남은 음식물 발효사료 급여가 돈육 삼겹살의 소비자 기호도에 미치는 영향 (Effect of Feeding Fermented Food Wastes on Consumer Acceptability of Pork Belly)

  • 본 연구는 남은 음식물 발효사료 급여가 돈육의 소비자 기호도에 미치는 효과를 알아보고자 국내에서 가장 소비가 많이 되고 있는 삼겹살 부위를 이용하여 일반소비자를 대상으로 기호도 조사를 실시하였다. 암퇘지 삼겹살의 경우 생육에 대한 소비자 평가는 신선도를 제외하고는 대조구와 시험구(FFWF) 사이에 뚜렷한 차이가 없는 것으로 나타났으며, 시식 후 소비자 관능특성에 있어서도 대조구와 시험구(FFWF) 사이 에 차이 가 없었다. 거세돈 삼겹살의 경우 생육에 대한 소비자 평가는 지방량을 제외하고 대조구와 시험구(FFWF) 사이에 뚜렷한 차이가 없는 것으로 나타났으며, 시식 후 소비자 기호도도 대조구와 시험구(FFWF) 사이에 차이가 없는 것으로 평가되었다. 전체적인 생육에 대한 소비자 평가는 육색을 제외하고는 대조구와 시험구(FFWF) 사이에 차이가 없는 것으로 나타났으며, 시식 후의 소비자 관능특성에 있어서도 대조구와 시험구(FFWF)는 차이가 없는 것으로 평가되었다. 선호도에 있어서는 암퇘지의 경우 대조구가 시험구(FFWF)에 비하여 선호도가 높게 나타났으며, 거세돈의 경우 시식 전 생육에 있어서는 시험구(FFWF)가 대조구에 비하여 선호도가 높게 나타났으나, 시식후의 선호도에 있어서는 대조구와 시험구(FFWF) 사이에 차이가 없었다. 전체적인 두 처리구 간의 선호도는 생육과 시식 후 모두 대조구와 시험구(FFWF) 사이에 차이가 없었다. 이상의 돼지 삼겹살의 소비자 기호도 평가 결과를 종합해 볼 때 남은 음식물 발효사료의 돼지사료로 이용 가능성을 확인하였다.

민들레 잎과 뿌리 분말을 첨가한 설기떡의 품질 특성 (Quality Characteristics of Sulgidduk Containing Different Levels of Dandelion (Taraxacum officinale) Leaves and Roots Powder)

  • 민들레 뿌리와 잎을 식품에 이용하기 위하여 민들레 뿌리와 잎의 첨가 수준을 각각 0, 1, 2, $3\%$로 달리하여 민들레 설기떡을 만들고 설기떡의 물리적, 관능적 특성을 통하여 바람직한 첨가수준을 알아보았다. 민들레 분말의 첨가수준이 중가될수록 L값과 a값은 감소하였고 b값은 증가하며, L3와 R3가 가장 어두운 색을 나타내는 것으로 보였다. 수분함량도 민들레 분말 첨가 수준이 증가될수록 감소하였으며 민들레 뿌리 첨가 수준이 0, $3\%$일 때 수분함량은 각각 $38\%$, $36\%$이었으며, 민들레 잎 분말 첨가 수준이 0, $3\%$일 때 각각 37, $35\%$인 것으로 나타났다. 조직감 측정결과 민들레 뿌리, 잎의 첨가 수준이 높아질수록 경도, 부착성, 탄성, 응집성, 씹힘성, 검성이 증가하는 경향을 보였다. 관능평가 결과 민들레뿌리와 잎의 첨가 수준이 각각 $3\%$$2\%$인 L1과 R2가 색과 향, 경도, 씹힘성, 바람직한 정도가 유의적(p<0.05)으로 좋게 평가되었다.

취반 재고미를 청가하여 제조한 저지방 분쇄우육의 관능검사 및 물성학적 특성 (Sensory and Instrumental Texture Characteristics of Low Fat Ground Beef Manufactured with the Addition of Cooked Old Rice)

