Applying a New Process for Local Food Menu Development in Gimpo

  • Recently, increasing interests in local foods have been highlighted along with active efforts and activities from autonomy organizations to develop local cultures and promote local economies by generating value added products and profits through the development of local foods. Subsequently, useful effects might result by making local foods attractive to tourists, such as by using indigenous Gimpo products to make menu items that incorporate the social, economic, and cultural aspects of the Gimpo area, and contributing to its food culture, the development and use of its indigenous products, and promoting local restaurant businesses, etc. The items of the survey used to select the local food menu items to be developed were limited to ideas offered by expert groups, and were implemented by a new menu development process. In order to derive the menu items to develop, the following method was applied: a brainstorming session with experts to generate and draft ideas, a questionnaire to chefs and cooks in special grade hotels is Seoul to select the menu items to develop from those drafted, and sensory evaluations by experts to evaluate the developed items. Frequency analysis and technical statistical analysis were performed using the SPSS 12.0 program package, where 13 kinds of local foods were ultimately developed using indigenous products of Gimpo. The developed local food menu items were rice & grape sujaebi, grape sikhae, fried rice embryo bud, grape yanggaeng, rice pancakes, rice spaghetti, grape seed oil dressing, grape sauce, rice pizza, grape pie, rice & grape ice cream, grape chocolate, and rice roll cakes.

종가의 손님맞이 음식에 대한 탐색적 연구 (An Exploratory Study of Foods Served to Guests of Head Families (Jong-ga))

  • The main aim of this study was to investigate side dishes served to guests of head families (Jong-ga) in Korea. In order to conduct of this research, we analyzed two books published by the Rural Development Administration (RDA) on the foods and the stories from head families: "Sharing beyond succession, stories and foods from the head families" and "Aesthetics of Serving". The total number of head families serving foods to guests was 10: 5 from Gyeongsangbuk-do, 2 from Jeollanam-do, 1 from Gyeonggi-do, 1 from Gyeongsangnam-do, and 1 from Chungcheongbuk-do. We classified the foods into 7 categories, staple dishes, side dishes, rice cakes, desserts, beverages, alcoholic beverages and others, on the basis of previous studies. Most foods served to guests were side dishes (119). These were further classified into 14 categories: Guk Tang, Namul, Hwe, Bokkeum, Mareunchan, Gui, Jorim, Pyeonyuk Jokpyoen Suran, Jiim Seon, Jeon Jeok, Jangajji, Kimchi, Jeotgal Sikhae and Jang. The most common side dish was Jangs (17), served by 8 head families. The next most common side dishes were Marenchan (15), Jeon Jeok (14) and Kimchi (11).

례주(醴酒)의 제조와 품질특성 (Quality Characteristics and Brewing of Li)

  • Li was a sweet beverage containing $2{\sim}3$ percents ethyl alcohol made from malt by spontaneous fermentation from ancient custom to fifteenth century. Li was changed to the rice wine being a sweet beverage of low alcohol content using nuruk as starter and the sikhae which is non-alcoholic fermented beverage. Li was made for drinking and ceremony in Korea, China and Japan. It disappeared from the beverage items along with its method of manufacture from malt, but in Korean had made Li using nuruk until recent. We made Li according to Book of Imwon-Keongjae Ji (The book of country economy) methods for reappearance of Li. Fermentation characteristics for the production of Li with Saccharomyces cerevisiae, Saccharomyces bayanus and Saccharomyces sake were investigated. Among the yeast strains tested, Li fermented with S. sake showed higher alcohol production. Total sugar decreased considerably during the whole period of fermentation(30 hours), while ethyl alcohol content increased at $2.98{\sim}3.52%$. As the fermentation progressed, the pH decreased until the 30 hours of fermentation, while total acid increased during the same period. In fermentation of 36 hours, Li consisted of about $2.98{\sim}3.52%$ of alcohol content, $5.3{\sim}6.0%$ of total sugar, $1.45{\sim}2.21mg%$ of reducing sugar and total acidity were reached up to $24.4{\sim}29.5mg%$ for Li manufactured with S. cerevisiea sake, S. bayanus and S. sake.

