Comparison of Quality Traits of Thigh Meat from Korean Native Chickens and Broilers

  • The quality attributes of thigh meat from a certified meat-type commercial Korean native chicken (WoorimatdagTM, WM) and a commercial broiler (Ross, CB) raised under the same environmental conditions, were compared. One-d-old, mixedsex WM (200), and 200 broilers (Ross, CB) each were randomly assigned to floor pens (20 chickens per pen). The production stages (I, II, and III) were selected based on similar live weight. The crude fat contents of WM thigh meat were lower than those of CB. WM thigh meat contained higher stearic and arachidonic acid contents but lower palmitoleic and oleic acid contents compared to those of CB. The thigh meat color CIE $L^*$- and CIE $b^*$-values of WM were lower, but inosine-5'-monophosphate content was higher in WM than CB in whole production stages. WM thigh meat showed higher collagen content, hardness, springiness, gumminess, and chewiness than CB. In sensory evaluation, odor, taste, and overall acceptance were higher while color was lower in WM. Based on these results, it can be concluded that even if commercial broilers are raised under the same environmental conditions as WM, the unique quality attributes of WM thigh meat are distinctively unique.

Quality Properties of Ginseng Chicken Porridge Prepared with Individually Gamma Irradiated Raw Materials

  • This study was to establish irradiation process for serving ginseng chicken porridge to immune-compromised patients. Raw chicken, glutinous rice, ginseng, garlic, dried jujube and carrot were used as raw materials for ginseng chicken porridge. The initial level of microorganisms contaminated in raw materials and their predominant species were determined. The level of microorganism detected in raw chicken and in ginseng were 3.4 Log CFU/g and 4.7 Log CFU/g, respectively. Major predominant microorganisms were Pseudomonas fragi in chicken, Enterobactor faecalis in carrot, and Bacillus subtilis in other materials. Chicken and carrot were excluded from irradiation treatment because ordinary thermal treatment can inactivate the microorganisms contaminated in those materials. Five kGy of gamma ray was the effective sterilizing dose required to inactivate B. subtilis in glutinous rice, garlic and jujube, and 10 kGy in ginseng. Ginseng chicken porridge was prepared with each of raw materials gamma-irradiated with the selected sterilizing doses. Control was ginseng chicken porridge prepared with non-irradiated materials. The growth of microorganisms was not observed in the chicken porridge prepared with irradiated raw materials. Sensory results showed that the score of flavor and off-flavor was slightly lower in ginseng chicken porridge prepared with irradiated raw materials than in control. This was considered to be due to the increase of TBARS values by gamma irradiation. However, there was no significant difference on overall acceptance between the porridge prepared with irradiated raw materials and control. The results showed that the individual gamma irradiation of raw materials can be applied to prepare ginseng chicken porridge as meals for the immunocompromised patients.

큰 느타리버섯을 첨가한 튀김 어묵의 제조 및 특성 (Preparation and Characterization of Friend Surimi Gel Containing King Oyster Mushroom (Pleurotus eryngii))

  • 고품질 어묵의 개발을 위하여 항암성 및 혈압강하작용이 있는 큰 느타리버섯(Pleurotus eryngii)을 각각 0, 5, 10, 15 및 20% 첨가한 튀김 어묵을 제조한 다음 색조 변화, 물성특성 및 관능적 특성을 조사하였다. 큰 느타리버섯의 함유량이 증가할수록 어묵의 색도는 L값은 감소하는 경향, a값은 증가하는 경향 그리고 b값도 대체로 증가하는 경향을 나타내었다. 또한, 어묵의 유연성을 나타내는 절곡검사의 결과로는 모든 시료에서 AA로 측정되어 큰 느타리버섯의 첨가에 관계 없이 우수한 것으로 나타났다. 물성검사 결과에서, 10%의 팽이버섯을 함유한 어묵에서 강도, 응집성, 탄성, 껌성 및 파쇄성이 가장 높게 관찰되었다. 관능검사의 결과로, 버섯이 첨가할수록 어묵의 향기에 대한 선호도는 높았으나 맛과 조직감에 대한 선호도는 낮게 나타났다. 전체적인 선호도는 큰 느타리버섯 10% 첨가군에서 가장 높았다.

Sourdough를 이용한 제빵의 특성 (Properties of Sourdough-added Bread)

  • 본 연구는 효모와 젖산균을 이용하여 sourdough을 제조하고 이것을 첨가하여 만든 식빵의 제조 특성, 식미 및 저장성에 미치는 효과를 연구하였다. Sourdough 30, 50, 100%를 각각 첨가 시 1차 발효 후 젖산균과 효모의 생육에서 젖산균수는 $10^{9-10}CFU/g$로 크게 증가함을 나타내었고, 효모는 젖산균의 생육에 의해 감소하는 경향을 보였다. 빵의 관능적 평가는 sourdough가 첨가된 빵인 경우 다소 신맛을 나타내었고 식감과 조직감은 대조구와 유의성이 없었으며 종합적 기호도에서는 sourdough 100% 첨가한 빵이 선호도가 높은 것으로 나타났다. 빵의 저장성에서 sourdough 첨가 식빵은 6일만에 곰팡이가 발생하여 3일만에 곰팡이가 발생한 대조구에 비해 보존기간이 늘어나는 것으로 나타났다. 또한, 세균과 곰팡이의 오염도에 있어서도 sourdough 첨가량이 증가할수록 미생물의 균수가 적게 나타났다. Sourdough 첨가시 빵의 노화속도는 sourdough가 30, 50 및 100%로 첨가량이 증가할수록 대조구에 비해 각각 13, 20 및 36% 지연되는 것으로 나타났다.

