호텔 양식당의 스타메뉴 개발에 관한 탐색적 연구 -서울지역 특1급 호텔을 중심으로- (A Exploratory Study on the Development of Star Menus in the Western Restaurants of the Hotels Focused on the Tourism Hotels in Seoul)

  • This exploratory study is to analyze the status of star menus and suggest the development strategy of star menus in the western restaurants of the tourism hotels in Seoul. The data was collected from the chefs who have been working over 15-years in tourism hotels in Seoul by judgement sampling. The questionnaire was composed of Miller and Pavesic's 'Fifty tips for a successful menu' and Khan's 'The evaluation of menu item development', The 30-menu items were selected from the 1st survey on the menu items that were high in both popularity and contribution margin by menu engineering method. The selected menu items were analyzed by 14 lists: simplicity, ready availability of ingredients, quality, flavor, presentation, preparation, service method, nutrition quality, preference, profitability, serving temperature, descriptive copy of menu and publicity. As a result of the study, appetizer category was recorded the highest score by 4.09. Smoked salmon, Tomato and mozzarella cheese, Cream of mushroom, Cream of asparagus, French onion soup, Grilled beef tenderloin, Grilled rib-eye steak, Roasted lamb rack, King prawn, Seafood spaghetti, Chef's salad, Caesar salad, Organic salad, Fruit plate, Italian tiramisu and Yogurt ice cream were recorded high score. The development strategy of star menu is belows : the menu writer must consider the productivity, effectiveness, popularity and profitability, the regular customers want varieties and creativity in the menu and the operators have to include the star menu items in the set menu.

한국인이 선호하는 음식점 한식 및 간편식품과 빵류의 비타민 $B_{12}$ 함량분석 연구 (Vitamin $B_{12}$ content analysis of favorite Korean restaurant foods, convenient foods and bakery products)

  • There is a limitation to estimate vitamin $B_{12}$ intake due to the lack of data on vitamin $B_{12}$ content of Korean commercial foods. In this study, vitamin $B_{12}$ content was determined in favorite Korean restaurant foods, convenient or instant foods, fast foods and bakery products through a modified microbioassay using Lactobacillus delbrueckii ATCC 7830. Bulgogi and seafood & green pepper griddle had high vitamin $B_{12}$ content, 3.50 and $2.96{\mu}g$/100 g, respectively. Pork suyook, pork griddle and pollack griddle had 0.48, 0.31 and $0.32{\mu}g$/100 g of vitamin $B_{12}$, respectively. In stew, soft-tofu stew with seafood and doenjang stew with seafood had relatively high vitamin $B_{12}$ content, 1.93 and $1.44{\mu}g$/100 g, respectively. Bibimbap and 4 different types of rice porridge, beef & mushroom, chicken & ginseng, seafood or abalone, had 0.36, 0.08, 0.09, 1.64 and $0.13{\mu}g$/100 g of vitamin $B_{12}$, respectively. One serving of haejanggguk, yookejang, chuotang and galbitang had 5.97, 2.04, 2.63 and $1.91{\mu}g$ of vitamin $B_{12}$, respectively. One serving of samgetang and sulongtang had $2.89{\mu}g$ and $6.64{\mu}g$ of vitamin $B_{12}$. In noodles, one serving of cram noodle soup, bibim-nangmyeon, and mul-nangmyeon had 18.8, 1.21 and $0.38{\mu}g$ of vitamin $B_{12}$, respectively. One regular gimbap and one triangle gimbap contained 1.09-2.53 and $0.54-1.11{\mu}g$ of vitamin $B_{12}$, respectively. One cheese-burger, chicken-burger and bulgogi-burger had 0.76, 0.62 and $0.54{\mu}g$ of vitamin $B_{12}$, respectively. A plain bagel and a waffle contained 0.13 and $0.17{\mu}g$/100 g of vitamin $B_{12}$, respectively. Ready-made tomato sauce or cream sauce for spaghetti in a retort pouch contained only a trace of vitamin $B_{12}$. In conclusion, these results should contribute to improving the present food vitamin $B_{12}$ content database, most of which were cited from foreign data, thereby it could be helpful to estimate the vitamin $B_{12}$ intake of Koreans more accurately than before. It will also provide new information for dietary education related to vitamin $B_{12}$ and health.

