The Effects of Doenjang (Korean Traditional Fermented Soy Bean Paste) Powder on the Quality and Shelf-Life of Chicken Sausages during Storage (분말된장의 첨가가 닭고기 소시지의 품질 및 저장성에 미치는 영향)

  • In this study, the effects of Doenjang powder (DP : Korean traditional fermented soy bean paste) addition on the quality and shelf-life of chicken sausages during storage were evaluated. The chicken sausages were manufactured with 60% of chicken breast meat, 20% of chicken skin and other ingredients. The sausages were divided into four treatments according to DP addition level such as 0, 2, 5 and 8%. The sausages were vacuum packed and stored at a refrigerator ($5^{\circ}C$) for 4 weeks. pH of sausage was in creased with DP addition after 2 weeks storage (p<0.05). The addition of 2% and 5% DP decreased the lipid oxidation (TBARS) value (p<0.05) and addition of 8% DP seemed to promote the protein deterioration (VBN) over the storage (p<0.05). In the instrumental color, the chicken sausages with 5% and 8% DP showed higher redness and lower lightness value than sausage with 0 and 2% DP (p<0.05) over the storage. The hardness and gumminess of chicken sausages added with 5% DP were significantly lower than those of other treatments during the storage (p<0.05). The addition of DP detained the growth of aerobic and anaerobic bacteria counts after 2 week of storage (p<0.05), but no significant difference was found by DP addition level (p>0.05). In conclusion, 5% DP could be used as ingredient of chicken sausage to enhance sensory quality and retard lipid oxidation.

Breeding of Strawberry 'Okmae' for Forcing Culture with Less Labor Requirement for Fruit Thinning (적과 노력 절감용 촉성 딸기 '옥매' 품종 육성)

  • A new strawberry cultivar (Fragaria ${\times}$ ananassa Duch.) 'Okmae' was developed from a cross between 'Toyonoka' and 'Maehyang'. This cultivar has a good fruit quality and suitable number of flowers per cluster for labor saving in fruit thinning. 'Gyoengnam No. 1' was selected as an elite line with vigorous plant growth, higher soluble solids content and fruit firmness after examining its characteristics and productivity in forcing cultures from 2007 to 2009. Farmer's field trial of 'Gyoengnam No. 1' was conducted in 2010 and it was registered as 'Okmae' thereafter. The general characteristics of 'Okmae' are vigorous growth habit, erect plant type, less number of leaf and elliptic leaf shape. 'Okmae' has long peduncle and 9-10 flowers per flower cluster which need less labor for fruit thinning. Fruits of 'Okmae' are conical having a bright red and glossy skin color. Although 'Okmae' has a smaller average fruit number per plant of 21.9 than that of the control cultivars, it's possible to produce high yield because of greater fruit weight of 26.0 g. 'Okmae' showed a high soluble solids content of $11.6^{\circ}Brix$, low acidity of 0.37%, and high firmness of $14.5g{\cdot}mm^{-2}$. It is sensitive to anthracnose and powery mildews, but high-quality strawberry can be harvested by using effective control measure.

Effect of Chelated Organic Minerals Liquid Fertilizer on Growth and Fruit Quality in 'Jukhyang' Strawberry (킬레이트 유기 미네랄 액비가 '죽향' 딸기의 생육 및 과실품질에 미치는 영향)

  • TThis study investigated the influence of AGH-Ringer (chelated organic minerals liquid fertilizer) on the growth, yield, and fruit quality of 'Jukhyang' strawberry in a hydroponic system. The results revealed that AGH-Ringer group led to significantly higher plant length than that of the control group, and that leaf length and leaf width increased with increasing leaf area. In addition, the fresh and dry weights of leaves and SPAD unit, which measures leaf color also showed a significant increase with AGH-Ringer. However, the length and dry weight of roots did not show significant differences when compared to the control group. In the fruit quality analysis, AGH-Ringer group did not show any difference in fruit length compared to the control group, but it increased both the fruit weight, which, along with the simultaneous increase in fruit width, increased the yield per strawberry. Furthermore, AGH-Ringer group strengthened the red skin color of the fruit, and resulted in significantly greater hardness than that of the control group, but did not have any effect on the soluble solid content and acidity. As shown in the results, the AGH-Ringer group resulted in lesser mineral content and lower to medium EC (electrical conductivity) in comparison to the inorganic mineral hydroponic fertilizer, which was used as a control. However, it increased the leaf growth, fruit weight, and yield, and improved the fruit quality by increasing the soluble solid content in the hydroponic system of 'Jukhyang' strawberry. Therefore, based on this study, AGH-Ringer is thought to be a more effective hydroponic fertilizer than the inorganic mineral hydroponic fertilizer. Moreover, the field experiment demonstrated that AGH-Ringer is a useful hydroponic fertilizer convenient for application in farms. This study also proved that AGH-Ringer is a fertilizer that can promote plant nutrition by controlling the salinity of the soil and facilitating the absorption of necessary minerals in future soil cultivation, thereby providing basic data for organic farming.
