  • The known risk factors for atherosclerosis include plasma low density lipoproteins (LDL)or Cholesterol, low PUFA in the diet, hypertension, and high Na intake, obesity, diabetes, lack of exercise, cigarette smoking, sugar, low fiber and nicotinic acid in the diet, sources of Protein foods, and Psychological factors. Among various dietary factors, fat is known as the most serious causative agent for atherosclerosis. The genetic factor is a18o known as an important one but is out of scope in this paper. Since atherosclerosis is a progressive disease which may develop for many years before showing any definitive symptoms, it is very important to develop preventive programs especially in the country like Korea that is not quite overdevelopted as some western countries. In this paper all the factors mentioned above were reviewed and the dietary suggestion were made on the basis of the content of polyunsaturated and saturated fat in the diet to prevent or/and to cure this disease. Most of the available data on diet therapy with emphasis. on P/S ratio were tabulated together. after tile patient's habitual dietary intake is analized the guidelines of personalized fat-controlled diet can be recommended. It is of utmost importance to develop Korean diets for beth prevention and cure of atherosclerosis emphasizing individual eating habit in the near future which can be more Practicaly used both at home and in the hospital.

사업장 근로자의 음주에 따른 영양소 섭취와 식품의 cholesterol - saturated fat index (Nutrient Intakes and Cholesterol - Saturated Fat Indices of Foods Accompanied by Drinking Alcohol in Industrial Workers)

  • The present study was conducted to evaluate nutrient intakes of industrial workers with hyperlipidemia and cholesterol-saturated fat indices(CSI) of their daily meals and various side dishes accompanied with alcohol. Thirty eight male subjects of 41.0$\pm$6.5 years whose average serum cholesterol and triglyceride levels were 222.9$\pm$37.7 and 282.3$\pm$139.3mg/이 were interviewed on daily intakes of foods and drinking habits including types and amounts of side dishes using 24-hour recall and questionnaire methods. Average energy habits including twenty six non-drinkers and twelve drinkers were 2365$\pm$41 and 2822$\pm$417kcal, respectively but intakes of other nutrients were not very different between two groups. Carotene intakes was, however, low in drinkers. Intakes of saturated fat, cholesterol and CSI of subjects' daily meals were 15.4$\pm$5.4g, 229$\pm$114mg and 27.1$\pm$10.4 for non-drinkers and 18.7$\pm$7.8g, 238$\pm$69mg and 30.8$\pm$9.8 for drinkers. CSI of their daily meals varied from 10 to 60 without much differences in energy values and were positively correlated with serum cholesterol levels(r=0.2606, p<0.05). Average alcohol intakes obtained from subjects' drinking habit was 89.5$\pm$46.8g per day and major side dish was roasted beef giving 660$\pm$234kcal of energy and 24.3$\pm$8.0 of CSI. From the present study, it is concluded that industrial workers are more prone to have hyperlipidemic diets due to alcohol. To improve their diet and health, an appropriate nutrition education should be necessary and CSI of various Korean foods and meals can be used as handy self-control education tool.

Energy Efficiency and Nutrient Deposition in Early-Weaned Pigs, according to Fat Sources Containing Different Acidic Series

  • To evaluate energy efficiency and partition of nutrients, 32 piglets were weaned at 14 d of age and individually fed diets containing 15% fat from coconut oil (CO, medium chain saturated), high oleate sunflower oil (HOSO, n-9 series), soybean oil (SO, n-6 series), or linseed oil plus fish oil, (LF, n-3 series). After 4 weeks, the subjects were sacrificed to evaluate empty body composition and apparent ileal digestibility with the slaughter method. No statistical effect of dietary fat sources on growth was observed. The digestibility of fat from the coconut oil diet was higher than fats from the diets containing high levels of unsaturated fatty acids. The efficiency of use of metabolizable energy for growth averaged 63% and was not affected by the diet. Dietary fat composition was reflected strongly in backfat. Total body neutral and polar fatty acids were influenced too. For the whole body phospholipid fraction the ratio of n-6 to n-3 and the double bond index were 4.3, 5.8, 7.2, 0.78 and 69, 87, 89, 87 for CO, HOSO, SO, and LF respectively. These results show that for the coconut oil diet the degree of unsaturation of phospholipids in the body was lower and that, in the other diets, it did not differ, but double bond index was maintained with different n-6 to n-3 ratios in carcass fat. On the whole the data on body fat composition indicate that the dietary fat tended to be deposited in similar quantity in the body, whatever was the dietary fatty acid profile.

