  • God created the havens and earth and god gave man every seed-bearing plant and every tree that has fruit with seed in it. These food Is all vegetable food that don't take diseases of adult people. But God gave Noah the green plants. Everything that lives and moves will be food for Noah. Just as God gave man the green plants. And then man must not eat meat (animal protein food) that has its lifeblood still in it and God must not eat fat in it. The fat contains much fat (saturated fatty acids) and cholesterol that have susceptibility to disease of coronary heart, hypertension and atheriosclerosis etc. God must not eat these fat before we don't know that It have susceptibility to disease of adult people.

Effect of Replacing Pork Fat with Vegetable Oils on Quality Properties of Emulsion-type Pork Sausages

  • This study was conducted to evaluate the quality properties of emulsion-type pork sausages when pork fat is replaced with vegetable oil mixtures during processing. Pork sausages were processed under six treatment conditions: T1 (20% pork fat), T2 (10% pork fat + 2% grape seed oil + 4% olive oil + 4% canola oil), T3 (4% grape seed oil + 16% canola oil), T4 (4% grape seed oil + 4% olive oil + 12% canola oil), T5 (4% grape seed oil + 8% olive oil + 8% canola oil), and T6 (4% grape seed oil + 12% olive oil + 4% canola oil). Proximate analysis showed significant (p<0.05) differences in the moisture, protein, and fat content among the emulsion-type pork sausages. Furthermore, replacement with vegetable oil mixtures significantly decreased the ash content (p<0.05), increased water-holding capacity in emulsion-type pork sausages. Also, cholesterol content in T6 was significantly lower than T2 (p<0.05). In the texture profile analysis, hardness and chewiness of emulsion-type pork sausages were significantly (p<0.05) decreased by vegetable oil mixtures replacement. On the contrary, cohesiveness and springiness in the T4 group were similar to those of group T1. The unsaturated fatty acid content in emulsion-type pork sausages was increased by vegetable oil mixtures replacement. Replacement of pork fat with mixed vegetable oils had no negative effects on the quality properties of emulsion-type pork sausages, and due to its reduced saturated fatty acid composition, the product had the quality characteristics of the healthy meat products desired by consumers.

고추씨박 급여가 육계의 발육 및 복강지방 축적에 미치는 영향 (Effects of Red Pepper Seed Oil Meal Supplementation on Performance and Abdominal Fat Accumulation in Broilers)

  • This experiment was conducted to determine the effect of dietary red pepper seed oil meal (RPSOM) on the performance and the fat pad content in broiler chicks. feeding trial was conducted with 360 birds broiler chicks for 8 weeks. The levels of dietary RPSOM were 0, 5, 10 and 15% and mixed in diet consisting of corn and soybean meal. Body weight, feed intake, feed conversion and mixed in diet consisting of corn and soybean meal. Body weight, feed intake, feed conversion and viability were not significantly different among treatments. The percentage of abdominal fat and skin color were not significantly differents among treatments. The results of the feeding trial show that RPSOM can be used within 10% in broiler diet.

The Effects of Grape Seed Flour on the Quality of Turkish Dry Fermented Sausage (Sucuk) during Ripening and Refrigerated Storage

  • In this study, the effects of grape seed flour on the physical-chemical properties, microbiological and sensory properties of Turkish dry fermented sausage, sucuk, was investigated. After the sausages produced with beef, beef fat, sheep tail fat and spices, they were ripened for 14 d. Then they were vacuum-packaged and stored for 80 d at 4℃. The effects of grape seed flour (GSF; 0%, 0.75%, 1.5%, 3%) on the physical-chemical properties (pH, moisture, fat, protein, free fatty acids, thiobarbituric acids, diameter reduction, ripening yield, instrumental colour), microbiological properties (total aerobic mesophilic and lactic acid bacteria, Enterobacteriaceae, mould and yeast) and sensory properties of the sausages were investigated. Grape seed flour decreased moisture, TBA, diameter reduction, instrumental colour (a, b) values and sensory analysis scores during the ripening period; it also decreased TBA, instrumental colour (L, a, b) values, total aerobic mesophilic and lactic acid bacteria counts during the storage period. It was concluded that grape seed flour has a potential application as an additive in dry fermented sausages.

