Fruit Quality and Storability by Harvest Time at 'Fuji'/M.9 Apple Orchard Located in the Area with a High Air Temperature during the Fall Season (가을철 기온이 높은 지역에 위치한 '후지'/M.9 사과원의 수확시기에 따른 과실품질과 저장성)

  • This study was conducted for three years (2007, 2009, and 2010) to investigate the changes in fruit quality during maturation, and the quality and storage ability of fruits harvested at different times of 'Fuji' apple in Daegu region with a high air temperature during the fall season. Changes in apple fruit quality during the maturation period were investigated from 120-135 days to 183-198 days after full bloom. In comparing quality and storage ability of fruits harvested at different times, fruits harvested more than 180 days after full bloom were used. During the maturation period, poor coloring was the problem for 'Fuji' apple in Daegu region by the high air temperature about $20^{\circ}C$. In comparing quality of fruits harvested at different times, the soluble solid contents and hunter a value were increased by the extended harvest time. Fruit weight during harvest was not affected by different harvest time, while the fruit firmness and titratable acidity during harvest were decreased critically when the freezing damage happened. Ethylene production, fruit firmness, and titratable acidity during cold storage for twenty weeks did not differ according to the different harvest time. Soluble solid contents of fruits harvested at 216 days after full bloom in 2009 were similar at the time of harvest and cold storage. For fruits harvested at 201 days after full bloom, soluble solid content during cold storage was higher than during harvest time. However fruit firmness, soluble solid content, and titratable acidity after cold storage of fruit harvested after freezing damage was lower than those of the fruit harvested before freezing damage. The results show that the extended harvest time of 'Fuji' apples about 2-4 weeks from 180-200 days after full bloom in area with above-air temperature during fall season was seemed to be beneficial to enhancing soluble solid contents and fruit red color, but harvesting after the middle of November was dangerous because minimum air temperature began to fall under $-3.0^{\circ}C$.

Effect of Packaging Methods on the Shelf-life of Tomato (포장방법이 토마토의 저장성에 미치는 영향)

  • The influence of packaging methods(punched, vacuum, shrinked), mature stages(mature-green, completely ripe) and storage temperatures(5$^{\circ}C$, $25^{\circ}C$) on the shelf-life and quality were Investigated in tomatoes. Weight-loss was reduced by the treatment of polyethylene film packaging(vacuum>shrinked>punched) and the effect was more outstanding at 5$^{\circ}C$ than $25^{\circ}C$. The soluble solid content of completely ripe tomato was higher than mature green tomato, but acidity and firmness were lower. Soluble solid contents increased in the begining and decreased after that. Acidity and firmness de creased gradually during the storage. The decrease of acidity and firmness in mature-green tomato was lower than completely ripe one, at 5$^{\circ}C$ than $25^{\circ}C$ and shrinked packaging than non packaging. The shelf-life of mature-green tomato in shrinker packaging was longest, 17 days at $25^{\circ}C$ and 21 days at 5$^{\circ}C$.

Color and Texture Properties of Puchukimchi Kimchi Prepared with Different Methods (담금방법을 달리한 부추김치의 색과 조직특성)

  • Puchu (Allium odorum L.) Kimchi was prepared in 5 different conditions and the color(chlorophyll and carotenoids) and textural properties were measured during fermentation up to 43 days at 10$^{\circ}C$. The 5 preparation conditions which varied depending upon the sub-ingredients were as follows: to add salt (treatment A), soybean sauce(treatment B), soybean sauce and perilla seed powder (treatment C), anchovy sauce(treatment D), and anchovy sauce and glutinous rice paste(treatment E). Residual contents of chlorophyll and carotenoid decreased with the lapse of fermentation time, especially in treatments D and E. Value“a”indicating the degree of greenness in Hunter's color value decreased with the lapse of fermentation time, especially in treatment E. The contents of total soluble pectin and total soluble solid increased during fermentation.

Compositional differences of Bojungikgi-tang decoctions using pressurized or non-pressurized extraction methods with variable extraction times

  • Objectives : In other to determine the optimal extraction conditions, the various Bojungikgi-tang (BJIGT) decoctions prepared by different pressure levels and different extraction times were compared and evaluated in terms of the extract yield and the total soluble solid content. Methods : Decoctions were prepared by the pressure levels of 0 (non-pressurized) and 1 $kgf/cm^2$ (pressurized) for 60, 120 and 180 min. The extract yield and the total soluble solids content of decoctions were measured, and the amounts of the reference compounds in decoctions were investigated by the analysis using high performance liquid chromatography. Results : The extract yield and the total soluble solid content were higher in decoctions extracted by the pressurized method than those from decoction with non-pressurized method. The patterns of yield and contents showed a proportional increase to the extraction time. In analysis of the linear regression for four reference compounds such as liquiritin, nodakenin, hesperidin, and glycyrrhizin, the good linearity with the correlation coefficient more than 0.9999 was observed. The highest contents for four reference compounds were observed at 180 min of both the pressurized method and the non-pressurized method. Conclusions : This study suggests that the pressure in extraction method and the extraction time affect the compositional constituents in BJIGT decoctions. The extraction time of 180 min could be chosen in both pressurized and non-pressurized method as optimal extraction condition.