Effect of Feeding Saturated Fat on Milk Production and Composition in Crossbred Dairy Cows

  • To see the effect of Beragfat T-300, a by pass fat, on the production and composition of milk, four primiparous crossbred cows in their early lactation were used in a $4{\times}4$ Latin Square Design. Each period was of 30 days including 15 days of adjustment period. The diets were formulated to contain 0, 2.5, 3.5 and 4.5% of Bergafat and were isonitrogenous and isoenergetic. The intake of DM, OM, CP, NDF, ADF, Cellulose and ADL were not affected, however, the EE intake was increased by the supplementation of Bergafat in the diet of cows. The digestibilities of NDF and EE remained unaffected, whereas the digestibilites of DM, OM and CP were reduced. Milk yield remained unaltered, while 4%FCM yield increased as a result of adding Bergafat in the daily ration. Bergafat upto 4.5% of the diet DM can be added in the diet of crossbred cows without any adverse effect on the DM intake and digestibilities of DM and NDF. Furthermore, Bergafat does not cause any butter fat depression in the milk of cows.

Lipotoxicity of Palmitic Acid on Neural Progenitor Cells and Hippocampal Neurogenesis

  • Lipotoxicity involves pathological alterations to cells and tissues in response to elevated fat levels in blood. Furthermore, this process can disturb both cellular homeostasis and viability. In the current study, the authors show that neural progenitor cells (NPCs) are vulnerable to high levels of palmitic acid (PA) a saturated fatty acid. PA was found to cause cell death associated with elevated reactive oxygen species (ROS) levels, and to reduce NPCs proliferation. To evaluate the lipotoxicity of PA in adult NPCs in the hippocampus, male C57BL/6 mice were divided into two groups and maintained on either a normal diet (ND) or PA-rich high fat diet (HFD) for 2 weeks. Interestingly, short-term PA-rich HFD feeding reduced the survival of newly generated cells in the hippocampal dentate gyrus and hippocampal brain-derived neurotrophic factor levels. These findings suggest PA has a potent lipotoxicity in NPCs and that a PA-rich HFD disrupts hippocampal neurogenesis.

포도씨유, 들깨유 및 옥수수유의 급여가 흰쥐의 체내 지질패턴 및 간조직의 지방산 조성에 미치는 영향 (The Effect of Grape Seed Oil, Perilla Oil, or Corn Oil-Containing Diet on Lipid Patterns in Rats and Fatty-Acid Composition in Their Liver Tissues)