  • 10% 지방육은, 풍미, 단단함을 제외하고는 대체로 좋지 않은 것으로 나타났고 10% 지방에 재고미 5%를 첨가한 육은 풍미, 입자 크기, 단단함, 전반적 적성은 좋게, 다즙성, 연도는 재고미의 첨가량이 더 많은 육과 30% 지방육에 비해 낮은 것으로 나타났다. 10% 지방에 10% 또는 20%의 재고미가 첨가된 육은 다즙성, 연도, 입자 크기, 전반적 적성은 좋게, 풍미, 단단함 등은 낮게 나타났으며 30% 지방육은 풍미, 다즙성, 연도, 단단함은 좋게, 입자 크기, 전반적 적성은 좋지 않게 나타났다. 결론적으로 재고미를 다량(20%) 혼입하는 것은 전반적 적성을 감소시켰지만 5% 혹은 10% 수준의 재고미를 혼합하는 것은 재고미의 적절한 소비를 꾀하면서 열량 감소, 지방 제거시 잃기 쉬운 육의 풍미, 다즙성, 전반적 적성의 유지 등 좋은 효과를 얻을 수 있었다. 관능 검사 결과 10% 지방에 5%와 10%의 재고미가 첨가된 우육이 좋은 평가를 받은 것은 근래 지방 섭취량을 줄이고자 하는 추세에 맞추어 큰 호응이 있을 것으로 기대된다.

한국형 육가공 제품류의 물리적 및 관능적 품질 특성 (Physical and Sensory Characteristics of Korean Style Meat Products)

  • The Korean styled meat products such as grilled and/or roasted ham(Jikhwagui: J), Bulgogi ham(B), Kimbab ham(K) and sliced roasted ham(DDukgalbi: D) were obtained from different Korean meat processing companies and investigated for their salinity, saccharinity, pH, moisture and fat content, meat color and sensory evaluation. The results obtained were as follows; Percentage of saccharinity in J, B, K and D ranged 7.5 %(13) - 12.7% (J2), 5.3 0/«B2) -7.5 o/«BI), 5.2 0/«K4) - 6.6 o/«KI, K2, KS), and 6.60/«04) - 14.4o/«Dl), respectively. Percentage of salinity in J, B, K and D ranged 2.260/«13)- 2.38 0/«J4), 1.850/«B2) - 2.45 0/«B3), 1.94o/«KI) - 2.40% (K3), and 1.830/«02) - 2.19 o/«Dl), respectively. The pH value of J, B and K were ranged 6.30 - 6.44, 6.266.37 and 6.20 - 6.42, respectively, which are slightly higher than that of D(5.86 - 6.25). Content of average moisture were higher in B(61.0 %), K(59.94%) and J(59.63%) compared to the D(55.93%). In crude fat, B and D were ranged 14-21 %, which are very lower than those of K(59.94%) and J(59.63%). In meat color, $L^*$ value were above 50.0, except D2 and D3. $a^*$ value of B were slightly higher than those of other meat products. Compared to sensory evaluation, the overall acceptability of J is excellent in the range of saccharinity 12.7%, salinity 2.3 %, moisture 61 %, crude fat II - 12%, $L^*$ value 52 - 54, and $a^*$ value 12.3- 12.7. In the case of B, the overall acceptability is excellent in the range of saccharinity 6.6 - 7.5 %, salinity 1.90- 2.45 %, moisture 60 %, crude fat 15 %, $L^*$ value 56, and $a^*$ value 15. In the case of K, the overall acceptability is excellent in the range of saccharinity 6.5 %, salinity 2.4 %, moisture 61 %, crude fat 16%, $L^*$ value 53, and $a^*$ valuce 15. In the case of D, the overall acceptability is excellent in the range of saccharinity 14.0%, salinity 2.1 %, moisture 55%, crude fat 55%, $L^*$ value 50, and $a^*$ value 13.

변형전분 및 Biopolymer가 Smoked Pork Sausage의 품질에 미치는 영향 (Effect of Modified Feed Starch and Biopolymer on the Qualities of Smoked Pork Sausage)

  • In order to study the effect of modified starch and biopolymer on the quality of smoked pork sausage, acetylated starch and biopolymer were added to the smoked pork sausage and physical characteristics, sensory qualify, and water holding capacity were Investigated. In the textural characteristics SA, SB and SC group were lower in hardness than control group. Cohesiveness was lower only on the SA group which was added by 0.6% acetylated starch. Adhesiveness was higher on the SA and SC group by addition of biopolymer. All treatment group were lower in springiness than control group. The effect of biopolymer and acetylated starch on gumminess and chewiness was evident but not constant In each group. In the mechanical characteristics such as hardness, springiness, gumminess, chewiness were indicated positive correlation coefficient, the other hand negative correlation in adhesiveness. The result of folding test was not changed in 20 days storage. At 30 days storage SB group contained the 0.6% acetylate starch showed the best point. The other hand the biopolymer added SA and SC group less acceptable, the biopolymer added SA and SC group, which were added by biopolymer and acetylated, indicated cap. 65% lower VBN value than control group. Sensory evaluation were not significantly difference in hardness, fracturability and adhesiveness but cohesiveness was higher in SC group. Gumminess was significantly higher in SA and SC group by biopolymer addition. Overall acceptability in sensory evaluation were significantly higher In SC group by biopolymer addition. Overall acceptability in sensory evaluation correlated significantly with fracturability, chewiness and gumminess. Chewiness of sensory evaluation and mechanical gumminess were not significantly correlated.

