탈염된 참치 자숙액을 이용한 천연조미료 개발 (Development of Natural Seasoning using Desalinated Tuna Boiled Extract)

  • 탈염된 참치 자숙액 중에 함유되어 있는 정미성분 및 단백질등의 유용성분을 이용할 목적으로 막반응기 장치에서 자숙액을 효소로 가수분해하여 분자량별로 분획하였으며, 그 가수분해물의 정미성을 검색하여 천연 복합조미료 및 조미간장으로서 이용 가능성을 검토하였다. 참치 자숙액 및 그 가수분해물의 주요 분자량은 9,800Da (TBH-10K TBEH-10K), 3,000 Da (TBE-5K TBEH-5K 및 TBE-1K) 및 990Da (TBE-1K TBEH-1K)으로 나타났다. 핵산관련물질 중에서 ATP 및 ADP는 검출되지 않았으며, IMP의 함량이 23.75$\mu$mole/g 으로 가장 많았고, 다음으로 inosine이 9.07 $\mu$mole/g이 였다. 분자량별로 분획된 자숙액 분말엑기스 및 가수분해물의 구성아미노산조성은 차이가 없었으나 유리 아미노산 조성의 함량은 10K, 5K, 1K 순으로 증가하였다. 자숙액의 분말 엑기스중 TBEH-1K아미노산 함량은 glycine ($20.57\%$), glutamic acid ($13.26\%$), alanine ($9.38\%$), proline ($9.06\%$), aspartic acid ($7.35\%$)의 순으로 함량이 많았으며, 이들 아미노산 조성이 전체 아미노산의 약 $60\%$ 정도를 차지하고 있는 것으로 나타났다. 그리고 glycine, proline, alanine, serine의 함량은 약 $42\%$, 감칠맛과 신맛을 내는 아미노산 glutamic acid, aspartic acid의 함량은 $21\%$로 전체 아미노산의 $63\%$가 조미료 개발에 유용한 아미노산으로 이루어져 있었다. 자숙액 가수분해물 중 TBEH-1K는 양호한 맛과 관련된 아미노산들의 함량이 약 $62\%$ 였다. 여러 가지 시판효소로 참치 자숙액을 가수분해시킨 가수분해물들은 관능평가에서 큰 차이는 볼 수 없었지만 분자량별로 분획한것 중에서 TBEH-lK가 가장 높은 점수를 얻었다 복합조미료에 대한 관능평가에서 TBEH-1K는 SCS 및 BCS보다는 낮았지만 $5\%$ 유의수준내에서 관능적으로 유의차가 없었으며, ACS보다는 좋은 평가를 얻었다. 그리고 자숙액 및 그 가수분해물로 제조된 조미간장 원액의 관능평가에서 TBEH-1K가 가장 우수하였으며, TBEH-1K로 제조된 조미간장 원액과 양조간장을 50 : 50(v/v)로 혼합한 혼합간장은 현재 시판되고 있는 산분해 화학간장의 대체품으로 이용할 수 있을 것으로 판단되었다.

한국과 프랑스 음식문화에서 마늘 이용에 관한 문헌적 고찰 (A Study on the Culinary Culture of Garlic in Korea and France)

  • This treatise deals mainly with the culinary cultures of garlics, a very important condiment in Korea and France. Classified specifically as a condiment in the category of spices, garlic(A. sativum L.) is typically used to season a wide variety of foods, to give the dishes to add a pungent and pleasant flavor, highly characteristic of the delicate seasoning styles of Korean and French cuisine. Garlic is also known to be used as an invigorant. used for medicinal and mystical purposes. In both Korea and France. garlic is used in fresh state, sliced, diced, or crushed. Some examples of traditional Korean dishes using garlic is Tongmaneul Jangachi(garlic in a whole bulb, seasoned in soy sauce), alcoholic liquor of garlic, and red pepper paste with garlic. French cuisine includes garlic in sauces such as Aillade, Vinairette a l'alil, Sauce Pailloti, and in a variety of salads and Cruton, mixed with the local vegetables of every province of the country.

한식 조리교육을 위한 한식양념장 분류체계의 타당성에 관한 연구 (Study on Culinary Educational Usefulness of Korean Style Jang-based Seasoning, Spices and Herb Mix Classification)

  • This study sought to prove the validity of Hansik Yangnyomjang classification Korean culinary education. survey was conducted among Korean Cuisine professionals, culinary instructors, culinary professionals and potential students from various backgrounds. ata were collected by self-administered questionnaires and analyzed by reliability analysis, frequency analysis and t-test. any differences in terms of the validity of Hansik Yangnyomjang classification between groups based on their majors, teaching experiences, and knowledge of sauce classification. First, the result showed that fermented Jang is core element Korean cuisine. Second, Hansik Yangnyomjang classification needs to be organized around Balhyojang. Third, Hansik Yangnyomjang classification for beginners and foreigners who want to learn Korean Cuisine relatively easily. Finally, the term 'sauce' is not suitable for replacing Yangnyomjang.