Nutrient Composition of Domestic Potato Cultivars (국내산 감자 품종별 영양 성분 비교)

  • The proximates, vitamin C, minerals, and fatty acids of five potato cultivars were evaluated by AOAC methods, the hydrazine method, ICP-AES, and gas chromatography, respectively. The proximate analyses; vitamin C, reducing sugar, and soluble solid contents; and mineral and fatty acid compositions were significantly different among the five cultivars. The Superior cultivar contained a higher carbohydrate content and higher Ca/P ratio and lower levels of crude protein and Na. The Atlantic cultivar contained significantly higher amount of energy, carbohydrate, reducing sugar, vitamin C, SEA, and MUFA, and significantly lower amount of minerals and PUFA. The Shepody cultivar contained significantly higher amount of carbohydrate and MUFA, and significantly lower amount of soluble solid, vitamin C, and SFA. In addition, the P, Fe, Mg, Cu, and Al levels were significantly higher in Shepody, and Zn content was significantly lower. The Jopung cultivar contained significantly higher levels of moisture and Na, and significantly lower levels of soluble content, reducing sugar, carbohydrate, crude protein, and fat. Finally, the Namsuh cultivar contained significantly higher amount of soluble solid, crude protein, K, Mg, and Al, and significantly lower amount of reducing sugar.

Preparation and Characterization of Jochung with Sweet Persimmons (단감을 이용한 조청의 제조 및 특성)

  • Mixtures of rice and sweet persimmons to make sweet syrup, jochung, were saccharified by barley malt. Soluble solid contents, reducing sugar and free sugar contents, and sensory quality were determined in jochungs, which were prepared from various ratios (10 : 0, 7 : 3, 5 : 5, 3 : 7) of rice to sweet persimmons. Amylase activity had the highest value, 10466 Unit, after 3 hrs during saccharification process at $55^{\circ}C$. In HPLC determination of free sugars, maltose in saccharifying liquids found the highest amount followed by fructose and glucose. With increasing amounts of sweet persimmons, fructose and glucose contents increased while maltose content decreased. The soluble solid contents reduced as the sweet persimmons proportions increased. The control group without sweet persimmons showed highest value, $58^{\circ}Brix$, in soluble solid content. There appeared to be a slight decrease in reducing sugar and free sugar contents as proportion of sweet persimmons increased. Jochung prepared at high amounts of sweet persimmon had better scores in overall acceptance.

Antimicrobial Activity of Some Plants Containing Allelochemicals (Allelochemicals 함유 식물의 항균 효과)

  • Korean native plants and naturalized plants were analyzed for allelochemicals, and their antimicrobial effects were studied. The difference in soluble solid contents between Korean native plants and naturalized species was not significant, and the Korean native plant, Solanum nigrum showed the highest soluble solid content of 90 mg/ml. The ethanol extract of the Korean native plant, Solanum nigrum showed antifungal activity to Aspergillus phoenicis KCTC 1228, with a clear zone of 18 mm, and spore formation was not observed from the treatment. The naturalized plants Ambrosia artemisiifolia var. elatior and Erigeron canadensis showed inhibition of spore formation and the clear zones were at 24 mm and 22 mm, respectively. The clear zones of Aspergillus phoenicis KCTC 1228 treated with ethanol extrats of Phytolacca americana and Rudbeckia bicolor were 22 mm and 19 mm, respectively, and spore formation was observed from the treatment. The Korean native plant, Solanum nigrum and naturalized plants, Phytolacca americana and Ambrosia artemisiifolia var. elatior showed antimicrobial activity against Bacillus sphiaericus 2362, and Bacillus sphiaericus 2297, Bacillus thuringiensis var. subtilis and Baicillus thuringiensis var. cereus. The antimicrobial activity of Ambrosia artemisiifolia var. elatior showed the largest clear zone of 32 mm against Bacillus thuringiensis var. subtilis. In general, the more soluble the solid contents of the extracts, the greater were the antifungal and antimicrobial activities. The phenolic compounds from the Korean native plant, Solanum nigrum and the naturalized species, Phytolacca americana and Ambrosia artemisiifolia var. elatior were analyzed by high performance liquid chromatography. Three phenolic compounds including hydroquinone were identified in Solanum nigrum. In contrast, five and seven phenolic compounds were identified in Phytolacca americana and Ambrosia artemisiifolia var. elatior, respectively. The antifungal activity against Aspergillus phoenicis KCTC 1228 was found to be due to the coumaric and benzoic compounds.

