Effect of Precooling and Storage Temperatures on the Post-harvest Management of the Fruits in 'Maehyang' and 'Soogyeong' Strawberries for Export (수출딸기 '매향'과 '수경'의 수확후 예냉 및 저장온도의 효과)

  • A study was conducted to examine the effect of precooling (2, 4, or 8C) and storage (4, 8, or 10C) temperatures on the storage life of 'Maehyang' and 'Soogyeong' strawberries for export. Fruits at a 70% ripe stage were harvested from a commercial greenhouse in Jinju on March 16, 2010. Fruits were precooled by a forced draft cooling for 3 hours, transported for about 30 minutes to a lab., and then stored. For precooling, small precoolers set in the farm were used. During storage, fruits were examined for their changes in weight, hardness, color (hunter value), soluble solid content, incidence of gray mold (Botrytis cinerea), and marketability at a two days interval from March 16 to March 30. In both cultivars, hardness, sugar content, and hunter value were higher in 'Soogyeong' than 'Maehyang'. The greatest hardness and soluble solid content were obtained after storage at 4C in both cultivars. As the ripening stage progressed, hardness and soluble solid content decreased. Also, fresh weight decreased during storage at all temperatures. Gray mold was the greatest at 10C storage temperature. The results indicate that effectiveness for keeping the freshness was best achieved by precooling at 2C and storage at 4C in both cultivars.

Flowering and Nut Fruit Characteristics after Soil Amendment Treatments in Chestnut (Castanea crenata S. et Z.) Orchards (토양 개량제 처리에 따른 밤나무의 개화 및 종실 형질 특성)

  • This study was carried out to examine the effect of soil amendment treatments [(organic fertilizer: 20 kg tree1; compound fertilizer+wood-char fertilizer: compound fertilizer 4 kg tree1+wood-char 2 kg tree1; lime fertilizer: 3 kg tree1; mixed fertilizer: compound fertilizer 1 kg tree1+organic fertilizer 10 kg tree1+wood-char 1 kg tree1; control (no fertilizer)] on flowering and fruit characteristics in chestnut (Castanea crenata S. et Z.) orchards in Jinju and Sancheong, Gyeongsangnam-do. Diameter of fruiting shoot increased generally after soil amendment treatments compared with the control, while number of leaf, female and male flowers were not affected by the treatments. Nut weight increased after soil amendment treatments in Jinju, but was not affected by the treatments in Sancheong. There was a positive correlation between soil pH (r=0.91) or exchangeable Ca2+ (r=0.99) and nut weight in Jinju and a positive correlation (r=0.97) between organic carbon content and soluble solid concentration, while a negative correlation (r=-0.92) between exchangeable Mg2+ and soluble solid concentration of nuts in Jinju. However, the nut weight and soluble solid concentration in Sancheong were not correlated with soil properties. The results indicate that the characteristics of flowering and nuts in chestnut orchards depend on soil properties after soil amendment treatments between regions which show better responses on poor sites than on good sites.

Changes of Tree Growth and Fruit Quality of "Yumi" Peach under Long-Term Soil Water Deficit

  • Purpose: This paper presents the effects of soil drought stress during the growing season and pre-harvest period on tree growth and fruit quality of "Yumi" peach, an early season cultivar. Methods: Soil drought stresses were treated with four levels of -30, -50, -60, and -70 kPa during long term (LT) and short term (ST). For LT treatments, soil water was controlled for nine weeks from May 1 to July 5, which was assumed as the full growing season. For ST treatments, soil water was controlled for four weeks from June 10 to July 5, which was assumed as the pre-harvest season. Tree growth and leaf photosynthesis were measured, and fruit characteristics such as fruit weight and diameter, soluble solid and tannin contents, and harvest date were investigated. Results: Soil water deficit treatments caused a significant reduction in tree growth, leaf photosynthesis, and fruit enlargement. LT water stress over -60 kPa during the full growing season caused significant reduction in tree growth, including shoot length, trunk girth, leaf photosynthesis, and fruit enlargement. ST water stress over -60 kPa during the pre-harvest period also induced significant reduction in leaf photosynthesis and fruit enlargement, while tree growth was not reduced. In terms of fruit quality, water stress over -50 kPa significantly reduced fruit weight, increased soluble solid and tannin contents, and delayed harvest time in both LT and ST treatments. Conclusions: As a result, it is assumed that LT water stress over -60 kPa can reduce both tree growth and fruit enlargement, whereas ST water stress over -50 kPa can reduce fruit enlargement without reducing tree growth. From an agricultural perspective, moderate water deficit like -50 kPa treatments could have positive effects, such increased fruit soluble solid contents along with minimal reduction in fruit size.

