인천지역 일부 고등학생의 아침결식에 따른 식행동 및 식사의 질 평가 (Evaluation of Dietary Behaviors and Dietary Quality of High School Students in Incheon according to Breakfast Skipping)

  • This study examined the dietary behaviors and dietary quality of high school students according to the number of times they skipped breakfast. A total of 474 high school students (225 boys and 249 girls) residing in Incheon participated in this survey. The subjects were divided into the three groups according to the frequency of eating breakfast; Regualr (eating breakfast everyday, n=226), Irregualar (eating breakfast 1~6 times/week, n=143, and Skipping (skipping breakfast everyday, n=105). The dietary quality was assessed using a nutrient quotient for adolescents (NQ-A). A higher monthly allowance and a higher rate of working mothers were significantly associated with a higher frequency of skipping breakfast. A higher intake frequency of processed beverages, and street food was significantly associated with a higher frequency of skipping breakfast. Students who had a higher rate of breakfast skipping had significantly lower intake frequency of fruits, white milk, bean and bean products, and fish. The high frequency of skipping breakfast among high school students was associated with lower dietary quality, as illustrated by the low total NQ-A score and sub group score including balance, environment, and practice. This information can inform efforts to provide nutrition education program to promote breakfast consumption and guidelines to students who skipped breakfast frequently.

  • This study was carried out to identify factors related to breakfasts in elementary, middle and high school students. This study was surveyed by questionnaires and data was analyzed by SPSS program. Exploratory analysis was conducted according to three school student groups (elementary children, middle school students, and high school students). The subjects were 1,886 school students (female 893, male 959) of 51 schools in the nationwide region. The distribution of subjects was elementary school children 544, middle school students 661 and high school students 681. The results are summarized as follows. Only sixty percent of the subjects had breakfast regularly. About one fourth of the subjects had the habit of skipping breakfast or eating it 2$\sim$3 times per week. Frequency of having breakfast and reasions of skipping breakfast were significantly different according to school student groups (p < 0.001 respectively). The rate of skipping breakfast was $14.4\%$ in elementary school, $16.1\%$ in middle school, and $25.0\%$ in high school. The main reason for skipping breakfast was 'not delicious or poor appetite' in elementary school ($42.5\%$), but 'busy' in middle ($50.2\%$) and high school ($61.1\%$). There was no significant difference in frequency of having breakfast according to living areas (rural and urban). There were not significant differences between frequency of having breakfast and BMI and degree of satisfaction on body weight. But there were significant difference in frequency of having breakfast according to economical status (p < 0.05). There were significant differences in degree of school performance according to frequency of having breakfast (p < 0.001) There was significant relationship between the time of attending school and the frequency of having breakfast. But there were significant relationships between frequency of having breakfast and time of rising. These findings suggested that the time of rising was controlled by having enough time that students eat breakfast. And mother (or person who prepares meals) must have more concerns about preparing breakfast for children and students.

[ $Entr{\acute{e}}e$ ] Popularity Affects Nutrient Intake among School-Aged Children Eating School Breakfasts

  • The purposes of this study were to investigate the effects of the popularity of menu items in nutrient consumption of school-aged children participating in a School Breakfast Program. The weighed plate waste method was used to determine the nutrient intake of students. The nutrient intake was evaluated based on the popularity of the menu item, gender, and grades. The average intakes of all nutrients except energy, fiber, and sodium were well within the goals. Actual nutrient intake varied based upon the popularity of $entr{\acute{e}}es$ and the popularity of menu items was a main effect in nutrient content of meals. When the most popular $entr{\acute{e}}es$ were served, school-aged children's energy intake and School Breakfast Program participation rate increased. Saturated fat and sodium intakes also were higher than the goal when the most popular $entr{\acute{e}}es$ were served. The significant main effect was grades for total fat (p < 0.05) and calcium (p < 0.05), which was qualified by the two-way interaction between gender and grades for saturated fat (p < 0.05), protein (p<0.1), iron (p<0.01), vitamin C (p<0.01) and carbohydrates (p<0.001). Gender itself was not a significant main effect. Based on the findings, the suggestions for educating school-aged children on more healthful breakfast food choices and reformulating recipes for the popular $entr{\acute{e}}es$ are made. 서울지역 고등학생 대상 '아침밥 클럽'의 식생활 및 학교생활 개선 효과 (Effect of 'Breakfast Club Program' on Dietary Behaviors and School Life in High School Students Residing in Seoul Metropolitan Areas)