Evaluation of Hydrocortisone Sustained-Release Suppositories Prepared with Eudragit-Polyethylene Glycol Solid Matrix (유드라짓 및 폴리에틸렌글리콜 고체 매트릭스로 제조한 히드로코르티손 좌제의 서방성 평가)

  • Hydrocortisone (HC) sustained-release suppositories were prepared by using a solid matrix of methacrylic acid-methacrylic acid methyl ester copolymer $(Eudragit\;L_{100}^{R}:\;EL)$ as a poorly water soluble carrier and polyethylene glycole 1540 (PEG) as an water soluble carrier. HC release rate was controlled by complexation with ${\beta}-cyclodextrin$ $({\beta}-CyD)$ which was confirmed by X-ray diffractometry, IR-spectroscopy and differential scanning calorimetry. Release rate of HC from the EL-PEG matrix suppositories decreased with increase of EL contents. The release rale from $HC-{\beta}-CyD$ complex decreased in the following order: $HC-{\beta}-CyD/PEG$ > HC/PEG > $HC-{\beta}-CyD/EL_{10%}-PEG$ > $HC/EL_{10%}-PEG$ > $HC-{\beta}-CyD/EL_{15%}-PEG$ > $HC/EL_{15%}-PEG$ > $HC-{\beta}-CyD/EL_{20%}-PEG$ > $HC/EL_{20%}-PEG$. The crystallinity of HC in polymer matrix was identified using X-ray diffractometer and the surface of matrix suppositories after release test was examined by scanning electron microscopy. The sustained release of HC from these matrix suppositories was attributed to the network structure of EL.

Fruit Color Improvement by ABA Treatment and Determination of Harvesting Time in 'Hongisul' Grapes (ABA 처리를 통한 '홍이슬' 포도의 착색향상 및 적정 수확기 설정)

  • This study was carried out to improve the fruit color through ABA treatment and to determine the optimum harvest time for producing high quality fruits in 'Hongisul' grapes. Spraying of $1000 mg{\cdot}L^{-1}$ exogenous ABA at early verasion (70 days after full bloom, DAFB) brought increase of endogenous ABA and soluble solid contents and enhanced fruit coloration. So, it was possible to harvest ABA treated fruits from 85 days after full bloom (15 days after treatment) by accelerated anthocyanin content which increased continuously until 110 DAFB. An increase of soluble solid and decrease of total acidity appeared steadily with the onset of berry ripening. After 100 DAFB, soluble solid content and total acidity did not change significantly, but the berry firmness was suddenly decreased. Consequently, it was suggested that ABA treated fruits need to be harvested at about 100 DAFB because of their short period of marketing by over ripening. On the contrary, harvesting of untreated fruit was totally impossible at 85 DAFB because of their poor berry coloration. But it was possible to harvest them at 100 DAFB based on the soluble solid/acidity ratio, whereas the berry coloration was progressed poorly. On the other hand, the fruits harvested at 110 DAFB showed acceptable berry coloration but their berry firmness was dropped significantly coincide with overripening. Therefore, it was needed to develop an altered production system for improving coloration at around 100 DAFB in 'Hongisul' grapes.

Physicochemical Characteristics of the Organically Grown Blueberry (유기재배 블루베리의 이화학적 품질특성)

  • As consumers are aware of their health and are more conscious of environmental conditions, there is an increasing demand for agri-foods obtained from organic agricultural practices. The present study aimed to investigate the physicochemical quality characteristics of blueberries. The weight, length, moisture contents, color (Hunter L, a, b), soluble solids contents, pH, and acidity were measured for their quality characteristics. In addition, ABTS radical scavenging activity was analyzed for antioxidant activities of organically and conventionally grown blueberries. Organically grown blueberries showed a greater weight, soluble solid contents, and pH than conventionally grown ones. Especially, organically grown blueberries showed significantly (p<0.05) higher weight and pH. Moisture contents of organically and conventionally grown blueberries were similar. L and b values of organically grown blueberries were higher than those of conventionally grown blueberries. ABTS radical scavenging activities of organically grown blueberries (36.4%) were higher than those of conventionally grown ones (36.4%), but the difference was not significant. Further studies are recommended to evaluate other differences between organically and conventionally grown blueberries.