레몬홍삼과편의 홍삼 배합비에 따른 관능적.텍스쳐 특성 (Sensory and Mechanical Characteristics of the Lemon Red Ginseng-pyun prepared by different ratio of red ginseng)

  • This study was performed to determine the sensory evaluation and mechanical characteristics of lemon red ginseng-pyun. Lemon red ginseng-pyun was made with lemon juice(21.4%), sweet potato starch(6.7%), water(53.3%), sugar(13.3%), honey(5.3%) and various concentrations of red ginseng powder(0, 2, 4, 6, 8, 10%). The quality characteristics of the sample were estimated in terms of pH, color difference, texture profile analysis and sensory evaluation. The pH of lemon red ginseng-pyun showed no significant difference among the different ratios of red ginseng. With increasing red ginseng powder addition, the lightness was significantly(p<0.05) lower, and a value and b values were significantly(p<0.05) higher. In sensory evaluation, with increasing red ginseng powder addition, the color and bitter taste of lemon red ginseng-pyun were stronger, while clarity of the 10% added red ginseng was significantly(p<0.05) lower than that of the 0% added red ginseng. Elasticity, hardness, chewiness, softness. sweet taste and overall acceptability were not significantly different in any group. In texture profile analysis, chewiness, cohesiveness, gumminess and hardness were significantly(p<0.05) increased in the 10% added red ginseng but springiness was not significantly different in any group. Overall acceptability was related to texture, appearance, overall taste and sweet taste of lemon red ginseng-pyun. Therefore, development of lemon red ginseng-pyun with no sugar or artificial sweeteners is encouraged as a healthy diet for diabetes and hypertension patients, because red ginseng is defined as a functional foods.

당 알코올을 이용한 뽕설기의 관능적 특성 (Effects of various sugar alcohols on the sensory properties of Mulberry rice cake)

  • The effects of the substitution of sugar alcohol for sugar on the sensory properties of mulberry rice cake, 'Bbongseolgy', were evaluated in two phases. First, the relative sweetness of xylitol, erythritol and palatinose to the sucrose in the food systems were examined with paired comparison tests. Second, the sensory properties of the mulberry rice cake containing xylitol, erythritol and palatinose substitution for sugar at a sweetness level equal to sucrose were studied. Sensory analysis for the mulberry rice cake characteristics was conducted and consumer acceptability tests were performed. The physical properties of mulberry rice cake were also examined. The relative sweetness of xylitol, erythritol and palatinose, compared to sucrose, in the solid model food system were 1.00, 0.63 and 0.42, respectively. This result showed that the relative sweetness of xylitol, erythritol and palatinose to sugar was slightly lower than those in the liquid model food system, in which flavor did not influence the sweetness. Mulberry rice cake with erythritol or palatinose had very similar characteristics, with lower fracturability and tenderness, and higher moistness, compactness and chewiness compared to that with sucrose or xylitol. Mulberry rice cake with xylitol was significantly the most fracturable, grainy, and driest, and the least adhesive, among the samples. The consumer test showed no difference in overall acceptability among the samples and consumers perceived differences only in moistness, coarseness and compactness among the samples. Mulberry rice cake with erythritol was the most favored in many characteristics. These results indicate that erythritol substitution for sugar inmulberry rice cake is suitable as a low-calorie rice cake with beneficial functions to improve in the health and texture of the rice cake.