  • 본 연구는 서울시 25개 자치구 중 2013년 아침밥 클럽으로 선정된 10개교 고등학교에 재학 중인 학생을 대상으로 2013년 아침밥 클럽 사업의 효과를 평가하였다. 사전조사와 사후조사 모두 응답한 식생활 및 학교생활 조사 대상자는 315명, 24시간 회상법에 응답한 대상자는 64명, 비만도 조사에 참여한 대상자는 124명으로 그 결과는 다음과 같다. 아침밥 클럽 프로그램의 중재 후 아침식사 섭취 빈도가 증가하였으며 중재 후 38.3%, 35.7%, 17.1%의 대상자에서 각각 아침식사, 과일류, 우유류의 섭취가 주당 5회 이상으로 증가했다. 1일 식사기록법을 통해 학생들의 식품 및 영양소 섭취실태의 중재 전후 차이를 비교한 결과 아침밥 클럽 중재 이전보다 아침밥 클럽 중재 이후 곡류, 버섯류, 과일류 섭취량이 유의하게 증가했으며 난류, 유지류 섭취량이 유의하게 감소했다. 영양소는 에너지, 식물성 단백질, 탄수화물, 식이섬유, 식물성 철, 칼륨, 아연, 비타민 $B_1$, 비타민 $B_6$, 나이아신, 비타민 C 섭취량은 증가했으며 콜레스테롤 섭취량은 감소하였다. 학교생활에 대한 조사에서는 '하루의 생활을 더 편하고 즐겁게 시작하는 편이다', '하루의 생활을 건강하게 시작하는 편이다' 문항 점수가 유의하게 증가했다. 아침밥 클럽은 청소년에게 필요한 아침식사를 제공해줘서 식습관과 식이섭취 상태를 개선할 뿐만이 아니라 학교생활에서도 개선을 보여 아침밥 이상의 효과를 가져온다는 측면에서 효과적인 프로그램이라고 할 수 있으며 향후 지속적인 프로그램이 서울시에 확산된다면 청소년기의 영양 상태와 학교생활 전반적인 상태에 개선을 가져올 수 있음을 시사한다.

초.중.고 학생의 식생활 실태 및 인식 비교 연구 (A Comparative Study on Dietary Life and Recognition of Diet Related Factors in Elementary, Middle and High School Students)

  • This Study was carried out to investigate dietary life and recognition of diet related factors in elemantary, middle and high school students. This study was surveyed by questionnaires and data were analyzed by SPSS program. Comparative analysis was conducted according to three school student groups(elementary childrens, middle school students, high school students). The subjects were 1,886 school students(female 893, male 959) of 51 schools in nationalwide region. The Distribution of subjects was elementary school childrens 544, middle school students 661 and high school students 681. The results are summarized as follows. Only Sixty percent of the subjects had breakfast regularly. About one forth of the subjects had the habit of skipping breakfast or eating 2-3 times per week. Pricipal reasons of skipping breakfast were 'busy'(50.7%) and 'not delicious or poor appetite'(31.0%). Regularity of having breakfast and reasions of skipping breakfast were significant differences according to school student groups(p<0.001 respectively). About half of the subjects didn't have sufficient amounts in breakfast. Most subjects(92.1%) had lunch regularly by virtue of school lunch service. One forth of the subjects had dinner irregularly. Pricipal reasons of skipping dinner were 'not delicious'(41.7%), 'busy'(15.1%) and 'weight loss'(14.3%). Regularity of having dinner and reasons of skipping dinner were significant differences according to school student groups(p<0.01, p<0.001 respectively). The most delicious meal was dinner in 56.7% of the subjects and lunch in 37.1% of the subjects. There was significant difference in recognition of most delicious meal according to school student groups(p<0.001). Only ten percent of the subjects thought that nutrition education was not needed. Diettitian was recognized as nutrition educator in sixty percent of the subjects. Only 5 percent of the subject recognized teacher as nutrition educator. There were not significant differences in most delicious meal and nutrition educator according to operation type of school lunch service. The findings suggested continuous attention and guidance for healthy dietary life and necessity of nutrition education for both school students and their parents.

