reaction monitoring (MRM) 법으로 분석하였다. 정량을 위해 바탕시료에 MAA를 첨가한 식육을 추출하여 검정곡선을 작성하였다. MAA의 검량선의 결정계수는 위 두 가지의 시료에 대해 > 0.99 이었다. 개발된 시험법으로 본 실험실 내에서 6회 반복실험을 실시하였고 타 기관 두 곳에 의뢰하여 실험실간 비교 시험을 실시하였다. 쇠고기 분석의 실험실내 정확도는 78-102% (CV 5.5-9.1%), 실험실간 정확도 98% (CV 14%), 돼지고기 분석의 실험실내 정확도는 95-99% (CV 3.9-5.6%), 실험실간 정확도는 111% (CV 13%)를 보였다.

Estimate of Vitamin $B_6$ Intake and Major Dietary Sources of Vitamin $B_6$ in Children Aged 7-12 Years in the Seoul Area

  • The dietary vitamin $B_6$ intake of 185 Korean children aged 7-12 years (y), who showed no health problems, in the Seoul area and its sources were estimated using a modified Korean vitamin $B_6$ database. The age and sex of each subject was classified according to the classifications in the Korean Recommended Dietary Allowance (RDA). Dietary vitamin $B_6$ intake and food sources were estimated using the three-day recall method with the help of a trained interviewer. Food portion sizes were estimated by using standard household measures and published average portion sizes. The average daily vitamin $B_6$ intake was 1.69$\pm$0.50 mg/d in children aged 7-9 y, 1.86$\pm$0.44 mg/d in male children aged 10-12 y and 1.77$\pm$0.62 mg/d in female children aged 10-12 y. Less than 5% of the subjects consumed less than the Korean RDA of vitamin $B_6$. The average ratio of vitamin $B_6$intake to daily protein intake was 0.028$\pm$0.006 mg/g in children aged 7-9 y, 0.028$\pm$0.004 mg/g in male children aged 10-12 y and 0.029$\pm$0.007 mg/g in female children aged 10-12 y. The intake of vitamin $B_6$ was significantly (p<.01) positively correlated to the intake of all other nutrients. Foods from animal and plant sources provided 37% and 73% respectively, of total vitamin $B_6$. Major dietary sources of vitamin $B_6$ in children in the Seoul area were rice, soybean sprouts, pork, beef, cereal, kimchi, milk, onions, and potatoes. As for major dietary sources of vitamin $B_6$, the top 20 foods provided nearly 73-75% of the total vitamin $B_6$ consumed by Korean children.

소득 수준에 따른 서울시 국민학생들의 가공.편의 식품류의 선택 경향에 관한 연구 (The Study on the Tendency of Consumption in some Processed Convenient Food according to Household Income Levels)

  • It has been many changes in traditional Korean food habits according to the improvement of household income levels and the rise of standard of living. Therefore, the pattern of consumption in animal origin processed/convenient foods would have changed. This research aims to find the tendency of consumption in some animal origin processed/convenient foods compared with typical Korean traditional foods according to household income levels. Therefore, this survey was made on 698 children from 10 elementary schools located in Seoul. They were divided into 6 groups according to their household income levels. The data were analysed using Chi-square test and F-test in SPSS package program. From this research, the following results were obtained: 1. Their average monthly household income levels were between 500, 000~1, 500, 000 won(64.2%) and their family were of mostly 4~5 members. There were no significant differences in children's physical status among various income groups. As the household. income level increases, the food expenditure per month increases and Engel's coefficient decreases. 2. The animal origin processed/convenient foods that have no significant differences are ham, sausage, milk, yogurt, canned fish, and fish meal. The high-income groups preferred bacon, cheese, pork cutlet, and fried chicken, compared to those of low-income groups. The low-income groups preferred crab-flavored meal, compared to those of high-income groups. 3. In some Korean traditional foods, there were significant differences according to income levels. Those were Bulgogi, baked fish, fried meat, cooked fish and meat with soy-bean sauce. Fried fish and anchovy have no significant differences in food intake frequency according to household income levels. Chicken and egg saute are liked by children in every income groups. 4. Between the animal origin processed/convenient foods and the typical Korean nonprocessed traditional foods, children preferred the former regardless of income levels. In conclusion, animal origin processed/convenient food consumption patterns were not affected by household income levels.