Effect of Free-range Rearing on Meat Composition, Physical Properties and Sensory Evaluation in Taiwan Game Hens

  • Experiments were conducted to evaluate the effect of an outdoor-grazed raising model on meat composition, physical properties and sensory attributes of Taiwan game hens. Six hundred 1-d old female chicks were raised on a floor for 8 weeks. On day 57, 600 healthy birds, with similar body weight, were selected and randomly assigned to three treatment groups (cage, floor-pen and free-range). The results showed that different feeding models had no effect on drip loss, cooking loss, moisture, crude protein, crude fat, crude ash, zinc and calorie contents in breast meat and moisture content in thigh meat. The free-range group had the lowest fat content in both breast and thigh meat, and the lowest calorie content in thigh meat. The firmness and toughness in both thigh and breast of the free-range group were the highest values (p<0.05). The crude protein, total collagen, zinc and iron contents in thigh meat and total collagen content in breast meat of the free-range group were significantly higher than those of the cage-feeding group (p<0.05). The meat sensory scores of flavor, chewiness and overall acceptability of both thigh and breast meat of the free-range group were significantly (p<0.05) better than those of the other two groups. Moreover, the current findings also indicate that the Taiwan game hens of the free-range feeding model displayed well-received carcass traits and meat quality, with higher scores for flavor, chewiness and overall acceptability for greater sensory satisfaction in both breast and thigh meat. In addition, the thigh meat contained high protein and total collage but low fat, offering a healthier diet choice.

향신료를 첨가한 식빵의 품질특성 (Effect of Spice Powder on the Characteristics of Quality of Bread)

  • 마늘분, 생강분, 계피분의 첨가량을 달리하여 제조한 식빵의 품질특성 비교 결과는 다음과 같다. 관능검사에서 마늘분, 생강분, 계피분의 첨가량이 증가할수록 외관의 부드러운 정도(softness)와 색상(color)이 강하다고 평가되었으며, 질감특성의 바삭바삭한 정도(brittle), 경도(hardness), 씹힘성(chewiness)도 첨가량이 증가할수록 높게 나타났다. 기호도면에서는 향신료의 첨가량이 증가할수록 낮게 평가되었으며, 대조군과 마늘분, 생강분, 계피분을 각각 1% 첨가한 식빵을 가장 선호하였다. 색도 측정 결과 향신료의 첨가량이 증가할수록 명도 L값은 감소하였으며, 반면에 적색도 a값과 황색도 b값은 증가하는 경향을 보였다. Texture측정에서 전반적으로 경도(hardness), 응집성(cohesiveness), 탄력성(springiness), 껌성(gumminess), 파쇄성(brittleness) 모두 마늘분, 생강분, 계피분을 각각 1%첨가한 식빵이 가장 낮게 나타났으며, 항신료의 첨가량이 증가할수록 대조군보다 특성이 강하게 나타났다. 관능검사와 기계적검사의 상관관계 결과 명도가 높을수록 선호하였으며, 경도(hardness), 파쇄성(brittleness)이 클수록 기호도가 낮아 입안의 촉감이 부드럽고 부서지는 정도가 적으며 색상이 밝을수록 좋게 평가되었다. 관능검사와 기호도간의 상관관계에서 밀가루의 독특한 냄새, 구수한 맛, 탄력성, 부푼 정도가 높을수록 선호하는 경향을 보여 향신료 특유의 냄새가 강하지 않고 구수하며 탄력성이 좋고 부푼정도가 좋을수록 선호하였다. 이상의 결과 마늘분, 생강분, 계피분을 각각 1% 첨가한 향신료 식빵의 품질이 높게 평가되어 식빵 제조시 향신료의 첨가량은 1%정도가 적당하다고 사료된다.

콩가루를 첨가한 고추장의 품질 특성에 관한 연구 (Quality Characteristics of Kochujang Prepared with Soy Powder)

  • To improve the sensory acceptability of Kochujang with added Meju powder, Kochujang was prepared with added raw soy powder and roasted soy powder were added instead of Meju powder. These Kochujang were fermented for 45 days at $25{\pm}3^{\circ}C$ and examined for changes in their physicochemical properties and sensory characteristics. Results were as follows. In the moisture content and acidity of Kochujang, the group with added Meju powder was the highest. There were no significant differences in the lightness (L value), although the group with added with Meju powder and raw soy powder were decreased in lightness over days of storage. For redness (a value), the group with added raw soy powder was the highest, and the group with added raw soy powder was decreased with increasing storage days. For yellowness (b value), the group with added roasted soy powder was the highest, and there was no significant difference over storage days. The reducing sugar content of Kochjang to which roasted soy powder was added was the highest, and the amino-nitrogen contents of Kochjang to which Meju powder was added was the highest In sensory evaluation, the Kochjang with added roasted soy powder had the best score in taste and overall acceptability. Therefore, these results suggest that roasted soy powder can be applied to Kochjang for enhanced sensory preference.