아침 결식이 경기지역 남녀 중학생의 영양섭취상태, 피로자각도 및 주의집중력에 미치는 영향 (Effects of Skipping Breakfast on Nutrition Status, Fatigue Level, and Attention Level among Middle School Students in Gyunggi Province, Korea)

  • Eating breakfast provides crucial nutrition for brain function and helps promote overall health. It is especially critical in growing adolescents, as it is known to form good eating habits and better study habits. This study investigated the effects of skipping breakfast on nutritional state, fatigue level, and attention level. A cross-sectional study was conducted in 2010 on total of 828 adolescents composed of 414 boys and 414 girls. Students who ate breakfast never to twice per week were placed in the breakfast-skipper group while students who ate breakfast more than five times per week were included in the breakfast-eater group. Students performed a self-reported questionnaire on food behaviors, amount of food consumption, fatigue level, attention deficient hyperactivity disease (ADHD) level by Conners-Wells' Adolescent Self-Report Scales, depression scale, and self-esteem level. Statistical analysis was conducted using the SAS program (version 9.1). A total of 135 boys (32.6%) and 138 girls (33.3%) were included in the breakfast-skipper group, whereas 241 boys (58.2%) and 223 girls (53.9%) were included in the breakfast-eater group. The breakfast-skipper group showed irregular food behaviors and lacked nutrients. Specifically, energy (p< .001), protein (p< .001), dietary fiber (p< .001), calcium (p< .01), vitamin A (p< .01), thiamin (p< .05), niacin (p< .001) levels in boy breakfast-skippers were statistically lower compared to boy breakfast-eaters. Intakes of all nutrients except fat in girl breakfast-skippers were statistically lower than in girl breakfast-eaters. Girl breakfast-skippers (41.3%) showed significantly higher fatigue risks compared to girl breakfast-eaters (21.5%). Low attention level was also observed only in girls in the breakfast-skipping group. Moreover, students in the breakfast-skipper group showed higher scores for depression and low self-esteem (p< .001). In conclusion, skipping breakfast has effects on young adolescents' nutrition, manifesting as high fatigue level and low attention level, especially in girls.

급식교와 비급식교 아동의 식생활습관에 관한 비교 연구 (A Comparative Study on Dietary Habits of Children in Elementary School by School Lunch Program)

  • The main purpose of this study was to observe the effect of school lunch program on dietary habits of elementary school children and their food preferences. A questionnaire survey was conducted on 785 children and their mother in ele-mentary school with and without school lunch program. The results of this study can be summarized as follows: 1. 91.1% of subjects were eating rice for breakfast menu and 12.2% of subjects were skipping breakfast every morning. 2. Most of the children preferred fruits, ddugboggi, ice cream, fritter, cookie, bread, beverage and hot dog for snacks. 3. Despite of its restrictive practice, the school lunch program proved to be contributory to the improvement of children's food intake habits, table manners, keeping social order, sanitary consiousness, gratitude for their parents. 4. Children preferred kimbap, bokumbap and hamburger for main dish, fish jelly soup, brown seaweed soup and bean-sprout soup for soup, animal food for side dish and frying saute for cooking methods. 5. Most of the children disliked crown daisy, green pepper, mushroom, green onion, onion, dropwort, soybean and carrot for their food materials.