Suppression of oxidative stress by grape seed supplementation in rats

  • Polyphenol-rich grape seeds have a beneficial effect on human health. The present study was performed to investigate the effects of grape seeds on antioxidant activities in rats. Male Sprague-Dawley rats were randomly divided into a control diet group (C), a high-fat diet group (HF), a 5% grape seed-supplemented control diet group (G), and a 5% grape seed-supplemented high-fat diet group (HG). Dietary supplementation with grape seeds reduced serum concentrations of lipid peroxides compared with those in the C and HF groups. The hepatic level of lipid peroxides decreased significantly in the grape seed groups compared with that in the C and HF groups. Superoxide dismutase activity in the G group increased significantly compared with that in the C group. Catalase activity tended to be higher by feeding grape seeds. The grape seed diet increased glutathione peroxidase activity in the C group. Glutathione-S-transferase activity increased significantly in the G group compared with that in the C group. Hepatic content of total glutathione increased significantly in the HG group but decreased significantly in the HF group. The ratio of reduced glutathione and oxidized glutathione increased by feeding the grape seed diet. Total vitamin A concentration was significantly higher in HG group than in other groups. Liver tocopherol content of the G and HG groups was significantly higher than that of the control groups. These results suggest that dietary supplementation with grape seeds is beneficial for suppressing lipid peroxidation in high fat-fed rats.

Effect of Red Pepper Seeds Powder on Lipid Composition in Rats Fed High-Fat.High-Cholesterol Diets

  • The purpose of the present study was to evaluate the effects of red pepper seeds powder on lipid metabolism in rats fed high fat high cholesterol diet. Rats were divided into five experimental groups: normal diet group, high fat high cholesterol diet group, high fat high cholesterol diet with 5% red pepper seeds powder supplemented group (SA group), high fat high cholesterol diet with 10% red pepper seeds powder supplemented group (SB group) and high fat high cholesterol diet with 15% red peeper seeds powder supplemented group (SC group). The serum triglyceride (TG) and cholesterol contents, and LDL-cholesterol and atherogenic index (AI) of the red pepper seed powder supplemented groups were significantly decreased compared to the HF group. The serum HDL-cholesterol contents of the red pepper seed powder supplemented groups were increased compared to the HF group. However, there was no significant difference in the serum HDL-cholesterol among all experimental groups. The hepatic TG and cholesterol contents of the red pepper seed powder supplemented groups were significantly decreased compared to the HF group. The fecal total cholesterol and triglyceride contents of the red pepper seeds powder supplemented groups were significantly increased compared to the HF group. These results suggest that supplementation of red pepper seed powder may have a pronounced impact on markers of lipid metabolism in serum and liver of rats fed high fat high cholesterol diets.

흰깨, 검은깨, 들깨 중의 무기질 및 Saponin 함량 (Mineral and Saponin Component in white Sesame, black Sesame and Perilla Seed)

  • the purpose of this paper is to study on the proximate composition, mineral and saponin content in white sesame, black sesame, and perilla seed. For this purpose, we have compared six different materials: white-raw-sesame, white-roast-sesame, black-raw-sesame, black-roast-sesame, raw-perilla seed and roast perilla seed, and have come to the following results. The crude fat content was the highest in white-raw-sesame(55.3%). In all the six samples, the crude fat content in raw seeds was all higher than that in roast seeds. The crude protein content was the highest in the roast perilla seed(24.6%), and in the six samples, the crude protein content in roast seeds all higher than that in roast seeds. The total sugar content was found to be the highest in the roast perilla seed(8.29%). The reducing sugar content was higher in raw perilla seed(1.57%) than in other sample materials. The ash content was the highest in black raw-sesame(5.93%), and that percentage rates was the same as that of FAO and of Japan. Minerals like Cd. Mn. Cu. Na. Mg. Pb. and Ca. were found to be contained more in black sesame than in other sample materials. The minerals contained most in white sesame were Zn.(61.6ppm) and Fe(49.4ppm), and K was contained a little more in perilla seed than in the others. The sample materials which contain saponin most were white-roast-sesame(0.34%) and black-roast-sesame(029%).

포도씨유, 들깨유 및 옥수수유의 급여가 흰쥐의 체내 지질패턴 및 간조직의 지방산 조성에 미치는 영향 (The Effect of Grape Seed Oil, Perilla Oil, or Corn Oil-Containing Diet on Lipid Patterns in Rats and Fatty-Acid Composition in Their Liver Tissues)