중국 청대 조리서를 통해본 장류 고찰 (Study of Jang through Culinary Books of Qing Dynasty)

  • The sauce and paste, which is collectively called as 'jang' in Korean is the staple seasoning of Korean cuisine. Although China shares some aspects of the Jang (醬), the exact types and forms are different. In this study, we explore the current Korean jang through the six culinary books- "Seongwonlog (醒園錄)", "Yangsolog (養小錄)", "Jojeongjip (調鼎集)", "Susiggeeumsigbo (隨息居飮食譜)", "Junggwerok (中饋錄)", and "Sosigseolyag (素食說略)" from the Qing Dynasty of China. The Jang of Qing Dynasty are further classified into the Chumjang (甛醬), Dusi (豆豆支), Chungjang (淸醬), and jangyou (醬油). To make these four types, the huangzi (黃子) has to be first made from the flour or beans, after which salt is added and sun-dried. Chumjang is the type of Chunjang used to make Zhajiangmian and is widely used in the Northern part of China. Like Chumjang, Dusi is made from flour and beans. Salt as well as various spices like Star anise, Chinese pepper and sesame are added. This type of paste is widely used in the Southern part of China. Chungjang is made when salt and water are added and sun-dried, after which it is filtered through an apparatus called Jangyou. The final product is sauce similar to today's soybean sauce.

간장태 신속 대두발효 종균으로의 Enterococcus faecium (Rapid Fermentation Starter Enterococcus faecium of Soybean for Soy-Sauce Like Product)

  • 풍미가 강력하고 신속발효가 되는 청국장의 우점종인 젖산균 Enterococcus spp.를 발효종균으로 활용하여 재래식 간장모양의 풍미를 가지는 대두발효물을 제조하고자 하였다. 119종의 Enterococcus spp. 중에서 protease 활성이 높은 8종을 선발하여 E. faecium 4종, E. faecalis 3종, E. gallinarium 1종으로 동정하였다. 8종의 항생제에 내성이 낮았고, vancomycin 유전자도 없으며, 5% NaCl 함유 배지에서도 protease 분비가 우수한 E. faecium O24를 발효 종균으로 선정하였다. 증자한 대두 백태에서 생육이 우수하였으며, 발효생성 조미 아미노산 중 80 mg% glutamic acid, aspartic acid를 생성시켰으며, lactic acid와 여러 유기산을 생성하였다. Z. rouxii와 C. versatilis와의 혼합배양으로 간장 고유취인 maltol, guaiacol 등의 향기성분도 합성됨을 확인하였다. 그러므로 청국장 젖산균인 Enterococcus spp.는 신속하게 다양한 향미성분을 생산하여 간장태의 대두 발효의 종균으로 사용이 가능할 것으로 보인다.

개체동결 굴(Crassostrea gigas)을 이용한 굴소스의 제조 및 품질특성 (Processings and Quality Characteristics of the Oyster Sauce from IQF Oyster Crassostrea gigas)

  • To develop a value-added product from individually quick-frozen oyster Crassostrea gigas extract (IQFOE), we prepared two types of oyster sauce (OS): bottled OS (BOS) and retort pouched OS (ROS). We investigated processing conditions, quality metrics and flavor compounds in each type of sauce. We found that the most appropriate base formular for both BOS and ROS consisted of 40.0% IQFOE (Brix $30^{\circ}$), 15.0% sugar, 6.0% salt, 4.0% monosodium glutamate, 4.0% soy sauce, 3.5% starch, 3.0% yeast extract, 3.5% wheat flour and 21.0% water. The crude protein, salinity and amino-nitrogen contents of the BOS and ROS were 8.2 and 8.3%, 9.3 and 9.2%, and 539.2 and 535.2 mg/100 g, respectively. In commercial oyster sauces (COS), these values were 4.7-6.5%, 9.7-12.0%, and 244.7-504.2 mg/100 g, respectively. The total free amino acids content of ROS was 7,346.9 mg/100 g, and the main free amino acids were glutamic acid, taurine, proline, glycine and alanine. The inosinic monophosphate (IMP) content of the ROS was 131.6 mg/100 g, and the primary inorganic ions were Na, K, S and P. The present BOS and ROS have favorable organoleptic qualities and storage stability compared with COS, and are suitable for commercialization as high-flavor seasoning sauces.