Optimization of Extraction Conditions from Hericium erinaceus by Response Surface Methodology (반응표면분석법에 의한 노루궁뎅이 버섯 에탄올 추출조건의 최적화)

  • Response surface methodology (RSM) was used to monitor the characteristics of ethanol extracts from Hericium erinaceus. A central composite design was applied to investigate the effects of independent variables, ethanol concentration (X1), and sample ratio (X2) on dependent variables, soluble solid (Y1), total phenols (Y2), crude protein (Y3), electron donating ability (Y4), and browning color (Y5) of the extracts. As the sample ratio increased, the soluble solid content increased. Ethanol concentration played a minor role. Total phenols and crude protein increased with sample ratio. Sample ratio had a greater effect than alcohol concentration in the extraction of soluble solid, total phenols, crude protein, and browning color, with an exception of electron donating ability. The optimum ranges at 2 hr extraction was 3.95.0g/l00mL in sample ratio and 3652 in ethanol concentration. Predicted values at the optimized conditions were acceptable when compared to experimental values.

Characteristics of Kakdugi Radish Cube by Spring Cultivars during Salting (봄무 품종별 깍두기 무의 절임 특성)

  • Characteristics (salt concentration, weight loss, soluble solid content, moisture content, pH, textural properties) of kakdugi radish cube (2×2×2 cm) were evaluated during salting. Four different radish cultivars harvested in spring were immersed into 5, 10 or 15% brine (radish : brine - 1 : 2) at 15C for 5 hr. The time required to reach the optimum salt concentration (3.0%) was different among cultivars; in 10% brine solution, 5 hr for ‘Bakbong’and ‘9621’, and 4 hr ‘Bagkwang’ and ‘Housebommu’, in 15% brine, 3 hr for ‘Bakbong’and ‘9621’, and 2 hr for ‘Bagkwang’and ‘Housebommu’. While the highest value of weight loss of kakdugi radish cube was observed with ‘Bagkwang’, the lowest, ‘Bakbong’. There was a decrease of pH of kakdugi radish during salting ; while ‘Bakbong’ showed little change in pH, ‘Bakbong’and ‘Housebommu’ showed large decrease of pH. Hardness and fracturability decreased during salting; the highest value of hardness was observed with ‘Bagkwang’, the lowest, ‘Bagkwang’. ‘Bakbong’ has the lowest moisture content, but the highest soluble solid content, while ‘Bagkwang’and ‘Housebommu’ have the highest moisture content, but the lowest soluble solid content. There was a similarity of characteristics of kakdugi radish cube between two cultivars, ‘Bagkwang’and ‘Housebommu’.

Selection of Quality Indicator to Determine the Freshness of Muskmelon (Cucumis melo L.) during Distribution (머스크멜론의 유통 중 신선도 판정을 위한 품질 지표 선정)

  • This study was conducted to identify quality indicators to determine freshness of muskmelon during distribution. The correlation between each quality characteristic and organoleptic preference was analyzed after examining weight loss, firmness, soluble solid content, chromaticity, and respiration rate of and changes in the organoleptic characteristics during storage at 0, 10, 20 and 30C after harvesting. The correlation between weight loss and preference according to the storage temperature was shown to be significant (p<0.01). The correlation between firmness and preference was shown to be highly significant (R=0.74, 0.78, 0.88, and 0.83 at 0, 10, 20, and 30C) under all temperature conditions, and was shown to be especially highly significant (p<0.01) when the temperature was high. In the case of storage at 20 and 30C, a significant correlation between soluble-solid content and preference was shown. Therefore, it is right to apply the change in weight loss and firmness that indicated a high correlation with organoleptic preference as a quality indicator at all storage temperatures.