춘천지역 여고생의 아침식사 빈도에 따른 영양지식, 식행동 및 영양소 섭취 평가에 대한 연구 (A Study on Nutrition Knowledge, Dietary Behaviors and Evaluation of Nutrient Intakes of High School Female Students in Chuncheon Area by Frequency of Breakfast)

  • 본 연구는 춘천지역에 살고 있는 여자고등학생 383명을 대상으로 아침식사 빈도에 따른 영양지식, 식행동 및 영양소 섭취실태 등을 알아보기 위해 설문지를 이용하여 조사하였다. 대상자 중에서 항상섭취군(아침식사를 일주일에 6~7회 섭취하는 학생)은 49.1%, 가끔섭취군(3~5회 섭취)은 22.2%, 결식군(2회 이하 섭취)은 28.7%이었다. 아침식사와 관련된 영양지식은 항상섭취군과 가끔섭취군이 결식군에 비해 영양지식 점수가 높았으며, 아침을 결식하는 학생은 하루 필요한 열량 유지, 뇌의 에너지원, 아침식사의 중요성 등에 대한 영양지식이 부족하였다. 식행동은 아침식사 빈도가 높을수록 식행동 점수가 높게 나타났으며, 아침을 결식하는 학생은 불규칙한 식사습관과 바른 식사속도 및 곡류, 단백질, 과일, 채소류, 유제품의 섭취 횟수가 적었다. 또한 영양소섭취 조사에서 항상섭취군은 엽산, 칼슘, 철분이 권장섭취량 이하수준으로 섭취한 반면, 결식군은 엽산, 칼슘, 철분 외에 비타민 $B_2$, 나이아신, 비타민 C, 비타민 $B_1$의 영양소도 권장섭취량 보다 부족하게 섭취하였다. 따라서 학생들에게 아침식사의 중요성을 인식시키고 이를 실천할 수 있는 올바른 영양교육이 이루어져야 할 것이다.

서울지역 아동의 철분강화 시리얼 보충과 영양교육이 영양상태 및 생활습관에 미치는 영향 (The Effect of Iron-enriched Cereal Breakfast and Nutrition Education on the Nutritional Status and Life Style of Elementary School Students)

  • The present study was conducted to investigate the effect of iron-enriched cereal supplement and nutrition education program on nutritional status and life style of children. Elementary school students(n=170) aged of 11 years old at Seoul were participated. Subjects were supplemented with iron-enriched cereal for breakfast and provided with 2 sessions of nutrition education during 3 months. Intake of carbohydrate, iron, sodium, zinc, vitamin A, vitamin $B_1$, vitamin $B_2$, vitamin C, niacin, and folic acid was significantly increased after cereal supplement. Caloric intake was similar to KDRIs during both before and after cereal supplement. There was no improvement on exercise and dietary habits after nutrition education. Male students tended to sleep later, wake up early, and ate snack less than female. Cereal supplement was effective on improving nutritional status, but short-term nutrition education had no effect on modification of life style. Thus, further studies are required to develop long-term education program effective on improving lift style and eating habits in children.

학교급식에 관한 연구 (A Study on School Feeding)

  • The purpose of this study is to present the basic rule on the planning standard menu for the improvement of nutritional school lunch program through analysis of their food habits and daily energy expenditure. 1. The purpose of the school lunch program is to get on adequate diet in quality and quantity through right food habits and nutrition education for the most active growing children. 2. At present time in Korea, school lunch program has not been carried out nutritionaly so that it should be improved immediately. 3. The ratio of the daily diet should be given to the students breakfast 1. lunch 1.1, dinner 1.5, through analysis of their daily energy expenditure by their activity. 4. The result of the analysis of for food habits shows that children like foods which were used at home commonly and dislike foods not commonly used. 5. The basic rule on the planning school lunch menu is presented as follows. 1) The ratio of the aily diet should be given as breakfast 1, lunch 1.1. dinner 1.5, for calories, and minerals and vitamins should be given 1/3 to 2/5 of a daily requirements. 2) It should be selected foods which most children like foods when plan menu for school lunch. 3) Green, yellow vegetables should be given over 50 gm. 4) Milk should be given 180cc.
