참깨가루와 통참깨로 착유한 참기름의 성분 비교 (Comparison of Components of Sesame Oil Extracted from Sesame Flour and Whole Sesame)

  • 수입 참깨가루로 제조한 참기름의 품질과 위생적 안정성에 대한 기초자료를 얻고자 통참깨와 참깨가루를 원료로한 참기름의 일반성분, 화학적 특성, 지방산, sesamol, sesamolin, sesamin 함량 및 AOM에 의한 유도기간 등을 비교 조사하였다. 일반성분 중 수분은 통참깨에 비해 참깨가루가 월등히 낮게 나타났으며, 단백질은 거의 차이가 없었다. 참기름의 화학적 특성으로 산가와 검화가는 참깨가루가 통참깨에 비해 높게 나타났으며, 요오드가는 통참깨군보다 낮았다. 참기름의 지방산 조성에서 linolenic acid과 linoleic acid의 함량은 각각 222.44~144.14, 2713~1776.46 $\mu\textrm{g}$/mL이었고, linoleic acid와 ${\gamma}$-linoleic acid의 함량이 통참깨 참기름에 비해 참깨가루 참기름의 함량이 낮았다. Lignan 물질 중 sesamol 함량은 통참깨 참기름이 참깨가루 참기름보다 함량이 높았고, 인도산 통참깨 참기름의 sesamol 함량이 가장 높았다. Sesamin, sesamolin 함량은 한국만 통참깨 참기름이 가장 높았다. AOM에 의한 산화유도시간은 북한산, 중국산 참깨가루가 각각 6.67, 13.35 시간으로 나타나 통참깨군보다 산화안정성이 낮은 것으로 나타났다.

  • This study was carried out in order to compare flavor of sesame oils prepared with Korean and Chinese sesame. There were no significant differences in the fatty acid composition, sesamin and tocopherol content of Korean and Chinese sesame oils. The color of Korean sesame oil was darker than that of Chinese sesame oil. It seemed that of Chinese sesame oil by analysis of aroma characteristics. Sensory evaluation showed that the acceptability of Korean sesame oil was higher than that of Chinese sesame oil in ordor test, whereas there were no significant differences between the acceptability of Korean sesame oil that of Chinese sesame oil in seasoned cucumber test.

개오가피의 성분 및 항암효과 (Chemical Components of Acanthopanax divaricatus and Anticancer Effect in Leaves)

  • Acanthopanax divaricatus Seem. is a medicinal plant growing widely through out Korea, Japan and China. The plant material of Acanthopanax spp. is used as analgesic , tonic, sedative drug as well as for the treatment of hypertension, rheumatism and diabetes. From the stem barks and root barks of A. divaricatus, diterpenoid compound was isolated and identified as pamaric acid ($C_{20}H_{30}O_2,\;mp\;164^{\circ}C$), lignan compounds were isolated and identified as d-sesamin ($C_{20}H_{18}O_6,\;mp\;123{\sim}124^{\circ}C$), eletheroside E ($C_{34}H_{46}O_{18},\;mp\;257{\sim}259^{\circ}C$), three sterol compounds were identified as ${\beta}$-sitosterol, campesterol, stigmasterol, and six fatty acid compounds were identified as stearic acid, palmitic acid, oleic acid, linolenic acid, arachidonic acid and behenic acid. And also leaves of A. divaricatus, chiisanoside were identified, one of secotriterpenoidal compound(white amorphorous powder crystal, mp $228^{\circ}C$). Anticancer activity and nephrotoxicity were tested by MTT assay. Anticancer effect of chiisanoside was much lower than that of cisplatin.

  • Phytochemical constituents were isolated from the fruits of Acanthopanax chiisanensis by repeated column chromatography. Their structures were identified as $\beta$-sitosterol (1), daucosterol (2), sesamin (3), chiisanogenin (4), and $22\alpha$-hydroxy chiisanogenin (5) by spectroscopic analysis (MS, 1H-, and 13C-NMR). Compounds 1 - 5 were isolated for the first time from the fruits of A. chiisanensis.

  • Seven compounds were isolated from the stem of Acanthopanax senticosus by repeated col-umn chromatography. Their structures were elucidated as isovanillin (1), (-)-sesamin (2), iso-fraxidin (3), (+)-syringaresinol (4), 5-hydroxymethylfurfural (5), eleutheroside B (6), and eleuth-eroside E (7) by spectral analysis. Among them, isovanillin (1) was isolated for the first time from the family Araliaceae.

  • The chemical constituents of root bark of Acanthopanax sessiliflorum Seemann(Araliaceae) which is distributed in southern region of Korea are studied. The five kinds of chemical constituents are isolated from MeOH extract of root bark by column fractionation and purified by recrystallization. Substance $I{\sim}III$ were identified as stigmasterol, ${\beta}-sitosterol$ and campesterol. Substance IV is suggested as a lignan substance based on chemical and spectral discussions. The molecular formula of substance $V\;show\;C_{20}H_{18}O_6$ and its melting point is $120.5{\sim}121.5^{\circ}$. Due to the spectral data, it is confirmed that substance V is a (+) sesamin of lignan.

  • Anti-estrogenic activity of (-)-sesamin (1), helioxanthin (2), savinin (3), taiwanin C (4), and 3­(3,4-dimethoxybenzyl)-2-(3,4-methylenedioxybenzyl)butyrolactone (5) isolated from the root of Acanthopanax chiisanensis was tested using Ishikawa cells. Among them, compound 3 exhibited anti-estrogenic activity ($IC_{50}\;=\;4.86\;{\mu}M$).

Influence of Drought Stress on Chemical Composition of Sesame Seed

  • Sesame (Sesamum indicum L.) seeds contain abundant oil and antioxidative lignans related to the seed quality. To evaluate the potential effects of drought stress on the chemical composition of sesame seeds, eighteen cultivars were imposed water-deficit condition by withholding irrigation during 15 days at podding and maturing stage, compared with well-watered plants as control in seed yield and chemical composition. Drought treatments showed great decrease of seed yield with not affecting seed weight. The contents of sesamin and sesamolin decreased while lignan glycosides inversely increased in response to drought stress. Oil content was not significantly changed by drought treatment in spite of its slight decrease. In case of fatty acid composition, there were significant differences in increase of oleic acid while inverse decrease of linoleic acid under drought stress condition. These results demonstrate that the chemical composition of sesame seed may be modified with drought stress. In particular, the increase of sesaminol glucosides with strong antioxidative activity was observed.
