Assessment of chicken thigh meat quality of Ross 308 broiler of animal welfare certified farm

  • Objective: This study aimed to evaluate the difference in the thigh meat quality of Ross 308 broiler from conventional and welfare farms. Methods: Thigh meat samples of Ross 308 broilers (age, 35 d; carcass weight, 1.1 kg) from conventional farm (RCF, n = 60) and animal welfare farms (RAWF, n = 60) were analyzed. Proximate composition, pH, color (lightness, redness, and yellowness), water-holding capacity (WHC), shear force, total aerobic bacteria (TAB), and volatile basic nitrogen (VBN) were measured and the levels of bioactive compounds such as dipeptides (anserine and carnosine), creatine, creatinine, and their anti-oxidation activity were determined. Results: The RCF and RAWF did not differ significantly in their proximate composition, WHC, color, and creatine and carnosine levels. The pH value was significantly lower in RAWF than in RCF on day 7. The shear force value was significantly higher in RAWF than in RCF throughout the storage duration. TAB in RCF on day 9 were significantly higher than those in RAWF. The VBN content of RAWF was significantly lower than that of RCF after 5 days of storage. Creatinine content was significantly higher in RAWF (3.50 mg/100 g) than in RCF (3.08 mg/100 g) on day 1. Along with higher carnosine and anserine contents of RAWF, it had significantly higher 2,2-diphenyl-1-picrylhydrazyl and 2,2-azinobis (3-ethylbenzothiazoline-6-sulfonic acid) radical scavenging activities than those of RCF. Conclusion: These results imply that the animal welfare farming system beneficially affects the overall oxidative stability of Ross 308 thigh meat.

  • This study aimed to evaluate the sulfate removal capacity of the enzyme-induced carbonate precipitation (EICP) technique through the chemical precipitation of sulfate with calcium ions. The optimal EICP recipe was obtained to retain the excess calcium cations in the solution for the generation of a sufficient amount of calcium carbonate (CaCO3) mineral. The effect of gypsum precipitation on the EICP-treated sand specimen was investigated by measuring the shear wave velocity and by visual inspection via scanning electron microscopy. The EICP solution using soybean crude urease, as an alternative to laboratory-grade purified urease, exhibited a lower sulfate removal efficiency at a similar CaCO3 production rate compared with the optimal EICP recipe because of soybean impurities.

Mechanism of improving quality of dry-aged pork loins in scoria-containing onggi, Korean earthenware as a storage container

  • Objective: Many scientists have investigated solutions to reduce microbiological risks in dry-aged meat after the dry-aging technology was revived for high quality and value-added premium meat product in the market. This study aimed to investigate the effect of scoria powder in onggi (Korean earthenware) on the meat quality of pork loins during 21 days of dry aging and to elucidate its mechanism of action. Methods: The pork loins were randomly divided into three groups: aged in vacuum-packaging, onggi containing red clay only (OR), and onggi containing 30% red clay and 70% scoria powder (OS). Microbial analyses (total plate count and Lactobacillus spp.) and physicochemical analyses (pH, shear force, volatile basic nitrogen [VBN], water activity, 2-thiobarbituric acid reactive substances, water content, water holding capacity, cooking loss, and color analysis) of aged meat were conducted. Far-infrared ray emission, quantification of immobilized L. sakei and microstructure of onggi were investigated to understand the mechanism. Results: On day 21, the meat aged in OS exhibited lower pH, shear force, VBN, and water activity than those aged in OR, along with an increase in the number of Lactobacillus spp. OS had a smaller pore diameter than OR, implying lower gas permeability, which could promote the growth of L. sakei. Conclusion: OS improved the microbiological safety and storage stability of pork loin during dry aging by increasing number of Lactobacillus spp. possibly due to low permeability of OS.

  • Latex modified concrete (LMC) is a successful polymer-portland cement concretes, which have been developed and used for many years, in overlaying bridge decks and resurfacing industrial floors. The excellent bond strength to substrate, easy application and high resistance to impact, abrasion, wear, aggressive chemicals and freeze-thaw deterioration have made this material used widely. The objective of this study was to determine experimentally the load-deflection response and ultimate strength of reinforced RC beams. The cracking patterns and the mode of failure were observed. Because of excellent bond strength and repairing effects, the RC beams repaired by LMC at compression or tension zone showed over 100% recovery from damaged structures. The RC beams overlaid by LMC showed significant improvement at load carrying capacity as overlay thickness increases. However, the beams repaired of tension zone without shear stirrups almost showed no strengthen effect, and indicated an interfacial failures. The interfacial behavior was estimated by numerical method adopting the concept of shear flow.