새터민들의 남한음식에 대한 수용과 선호도 조사 (A Survey of the Adaptation and Preference for South Korean Food in North Korean Refugees)

  • 본 연구는 새터민들의 남한 음식에 대한 수용을 조사하고, 새터민들의 성별에 따른, 연령에 따른 남한음식 선호도를 조사하여 새터민들의 바람직한 식습관을 형성하는데 도움이 되고자 실시하였다. 새터민들은 남한 거주 초기에 남한음식 적응에 어려움을 겪는 사람과 그렇지 않는 사람들로 상이한 결과를 보였다. 남한음식 적응에 어려움을 겪은 이유는 남한음식이 북한음식에 비해 달고, 양념이 강하고, 새로운 재료, 새로운 조리방법을 많이 사용하기 때문으로 조사되었다. 새터민들은 북한 음식에 비해 남한 음식이 아주 달게 느끼는 것으로 조사되었으며 거주 기간이 길수록 단맛에 익숙해지는 경향을 보였다. 새터민들은 쌀밥, 냉면, 된장국, 갈비찜, 불고기, 채소볶음, 오이생채, 채소전, 배추김치, 생선튀김, 순대, 배, 과일주스, 생수를 선호했다. 30세 이상의 새터민들은 기존음식을 선호하는 반면, 30세 미만의 새터민들은 라면과 스파게티 같은 새로운 음식에 대한 선호도가 높은 것으로 조사되었다. 새터민들은 탈북 초기에는 남한 음식의 수용에 다소 어려움이 있었으나 적응하는 데는 기간이 필요하므로 이 기간에 식생활에 대한 교육이 필요한 것으로 생각되었다.

융합인재교육을 적용한 초등수학 수업자료 개발 연구 (A Study on Development of the Instructional Materials for Elementary School Mathematics Based on STEAM Education)

  • 오늘날 지식정보 기반 사회에서 제공되는 지식은 단일한 교과의 지식이 아니라 교과를 구분하기 힘든 통합된 형태로 나타나고 있다. 이러한 사회에서 문제해결력을 갖추기 위해서는 통합된 형태의 지식을 우선적으로 습득하고, 이를 과학적 상상이나 예술적 감성과 결합시킬 수 있는 융합적인 사고가 요구된다. 융합인재교육(STEAM)은 이러한 문제해결력과 융합적 사고를 신장시키기 위한 교육 방안의 하나로 제시되고 있다. 본 연구는 초등학교 수학과 6학년 교과서를 중심으로 수학수업에 적용할 수 있는 융합인재교육 수업자료를 개발하는 것을 목적으로 한다. 이를 위해 3단원 '각기둥과 각뿔' 수업에서는 '스파게티 프로젝트', '페이퍼 크래프트' 자료를, 4단원 '여러 가지 입체도형'에서는 'EDUCUBE' 자료를, 그리고 6단원 '비율 그래프'에서는 '나만의 팔찌 만들기' 수업자료를 개발하였다. 또한 이렇게 개발된 자료들을 실제 수업에 적용하였으며, 그 결과 특히 학생들의 수학적 태도에 있어서 긍정적인 변화를 관찰할 수 있었다. 융합인재교육을 적용한 수학수업 결과 학생들의 수업태도 및 수업에 대한 흥미가 긍정적이었으며, 수학 교과에 대한 인식이 개선된 것으로 나타났다. 이에 본 연구는 융합인재교육을 적용한 초등수학 수업자료의 개발이 보다 다양한 영역과의 융합을 통해 다양한 학년과 내용 영역에서 전개될 필요가 있음을 제안하고 있다.