  • 포도씨유의 생체 내 지질대사에 미치는 효과를 평가하고자 식이급원이 상이한 들깨유 및 옥수수유를 흰쥐에게 급여하여 체내 지질패턴 및 간조직의 지방산 조성을 분석한 결과는 다음과 같다. 일반식이군과 고지방 식이를 급여받은 쥐의 체중은 7주까지 꾸준히 증가하였다. 그러나 일반식이에 들깨유을 급여받은 쥐는 7주 후 체중이 감소하였고 다른 유지군을 급여받은 군들은 8주째부터 감소하였다. 식이섭취량 은 고지방 식이군 보다 일반식이군이 높았고 식이효율은 일반식이에 들깨유을 혼합하여 급여한 군에서 유의적으로 낮았다. 혈청 지질패턴 분석결과, 총지질 농도는 들깨유을 혼합한 일반식이군과 고지방 식이군에서 유의적으로 감소하였고 중성지방과 인지질 농도는 일반식이군에게 들깨유 급여시 유의적으로 낮았다. HDL-C은 일반식이군이 고지방 식이군보다 유의적으로 높게 나타났으나 일반식이군에 포도씨, 들깨유 및 옥수수유을 혼합하여 급여한 군간에 유의적인 차이는 없었던 반면 고지방 식이군와 들깨유을 급여한 군에서 HDL-C이 유의적으로 증가하였다. LDL-C은고지방식이군과 일반식이군간에 유의적인 차이가 나타났는데, 특히 고지방식이에 들깨유을 급여한 군에서 유의적으로 낮았고 포도씨유 급여군도 감소하는 경향이었다. HDL-ChDL-C 수치가 고지방식이 군에서 다른 식이지방에 비하여 PHF군에서 유의적으로 높았던 것은 혈중 지질패턴을유익하게 바꾸어준 결과이며, 이로 인하여 동맥경화인자인Al 지수가 CHF군에 비해 PHF군과 GSHF군에서 유의적으로 감소되었다. 간조직의 총지방, 총콜레스테를 및 중성지방 함량은 일반식이군은 들깨유군에서 가장 낮았고 그다음이 포도씨유군 및 옥수수유군 순으로 관찰되었다. 간조직의지방산 조성 분석결과 고지방식이군은 포화지방산은 감소하였고 단일불포화 지방산과 다가불포화 지방산은 일반식이군에 비해 증가하였다. 따라서 본 연구결과 유지 급원에 따라함유하는 지방산 조성의 비율도 달라져 식이 급원에 의해 생체내 지방산 조성에 큰 영향을 미치는 것으로 생각된다.

홍화종실분말 식이가 고지방-고콜레스테롤섭취 흰쥐의 지질대사에 미치는 영향 (effects of Safflower Seed(Carthamus timctorious L. Powder on Lipid Metabolism in High Fat and High Cholesterol-Fed Rats)

  • A study was carried out to investigate the effects of safflower seed powder on the improvement of lipid metabolism in high fat and high cholesterol fed rats. Male Sprague Dawley rats of 10 weeks old, weighing 325$\pm$5g, were divided into two groups; the control group(C group, high fat(10% lard) and high cholesterol(1% cholesterol)) and safflower seed group(S group, 10% safflower seed powder), they were fed experimental diets for 6 weeks. Food intake, body weight gains and organ weight had little differences between the groups. Concentration of lipoprotein in serum was remarkably lower in S group than in C group. Serum cholesterol levels were significantly lower in S group(72.94$\pm$4.08 mg/dl) than in C group(89.41$\pm$4.19mg/dl). The level of serum HDL cholesterol was higher in S group than in C group. The level of serum LDL C was significantly lower in S group than in C group. The ratio of HDL cholesterol to total cholesterol were higher in the S group than in the C group, too. The value of atherogenic index(AI) was determined to be low in S group. The content of liver triglyceride and cholesterol in the S group was lower than that of C group. ACAT activities which involves in cholesterol esterification in liver, was not significantly different between two groups.

유기 반추동물 전용 수입산 유기사료 및 국내산 유기 부산물의 사료적 가치 평가 (Nutritional Evaluation of Imported Organic Feeds and Locally Produced Agricultural By-products for Organic Ruminant Farming)

  • This study was conducted to evaluate the nutritional value of locally produced organic agricultural by-products to substitute imported organic feeds for organic ruminant farming. Imported organic feeds (corn grain, soybean meal, soybean seed, oat grain, barley grain, wheat grain, buckwheat, sunflower seed meal) and byproducts (rice bran, grape seed meal, rice straw, soybean hull, soybean curd, rice hull, green kernel rice, and crushed rice grain) were analyzed for chemical composition and NDF, ADF, mineral, and amino acid contents and anti-nutritional factors. Dry matter, NDF and ADF contents in organic feeds were higher than those in conventional feeds. Especially, the 9.65% fat content of organic soybean meal was 6 times higher than the 1.95% fat content of conventional soybean meal. Fat contents of rice bran, grape seed meal, green kernel rice, and crushed rice grain were 25.66, 6.09, 3.57 and 1.59%, respectively. Protein contents of soybean hull and soybean curd were 14.68 and 19.87%, respectively, which are highest among organic by-products. Levels of aflatoxin in all feeds were below the safety level. Therefore, organic rice bran, green kernel rice and crushed rice as energy source, and soybean hull and soybean curd as protein source could partial replace imported feeds for organic ruminant farming.