Quality Characteristics of Rice Wort and Rice Beer by Rice Processing (쌀 가공처리에 따른 쌀 맥즙 및 쌀 맥주의 품질특성)

  • Rice in Korea is a highly valuable food resource that serves both as staple food and ingredient in various processed edibles. This study was conducted to explore pre-treatment methods for rice that result in good saccharification upon production of rice beer. When rice was subjected to fine grinding, steeping, roasting, gelatinizing, or puffing prior to saccharification with malt, wort containing puffed rice had the highest soluble solid content (°Bx). Upon production of wort without the addition of any enzymes for liquefaction or saccharification, the addition of 30% rice resulted in the highest soluble solid content (°Bx). Production of beer containing 10, 20, or 30% of either roasted or puffed rice showed that wort containing 30% puffed rice had the highest soluble solid content (15.4 °Bx) with good saccharification. The resulting beer likewise exhibited higher alcohol content (5.0-5.4%) than the beer that had roasted rice added, without the turbidity and with less bitterness. Therefore, rice puffing was considered a beneficial processing method to enhance rice saccharification and to facilitate both the production of fine quality beers and rice beer containing puffed rice.

Spherical Granule Production from Micronized Saltwort (Salicornia herbacea) Powder as Salt Substitute

  • The whole saltwort plant (Salicornia herbacea) was micronized to develop the table salt substitute. The micronized powder was mixed with distilled water and made into a spherical granule by using the fluid-bed coater (SGMPDW). The SGMPDW had superior flowability to powder; however, it had low dispersibility. To increase the dispersibility of SGMPDW, the micronized powder was mixed with the solution, which contained various soluble solid contents of saltwort aqueous extract (SAE), and made into a spherical granule (SGMPSAE). The SGMPSAE prepared with the higher percentages of solid content of SAE showed improved dispersibility in water and an increase in salty taste. The SGMPSAE prepared with 10% SAE was shown to possess the best physicochemical properties and its relative saltiness compared to NaCl (0.39). In conclusion, SGMPSAEs can be used as a table salt substitute and a functional food material with enhanced absorptivity and convenience.

Effect of Steaming Prior to Roasting of Polygonatum odoratum Roots on Its Water Solubles and Browning (볶음전 증자처리가 둥굴레 근경의 수용성 성분 및 갈색화에 미치는 영향)

  • This work was designed to determine the effect of steaming-Pretreatment on Physicochemical and functional properties of roasted Polygonatum odoratum roots. Steaming treatments led to some reduction in the contents of water solubles, such as total solid, reducing sugar and free-amino nitrogen of the unroasted samples. Moreover, roasting processing caused decrease in reducing sugar and free-amino acid, with increase in total soluble solid and browning color of the samples, which showed the dependence of steaming treatment as well as roasting temperature. Electron-donating ability and nitrite-scavenging ratio of the samples were also highly developed along with roasting processing at 170C within 35min. Considering the physicochemical and some functional parameters of water extracts of roasted samples, roasting at above 140C for over 55min or at 170C for around 35min was recommendable for the higher quality of Polygonatum odoritum tea, which conditions were similarly adapted for both steamed and unsteamed samples.

Effects of Puffing treatments on the Sensory Qualities improving of Ginseng Extract (팽화처리가 인삼Extract의 품질에 미치는 영향)

  • The effect of puffing treatments on the sensory qualities improving of Ginseng Extract were investigated in the good products for rejecting soil flavor as Ginseng foreign bad taste, through chemical analysis and actual manufacturing practice, the following results were obtained. Puffing treated<15kg / ㎠psi> ginseng has produced a marked increase in soluble solid, crude saponin yield to the extent of 10% and without soil taste as compared with control Ginseng. Optimum Ginseng ethanol extraction condition were 90\^C for 8 hours, which was cheap operating cost and color, apperance, total solid yield of Ginseng extracted products. For 70% ethanol extraction in temperature range of 60∼90\^C for 8 hours, the higher temperature resulted higher yields in solids and Ginsenoside Especially, GinsenosideRgl as most effective physiological function component yield was increased in 18% by puffed Ginseng than control Cinseng products. The Hunter's color, L. a and b values of Ginseng extract were 31.09, 21.9 and 49.5 and increase brown and red color value and total Δ Evalue.