밥, 면, 소스류에 존재하는 수용성 비타민 B1, B2 그리고 B3 함량 검토 (Investigation of Water-Soluble Vitamin (B1, B2, and B3) Contents in Rice, Noodles, and Sauces)

  • 본 연구에서는 13종의 밥류, 11종의 면류, 그리고 15종의 소스류에 함유되어 있는 수용성 비타민 B1 (thiamin), B2 (riboflavin), 그리고 B3 (niacin)의 함량을 확인하였다. 실험 결과에 대한 신뢰도를 확인하기 위해 검출한계(LOD)와 정량한계(LOQ)를 확인하였으며, 표준인증물질(SRM 1849a)을 통한 결과의 정확도를 확인하여 우수한 지표를 나타내었다. Thiamin에서 밥류의 경우 잡채밥이 가장 높은 함유량을 확인하였고, 면류의 경우 막국수, 그리고 소스류의 경우 토마토 스파게티소스가 가장 높은 함유량을 확인하였다. Riboflavin은 밥류의 경우 짜장밥, 면류의 경우 비빔국수, 소스류의 경우 강황카레 약간 매운맛에서 가장 높은 함유량을 확인하였다. Niacin에서는 밥류, 면류, 그리고 소스류에서 각각 치킨볶음밥, 잔치국수, 짜장소스에서 가장 높은 함유량을 확인하였다. 한국인 성인 남녀의 수용성 비타민 1일 섭취권장량에 대하여 식품에 함유되어 있는 양을 확인한 결과 강황카레 약간 매운맛에서 가장 높은 riboflavin의 함량이 남자의 경우 217.40%, 여자의 경우 271.75%로 가장 높은 함량을 확인하였다. 본 연구를 통해서 밥류, 면류, 그리고 소스류에 함유된 수용성 비타민에 대한 영양성분 데이터베이스를 구축하고, 1일 섭취권장량에 대한 식품에 함유된 수용성 비타민의 함량 확인을 통해 국민 식생활에 필요한 자료를 제공하고자 한다.

서울지역 대학생들의 일반특성에 따른 외식 행동 및 선호 메뉴 조사 (A Survey of Dining-out Behaviors and Menu Preferences of University Students in the Seoul Area)

  • This survey was conducted to assess dining-out behaviors and menu preferences of university students in the Seoul area. The results were as follows: 1. 65.2% ate out rarely for breakfast and 73.1% ate out frequently for lunch, whereas 20.9% occasionally ate out for lunch. The frequency of dining out for breakfast was influenced by age, gender, and major but the frequency of dining out for lunch was significantly correlated with age(P < 0.01). 79.2% of females dined out frequently, but 62.3% of males reported doing so(P < 0.001). 65.2% ate out frequently for dinner and 31.6% did so occasionally. 34.2% dined out frequently for snacks, and 53.5% did so occasionally. 2. Factors to consider in dining out were as follows: taste > preference > price > persuasion > nutrition. The motivations for dining out were as follows: convenience > favorite food > difficult to prepare lunch box > difficult to carry lunch box > habit. This factor was correlated significantly with age(P < 0.05) and residence type(P < 0.001). Problems with dining out were listed as follows: unbalanced nutrition > price > sanitation > variety of menu > taste. This factor was correlated significantly with age(P < 0.05), alcoholic beverage use(P < 0.01) and smoking(P < 0.01). 3. Foods selected for meals when dining out were as follows: Korean style > Western > Japanese > noodles > Chinese. The expense(in won) of dining out for lunch was as follows: 3,000${\sim}$5,000 > 2,000${\sim}$3,000 > over 5,000 > under 2000. Problems to be corrected in Korean-style food were as follows: variety of menu > price > using personal dish. 4. Korean foods preferred in each cooking style when dining out were as follows: beef rib > kimchi-jjigae > bulgogi > doenjang-jjigae > bibimbab. Chinese foods selected were as follows: tangsuyuk > jajang myeon > jjambbong > gganpunggi > bokeumbab. Preferred Western foods were as follows: spaghetti > steak > pork cutlet > pizza > ribs > chicken. Preferred Japanese foods in meals when dining out were as follows: sushi > hoe > udong > pork cutlet > soba. Preferred noodle foods selected when dining out were as follows: ddukboki > ramyeon > mandu > guksu > sundae > gimbab >. Preferred baked foods for dining out were as follows: cake > pizza > loaf bread > baguette > sandwich > hamburger > doughnut > cream bread.