Analysis of Meat Quality for Hanwoo Beef using Machine Learning (기계학습을 이용한 한우고기 품질 분석)

  • Recently, various machine learning algorithms have been actively applied to the field of livestock research, including genetic analysis, and have drawn noteworthy results. In this study, the statistical characteristics of meat color, hydrogen ion concentration, water holding capacity (WHC), shear force, and grilling loss that affect the quality of Hanwoo beef are examined using the Hanwoo beef data collected in various environments. Moreover, the prediction of meat quality is also investigated using the two machine learning algorithms, which are linear regression and regression tree. Analysis results show that meat color has the most significant effect on WHC, which determines the tenderness of beef, and hydrogen ion concentration significantly influences shear force and grilling loss. Through this study, we can confirm the applicability of machine learning algorithms in the research on the quality of Hanwoo beef. In addition, this study can also be applied to the prediction and improvement of the quality of Hanwoo beef.

Seismic control of high-speed railway bridge using S-shaped steel damping friction bearing

  • In this study, a new type of isolation bearing is proposed by combining S-shaped steel plate dampers (SSDs) with a spherical steel bearing, and the seismic control effect of a five-span standard high-speed railway bridge is investigated. The advantages of the proposed S-shaped steel damping friction bearing (SSDFB) are that it cannot only lengthen the structural periods, dissipate the seismic energy, but also prevent bridge unseating due to the restraint effectiveness of SSDs in the large relative displacements between the girders and piers. This study first presents a detailed description and working principle of the SSDFB. Then, mechanical modeling of the SSDFB was derived to fundamentally define its cyclic behavior and obtain key mechanical parameters. The numerical model of the SSDFB's critical component SSD was verified by comparing it with the experimental results. After that, parameter studies of the dimensions and number of SSDs, the friction coefficient, and the gap length of the SSDFBs were conducted. Finally, the longitudinal seismic responses of the bridge with SSDFBs were compared with the bridge with spherical bearing and spherical bearing with strengthened shear keys. The results showed that the SSDFB can not only significantly mitigate the shear force responses and residual displacement in bridge substructures but also can effectively reduce girder displacement and prevent bridge unseating, at a cost of inelastic deformation of the SSDs, which is easy to replace. In conclusion, the SSDFB is expected to be a cost-effective option with both multi-stage energy dissipation and restraint capacity, making it particularly suitable for seismic isolation application to high-speed railway bridges.

Genome-wide association studies to identify quantitative trait loci and positional candidate genes affecting meat quality-related traits in pigs

  • Meat quality comprises a set of key traits such as pH, meat color, water-holding capacity, tenderness and marbling. These traits are complex because they are affected by multiple genetic and environmental factors. The aim of this study was to investigate the molecular genetic basis underlying nine meat quality-related traits in a Yorkshire pig population using a genome-wide association study (GWAS) and subsequent biological pathway analysis. In total, 45,926 single nucleotide polymorphism (SNP) markers from 543 pigs were selected for the GWAS after quality control. Data were analyzed using a genome-wide efficient mixed model association (GEMMA) method. This linear mixed model-based approach identified two quantitative trait loci (QTLs) for meat color (b*) on chromosome 2 (SSC2) and one QTL for shear force on chromosome 8 (SSC8). These QTLs acted additively on the two phenotypes and explained 3.92%-4.57% of the phenotypic variance of the traits of interest. The genes encoding HAUS8 on SSC2 and an lncRNA on SSC8 were identified as positional candidate genes for these QTLs. The results of the biological pathway analysis revealed that positional candidate genes for meat color (b*) were enriched in pathways related to muscle development, muscle growth, intramuscular adipocyte differentiation, and lipid accumulation in muscle, whereas positional candidate genes for shear force were overrepresented in pathways related to cell growth, cell differentiation, and fatty acids synthesis. Further verification of these identified SNPs and genes in other independent populations could provide valuable information for understanding the variations in pork quality-related traits.