한국음식용어(韓國飮食用語)의 문헌적(文獻的) 연구(硏究) (A Bibliographical Study of Korean-Food Terms)

  • The paper is to classify the terms of foods, wines, relish(komyungs), seasonings and cooking processes in Korean cooking books. The results of this study are follows : The dishes which were made from cereals are Bab(boiled cooked rice), Juk(gruel), Miuem(Thin rice gruel), Noodle, Sujebee, Mandu(Pyun su, dumpling), D'ockuk, Pumbok, Yaksik, D'ock(Korean rice cake) etc. The terms of side dishes are Tang (Kuk, Kaeng), Chigae(Jochi Kamjeang, Jijimee, Tugari, Wakjeoji), Jim(Jeung), Sun, Jungol(Abok jaeng ban, sinsulro, punggujigol), Bockum, Kui, Jorim, Cho, Jun(Jijim, Jeenya, Puchigae, Bindae-dock, Nureumi) Jeok(San-jeok, Nuremjeok, Jijimnureumjeok), Hoe (Saenghoe, Sukhoe, Kanghoe, Sujeonghoe, A chae), Mareum chan (Po, Jaban), Changachi (Jangkwa, Sukchae (namul)-Japchae, Kyujachae), Muchim, Sam, Tuigim, Pyunyuk, sundae, suran, Jeockal (Sikhae), Jockpyun, Mal-i, Jihi, Kee, Pojeok, Gimchi etc. The kinds of Jabgwas are Kangieong(Sanja), Yumilgwa, Suksilgwa, Dasik, Jeonggwa, Yeocgangjeong, Gwapyun etc. The kinds of beverages are Hwachaes and Teas. The terms of the wines in Korean cooking bok are 173 kinds. There are 21 kinds of Relish(komyung). There are 12 kinds of Jang, and the terms of the seasonings are as follows: mustard, cinammon, pep per, powder of peppers, powder of sesame, honey, garlic, ginger, sugar, salt, vinegar, syrup, yunjeup, jochung, sesamol-oil, chojeckuk, sesame, greet-onion, powder of black pepper, oil etc. There are 547 kinds of prepared cooking terms, 36 kinds of cutting terms and 34 kinds of boiling term in food making terms.

경남지역을 중심으로 한 한국인의 식품 기호도에 관한 조사연구 (Survey on Food Preference in Gyeongnam Area)

  • This research was carried to investigate the food preference of students, from elementary school, middle school, high school, university and industrial workers on Jinju, Sacheon and Jinyang by age and sex. The results were obtained as follows. In case of rice as the stationary food, plain white boiled rice showed the highest preference among all the groups. Most of groups liked most of one-dish meals such as kimbab, fried rice with kimchi, dumplings and bibimbab, especially the elementary school students and middle school students. On the other hand, high percentage of industrial workers disliked the western food such as pizza, hamburger and sphagetti. Most of subjects liked jajangmun, nangmun and bibimgooksu as noodles. As the side dishes generally they prefer the soup to stew. Male prefer the soup with beef and female prefer soup with vegetables. Stew with kimchi and stew with soybean paste showed high preference among most of groups. Most of broil food showed high preference, and students prefer meat to fish as broil cooking materials especially younger students. As a general they liked soybean sprout, spinach and wild sesame leaf as namul cooking method and they liked korean cabbage kimchi, chonggak kimchi, kackdoogi and dongchimi as kimchi. As a dessert subjects liked most of fruits and they liked yoghurt, fruit juice, milk, sikhae and soda as drinks generally. On the other hand snacks such as cooky, candy, cake, corn, rice cake, sweet potato have the lowest percentage preferance as a dessert, but students from elementary schools showed the highest preferance to sweet such as cooky, cake and candy than any other group. These food preferance results showed some nutritional problems especially young age students. They should eat more green-yellow vegetables, liver food and dried small sardine and they should reduce snacks such as candy and cooky and soda drinks. Therefore it is necessary to conduct nutrition education by parents, teachers and dietician together to improve their food habits and their health.

한국의 발효식품에 관하여 (Traditional Fermented Food Products in Korea)

  • Fermented foods available in Korea may be classified into four groups, namely, fermented soybean products, fermented cereal products, fermented vegetable products, and fermented fishery products based on raw materials used. The representative fermented foods based on soybean are Kanjang(soysauce), Doenjang(fermented soybean pastes), and Kochujang(red pepper added-fermented soybean paste). Such fermented products are made using Meju(functioning as a starter and prepared by fermentation of steamed soybean mash) as an essential ingredient, and used widely as a soup base and/or in seasoning side-dishes for everyday meals year around. Excepting Sikhae, all fermented products based on rice and other cereal grains are of alcoholic nature. Takju (Makgeolli) used to be made using rice as the major raw material, however, mainly due to the shortage of rice in recent years, other cereals, such as, barely, corn, and wheat flours are also used to replace rice today. Owing to such changes in the raw materials. the popularity of Takju has been somewhat reduced, yet it is still widely consumed in rural areas. Although Chungju is a popular rice wine with superior qualify over Takju, the amount consumed is considerably limited. The highest qualify rice wine, Bupju, in particular, is made by a low temperature fermentation using glutinous rice. Kimchi is an unique fermented vegetable product of long tradition in Korea. Although it was for consumption mainly in winter season serving as a source of vitamins, today it is widely used throughout the year. Except Kkakdugi and Dongchimi, all of the fermented vegetable products contain salted Korean cabbage as an essential item, while they abound in varieties depending on material composition and methods of processing, and also on seasons and localities Next to Kimchi in this category is Kkakdugi made of raddish in popularity and quantity consumed. The four groups of fermented food products described above are reviewed in some detail and evaluated in terms of their nutritional significances, processes and microorganisms involved. and their commercial potentials. Jeotkal (or Jeot) is a name given to all fermented products of fishery origin. A number of Jeot can be prepared by adding salt and allowing fermentation to the raw materials such as shrimp, anchovy octopus, clam, oyster, etc.