패스트 푸드의 외식행동(外食行動)에 관한 2차(次) 실태조사(實態調査) -여의도(汝矣島) 지역(地域)을 중심(中心)으로- (A Secondary Survey of Fast Food Dining out Behaviours -Focused on Youido Apartment Compound in Seoul-)

  • A secondary survey was conducted of 503 customers, to investigate eating out behaviours at five fast food restaurants of Youido apartment compound in Seoul, in April of 1988. The results are summarized as follows: The majority, 84% of customers, were aged 14 to 30, consisting of junior and senior high school children, college students and company employees. In contrast to the previous survey of 1986, in which no elderly customers were found, a small number of elderly customers were observed in this study. The reasons given by customers for patronizing fast food restaurants were the following, from most to least frequent: 'convenient', 'allows for companionship', 'the pleasant place to eat', 'dining equipment and tableware are hygienic', 'to be able to stay as long as I want', and 'foods rapidly served'. Only 24.2% of the customers purchased the fast foods for a full meal, 38.3% purchased the foods for snacking, and others purchased ice cream only or drink only. The majority of the customers ate the purchased foods at the fast food restaurants. However, a limited number of female customers preferred to take the packed fast foods to their homes. Taste preference was a major factor in food selection from available menu items, among the younger customers; whereas customers over 30 years old were concerned with nutritive balance. Fried chicken, pizza, rolled rice with laver, ice cream, and juice were high on the list of liked foods; in contrast, lower preference was for fish burger, doughnut, spaghetti, Chajang noodles and chili beans. The survey discovered that the preference for fried chicken, pizza, and salad had increased compared to the previous survey of 1986. Preference by food nationality was highest for Korean food, then Western food, Chinese food, and Japanese food, in that order. Customers offered suggestions for better fast food service, such as lowering the price; greater variety in the menu; developing fast foods from the traditional Korean foods; and increasing the proportion of vegetables and fruits on the fast food menu. The customers, in particular, emphasized a need for the development of Korean traditional beverage of malt drink and persimmon punch, as well as mungbean pan cakes and sweet- spicy rice noodles (docbokki), as fast foods.

대학가 주변 편의점 식사대용 편의식의 영양 평가 (Nutritional Evaluation of Convenience Meals in Convenience Stores near the Universities)

  • Objectives: Rapid economic growth and industrial development in South Korea have led to a great change in dietary patterns, and the use of convenience foods has continuously increased. This study was performed to evaluate the energy and nutrient contents of convenience foods at convenience stores near the universities as a meal. Methods: Data was collected by visiting 22 convenience stores near some universities in Chungbuk and Seoul and by checking nutrition labels on convenience foods at the stores. Data of a total of 338 food items were collected, and divided into five groups according to the food categories; rice products (n=156), noodles (n=101), burger/sandwiches (n=62), Tteokbokkis (n=11), and dumplings (n=8). Further, rice products, noodles, and burger/sandwiches were divided into subcategories. Results: The proportion of calories from carbohydrates was high in the rice products and tteokbokki, while the rate of calories from fat was high in burger/sandwiches and dumplings. Among the rice products, the proportion of carbohydrate calories was high in a one-dish food, rice with soup, and triangular kimbap, while the proportion of calories from fat in lunch boxes was high. In the noodles category, ramyeon and spaghetti had a high percentage of fat calories, while udong had a high percentage of carbohydrate calories. The ratio of the calorie content in relation to the KDRIs for adults aged 19-29 years, lunch boxes provided about 1/3 of daily required energy. However, the amount of calories as one meal was not enough for other types of rice products except for lunch boxes. Ramyeon was high in calories, fat, and sodium, but low in protein content. The burger/sandwiches had a high percentage of fat and sodium. Conclusions: Our results showed several nutritional limitations of convenience meals in convenience stores according to the type of food. Therefore, college students should limit excessive intake of convenience meals on a regular basis in order to avoid unhealthy food intake patterns. Our results demonstrate the need for educating college students with regard to checking nutrition labels when choosing convenience meals in order to facilitate the selection of food items that contribute to a balanced diet.