야콘의 항산화성 및 야콘 초절임제품의 저장 중 품질특성 (Antioxidative Activity of Yacon and Changes in the Quality Characteristics of Yacon Pickles during Storage)

  • The purpose of this study was to measure the antioxidant activity of yacon root and to manufacture yacon pickles for commercialization as a functional food. The total phenol content in yacon roots were the highest, 29.96 mg GAE/ 100 g, in the ethyl acetate fraction and the DPPH radical scavenging activity and ABTS radical scavenging activity was 37.07%, and 91.60%, respectively, in the ethyl acetate fraction. The optimum recipe for the pickling solution was determined to be vinegar, water and high fructose corn syrup, at 34%, 22% and 44%, respectively. The quality characteristics of yacon pickles using this solution were monitored during storage at $25^{\circ}C$ for 43 days. The pH value decreased to 2.98 (42 days) during storage and $^{\circ}Brix$ gradually increased during storage. The L-value decreased significantly during storage but there were no significant changes detected in the a and b values. No significant changes were detected in the hardness of the yacon pickles. According to the sensory evaluation, no significant changes in taste, texture and overall acceptance of yacon pickle were observed during storage. These results indicated that yacon was an excellent functional food in terms of its antioxidant activity and that pickling might be a promising methods to maintain the taste and quality of yacon during storage.

알로에 분말을 첨가한 생면의 제조조건 최적화 (Optimization of Manufacturing Wet Noodle Added with Aloe vera Powder)

  • Purpose: This study was conducted to optimize the conditions of manufacturing the wet noodle added with Aloe powder. Methods: The I-optimal design of response surface methodology (RSM) was used for the optimization of added amount of Aloe powder, water content, and kneading time as the independent variables. The quality characteristics (color, texture, water absorption ratio, volume, turbidity) and sensory characteristics (color, flavor, taste, mouth feel, overall acceptance) were analyzed as dependent variables. Results: The lightness, redness, and yellowness of the Aloe noodle were all lowered with the addition of Aloe powder. All texture characteristics such as hardness, elasticity and chewiness of Aloe noodle showed the tendency to increase with increasing amount of Aloe added and kneading time. The water uptake and the volume expansion tended to increase with increasing aloe addition and water addition. As the kneading time increased, the dissolution of solids decreased and the turbidity tended to decrease. Aloe powder content influenced the color, flavor and taste of the noodles most among independent variables, and the mouthfeel of the noodle influenced by the water addition and the kneading time. Conclusion: Aloe noodle showed the best desirability with 3.03% of Aloe powder, 43.56% of water content and 13.06 min of kneading time by RSM analysis. Aloe noodles prepared under these optimized conditions are expected to be able to manufacture and utilize functional Aloe noodles by meeting the content of isobarbaloin, which helps the intestinal functional activity.

MCT 대체지방의 산화안정성 및 조리 적합성에 관한 연구 (A Study on the Oxidative Stability and Cooking Scientific Characteristics of Fat Substitute MCT)

  • This study was carried on the oxidative stability and the real practice possibilities in cooking of fat replacer MCT. Nowadays, it was known that fats and oils had become causes for cardiac disease, obesity and cancer, so the new materials were needed for fat substitute that has less fat contents and low calories. The food industry concerned about fats and oils had been researched and developed new and various kinds of substitute fats. MCT(medium chain triglycerides) is one of the fat based fat substitutes used as fat replacers. The POV of com germ oil(CO), soybean oil(SO), shortening(ST), butter(BT), their blended oil with MCT 10-50%(w/w), and MCT were determined and oxidative stability by POV was compared MCT with those of them. MCT has shown higher oxidative stability than CO, SO, ST, BT, so oxidative stabilities in all kinds of blended oils become higher and higher by the increased substitution ratios. In case of bread, the volume of bread prepared with MCT(MCT bread) substituted for ST at 10-40% level(w/w) were increased a little comparing to that made of shortening(ST bread). But degree of gelatinization of MCT bread were a little lower than ST bread, at the substitute ratio above 40%, the degree of gelatinization were reduced greatly. These phenomena were sustained in 9 stored days. While baking losses of MCT breads were almost same as ST bread until 30% substitute ratio, and the appearances of MCT breads were similar to ST bread until 40% substitute ratio. Also rheological properties and color(Lab) of MCT breads had shown no different significantly from ST bread until 20% substitute ratio, but by the results of sensory evaluation, overall acceptance including appearance, color, flavor, taste, texture of MCT breads were recognized almost same as ST bread by panel until 40% substitute ratio. Depends on the above results, we can suggest that 30-40% of MCT will substitute for shortening in making bread in order to reduce fat and calories intake amounts.