  • 포도씨유의 생체 내 지질대사에 미치는 효과를 평가하고자 식이급원이 상이한 들깨유 및 옥수수유를 흰쥐에게 급여하여 체내 지질패턴 및 간조직의 지방산 조성을 분석한 결과는 다음과 같다. 일반식이군과 고지방 식이를 급여받은 쥐의 체중은 7주까지 꾸준히 증가하였다. 그러나 일반식이에 들깨유을 급여받은 쥐는 7주 후 체중이 감소하였고 다른 유지군을 급여받은 군들은 8주째부터 감소하였다. 식이섭취량 은 고지방 식이군 보다 일반식이군이 높았고 식이효율은 일반식이에 들깨유을 혼합하여 급여한 군에서 유의적으로 낮았다. 혈청 지질패턴 분석결과, 총지질 농도는 들깨유을 혼합한 일반식이군과 고지방 식이군에서 유의적으로 감소하였고 중성지방과 인지질 농도는 일반식이군에게 들깨유 급여시 유의적으로 낮았다. HDL-C은 일반식이군이 고지방 식이군보다 유의적으로 높게 나타났으나 일반식이군에 포도씨, 들깨유 및 옥수수유을 혼합하여 급여한 군간에 유의적인 차이는 없었던 반면 고지방 식이군와 들깨유을 급여한 군에서 HDL-C이 유의적으로 증가하였다. LDL-C은고지방식이군과 일반식이군간에 유의적인 차이가 나타났는데, 특히 고지방식이에 들깨유을 급여한 군에서 유의적으로 낮았고 포도씨유 급여군도 감소하는 경향이었다. HDL-ChDL-C 수치가 고지방식이 군에서 다른 식이지방에 비하여 PHF군에서 유의적으로 높았던 것은 혈중 지질패턴을유익하게 바꾸어준 결과이며, 이로 인하여 동맥경화인자인Al 지수가 CHF군에 비해 PHF군과 GSHF군에서 유의적으로 감소되었다. 간조직의 총지방, 총콜레스테를 및 중성지방 함량은 일반식이군은 들깨유군에서 가장 낮았고 그다음이 포도씨유군 및 옥수수유군 순으로 관찰되었다. 간조직의지방산 조성 분석결과 고지방식이군은 포화지방산은 감소하였고 단일불포화 지방산과 다가불포화 지방산은 일반식이군에 비해 증가하였다. 따라서 본 연구결과 유지 급원에 따라함유하는 지방산 조성의 비율도 달라져 식이 급원에 의해 생체내 지방산 조성에 큰 영향을 미치는 것으로 생각된다.

THE EFFECT OF DIETARY FATS ON THE HEPATIC AND INTESTINAL 3-HYDROXY-3-METHYLGLUTARYL COENZYME A REDUCTASE ACTIVITIES IN CHICKS

  • This experiment was designed to evaluate the effect of degree of unsaturation (Experiment 1) and the chain length of constituent fatty acids of dietary fats (Experiment 2) on-3-hydroxy-3-methylglutaryl coenzyme A (HMG-CoA) reductase activities in the liver and small intestine of chicks. Chicks were fed experimental diets for 10 days and then killed for the determination of the HMG-CoA reductase activities in the intestinal epithelial cell and hepatic microsomes. The hepatic HMG-CoA reductase activity showed the highest value in chicks fed the tallow-containing diet. Chicks fed diets containing safflower or coconut oil resulted in a significantly lower intestinal HMG-CoA reductase activity in comparison with those fed the olive oil-containing diet. The hepatic HMG-CoA reductase activity was significantly higher when fat-free and trilaurin were fed than when any other triglycerides were fed. This activity showed the lowest value in the chicks fed the diet containing tristearin. The HMG-CoA reductase activities in the jejunum and ileum were significantly or tended to be higher when trilaurin was fed than when any other triglycerides were fed. Except when trilaurin was fed, the presence of saturated fat in the diet did not have a significant effect on the intestinal HMG-CoA reductase activity, unlike the effect shown when a highly unsaturated fat was added to the diet. There was no significant correlation between the HMG-CoA reductase activities of the liver and intestinal, and the HMG-CoA reductase activity and cholesterol content of the intestinal epithelial cells.

고콜레스테롤혈증 환자에서 식사요법이 혈청 지질농도에 미치는 영향 (Effect of Dietary Therapy on Blood Lipid in Outpatients with Hypercholesterolemia)

  • High serum cholesterol level is a major risk factor for coronary heart disease(CHD). Nutrition therapy of hypocholesterolemic diets with increased physical activity is the essential step in the treatment of the hypercholesterolemic patients. The purpose of this study was to evaluate the short-term effect of intensive dietary therapy combined with regular exercise in lowering serum cholesterol level. Seventy three hypercholesterolemic outpatients(mean: 268.0$\pm$24.7mg/dL), aged 34 to 73(mean: 56$\pm$9.8yrs), who visited cardiology OPD of Yonsei Cardiovascular Center from April through October, 1998 were studied. Anthropometric measurements, usual nutrient intake survey using semiquantitative food frequency questionnaire, and daily nutrient intake analysis were performed. The nutrition counseling for the hypocholesterolemic diet and exercise therapy was performed individually. After a 4 week intensive dietary therapy, comparisons of body weight, nutrient intakes, and blood lipid concentrations were evaluated for the hypocholesterolemic effect of intensive diet therapy. After 4 weeks of intensive diet therapy, significant reductions in percent ideal body weight(p<0.01), saturated fat intake(p<0.01), and cholesterol intake(p<0.01) were observed. There were significant reductions in serum total cholesterol and LDL-cholesterol levels after 4 weeks of therapy by 8.1%(p<0.01) and 9.7%(p<0.01), respectively. Our results showed that intensive dietary therapy was effective in reductions of serum total and LDL-cholesterol levels. The goal for this dietary modification should not be temporary but rather be permanent in eating behavior accompanied by appropriately increased physical activity.