진주담치(Mytilus edulis) 복합추출물을 이용한 진주담치소스의 제조 및 품질특성 (Processing and Quality Characteristics of Sea Mussel Mytilus edulis Sauces from Sea Mussel Complex Extract)

  • To develop a highly value-added product from extract from small and damaged sea mussels Mytilus edulis, we prepared two types of sea mussel sauce (MS): bottled (BMS) and retort pouched (RMS). We investigated the processing conditions, quality metrics and flavor compounds in each type of sauce. We found that the most appropriate base formulation for both BMS and RMS consisted of 40.0% SME (Brix $30^{\circ}$), 15.0% sugar, 6.0% salt, 4.0% monosodium glutamate, 4.0% soy sauce, 3.5% starch, 3.0% yeast extract, 3.5% wheat flour and 21.0% water. The crude protein, salinity, volatile basic nitrogen and amino-nitrogen content of the BMS and RMS were 8.7% and 8.8%, 9.3% and 9.2%, 24.9 and 31.4 mg/100 g, and 468.5 and 455.1 mg/100 g, respectively. For comparison, the ranges of these values in commercial oyster sauces (COS) are 4.7-7.5%, 10.7-12.0%, 8.2-12.5 mg/100 g, and 225.7-448.2 mg/100 g, respectively. The total free amino acid content of RMS and Premium COS was 7,215.7 and 6,160.7 mg/100 g, respectively, and the main free amino acids were glutamic acid, taurine, glycine, alanine, arginine, proline and lysine. These results demonstrate that BMS and RMS have favorable organoleptic qualities and good storage stability compared to COS, and are suitable for commercialization as high-flavor seasoning sauces.

붕장어(Conger myriaster) 시즈닝을 활용한 조미김(Pyropia yezoensis)의 제조공정 최적화 (Processing Optimization of Seasoned Laver Pyropia yezoensis Using Seasoning Sauce with Conger Eel Conger myriaster)

  • This study was conducted to optimize the processing conditions of seasoned laver Pyropia yezoensis with conger eel Conger myriaster seasoning sauce (CES) using response surface methodology (RSM). The RSM program results for bonesoftness showed that the optimum independent variables based on the dependent variables (Y1, lipid removal rate; Y2, texture; and Y3, sensory fish odor score) were 431.0% for X1 (water amount), 115.6℃ for X2 (retort-operated temperature), and 50.1 min for X3 (retort-operated time). The RSM program results for the CES blend showed that the optimum independent variables (X1, amount of bone-softened conger eel by-products; X2, mixed sauce amount; and X3, starch amount) based on the dependent variables (Y1, amino-N; Y2, Hunter redness; and Y3, drying time) were 44.8% for A (pre-treated conger eel by-product), 36.0% for B (mixed sauce), and 19.2% for C (starch). The RSM program results for seasoned laver with CES showed that the optimum independent variables based on the dependent variables (Y1, water activity; Y2, Hunter yellowness; and Y3, overall acceptance) were 5.0% for X1, (CES amount), 313.8℃ for X2 (roasting temperature), and 6.0 s for X3 (roasting time). The seasoned laver with CES prepared under the optimum conditions was superior to commercial seasoned laver in terms of overall acceptance.

1600년대~1960년대 조리서에 수록된 잡채의 문헌고찰 (Review on Japchae in Cook Books Published during 1600s-1960s)

  • The changes in ingredients, seasonings and cooking methods of Japchae in Korean cook books published from the 1600s to the 1960s were investigated in this study. Japchae was a royal dish enjoyed by Kwanhaegun of Joseon Dynasty and interesting historical story is contained in it. Kwanghaegun Ilgi in 1608 showed that Japchae was Kwanghaegun's favorite dish. Therefore, it has been thought that Japchae was created in the 17th century. Wonhaengeulmyojeongrieugye in 1796 described bellflower Japchae and mungbean sprout Japchae. The traditional Japchae was made without glass noodle called dangmyeon. Eumsikdimibang in 1670 first introduced traditional Japchae, which was made with 20 different ingredients and then served with topping sauce made of pheasant broth, strained soybean paste and wheat flour. Japchae in Kyugonyoram(1896) was prepared by mixing mungbean sprout, watercress, gonjasoni, tripe and yukhwe with mustard. The current style Japchae with glass noodle first appeared in the 1920s and became popular in the 1950s because the traditional Japchae was described in cook books until the 1940s. There were two ways of preparing current style Japchae. Yijogungjeongyoritonggo in 1957 described Japchae was made by mixing the boiled glass noodle with other ingredients and seasonings together. On the other hand, Japchae in Urinaraeumsikmandeuneunbeob(1960) was prepared by seasoning first with other ingredients, and then mixing boiled glass noodle. A variety of ingredients - vegetables, mushrooms, meat, fish, pheasant, beef tong, sea cucumber, gonjasoni and pear - has been used to prepare Japchae. Japchae has been seasoned with ginger, soy sauce, black pepper, sesame salt, sesame oil, oil, leek, garlic, salt, sugar, vinegar and mustard. Egg strips, pine nut, thin strips of Shiitake and stone mushroom, red pepper threads, Chinese pepper(cheoncho), black pepper and ginger were used for garnishing.