포항 향토음식의 인지도 및 섭취빈도에 관한 조사연구 (A Study on the Recognition and Intake Frequency of Pohang's Local Foods)

  • 본 연구는 포항시민들을 대상으로 향토음식에 대한 인지적 특성과 섭취빈도 및 기호도를 조사 연구함으로써 향토음식에 대한 이해와 관심을 가지는 계기를 마련하고, 앞으로의 효과적인 발전방향을 제시하기 위한 기초자료로 제공하고자 실시하였다. 본 연구 결과, 포항시민들의 포항향토음식에 대한 관심도는 대체로 높게 나타났고, 향토 음식의 가장 중요한 기준은 맛과 영양으로 나타났으며, 포항향토음식 발전에 가장 필요한 것은 조리법의 표준화 및 단순화로 나타났다. 또한, 포항향토음식에 대한 가치 인식은 건강과 관련된 항목에서 높게 나타났고, 50대 이상과 거주연한 이 26년 이상으로 오래된 집단이 가장 높은 인지적 특성을 나타내었다. 포항향토음식의 섭취빈도 및 기호도를 조사한 결과, "과메기", "물회", "구룡포대게", "회국수", "모리국수", "피데기오징어", "물곰탕", "홍치밥식해", "제사밥식해", "고래고기", "개복치", "두치찜", "문어회", "물가자미무침회", "물가자미조림", "물가자미튀김", "군수 소라산적", "생미역무침", "미역귀요리", "시금장", "부추요리", "부추달걀말이", "곡강시금치", "송이요리", "노란콩잎무침", "푸른콩잎장아찌", "푸른콩잎물김치", "포항해맞이빵", "검은돌장어요리", "고추찜", "고추잎나물무침", "산나물비빔밥", "도토리묵무침", "오이미역찬국", "동동주" 등 거의 모든 항목에서 50대 이상, 26년 거주이상 집단이 가장 높은 기호도와 섭취빈도를 나타내었고, 대체적으로 연령이 높을수록, 거주연한이 길수록 높은 기호도와 섭취빈도를 나타내었다. 향후 포항향토음식과 관련된 다양한 문화행사를 개최하고 홍보에 힘써야 할 것이며, 전문 판매점을 보급시킴과 동시에 전통의 맛을 유지하면서 현대감각에 맞게 개발하고 보편화시켜 세계적인 음식으로 만들고, 신세대의 입맛에 맞게 조리법의 변형 또한, 이루어져야 할 것이다.

한국 전통발효식품에서 분리한 유산균의 프로바이오틱스 특성 및 건강기능성 연구 (The Potential Probiotic and Functional Health Effects of Lactic Acid Bacteria Isolated from Traditional Korean Fermented Foods)

  • 본 연구에서는 한국의 전통발효식품인 식해, 열무김치, 비지에서 분리한 유산균의 프로바이오틱스로써의 사용 가능성을 확인하였다. 분리된 유산균 중 pH 2.5의 산에서 60% 이상의 생존율을 나타내는 Pediococcus inopinatus BZ4, Lactobacillus plantarum SH1, Lactobacillus brevis SH14, Pediococcus pentosaceus YMT1, Leuconostoc mesenteroides YMT2는 0.3% 담즙산에서도 모두 우수한 생존율을 나타내어 이 5종을 선별하여 실험을 진행하였다. 간접적으로 유용미생물의 군집화 및 병원성 세균의 부착을 저해하는 자가 응집 및 상호 응집 실험에서 다섯 개의 유산균은 강력한 응집능을 나타내었다. 유기용매를 이용한 세포 표면 소수성 실험에서 3가지 용매에 모두 부착성을 나타내어 세포 표면의 높은 소수성을 보여주었으며 이는 간접적으로 장세포에 부착할 수 있는 세포 부착능이 우수하다는 것을 보여준다. 또한, DPPH, ABTS 라디컬 소거능 측정, 지질 과산화억제능 실험에서도 선별된 유산균의 cell-free supernatant 및 intracellular cell-free extract는 항산화 활성을 나타내었다. 마지막으로 진균인 C. albicans ATCC 10231를 제외한 4가지 병원성세균(E. coli KCTC 2571, H. pylori HPKCTC B0150, L. monocytogenes KCTC 13064, S. aureus KCTC 1916)에서 모두 항균활성이 나타남을 확인하였다. 상기 실험결과를 바탕으로, 분리된 유산균은 항산화, 항균활성을 보유하고 있는 프로바이오틱스 제제로써 활용이 가능할 것으로 기대되며 이는 기초적인 실험으로써 산업화를 위한 임상검증 등의 추가적인 연구가 필요하다고 사료된다.