비타민 E와 불포화 지방과의 관계 - 들깨유(油)를 중심으로 한 동물의 비교 연구 - (Relationship between Vitamin E and Polyunsaturated Fat - A comparative animal study emphasizing perilla seed oil as a fat constituent -)

  • Perilla (frutescens) seed oil, which is widely used as a source of vegetable oil in Korea, contains a strikingly large amount (58.4% of total fatty acids) of polyunsaturated linolenic acid (18 : 3) which is one of the essential fatty acids. Our hypothesis was that vitamin E contained in this oil would not be enough to prevent peroxidation of this polyunsaturated oil. A comparative study was carried out using rats and chicks devided into seven groups with various diet combinations emphasizing fat sources for the period of four weeks. The level of fat in each diet was 15% and animals were fed ad libitum. Various diet combinations were as follows; perilla seed oil and sesame seed oil with and without vitamin E supplementation, tallow as a saturated fat source and perilla seed hull group (10% at the expense of carbohydrate). The fat constituents of control group were consisted of 50% vegetable oil and 50% animal fat. A few important findings are as follows: 1. Rats fed perilla seed oil lost their hair focally around the neck and suffered from a bad skin lesion at the same place. In chicks, yellow pigmentation both of feather and of skin was clearly observed only in groups fed perilla seed oil with or without vitamin E supplementation. The basis of biochemical mechanisms of this phenomena remains as an important research interest. 2. The mean value for hematocrit was significantly lower for the chicks fed perilla seed oil than for those fed control diet. This result seems to be attributable to the effect on the red cell membrane known as peroxidation-hemolysis of vitamin E deficiency. 3. The serum cholesterol level was higher for the rats fed perilla seed oil than for those fed control diet, whereas in chicks the group fed perilla seed oil showed lower value than the control group indicating that different animal species could vary in their responses to the same diet. 4. In pathological examinations, the sign of hepatic fibrosis was seen in the perilla seed hull group and it was noticeable that the level of hepatic RNA was significantly increased in the rat recovering from vitamin E deficiency. It is hoped that more detailed studies on perilla seed oil and hulls will soon be carried out in many aspects especially i) at various levels of fat in the diet, ii) in relation to dietary selenium level and iii) to find an optimum level of dietary essential fatty acids in terms of P/S ratio using various animal species. In the mean time, the public should be informed to preserve this particular oil with care to minimize fatty acid oxidation and should be discouraged from overconsuming this oil. Consumer Acceptability of Intramuscular Fat

  • Fat in meat greatly improves eating quality, yet many consumers avoid visible fat, mainly because of health concerns. Generations of consumers, especially in the English-speaking world, have been convinced by health authorities that animal fat, particularly saturated or solid fat, should be reduced or avoided to maintain a healthy diet. Decades of negative messages regarding animal fats has resulted in general avoidance of fatty cuts of meat. Paradoxically, low fat or lean meat tends to have poor eating quality and flavor and low consumer acceptability. The failure of low-fat high-carbohydrate diets to curb "globesity" has prompted many experts to re-evaluate of the place of fat in human diets, including animal fat. Attitudes towards fat vary dramatically between and within cultures. Previous generations of humans sought out fatty cuts of meat for their superior sensory properties. Many consumers in East and Southeast Asia have traditionally valued more fatty meat cuts. As nutritional messages around dietary fat change, there is evidence that attitudes towards animal fat are changing and many consumers are rediscovering and embracing fattier cuts of meat, including marbled beef. The present work provides a short overview of the unique sensory characteristics of marbled beef and changing consumer preferences for fat in meat in general.