Effects of dietary mulberry leaves on growth, production performance, gut microbiota, and immunological parameters in poultry and livestock: a systematic review and meta-analysis

  • Objective: This study aimed to assess the effects of dietary mulberry leaves on the growth, production performance, gut microbiota, and immunological parameters of poultry and livestock. Methods: The PubMed, Embase, and Scopus databases were systematically analyzed to identify pertinent studies up to December 2022. The effects of mulberry leaf diet was assessed using the weighted mean difference, and the 95% confidence interval was calculated using a random-effects model. Results: In total, 18 studies that sampled 2,335 poultry and livestock were selected for analysis. Mulberry leaves improved the average daily gain and reduced the feed/meat ratio in finishing pigs, and the average daily gain and average daily feed intake in chicken. In production performance, mulberry leaves lowered the half carcass weight, slaughter rate, and loin eye area in pigs, and the slaughter rate in chickens. Regarding meat quality in pigs, mulberry leaves reduced the cooked meat percentage, shear force, crude protein, and crude ash, and increased the 24 h pH and water content. In chickens, it increased the drip loss, shear force, 45 min and 24 h pH, crude protein, and crude ash. Mulberry leaves also affect the abundances of gut microbiota, including Bacteroides, Prevotella, Megamonas, Escherichia-Shigella, Butyricicoccus, unclassified Ruminococcaceae, Bifidobacterium, Lactobacillus, and Escherichia coli in poultry and livestock. Mulberry leaves at different doses were associated with changes in antioxidant capacity in chickens, and immune organ indexes in pigs. With respect to egg quality, mulberry leaves at different doses improved the shell strength, yolk color, eggshell thickness, and eggshell weight. However, moderate doses diminished the egg yolk ratio and the egg yolk moisture content. Conclusion: In general, dietary mulberry leaves improved the growth, production performance, and immunological parameters in poultry and livestock, although the effects varied at different doses.

Static and fatigue performance of short group studs connector in novel post-combination steel-UHPC composite deck

  • Casting Ultra High-Performance Concrete (UHPC) on an orthotropic steel deck and forming a composite action by connectors could improve the steel deck fatigue performance. This study presents the mechanical performance of a proposed post-combination connection between UHPC and steel, which had a low constraint effect on UHPC shrinkage. A total of 10 push-out tests were conducted for static and fatigue performance investigations. And the test results were compared with evaluation methods in codes to verify the latter's applicability. Meanwhile, nonlinear simulation and parametric works with material damage plasticity models were also conducted for the static and fatigue failure mechanism understanding. The static and fatigue test results both showed that fractures at stud roots and surrounding local UHPC crushes were the main failure appearances. Compared with normally arranged studs, group arrangement could result in reductions of static stud shear stiffness, strength, and fatigue lives, which were about 18%, 12%, and 27%, respectively. Compared with the test results, stud shear capacity and fatigue lives evaluations based on the codes of AASHTO, Eurocode 4, JSCE and JTG D64 could be applicable in general while the safety redundancies tended to be smaller or even insufficient for group studs. The analysis results showed that arranging studs in groups caused obviously uneven strain distributions. The severer stress concentration and larger strain ranges caused the static and fatigue performance degradations of group studs. The research outcome provides a very important basis for establishing a design method of connections in the novel post-combination steel-UHPC composite deck.

Evaluation on the Characteristics of Weak Soil Adjacent to Chemical Compaction Pile of Using Bottom Ash (Bottom Ash를 활용한 Chemical Compaction Pile의 주변 지반 개량 특성 평가)

  • To evaluate on the applicability of Chemical Compaction Pile (CCP) method to weak soil improvement, two kinds of testing chambers were fabricated and the changes of water content and shear stress associated with soil types, ages and distances from the center of pile were measured with different mixing proportions of CCP such as bottom ash, lime powder and added admixture. As results of test, it was noted that water content and shear stress of ground are mainly affected by the amount of lime powder and increase of the amount corresponds to rapid improvement of soil. And the improvement depended greatly on the types of soil also. It was finally found that CCP developed can be applicable to bearing pile as well as soil improvement since CCP has a bearing capacity enough to carry loads.