전처리 방법에 따른 홍게(Chionoecetes japonicus) 어간장의 제조 및 품질변화 (Effects of Preprocessing on Quality of Fermented Red Snow Crab Chionoecetes japonicus Sauce)

  • We explored preprocessing-mediated quality changes in red snow crab fish sauce. A control (C) group and groups treated with autolysis (A), boiling (B), enzymatic hydrolysis (E), and addition of Aspergillus oryzae (K) were formed. The titratable acidity of the K group increased with storage time, whereas that of groups C, A, B, and E decreased. The total and amino nitrogen contents initially increased on storage of all samples, but decreased in later periods. The total plate count (TPC) of the K group was initially 5.26 log CFU/mL and increased to 7.28 log CFU/mL at 3 months of storage. The TPCs of the C, A, B, and E groups were initially <5.00 log CFU/mL and decreased with storage. The lactic acid bacteria count of the K group was initially 4.80 log CFU/mL and increased until month 5 to approximately 6.06 log CFU/mL. The K group scored higher in terms of sensory attributes than the other groups and maintained marketable scores for all relevant properties (color, flavor, off-odor, and overall acceptance). Furthermore, the free amino acid content of the K group was the highest among all groups at approximately 3,000 mg per 100 g. These results suggest that K treatment may be beneficial in the preparation of fermented fish sauce.

로즈마리 추출물로 마리네이드 한 고등어의 품질 평가 (Quality Evaluation of Marinade Mackerel with Rosemary Extract)

  • 본 연구는 일반인들의 의식수준과 소득 증가로 건강 기능성 식품의 관심이 높아지고 있어 건조 로즈마리 추출물의 함량을 달리하여 마리네이드한 고등어의 품질 평가에 대하여 알아보고자 하였다. 또한 고등어 특유의 버린 냄새를 감소시키며, 고둥어의 DHA 등 건강에 유용한 성분의 섭취 증진하고자 하였다. 로즈마리 첨가량을 달리하여 마리네이드 한 고등어의 염도 측정 결과 기존의 유통되는 안동 간고등어의 소금 5% 이라보다는 건조로즈마리 추출물로 마리네이드 한 고등어의 염도가 2%로 소금섭취를 낮출 수 있었다. 저장 중 pH의 변화는 pH 6.2-6.3으로 적색육 어류의 초기 부패점인 pH 6.2-6.4의 범위 안에 들어가 제품 품질 특성에 적합하였고, 특성 차이 검사 중 견고성, 탄력성, 촉촉함 등 실험에 참여한 학생들이 별다른 거부감이 없었으며 기호도 검사에서 외관은 차이가 없었으나 풍미에서는 건조 로즈마리를 많이 첨가한 R 4보다는 R 2를 선호하는 것으로 나타났으며, 맛과 전체적인 기호도가 가장 좋은 것으로는 건조 로즈마리 추출물 많이 들어간 R 4 보다는 일정수준 첨가한 R 2가 최적의 첨가량으로 보아진다.

A combination of postmortem ageing and sous vide cooking following by blowtorching and oven roasting for improving the eating quality and acceptance of low quality grade Hanwoo striploin

  • Objective: It is well recognized that beef cuts from a low quality grade are usually associated with tougher, drier and less flavorful. Thus, the present study aimed at investigating the combined effects of postmortem ageing and sous vide (SV) cooking followed by oven roasting or blowtorching on the eating quality of low quality grade Hanwoo beef striploins. Methods: Hanwoo beef striploins (quality grade 3) obtained from 36 month-old Hanwoo steers were used, and the samples were chiller aged for 0 and 14 d at 4℃. After ageing, the samples were prepared into 2.5-cm steaks which were then SV cooked at 55℃ for 5 h and then raised to 60℃ for 1 h, and thereafter the SV-cooked the steaks were further roasted in oven for 20 min (SV+OV) or blowtorched (SV+TC) for 2 min. The cooked samples were analyzed for microbiological quality, browning index, Wanrner-Bratzler shear force (WBSF), aroma flavor compounds and sensory properties. Results: The SV cooking significantly reduced the WBSF values in beef samples (p<0.05). Blowtorching after SV cooking led to a browner surface of the beef steaks (p<0.05). The samples treated with SV+OV or SV+TC exhibited higher levels of Maillard reaction-derived aroma flavor compounds such as; pyrazines and sulfur-containing compounds compared to those just SV cooked. More especially, the SV+OV- or SV+TC- treated samples presented significantly higher flavor and overall acceptability scores compared to those just SV cooked (p<0.05). Ageing beef for 14 d significantly improved the tenderness by reducing the WBSF and increasing the tenderness scores. Conclusion: Thus, the combination of postmortem ageing and SV cooking followed by additional treatments (blowtorching or oven roasting) could be used to improve the eating quality especially tenderness and flavor as well as overall acceptability of low grade Hanwoo beef.