프로세스 마이닝을 활용한 온라인 교육 오픈 플랫폼 내 학습 패턴 분석 방법 개발 (Toward understanding learning patterns in an open online learning platform using process mining)

  • 비대면 교육의 중요성 및 필요에 따른 수요가 증가함에 따라 국내외 온라인 교육 오픈 플랫폼이 활성화되고 있다. 본 플랫폼은 대학 등 교육 전문기관과 달리 학습자의 자율성이 높은 특징을 가지며 이에 따라 개인화된 학습 도구를 지원하기 위한 학습 행동 데이터의 분석 연구가 중요시 되고 있다. 실제적인 학습 행동을 이해하고 패턴을 도출하기 위하여 프로세스 마이닝이 다수 활용되었지만 온라인 교육 플랫폼과 같이 자기 관리형(Self-regulated) 환경에서의 학습 로그를 기반한 사례는 부족하다. 또한, 대부분 프로세스 모델 도출 등의 모델 관점에서의 접근이며 분석 결과의 실제적인 적용을 위한 개별 패턴 및 인스턴스 관점에서의 방법 제시는 미흡하다. 본 연구에서는 온라인 교육 오픈 플랫폼 내 학습 패턴을 파악하기 위하여 프로세스 마이닝을 활용한 분석 방법을 제시한다. 학습 패턴을 다각도로 분석하기 위하여 모델, 패턴, 인스턴스 관점에서의 분석 방법을 제시하며, 프로세스 모델 발견, 적합도 검사, 군집화 기법, 예측 알고리즘 등 다양한 기법을 활용한다. 본 방법은 국내 오픈 교육 플랫폼 내 기계학습 관련 강좌의 학습 로그를 추출하여 분석하였다. 분석 결과 온라인 강의의 특성에 맞게 비구조화된 프로세스 모델을 도출할 수 있었으며 구체적으로 한 개의 표준 학습 패턴과 세 개의 이상 학습 패턴으로 세분화할 수 있었다. 또한, 인스턴스별 패턴 분류 예측 모델을 도출한 결과 전체 흐름 중 초기 30%의 흐름을 바탕으로 예측하였을 때 0.86의 분류 정확도를 보였다. 본 연구는 프로세스 마이닝을 활용하여 학습자의 패턴을 체계적으로 분석한다는 점에서 기여점을 가진다.

학교급식 김치에 대한 인식과 김치응용요리 선호도 - 광주지역 고등학생을 중심으로 - (Perception of kimchi and Preference of foods using kimchi in School Meals - Focused on High School Students in Gwangju -)

  • This study was conducted to improve the kimchi intake for high school students of various kimchi sub-ingredients and foods using kimchi. The students believed that kimchi is good for health. The overall satisfaction, baechu quality and the taste and degree of fermentation of kimchi was high, but there was a low preference for offered kimchi kinds, kimchi subingredient, foods using kimchi. The types of kimchi preferred and often offered in school meals were baechu-kimchi and kkakdugi. The common kimchi sub-ingredients were radish and welsh onion in vegetables, squid and oyster in sea foods, saeu-jeot and myeolchi-jeot in salted fish, and pear and apple in fruits. The preference for kimchi sub-ingredients were high for sesame leaf and yeolmu in vegetables, saeu-sal and squid in sea foods, saeu-jeot and nakji-jeot in salted fish, and pear and apple in fruits. The foods using kimchi preferred and often offered with school meals were kimchi-jjigae, bokkeumkimchi, kimchi soup, kimchi-bokkeum-bap, and kimchi-jeon. The kimchi sub-ingredient for which students had the greatest preference was meats. Among the foods using kimchi with meats, the most preferred were kimchi-pyeonyuk bossam, doejigogi kimchi duruchigi, and kimchi galbi-jjim. Among the foods using kimchi with noodles, the most preferred were kimchi- bibimmyeon, kimchi -naengmyeon, and kimchi-cheese spaghetti. Among the foods using kimchi with vegetables, the most preferred were kimchi-pa-jeon, kimchi- deopbap and kimchi- goguma gui. Of the foods using kimchi with processed foods, the most preferred were kimchi-mandu, kimchi-bacon jumeok-bap and kimchi- cheese omelet. Among the foods using kimchi containing sea food, kimchi-haemul bokkeum-bap, kimchi-hoe-deopbap, and kimchi-saeu-jjim were most preferred. Overall, these results suggest that various kimchi sub-ingredients and foods using kimchi should be improved for kimchi intake of school meals.