안동지역의 제례에 따른 음식문화(II) -동제(洞祭)와 제물(祭物)- (Dietary Culture for Sacrificial Rituals and Foods in Andong Area(II) -Village Sacrificial Rituals and Foods-)

  • The sacrificial foods using at 88 villages in Andong area where the village sacrificial rituals are performed, were investigated in 1994. The finding are as follows; 1. Since the village sacrificial rituals keep ancientry, white Baeksulki without any ingredients is used as Ddock (a steamed rice cake) in 74 villages, and in 5 villages the Baeksulki was served just in Siru (a tool used to prepare Ddock). The type of meat serving in rituals has been changing from large animal to small animal and the type of light from bowl-light to candle. 2. Though the ritual observes Confucianism style, memorial address was offered in 34 villages and only in 8 villages, liquor was served 3 times and the address was offered. In 60 villages, liquor was served only once, and calling village god, bowing twice, and burning memorial address paper were performed in order. Burning paper has been meaningful in rituals. 3. Tang (a stew) was served in 21 villages, and in 18 villages even Gook (a soup) was not used. The numbers of village which do not use cooked rice and Ddock are 14, respectively. 4. Fruits are essential in rituals foods. In 63 villages, 3 kinds of fruits are served and this is contrasted with even number of fruits in Bul-Chun-Wi Rituals. 5. In 25 villages, fish and meat are not served. As meat, chicken in 19 village are served. Meat Sikhae (a fermented rice beverage) prepared with meats or fish are served in 5 villages. Slice of dried meat is served in 73 villages commonly. 6. In gender of god for village shrine, woman in 43 villages, couple in 17 villages, man in 9 villages, mountain god in 2 villages, villages tree, etc were enshrined. In 52 villages liquor is served in rituals (liquor is used in 58 villages including serving god), in 28 villages sweet liquor (Gamju) is served for god (sweet liquor is used in 46 villages), and liquor, water, or sweet liquor is just displayed on table but not served in 8 villages. Incensing is found to be not common in village ritual, only in two villages it is performed. The most appropriate rituals food is thought to be pig for mountain god. Home dishes can not be used in village ritual and spoon is not used and chopstick is prepared from wild plant. Meat and fish are used in the raw.

동해안 특산 수산발효식품에서 분리된 균주의 항균 및 단백질 가수분해 활성 (Antibacterial and Proteolytic Activities of Bacterial Isolates from Ethnic Fermented Seafoods in the East Coast of Korea)

  • 동해안의 특산 수산발효식품 중 가자미밥 식해, 오징어 젓갈, 지누아리 무침 등 총 3종의 수산발효식품에서 233개의 균을 분리하였다. 5종의 주요 식중독 균에 대한 항균활성을 측정한 결과 총 분리균 중 36개(15.5%)가 B. cereus ATCC 14579에 대해 항균활성을 나타내 가장 많은 분리균이 이 지시균을 저해하였다. 그 다음으로 S. aureus KCTC 1916, L. monocytogenes ATCC 15313 순으로 다수의 분리균이 항균활성을 나타냈다. 특히 오징어 젓갈에서 분리한 균주 중 각각 5개(6.0%), 3개(3.6%)가 그람음성 지시균인 E. coli O157:H7 ATCC 43895, Sal. enterica ATCC 4931를 저해하였다. 단백질 가수분해 활성의 경우, 72시간 배양 후, 총 분리균주 중 72개(30.9%)가 활성을 나타냈고, 가장 많은 활성을 나타낸 것은 지누아리 무침 분리균으로 72시간 배양하였을 때 36개(60.0%)가 단백질 가수분해활성을 나타냈다. 본 연구를 통해 수산발효식품에서 분리한 균주가 식중독균을 저해하는 항균물질을 생산한다는 것과 단백질 가수분해 능력을 가진 균주가 존재한다는 것을 알 수 있었다. 활성이 우수한 균주의 확보를 통해 우수 활성균주로부터 천연 항균제를 분리, 적용할 수 있고, 단백질 가수분해활성을 다양한 발효식품 및 더 나아가 저염 수산 발효식품 생산에 활용할 수 있을 것으로 기대된다.
